Wok fried Townsville King Prawns with Pernod<br />

and garlic (Serves 4)<br />

16 large local king prawns, peeled, tail intact,<br />

deveined<br />

150ml extra virgin olive oil<br />

3 cloves garlic crushed<br />

1 red chilli sliced<br />

½ tsp fennel seeds<br />

½ tsp ground cumin<br />

100ml Pernod<br />

2 roma tomatoes sliced<br />

1 bunch shallots, sliced<br />

1 cup chopped Italian parsley<br />

50g unsalted butter<br />

Method:<br />

1. Mix prawn cutlets with 50ml oil, garlic, chilli, fennel seeds,<br />

cumin, ½ tsp sea salt and a pinch of fresh ground black pepper.<br />

Refrigerate for 1 hour.<br />

2. Heat remaining oil in frypan until hot.<br />

3. Add prawns and fry until they turn pink; about 2 minutes for<br />

large prawns.<br />

4. Add Pernod (be careful as it may flame), tomato, shallots, parsley<br />

and butter.<br />

5. Stir until butter has melted and serve immediately<br />

The Channel Country<br />

...ssh, the secret is out<br />

This year we decided we might go for an adventure. We had been out to<br />

Longreach about three years ago and loved the big skies and far horizons of<br />

the area. Friends had told us about the southern part of the outback so we<br />

decided to go see for ourselves.<br />

Thank goodness we hadn’t been pushed for<br />

time as Charleville has an amazing number<br />

of things to do. We went to the Cosmos<br />

Observatory and saw the craters on the<br />

Moon, the rings of Saturn, a star cluster<br />

with over 100,000 stars, double stars that<br />

orbit each other and more … we were awed<br />

by the beauty of the sky and the amazing<br />

telescopes.<br />

We also enjoyed astronomy by day, actually<br />

held a shooting star in our hands, learnt how<br />

to predict the weather – I had no idea how<br />

much is involved, there’s a weather balloon,<br />

ground temperatures, ice layers in the<br />

atmosphere- just so much to know!<br />

When we visited the Bilby Centre I had to<br />

admit this is the place I lost my heart. The<br />

bilbies are much smaller than I expected,<br />

no wonder they have trouble fending off the<br />

feral cats! The ‘bilby people’ do a great job<br />

to save these little critters.<br />

You know, I used to think the outback was<br />

miles and miles and miles of all the same.<br />

So we went to Charleville Botanic Park to<br />

discover a host of different plants, trees and<br />

buses. Suddenly I realised that the landscape<br />

is ever changing and I should keep my eyes<br />

open when we are travelling around.<br />

We left Charleville determined to follow<br />

the Natural Sciences Loop and had no idea<br />

what to expect. We drove out of Charleville<br />

and onto the great little town of Quilpie,<br />

got down and dirty (literally) at the opal<br />

fossicking field, it was great, seeing this<br />

amazing colour shining through the rock.<br />

Upset the wallet holder just a little when I<br />

went shopping in the Opal Shops. The prices<br />

are so much better than the cities and you<br />

also get to talk to people who actually mine<br />

the opals. Took time to look into the little<br />

Catholic Church, St. Finbarr’s where the altar,<br />

baptism font and lecture are completely<br />

covered with opals – you have to see it to<br />

believe it!<br />

Just outside of town we visited Baldy Top,<br />

the locals call these hills ‘jump ups’, the walk<br />

was not too difficult, just take water but the<br />

reward is a 360° panorama that goes straight<br />

to the horizon about a million miles away.<br />

Well not quite, but certainly the landscape<br />

stretched for ever, simply breathtaking!<br />

Travelling further west we visited the small<br />

town of Eromanga, and the little Living<br />

History Centre, from dinosaurs to pioneers;<br />

it’s a story worthy of a movie.<br />

We headed to Yowah to look for opal<br />

nuggets – the word was intriguing enough,<br />

as we thought nuggets came in only gold or<br />

chicken! But no! Amazing opals in this iron<br />

stone rock but cut the rock open and there’s<br />

the opal, unbelievable.<br />

We decided to add extra days onto our<br />

outback tour as we were now thoroughly<br />

hooked with so much to learn, so much to<br />

see, what’s a little time?<br />

Off to Thargomindah. Had a lot of trouble<br />

pronouncing this name until someone<br />

told us it’s known as Thargo, great. Before<br />

getting there we stopped at the wetland<br />

system at Lake Bindegolly, just about every<br />

bird was there, lots of furry and small lizards,<br />

geckos and three lakes in the middle of<br />

nowhere, and it’s like an oasis.<br />

We visited the amazing Hydro Power Station,<br />

where the bore water ran the turbines that<br />

produced electricity, way back in... wait for<br />

it 1893. So how good was it... well Paris<br />

and London were the first places to have<br />

electricity... the third, you guessed it Thargo<br />

(see almost a local now).<br />

We decided, yes we will go to the Dig Tree;<br />

after all, as the locals would say, it’s not that<br />

far. It is an amazing feeling going to the Dig<br />

Tree, literally following in the footsteps of<br />

Bourke & Wills.<br />

Time to turn around head back to Eulo, boy<br />

was this the best spot. After a few days on<br />

the road we stopped and had a mud bath<br />

at the Date Farm. The mud comes from<br />

natural mud springs, that’s an interesting<br />

story in itself, what’s even better we came<br />

out of our bath with skin as soft as the<br />

baby’s rear end.<br />

Onto Cunnamulla, shook hands with the<br />

Cunnamulla Fella, walked around the<br />

Bushlands and learnt so much about the Great<br />

Artesian Basin and the underground water<br />

that keeps this part of <strong>Queensland</strong> alive.<br />

Take the time; you simply must explore<br />

this great southern outback region of the<br />

Channel Country.<br />

Ever wondered how the mail gets out there, and we mean really out there?<br />

The Outback Mail Run takes you on an unforgettable journey through the eastern<br />

Channel Country region of <strong>Queensland</strong>. Join the mailman as he delivers Australia Post<br />

letters and parcels as well as local freight to our outback neighbours who live off the<br />

beaten track.


Our Outback Mail Run adventure began<br />

on the 1st July 1999 when we won the<br />

Australia Post tender for the Trinidad Mail<br />

Contract No.76. Mail Contracts have been<br />

in our family for many years with my Great<br />

Great Grandfather, Thomas Costello winning<br />

the tender for the Oontoo to Innamincka<br />

Mail Contract in 1898. Some years later, in<br />

the mid 1950s my Grandfather K.J. Costello<br />

purchased the Tobermory Mail Contract<br />

from CrackerJack Larkins.<br />

I started working for my Grandfather at<br />

a young age and during this period he<br />

also had the Eromanga Mail Contract,<br />

the Mount Howitt Mail Contract and the<br />

Adavale Mail Contract. They were very<br />

busy times but a great time to learn about<br />

the Outback Mail Run industry, a vital<br />

service for our outback neighbours.<br />

The Outback Mail Run was originally based<br />

in our caravan park, the Channel Country<br />

Tourist Park, which we purchased in<br />

1998. From there our connection with the<br />

tourism industry began. We have learnt<br />

a lot since then and have since acquired<br />

the Birdsville Caravan Park and the Quilpie<br />

Heritage Inn. We are passionate about the<br />

bush and more than anything we love to<br />

show people why it’s so special.<br />

The Outback Mail Run Tour is a unique way<br />

to experience a day in the life of an Outback<br />

mail man as he delivers mail, parcels<br />

and supplies to remote cattle and sheep<br />

stations. It is more than that though, it<br />

also gives you the rare opportunity to gain<br />

an insight into an area of Australia that<br />

you would not normally get the chance<br />

to see. This is a region made famous by<br />

the story “Kings in Grass Castles”, a book<br />

and later mini-series which charts the<br />

pioneering history of Irish immigrant Patsy<br />

Durack. The Outback Mail Run travels<br />

through the original holdings of Patsy<br />

Durack’s Thylungra station. This property<br />

was once noted as the largest sheep<br />

station in the Southern Hemisphere.<br />

In the beginning...<br />

The Sunlander Story.<br />

It was Monday 27 May 1935 when the<br />

Sunshine Express made its debut on the<br />

<strong>Queensland</strong> <strong>Rail</strong>ways. The new wooden<br />

bodied train was on steel underframes and<br />

made up of three AAS first class and three<br />

FBS second class cars, a first class sitter,<br />

second class sitter and parlour car.<br />

Initially six services per week were<br />

provided to Townsville, with three<br />

continuing through to Cairns. Northwards<br />

of Townsville a railmotor provided a<br />

connecting service.<br />

The external appearance of the vehicles<br />

was especially impressive and featured<br />

a varnished exterior with a polished<br />

interior. During the Second World War, the<br />

Sunshine Express service was curtailed,<br />

due to the emergency war time conditions<br />

enforced on rail travel throughout Australia<br />

and were reintroduced on a six day a week<br />

service at the end of 1946. The varnished<br />

exterior of the carriages was also changed<br />

to a painted Tuscan red colour scheme.<br />

The Brisbane-Cairns service became The<br />

Sunlander, replacing the Sunshine Express.<br />

The Sunlander commenced operations on<br />

4 June 1953.<br />

The introduction of air-conditioned sleeping<br />

cars was a major innovation in this period,<br />

and they were the first air-conditioned<br />

sleeping cars to be built in Australia.<br />

The new trains to run to Charleville,<br />

Cunnamulla, Winton and Mount Isa, were<br />

christened the ‘Landers, after the different<br />

regions of <strong>Queensland</strong> they would serve,<br />

the west, inland, tropical and central areas.<br />

An order of 20 new cars was placed in<br />

the early 1980’s, ten sitting cars, five first<br />

and five economy class the final series of<br />

ten cars were built as roomette (single)<br />

sleeping cars each with shower facilities<br />

at the end of the cars. The mid 1980’s saw<br />

five new dining cars for the long distance<br />

services, being a major overhaul of the<br />

Traveltrain fleet and an upgrade of travel<br />

for the future.

facilities for the vision impaired, but already this year we’ve helped Guide Dogs <strong>Queensland</strong><br />

Tammy-Jo’s Story<br />

“Faith is taking the first step even when you don’t<br />

see the whole staircase.” Martin Luther King, Jr.<br />

Maintaining trust in the unseen is a challenge<br />

for most people but none moreso than a Guide<br />

Dog user who is blind or vision impaired. Just<br />

ask 22-year-old Project Consultant, Tammy-Jo<br />

Sheehan.<br />

This vibrant young woman from Banyo in<br />

Brisbane’s North lost her vision overnight when<br />

she was just 10-years-old after experiencing a<br />

severe reaction to antibiotics resulting in Stevens-<br />

Johnson syndrome.<br />

The life-threatening disease which attacks the skin<br />

and mucous membranes is so rare that less than<br />

a dozen cases have been recorded in Australia.<br />

Patients literally burn from the inside out at a<br />

rapid pace.<br />

Adjusting to her new life without sight was<br />

tremendously difficult for Tammy-Jo and often<br />

heartbreaking for her parents and six siblings but<br />

with their love, guidance and support she met the<br />

challenge head-on.<br />

Helping her along the way was the dedicated<br />

team at Guide Dogs <strong>Queensland</strong>.<br />

Tammy-Jo began using the White Cane in primary<br />

school but three years ago swapped her ‘stick’<br />

for sweet-natured ‘Isaac’ , her gorgeous Golden<br />

Retriever/Labrador cross Guide Dog, and it<br />

changed her life.<br />

“I honestly don’t know how I ever survived without<br />

him,” said Tammy-Jo.<br />

“Before ‘Isaac’ I walked slowly and cautiously and<br />

I lacked confidence. I was always walking into<br />

things. Now the pair of us just fly around together.<br />

He provides so much freedom and is incredibly<br />

smart.”<br />

“I have a physical leg disability too, and ‘Isaac’<br />

is always mindful of it. When we walk up stairs<br />

he makes sure I can reach the railing for extra<br />

support. If there is a small rise in the road he lets<br />

me know to be careful.<br />

“We are a team, and I am grateful every day for<br />

the independence and joy he brings to my life,”

I would choose the Spirit of the Outback because of the<br />

convenience of having all your meals included, it has<br />

a great social atmosphere with many fellow travellers<br />

starting their holiday together, and it has a lovely<br />

“experience” feeling to it.<br />

I had a lovely man book his holiday of a lifetime that was<br />

going out to Longreach then up to Cairns who was blind<br />

and travels with his guide dog. He was very appreciative<br />

of me taking the time to ensure that he could include<br />

everything he had always wanted to do without any<br />

hassle and explained that he had been to travel agents<br />

before that didn’t want much to do with him because of<br />

the extra work his booking would require.<br />

My favourite destination to get off the train is<br />

Proserpine/Airlie Beach because that means I’m going<br />

on holidays where I will be lying on a beach relaxing<br />

on one of the islands, eating the local cuisine and<br />

enjoying a cool drink.<br />

Top Tip for train travel? When possible, book early!<br />

Can’t choose between the Sunlander and the Spirit<br />

of Outback – both have ever changing, but very<br />

different scenery<br />

Melbourne Cup Day last year where we encouraged<br />

our customers to make their own Melbourne Cup hats.<br />

Highlight was a lady from Germany who vowed to wear<br />

her creation when travelling to Fraser Island as she said<br />

the experience was the highlight of her trip.<br />
