in der Mövenpick-Bäckerei herrscht Hochbetrieb.
Bis 6 Uhr muss Bäcker Norbert Knudt über 1.000
Brötchen, 20 Brote und Kuchen backen. „Nichts
ist Convenience, vom Teigrühren bis zum Backen
machen wir alles frisch“, so der 47-Jährige. Damit
es nicht so langweilig ist, läuft flotte Musik im
Hintergrund. Kontrastprogramm: Den wohl einsamsten
Job hat Meteorologe Michael Holst.
Während seiner Nachtschicht sitzt der 53-Jährige
allein in seinem gut einen Kilometer vom Hauptgebäude
entfernten Häuschen und beobachtet die
Wetterentwicklung. „Das Haus muss frei stehend
sein, damit wir die Windverhältnisse realistisch
einschätzen können“, so Holst. Bis auf eine Änderung
der Windrichtung bleibt seine Schicht ruhig.
Kurz nach fünf landet das Sanitätsflugzeug mit
der Spenderleber. Und um halb sechs übergibt Daniel Müller von
der Airport-Tochterfirma Groundstars das erste Flugzeug an Kapitän
Stephan Hoetzel. Technisch ist alles kontrolliert: Der Flughafen
erwacht, das erste Flugzeug hebt ab.

“None of it is ready made; from stirring the dough
to the baking, we make everything fresh from
scratch,” the 47-year-old tells us. And to ensure
he doesn’t get bored, he has upbeat music playing
in the background. It’s quite a contrast to the airport’s
loneliest job, which is that of meteorologist
Michael Holst. During his nightshift the 53-yearold
sits alone in his little hut, which is located
a good kilometre from the main building, and
observes the weather developments. “The building
has to be freestanding so that we can realistically
assess the wind conditions,” says Holst. Apart
from one change to the wind direction his shift is
quiet. Shortly after 5:00 am the air ambulance carrying
the donor liver lands. And at half past five

technical requirements have been checked: the airport awakes and
the first plane takes off into the skies.

am Hamburg Airport. In seinem Wetterhäuschen kontrolliert er die
Entwicklung von Wolken, Niederschlag, Temperatur und Wind.
