called Ed Miniat, a<br />
maker of processed<br />
meats, and the other<br />
named South <strong>Chicago</strong><br />
Packing Co., which refines<br />
animal fats into<br />
shortenings that are<br />
used in frying french<br />
fries and chicken in<br />
restaurants around the<br />
country. President and<br />
CEO David Miniat,<br />
whose great-grandfather<br />
Michael Miniat<br />
founded the business<br />
more than a century<br />
ago in the shadow of<br />
the Union Stockyards<br />
on <strong>Chicago</strong>’s South<br />
Side, calls the two <strong>companies</strong><br />
affiliates of one<br />
another. Production facilities<br />
are on the South<br />
Side and in suburban<br />
South Holland. Many<br />
of the Miniat meat ingredients<br />
find their way<br />
into frozen meals and<br />
soups. Growth has<br />
been steady, Mr. Miniat<br />
says, as convenience<br />
foods and fast-foods<br />
have taken a larger<br />
share of consumers’<br />
dining budgets. “People<br />
are eating out more often,<br />
and that’s benefiting<br />
us,” Mr. Miniat<br />
