South Chicago Packing Co.
refines animal fats into
shortenings that are used in
frying french fries and
chicken in restaurants
around the country.
Fryer fats keep
Miniat growing
Historically, Crain’s
has substantially underestimated
Ed Miniat
Inc. There are actually
two companies, one
called Ed Miniat, a
maker of processed
meats, and the other
named South Chicago
Packing Co., which refines
animal fats into
shortenings that are
used in frying french
fries and chicken in
restaurants around the
country. President and
CEO David Miniat,
whose great-grandfather
Michael Miniat
founded the business
more than a century
ago in the shadow of
the Union Stockyards
on Chicago’s South
Side, calls the two companies
affiliates of one
another. Production facilities
are on the South
Side and in suburban
South Holland. Many
of the Miniat meat ingredients
find their way
into frozen meals and
soups. Growth has
been steady, Mr. Miniat
says, as convenience
foods and fast-foods
have taken a larger
share of consumers’
dining budgets. “People
are eating out more often,
and that’s benefiting
us,” Mr. Miniat
says.
