Letter
I
just found out about Maricopa
this past summer when I applied
for a job here, and I like what I see
so far. It’s a unique and exciting
place. Sure, there are problems
— crumbling foundations in Maricopa
Meadows, rising water rates, discord
in the police department — but I don’t
think you could find a town this size anywhere that doesn’t
have problems, large and small. It isn’t the inevitable growing
pains of a sudden city and the recessionary aftershocks still
shaking the economic underpinnings that set Maricopa apart.
It is the extraordinary transformation that took place here
in the first decade of the millennium, when a sleepy former
stagecoach stop of about 1,000 souls blew up overnight into
thriving suburban city of 45,000 living, breathing, dreaming
people trying to find happiness and success, trying to survive
and make sense of the their lives in a complex time.
The housing crisis hit Maricopa as hard as it hit any
place in the county. As hard as Las Vegas and Miami and
the Inland Empire in Southern California near where I am
from. The bubble in real estate “value” that inflated along with
Maricopa between 2002 and 2006 was historic in its size and
consequences. It’s plain now that much of the housing wealth
created by cheap money from China and the innovation of
packaging mortgage loans into speculative mega-investment
vehicles was an illusion. Gold rush fever burned hot here and
around the country but the ore turned out to be mostly pyrite.
Yet the town that the illusion wrought is real, a permanent
feature on the social, political and geographic map of
Arizona. That is the amazing and exciting thing to me. A tidal
wave of real estate speculation swept modern Maricopa into
existence, but when the wave receded, the town remained.
So what now? One of Maricopa’s defining features is that
almost no one who lives here is from here. That makes it a
social experiment of the first order. Judging by the articles
in this issue of InMaricopa, civic life seems to be developing
nicely. Becky Papp’s inspirational story about a successful
local dance school shows that the arts are taking root here,
while Joe Giumette’s whimsical look at Shamrock Farms
super-dairy proves that the town has not lost touch with its
rich agricultural past. We also report on the good works of
Therese Starkey, the kind of community-minded leader it
takes to build a successful city, a high-class celebrity-owned
steak house and the local theater hopes of a former Hollywood
insider who now calls Maricopa home. A lot is going on here.
I am used to living in places where dramatic growth is the
norm. The St. Louis suburb where I grew up went from 1,600
people in the 1960 census to 16,000 in 1970. Orange County,
where I lived for the past 12 years, tripled in population in the
1950s, growing from 250,000 to 750,000, then doubled to 1.5
million in the 1960s and doubled again to 3 million by the
year 2000, reaching that milestone just as Maricopa was about
to take off on its phenomenal growth spurt. So I am right at
home here, in one sense, even though like many others I am
new to the place. I can’t wait to see what happens next.

labor of love
‘Miss Ceylan’ brings passion for kids, dance to

You can see it on their faces as they
come into the studio — they are
thrilled to be there. Girls and
boys dressed for dancing, tying
on dance shoes and imitating the moves
of their teacher in front of the mirror in a
long, airy room.
That same look of joy and concentration
is evident when these kids participate in
their annual recital. There is no doubt
they are having fun, and no doubt they are
working hard.
They are all students at Desert Sun
Performing Arts, a school opened by
owner and artistic director Ceylan
(pronounced “JAY-lon”) Gentilella in
2006.
Gentilella began her career teaching
dance while still in high school in Fairfield,
N.J. She went on to double major in dance
and recreation therapy at Montclair (N.J.)
State University where she graduated in
1998. When Gentilella wasn’t performing
herself, which she did until she was 28 she
taught, directed and judged dance on the
East Coast.
She and her husband Mark came to
Arizona to enjoy the climate in 2005. She
wanted to open a dance school where
there was a need, and the rapidly growing
community of Maricopa was the perfect
place.
“Just like any business, it took blood,
sweat and tears to start it,” Gentilella says.
“My husband and I had to do everything:
the business plan, bookkeeping, cleaning
and teaching; all of it.”
But it was, and still is, all worth it to
Gentilella. “This is my second home. I
have amazing love and support from the
students, staff and parents,” she says.
“This is not just a dance school; it is a
dance family.”
The family atmosphere is evident when
a young girl runs in the door and gives
Gentilella a hug. “She has been with me

since she was 2 years old,” says Gentilella,
who is affectionately called “Miss Ceylan”
by her students. “And now her little sister is
also a student.”
The 2-year-old little sister toddles up
and exclaims proudly, “I dance!”
“This is an environment for growth,
both physical and mental,” Gentilella says.
“I love being part of a child’s growth.”
The 1,100-square-foot studio houses
several programs for adults and children,
including tap, jazz, modern, ballet, lyrical,
musical theatre and jazz funk.
Complementing the recreational dance
programs, DSPA has five competitive
teams, all named after gemstones: Emeralds
(ages 4-6), Amethysts (ages 6-8), Diamonds
(ages 8-11), Sapphires (ages 10-15)
and Rubies (ages 14-17). About one-fifth
of DSPA students dance on a competitive
team, which requires daily practice versus
1-2 times weekly for recreational dancers.
In addition, Gentilella recently started
Maricopa’s first ballet company, dubbed
Pearls. The group is committed to learning
the history and traditions of ballet, and
Gentilella plans to grow it to become a
professional ballet company.
The group of students that tugs
at Gentilella’s heartstrings the most,
however, is Inspire, a program she
founded for special needs children.
Inspire was conceived by Gentilella while
she was in college, and it gives children,
particularly those with autism and other
developmental delays, the chance to
express themselves, socialize and exercise.
“The lessons learned at dancing school
go beyond the technique and steps they
master,” says Gentilella. “We believe they
gain an understanding of discipline,
commitment, teamwork and the value of
hard work.”
DSPA students would be hard-pressed
to find a better role model exhibiting those
very characteristics than “Miss Ceylan.”

Gravel is big business in Arizona
with each quarry typically producing
one type of material. According to
Wildcat Landscaping, the three mostpurchased

Rock has long been a staple
of Arizona landscaping due
to its low cost, zero-water
requirement and minimal
maintenance. Plus, one needs no special
skills to install it; merely a shovel,
wheelbarrow and strong back.
Follow these three simple steps to
transform a yard from a barren dust bowl
to a rock oasis.
1 Buy the rock
Often the biggest decision when
covering a yard in rock is the type of rock
to buy. Landscaping rock comes in a variety
of colors and sizes, and it ranges in price
from $25 to $42 per ton. One of the most
popular is half-inch gold rock; it matches
what many local builders used for front
yards, and it is inexpensive.
To determine the coverage needed,
calculate the yard’s square footage by
multiplying the width of the area to be
covered by its length. A rule of thumb is one
ton of rock per 100 square feet of area, but
the rock company’s salesperson will tell you
how much is rock is required for the type of
rock and coverage you want.
Though an extra fee may be charged, the
rock company will deliver the rock to your
home, generally dumping it on the street or
in your driveway.
2 Prepare the site
There has long been a debate about
whether to spread a landscape fabric or
plastic underneath the rock to prevent weed
penetration, but most Arizona residents
don’t use the plastic because it cracks in the
heat and inhibits drainage.
To prep the site, remove all the weeds,
debris and any other materials from the
area to be covered. Then spray the area with
an industrial-strength weed killer, wait 48
hours and then spray again.
3 Spread the rock
Now that the site is prepped, it is time
to prepare for the heavy lifting: spreading
the rock. For this step it is helpful to have
a shovel, a garden rake and a wheelbarrow.
Simply fill the wheelbarrow with rock,
dump it into piles across the yard and
spread it evenly, about two inches deep.
Spreading rock is hard work and could
be broken into a multiple-day project to
prevent muscle strain and exhaustion. It’s
also a great opportunity to find out how
much your friends and neighbors like you
as “many hands make for light work.”
Once the rock is spread, the job is done.
The only maintenance required is an annual
spraying to prevent weed growth.

Casino restaurant scores points with steak lovers

It is fall, and that means football season.
Fans who double as carnivores may
want to add Shula’s America’s Steak
House to their schedule. The restaurant,
located inside Wild Horse Pass Hotel
& Casino, gives customers a glimpse into
the career of the winningest coach in NFL
history, Don Shula, and a one-of-a-kind
dining experience.
Themed after the Shula-coached 1972
Miami Dolphins, the only NFL team to
record a perfect season, Shula’s America’s
Steak House opened last year at Wild
Horse Pass Boulevard and Interstate
10. Shula opened his first steak house in
Miami Lakes, Fla. in 1989. Since then
Shula’s unique steaks and legendary
sports memorabilia have found their
way into more than 20 restaurants,
predominantly on the East Coast and in
the Midwest. Shula’s Arizona location is
its only restaurant west of Houston, Tex.
Chef Colin Ribble, a 20-year veteran of
the culinary arts, boasts of the quality of
meat used at Shula’s. “It really is above and
beyond,” Ribble says.
The upscale yet comfortable restaurant
has an inviting lobby, featuring a
picturesque wine display, photos of Shula
and his family, and, of course, several
autographed footballs.

How to pick the best beef
Beef is graded two ways: for tenderness, juiciness and flavor,
and for the amount of usable lean meat on the carcass. There
are eight ‘quality’ grades for beef and five ‘yield’ grades.
Quality Grades
• Prime grade is produced
from young, well-fed beef cattle.
It has abundant marbling and is
generally sold in restaurants and
hotels. Prime roasts and steaks
are excellent for dry-heat cooking
(broiling, roasting or grilling).
• Choice grade is high quality,
but has less marbling than Prime.
Choice roasts and steaks from
the loin and rib will be very
tender, juicy, and flavorful and
are, like Prime, suited to dryheat
cooking. Many of the less
tender cuts, such as those from
the rump, round, and blade
chuck, can also be cooked with
dry heat if not overcooked.
Such cuts will be most tender
if “braised” — roasted or
simmered with a small amount
of liquid in a tightly covered pan.
• Select grade is very uniform
in quality and normally leaner
than the higher grades. It is fairly
tender, but, because it has less
marbling, it may lack some of
the juiciness and flavor of the
higher grades. Only the tender
cuts (loin, rib, sirloin) should be
cooked with dry heat. Other
cuts should be marinated before
cooking or braised to obtain
maximum tenderness and flavor.
• Standard and
Commercial grades are
frequently sold as ungraded
or as “store brand” meat.
• Utility, Cutter and Canner
grades are seldom, if ever,
sold at retail but are used
instead to make ground beef
and processed products.
Yield grades range from
“1” to “5” and indicate the
amount of usable meat from
a carcass. Yield grade 1 is the
highest grade and denotes the
greatest ratio of lean to fat;
yield grade 5 is the lowest yield
ratio. Yield grade is most useful
when purchasing a side or
carcass of beef for the freezer.

extensive, especially for a steakhouse,”
says Melody Wolcott, public relations
manager of Gila River Gaming
Enterprises the parent company of
Wildhorse Pass Hotel & Casino.
Dark wood flooring and chairs, each
featuring a brass plate with the name
and jersey number of a player from the
17-0 perfect season, welcome you as you
enter the restaurant. Then a replica of the
Lombardi Trophy and photographs of
Shula and his ’72 team beckon you into
the dining room.
Each table receives a regular paper
menu with prices listed, as well as a real
football that lists all six cuts of steak,
without the prices. All the footballs are
signed by Coach Shula himself, but,
like most menus, they remain with the
restaurant.
The menu is a la carte so customers
order their steak or seafood and side
dishes separately. Every side dish is made
from scratch, so diners know items like
the lobster bisque, crab meat macaroni
and cheese, or massive double-baked
potatoes will be delicious complements
to their seafood or steak.
Shula’s takes its steak very seriously.
It raises its own Black Angus cattle and
then takes only the choicest center cuts
of meat. This is called The Shula Cut, and
it sits on top of the beef quality pyramid
because The Shula Cut is more selective
than USDA prime or choice. Steaks are
flown in daily for delivery to each Shula’s
restaurant.
“Shula’s is based around that perfect
season in 1972,” Ribble says, “and that is
what we strive for: perfection.”
Shula’s seats 149 people and is available
for private functions. Reservations
are recommended, but not required,
except for the very private “Coach’s
Booth,” which seats four and possibly
six individuals comfortably. Hours are
Sunday through Thursday, 5 to 10 p.m.,

Hardworking retiree makes
a difference in Maricopa
Therese Starkey passionate about serving her community and helping others

Therese Starkey would rather talk
about others than talk about
herself. An active and dedicated
community member, Starkey
likes to keep the attention on those who
volunteer for the events she coordinates. “I
love the people of this community who are
so willing to give their time,” says Starkey.
Retiring in Arizona from New York
and moving to Maricopa in 2005, Starkey
has done anything but slow down. A
founding member of Maricopa Seniors,
Inc., she has been involved in everything
from the United Way to Hospice of the
Valley to the home and garden show she
founded in Maricopa.
“I learned about the value of
volunteering from my mother at a very
young age,” Starkey says. “And I would get
so bored if I wasn’t involved!”
When she moved to Maricopa,
Starkey noticed that people were having
a hard time finding services they needed.
Her first Maricopa event was dubbed
Community Support Day, and it gathered
various local service providers in one
place. Attendance at the event was about
500 people. The next year, it attracted
2,000 people, further proving to Starkey
the need for such a community event.
She found her niche, however, serving
her own peer group. Starkey and friend
Helen Brown founded Maricopa Seniors,
whose mission is to provide programs
that will help create a safe and healthy
environment for seniors, to create a
business base for seniors to receive
discounts on products and services, and
to provide an online resource directory.
One of the first projects the group
tackled was creating a discount card for
seniors, the Infinity Card. Starkey also
led the development of the Pendant of
Life program, an emergency call system
for seniors unable to reach the telephone.
Starkey also conceived and organized a
“senior prom” that was held in April at
Maricopa High School.

With the help of hardworking high
school volunteers, prom goers were served
a full meal and danced the night away after
being escorted down a red carpet when
they arrived. “There was so much help,”
Starkey says, “it had to be successful. And
it was.”
Particularly close to Starkey’s heart
is a day of remembrance program she is
working on with the city of Maricopa.
Having lost several people close to her, she
can attest to the importance of having a
place to share grief and celebrate the lives

of people who have passed away. “It helps
you to know you are not alone,” Starkey
says.”
Retirement means different things to
different people, and for Starkey it signifies
an opportunity to help others. “You work
your whole life and then retire, but that
doesn’t mean you just stop,” Starkey says.
“I always knew I would do something
when I retired. I have everything I need,
but not everyone does. We need to reach
out to those people in our community.”

Remembering
Former actress and model <strong>Cynthia</strong> <strong>Morgan</strong>
parts the curtain on her storied career

<strong>Cynthia</strong> MORGAN SITS
in her quiet Province home,
dreaming of the day she and
her husband will own and
operate a dinner theater in
Maricopa. “This town is ready
for a theater,” <strong>Morgan</strong> says.
For many the dream would appear
farfetched, but, for a woman who went
from humble beginnings in Indianapolis
to stardom in Southern California, the
vision seems like the next logical step in
her career and life.
<strong>Morgan</strong> was born <strong>Cynthia</strong> Stone in
October 1948 and by age 3 developed an
obsession with song, dance and beauty. “I
dreamed of one day going to Hollywood,”
she says.
There were many obstacles in her way,
however, including an intense Southern
Baptist father who, according to <strong>Morgan</strong>,
viewed anything fun as a sin. Luckily for
<strong>Morgan</strong> her mother pushed her toward
her dream and allowed her to have some
fun, even when it meant helping her
daughter to sneak out of the house to
attend her high school prom.
In Front oF thE Camera
<strong>Morgan</strong>’s career as an actress started in
her hometown of Indianapolis when she
was shooting a television commercial in a
fountain for the Glendale Shopping Center.
“I just remember how cold it was,” she says.
At the time of the shoot <strong>Morgan</strong> was
working for a talent agency whose owner
was a friend of Sammy Davis Jr. “The owner
told Sammy he had to meet me, and, when
he did, he told me I was too beautiful and
talented to be working in Indiana,” <strong>Morgan</strong>
says. “He said I should go to Hollywood,
and he would open a door for me.”
<strong>Morgan</strong> took the advice and left
behind her family to audition for a role as
a Golddigger on the Dean Martin show, a
role she landed.
“Thousands of aspiring actresses and
actors head to Hollywood every day and
have to wait an eternity to find work,” <strong>Morgan</strong>
says. “I was one of the lucky ones who
got a job the second day I was in the city.”
<strong>Morgan</strong> worked on the show from 1972
until it was canceled in 1974, at which time
she considered a move to New York to
continue her career. “When the show was
canceled, my agent told me I could either
go to New York and starve and be cold or
stay in California and starve and be warm,”
she recalls. “I decided to be warm.”
Starve she did not, however.
<strong>Morgan</strong> relied on her beauty and
modeling talents to land gigs in magazines,
on product wrappers and more. Among the
clients she modeled for were Pepsi, Nissan,
Porsche, Keystone Rims, Dido Jeans and
the U.S. Air Force.

She turned down a standing role on
“As the World Turns” because of a love
interest and rejected a $25,000 offer
to appear nude in Playboy. “I could do
nude modeling or get into the party
scène, but I just always felt my mom and
dad would find out,” she says.
However, her big modeling break
came with Ford Motor Company.
<strong>Morgan</strong> served as one of Ford’s primary
models along with Farrah Fawcett
for eight years. “I essentially did Ford
trucks, the Thunderbird and Fiesta,
while Fawcett did Cougar and Mustang,”
she says.
A chance to land on the cover of
Cosmopolitan changed <strong>Morgan</strong>’s
career path. After appearing as a model
on the inner pages of Cosmo, she was
tapped to be the cover girl in a 1977
issue. But, unfortunately, she fell from
a cliff and broke her knee, making it
impossible to make the photo shoot.
As <strong>Morgan</strong> was healing from her
injuries, her agent approached her with
the idea of taking the acting skills she
learned while working on shows like
ABC’s “COZ,” “Laverne and Shirley,”
“Police Story” and several ‘B’ movies,
to teach aspiring actors.
“They told me I might never walk
again,” she says.
Behind the Camera
In 1977 while she was recovering, two
agents in L.A. asked her to teach others to
do what she did so well.
“It was a great idea, so I started an
acting school,” she says.
<strong>Morgan</strong> had taught actors in L.A. for
several years when she was approached
by Hollywood mogul Phil Benjamin in
1980. He suggested she expand her acting
school to San Diego and train actors there
to work on “Simon and Simon.”
“They wanted to hire local actors
rather than paying actors from L.A. to
commute,” <strong>Morgan</strong> says, citing the belief
that many actors in L.A. were of the Old
Globe acting style and overly dramatic.
“Back then there was a saying ‘you
couldn’t get to Hollywood from San
Diego.’ I helped change that.” For her
work in the city she earned a Screen
Actors Guild award.
After the “Simon and Simon” run, <strong>Morgan</strong>
spent the next 10-plus years as a casting
agent and acting coach, working with

At the time <strong>Morgan</strong> lived in Marina
Del Ray, and Costner would come to
her house every day to use her phone
to call casting directors. “He just kept
calling and kept getting turned down until
one day he landed a job. I think they just
hired him so he would stop calling.”
Orson Wells
<strong>Morgan</strong> first met Wells when she
applied for the role of an extra in one
of his films. “I never played an extra in
a film, but I did this time just to meet
the great Orson Wells,” she says.
<strong>Morgan</strong> says Wells was very
demanding during filming and would
often fire everyone on the set, go to
his trailer, then return several hours
later angry that no one was working.

talents such as George Clooney and Denise
Richards. She also branched out to help
teach musicians, including Michael Jackson
and David Lee Roth, how to transition
stage performance to video performance.
“I was there during the birth of music
videos,” she says.
<strong>Morgan</strong> attributes the longevity of her
30-plus year career in the entertainment
business to advice she received from her
first agent, Richard Brander. “He told
me when I go into auditions not to dress
revealingly and to stay away from the
party scène. If people were going to hire
me it would be for my talent and not my
body. It is this mentality that earned
me respect in the industry and kept me
employed for so long.”
MarrIAge, Arizona and MORE
While much of <strong>Morgan</strong>’s professional
life plays like a Hollywood movie, and her
personal life is not much different.
Stone met her husband on a train from
San Diego to L.A. in 1993.
“I was heading home from work and
preparing to go to dinner with Sammy
Hagar when I bumped into him on a
train,” she says. “We talked for a while,
and I got off at my stop, but, later in the
evening when Sammy and I were dining, I
just couldn’t get him out of my head, and
I told the rock star I had to leave because I
just met my future husband.”
<strong>Morgan</strong> and the man on the train,
Steve <strong>Morgan</strong>, married a year later and
eventually moved to Arizona to be close
to his mother during a difficult time.
After his mother passed away in 2006,
the couple sold their Phoenix home and
moved to Maricopa.
“When we left Phoenix, I told my
husband I wanted to move to one of those
55-plus communities, and the moment I
saw Province I knew I had found my new
home,” she says.
Though <strong>Morgan</strong> lives in a retirement
community, that doesn’t mean she is ready
to throw in the towel on the entertainment
business.
For the past three years she has run
a local dinner murder mystery theater,
something she started in San Diego in
the ‘80s. She is also working on getting
a series she has penned called “Ventura”
into production and has produced a
melodrama the last three years at the
annual Maricopa event formerly known
as Founders Day.
“If I looked like I did back then with
the knowledge I have now,” <strong>Morgan</strong> quips,
“I would own the world.”

Imagine NOT HAVING TO COMMUTE TO WORK, BEING CAREFULLY
bathed at least twice a day, enjoying free medical care, eating three nutritious
meals a day at no cost to you, spending your free time outdoors in cooler weather,
or indoors with the proper shade, mist and circulating air, and spending only 11
minutes or so actually working each day.
Dream job?
You bet — if you’re a cow living on Shamrock Farms just south of Maricopa. About
17,000 of these black and white beauties (Holsteins, with a few brown-and-white Guernseys
thrown in) live their lives in relative luxury, away from the traffic and pressures of
city life, surrounded by farms and open space. Only about 10,000 of the herd are actively
producing milk at one time; there are an additional 4,500 heifers and about 2,500 calves
who live separately on the same farm, waiting for their day in the milking barns.
A staff of 88 works with General Manager Frank Boyce to make sure the animals maintain
the lifestyle they’re accustomed to. They get some help — if that’s the right word —
from the county, the state and the federal government, all of whom have a serious interest
in seeing to it that milk produced in this country meets the standards regulators established.
“Our product exceeds those guidelines,” Boyce says proudly. No growth hormones
are used in Shamrock milk products.

Boyce, a resident of Rancho El Dorado,
came to Maricopa before Shamrock Farms
decided to move its principal milking
facility from Gilbert in 2003. “The new
subdivisions were encroaching on our farm
there,” Boyce explains, “so we obtained
these 1,000 acres and started designing and
building what we believe is the finest dairy
operation in the state, if not beyond.” About
half of the spread contains dairy barns, the
commodities (for cattle feed) barn, a garage
for repairing rolling stock, water and fuel
tanks, offices, pens and other structures.
The balance of the acreage is for crops
(mainly corn and alfalfa) and pastures, as
well as recycling centers for cattle waste.
“Ours is a very environmentallyconscious
operation,” Boyce says, showing
a visitor where cattle waste is recycled to
produce fertilizer that is used to grow the
crops. He also pointed out separate organic
facilities on the farm, where the larger
operation is duplicated, but on a smaller
scale. A biologist and a native of Arizona,
Boyce has been with the state’s largest dairy
firm for 30 years.
From October until May, the Shamrock
Farms marketing department conducts
tours three or four times a week for
seniors and school children, who gather
in specially-designed facilities to see a
presentation on milk production and to
actually watch — from a safe and sanitary
position — the actual milking take place.
Tour groups also pile onto special “trains”
that weave their way slowly through the
cattle barns, pastures and other points of
interest.
There are no samples handed out to
visitors, however.
“The raw milk we produce here — about
two million gallons a year — is trucked to
our processing facilities in Phoenix,” Boyce
says, where the milk is pasteurized and
broken down into various components to
produce several varieties of milk, cream,
half-and-half, cottage cheese, ice cream
products and novelty items.
A tour of a typical Shamrock Farms
dairy barn reveals about 1,600 cows resting,
snoozing or eating from long troughs of
pre-mixed food laid down every eight hours
by special vehicles that mix hay, molasses,
alfalfa, hominy, cottonseed, canola, barley,
soybeans and other components into
a mass that the cows line up for. Actually,
each black and white head pokes through a
special “gate” when the food truck rolls in as
every cow eagerly awaits its next meal.
Huge bins surround a tank of molasses
at the commodities barn, where all of the
food components are stored in separate, but
equal, troughs. A backhoe is used to trans-

fer each item to the mixing truck. Each cow
consumes 80 to 100 pounds of feed every
day and drinks about 30 gallons of water.
When it’s time to “work,” the cows walk
to the dairy barn, where they are washed
down and special care is taken to clean and
sanitize their udders before the milking
equipment is connected to their teats.
On a floor below the barn, white tile
and fluorescent lights shine on the transparent
plastic hoses and gleaming stainless
steel plumbing as it collects and transports
the whole milk to one of three large
tanks, where the milk is kept cool until
it’s transferred to a truck. There are eleven
truckloads of milk leaving the farm for
Phoenix every day.
Visitors need not worry about bulls
running around the farm, since Shamrock
Farms — like most commercial operations
of this size — uses artificial insemination. A
dairy cow that has given birth usually lactates
for 70 days or so, and Boyce says they
remain milkers for as long as they can give
birth. “One of our cows is 17 years old.”
A cow’s gestation period is the same as
a human’s, and the farm’s calves are kept in
a separate barn and fed by bottle for a few
days until they are able to drink milk from
tubs. When they are mature, the young
heifers are inseminated and “trained” to
live among the other milk-producing stock.
Guernseys — once the standard for
dairy operations — have been replaced by
the more productive Holsteins at Shamrock
Farms. A look at the familiar Shamrock
Farms packaging shows that homage is
being paid to the Holsteins breed. “Roxie”
is the brand’s “spokescow,” and she appears
on each package.
Founded in Tucson in 1922 by Irish
immigrants, W. T. McClelland and his
wife, Winifred, the operation is now run by
their son, Norman McClelland. Shamrock
Farms is the leading milk processor and
distributor in the Southwest, and the
firm’s products can be found in stores and
vending machines throughout the nation.
Once a major milk-consuming nation,
the U.S. today ranks 16 th worldwide.
Countries in Europe and Asia generally
account for much more per capita
consumption than a typical American’s
22 gallons a year. “But our production
continues to increase,” Boyce says, “because
the population is still increasing.”
Roxie, no doubt, isn’t worried about
retirement.

fun — and meaningful
— for Maricopans

As THE RECESSION DEEPened
and more and more
people were forced to tighten
their budgets, many household
pets found they were
expendable and ended up in shelters, or the
homes of relatives or friends.
That’s if they were lucky.
Some good folks in Maricopa, though,
are refusing to even think about giving up
their animal companions, and it’s those
people — and their pets — whose stories
are below.
Their pets are varied — from a bearded
dragon to a three-legged dog to a mustang
— but they all have one thing in common:
loving owners who provide a nurturing environment,
a healthy diet, lots of attention
and endless love.
Zeus is ‘the boss’
Jill Worley, a single woman who telecommutes
from her comfortable home
on 3.3 acres in Thunderbird Farms, is the
proud owner of two horses, two dogs and
four cats. “My job is so detailed and ‘techy,’”
she explains, “that I just love to take a break
from the intense concentration I need to
have and go out and see how the animals
are doing.”
Worley, whose employer’s base is in
north Phoenix, relies on her computer,
webcam and telephones to earn her living
helping to develop and refine software. But

she thrives on the contrast between her
cyber work and her home environment,
where she provides shaded shelter in an annex
next to a barn for Zeus, her 9-year-old
mustang, whom she describes as a “repo”
horse from Casa Grande, and Rio, a paint.
Both are geldings, and Zeus is the larger of
the two. “He’s also the boss,” Worley said.
Horses drink a lot of water, especially
in Arizona in the summer, and the two
account for more than 50 gallons a week,
supplied from a well on Worley’s property.
She also chooses to feed Zeus and
Rio with $10-a-bale Bermuda, rather than
the cheaper alfalfa hay. “Horse are natural
grass-grazers,” Worley says, “and a friend
and I are able to combine our purchases and
get a good deal from a local farmer, so I can
handle the extra cost.”
Zeus and Rio also have access, from behind
the sturdy vinyl fence that surrounds
their corral, to a turnout arena, where they
can exercise at will, night or day. The cats —
Cali, T.C., Liona and Skylar — mainly play
and sleep in the crawl space under Worley’s
house. Her dogs, Duke, a Labrador/chow
mix she “inherited” from neighbors, and
Shortness, a female beagle/terrier mix, are
usually inside when company visits.
All of Worley’s animals have been
spayed or neutered.
Worley favors what she calls “natural
horsemanship,” and so likes to ride Zeus
bareback while walking or trotting. “A few
of us horse owners get together occasionally
at a neighbor’s place for barrel-racing,” she
says. One other neighbor keeps more than
12 horses on her place.
Worley also loads her animals into their
trailer and goes camping during the summer
at a place near Prescott designed for
people whose families include four-legged
creatures. “We have lots of fun, and they
seem to know where we’re headed when we
start out,” she says.

Hayes (1877-1881) did so as well.

Worley lived most of her life in Tempe
and Chandler; she bought her farm four
years ago, after having moved to Rancho El
Dorado in 2003.
Max and Sam
While her husband, Michael, is at work
at Intel, Debbie Davis spends most of her
time at home in Cobblestone Farms with
the three other males in her life: Harley,
Max and Sam. Her husband has no problem
with this arrangement, since these
guys have feathers, not whiskers. All are
macaws, of various sizes and colors, but the
main bird in the Davis household is clearly
Harley (short for Harlequin), an 8-year-old
hybrid that moved to Maricopa from Colorado
Springs with the Davises in 2005.
“I spent 17 years in the Navy,” Davis
says, “and couldn’t have a bird or a pet of
any kind, naturally.”
Max and Sam, who are about 12 years
old, are African Gray parrots and share
a room with the larger, more dominant
Harley. They sleep together, play together,
and even fly around the house together
when Davis feels they need a little exercise
(their wings have been clipped to prevent a
long-distance escape through an open door
or window).
Their room is equipped with windowdarkening
draperies in a bird theme,
appropriate branches and other toys, roosts
and cages to keep them happy. They’re also
hand fed.
Puff, the bearded dragon, an Aussie native, is quite comfortable in his temperature- and
light-controlled vivarium, designed, built and cleaned by Gene and Teresa Clayton.
The birds consume a 25-pound bag of
organic pellets every two months, and that
diet is supplemented with occasional treats
like fruit, nuts and even mixed vegetables,
washed down with water. “Once in a while,
they let me know when they’ve had enough
veggies,” Davis says. “I’ll find peas and carrots
stuck to the walls in their room.”
Davis admits to feeding Harley an occasional
strand of spaghetti, and even macaroni
and cheese. “They’re not supposed to
like cheese, and it’s not supposed to be good
for them, but nobody told these guys!”
Davis has a close relationship with Harley,
who even perches on her shoulder occasionally
when she takes a shower. “I trim

their talons, which is probably the hardest
thing anyone can do; they hate it.”
Macaws — and most parrots — are
known to live longer than their human
companions, and Davis explained how
she and Michael have planned for the
birds’ 80-year probable lifespan. “We’ve
already worked that out with other family
members,” Davis said.
The girls
Sandy Hinners is usually a bit tired
when she returns home to Ranch El Dorado
each weekday from her job in downtown
Phoenix, but there are three “girls”
ready to welcome her warmly. All three of
her golden retrievers have a special bond
with Sandy and her husband, Frank, now
on assignment in Alaska, where the Hinners
used to live before moving to Maricopa
in 2002.
“The dogs are our family,” Hinners
explained, while Emma, 14, the Alpha
dog in the household, stretched out for
a nap, ignoring Lacy, 6, and Samantha,
3½, who was born with just one front leg.
“She runs as fast and takes corners just as
good as the others,” Hinners says.
Two of the dogs were rescued, in effect,
by the Hinners. “Sammy was sheltered at
Arizona Rescue, a Phoenix facility, and
we adopted Emma in Alaska, when we
found out she was literally living outside
on the ice, kept on a leash attached to a
clothesline.”
<strong>Morgan</strong> Vanderwall takes a break from her duties as a business owner and mom to
two toddlers to cuddle with the household’s most important pet, Neiko, 3, a happy and
energetic blend of Shih Tzu, terrier and Chihuahua.

Lacy was welcomed into the Hinners’
home from among a litter of puppies at a
friend’s house in Colorado.
The Hinners are teaching their dogs
to pay it forward, as it were. Lacy attends
weekly courses to learn how to become a
therapy dog, certified by the Delta Society,
an organization that matches animals with
children with special needs. “Sammy is next
on the list,” Hinners says.
Frank and Sandy see to it that Emma,
Samantha and Lacy are walked around
the neighborhood daily, on a special
leash with split leads. And each dog bears
colored tags on her collar. “We’ve also had
microchip ID tags inserted in all three,”
Hinners says. “We don’t want to lose these
gals!”
Puff the bearded dragon
When Gene and Teresa Clayton left
upstate New York to start a new life in
Maricopa in 2005, they were beginning to
identify with other empty-nesters whose
grown children had moved on. Daughters
Jacquelynn and Samantha have since returned
to the East, leaving just son Matt,

Deciding to fill their Maricopa Meadows
home with some pets sounded good,
but the Claytons were wary of the attention
that one has to give to dogs or other more
conventional pets. They opted instead for
four ferrets and a couple of bearded dragons,
Puff, a male, and Phlyo, a female.

close up, and are very sensitive to heat, light
and humidity. “They live in a vivarium that
Gene designed and built,” Clayton says,
“and we decided it would fit right in, in the
corner of the living room.”
The L-shaped enclosure has special
glass, a sophisticated heating, cooling and

“They need a dry environment, and we
even had to sterilize the sand in their enclosure,”
Clayton says, not to mention the
rocks (which Gene boiled), branches and
other items.
Not far from the vivarium, a two-story
cage, more conventional in design, sits
across from Puff and Spyro’s home. From
trampoline-like swings, Cooter and Taz
(males) and Mischief and Spidey (females)
romp and suddenly stop to stare at a visitor,
competing for attention with the dragons.
Easy to care for?
“Well, that depends,” says Clayton,” with
a grin. “Puff and Spyro molt every month,
and we have to make sure we remove that
old skin from their home.” Monitoring the
vivarium’s climate is a constant challenge.
Their skin must be kept moist, despite their
preference for an arid environment.
And, of course, the Claytons must remove
waste from both the vivarium and
the ferret cage on a regular basis.
The dragons — which have yet to show
any interest in breeding — eat something
called “Dragon Bites,” which the Claytons
buy in a pet store. That diet is supplemented
with bits of packed crickets (not
the local variety), phoenix worms, prickly
pear, mustard greens, zucchini and other
veggies, all of which must be washed, diced
and prepared by hand.
The ferrets aren’t as persnickety about
their diet. “They eat a special high-protein
food that‘s prepared and packaged, but Taz
loves chicken,” Clayton said. The Claytons
say they are able to feed both dragons and
the four ferrets for $35 to $40 a month.
Puff, clearly Clayton’s favorite, is
allowed to have an “outing” on the kitchen
table, and a visitor strokes his soft, leatherlike
skin. Even the “beards,” which look
sharp and pointed, are really flexible and
soft. Bearded dragons, with a 15-year life
span, can grow to about two feet long, with
their tails accounting for about half of that.
Puff is about 15 inches long.
Shadow, the family dog, is a blend of
terrier and border collie, and she’s the
newest member of the menagerie, at 16
months.
“Shadow likes to cuddle up once in a

while,” Clayton says, “but I get a big kick
out of wrapping Puff in a towel and putting
him to sleep.”
Three’s company
<strong>Morgan</strong> Vanderwall, an energetic
transplant from Indiana, seems suited for
the high-stress world of public relations;
she runs her own business from her
Maricopa Meadows home. The former
4-H Club member and basketball and
volleyball player seems to thrive on
activity: she takes care of the home she
shares with her husband, Shawn, and their
two toddlers.
Add three dogs to the equation, and
<strong>Morgan</strong>’s plate is brimming over.
Charlie Brown, a chocolate Lab, and
Chauncey Michael, a black Lab, are
imposing, but they willingly give sway to
the “boss,” little Neiko, 3, a happy mix of
Shih Tzu, terrier and Chihuahua.
After visiting friends in Arizona during
a spring break from Purdue, Vanderwall
developed an almost instant attraction
to the lifestyle and the climate. Two days
after she and Shawn returned from their
honeymoon in 2004, they moved to an
apartment in Ahwatukee.
The Vanderwalls bought a home and
moved to Maricopa in 2005 and quickly
made a wide circle of friends.
“Maricopa is just right for us,” she says,
“a great place to raise a family”
And that family, apparently, will always
include pets.
