From the results obtained for the 1 st composting trial, the initial substrate appeared to<br />

have increased moisture content (71.8%) which was steadily reduced due to the initial<br />

decomposition <strong>of</strong> the readily degradable organic matter carried out by mesophilic<br />

microorganisms. After the 8 th day <strong>of</strong> the process the moisture content had fallen less<br />

than 60%. This level <strong>of</strong> moisture content in conjunction to sufficient agitation and<br />

oxygen supply <strong>of</strong> the substrate enhanced the metabolic activities <strong>of</strong> microbes and led<br />

rapidly to higher temperature values. Elevated temperature values (thermophilic<br />

phase) reduced even more the moisture content due to water evaporation which at the<br />

end <strong>of</strong> the composting process, on the 30 th day, was at 36.1%. Low water level<br />

reduces the intensive microbiological activity. Also at the same time reduces the<br />

transportation costs <strong>of</strong> compost, so it is required to have low water content when the<br />

compost is mature. It is worth mentioning that spontaneous water content increases<br />

were recorded during the composting process on the 8 th , 10 th , 18 th and 23 rd day due to<br />

the hydration <strong>of</strong> the substrate as stated in paragraph 5.1.5.1 in order to maintain<br />

moisture at desirable levels.<br />

5.1.5.4. Measuring the oxygen content <strong>of</strong> the substrate<br />

The in-vessel composting system was designed to operate in aerobic conditions<br />

during which the decomposition <strong>of</strong> the organic matter takes place in the presence <strong>of</strong><br />

oxygen. Oxygen is an essential ingredient for successful composting since<br />

microorganisms oxidize carbon for energy emitting carbon dioxide. Therefore the<br />
