I adapted this recipe from Mollie Katzen’s recipe book: Sunlight Café.<br />
I have used this for several events, and people always love the surprise of fried green tomatoes!<br />
We’ll have ripe tomatoes soon enough, but I always am excited to see the first green tomatoes<br />
when they start appearing in late June and early <strong>July</strong>. Come by the Forecastle Festival Sustainable<br />
Marketplace for a meal and you can try my version. Otherwise, have a try in your kitchen!<br />

Fried Green Tomato Quiche<br />
Ingredients<br />
1 Unbaked pie crust • 1cup grated cheese (your choice) • Sliced fried green tomatoes<br />
• 3 large farm fresh eggs • 1 cup milk • Salt and pepper to taste<br />
Instructions<br />
Preheat the oven to 375 F. Put pie crust on baking pan. • Put grated cheese into pie crust.<br />
•Cut fried green tomatoes into cubes and arrange them over the cheese. • Whisk eggs,<br />
milk and seasonings together and pour mixture slowly over the cheese and fried green<br />
tomatoes. • Put baking pan in the oven for about 40 minutes, or until custard is set.<br />
• Remove from oven and cool at least 10 minutes. • Slice and eat!<br />
Fried Green Tomatoes<br />
Ingredients<br />
2 large unripe tomatoes • 1/3 cup corn meal • Dash salt • Dash pepper • Butter or<br />
cooking oil<br />
Instructions<br />
Combine cornmeal, salt and pepper. Mix thoroughly, put onto a plate. • Cut the tomatoes<br />
into slices. • Press the tomato slices in the coating. Make sure to get cornmeal mixture<br />
into all surfaces. • Fry tomato slices for 8 to 10 minutes per side, or until golden brown.<br />
• Drain and cool the slices on a baking rack so that they stay crisp. (Paper towels can go<br />
under the rack in case you get drips…)<br />
