1150, when Cistercian<br />
monks first settled<br />
and established a<br />
monastery.<br />

Yorkshire Wensleydale cheese has been<br />
made through the centuries in our museum? It’s like<br />
taking a trip back in time to when cheese-making<br />
evolved from a local product to the nationally loved<br />
food of today. You can see a traditional old<br />
farmhouse kitchen, dairy and press room, with<br />
authentic turn-of-the-century equipment on show.<br />

From our cheese-making viewing gallery, you can<br />
watch the magical performance of Real Yorkshire<br />
Wensleydale cheese-making. Crafted with skilled<br />
hands this is cheese-making ‘par excellence’.<br />
Handcrafted to a time-honoured recipe we use<br />
milk from local farms to make Real Yorkshire<br />
Wensleydale cheese. It is the milk from<br />
the cows that graze the sweet limestone<br />
meadows, combined with our<br />
traditional cheese-making methods,<br />
that gives our Real Yorkshire<br />
Wensleydale cheese its special<br />
Dales flavour.<br />

perfect choice. As you peruse the truckles and wedges, why<br />

who rescued the Wensleydale Creamery<br />
from closure in the 1930’s, Calvert’s<br />
Restaurant is where you can relax and<br />

Choose from a generous heart-warming menu, created<br />
using local ingredients, with some dishes inspired by<br />
the use of our cheese too!<br />
Treat yourself to a little time out in our welcoming<br />
1897 Coffee Shop, with an enviable panoramic view<br />
over the rolling Yorkshire Dales.<br />
