Recipe <strong>of</strong> <strong>the</strong> Week<br />

Baked Chicken and Rice<br />

Cooking spray<br />

1/4 c. chopped celery<br />

1/2 c .chopped onion<br />

5 garlic cloves, minced & divided<br />

1 (8-ounce) package sliced fresh<br />

mushrooms<br />

1/3 c. dry sherry, divided<br />

3/4 t. salt divided<br />

3/4 t. pepper, divided<br />

1 c. uncooked long grain rice<br />

1 c. water<br />

1/4 c.chopped fresh parsley<br />

1 (<strong>10</strong>+3/4 -ounce) can condensed<br />

reduced-fat reduced-salt, cream<br />

<strong>of</strong> mushroom soup, undiluted<br />

1 (8-ounces) can sliced water<br />

chestnuts, drained<br />

6 (8-ounce) chicken breasts<br />

halves (bone -in) skinned<br />

Preheat oven <strong>to</strong> 350<br />

Coat a large nonstick skillet<br />

with cooking spray. Place over<br />

med.heat until hot. Add celery,<br />

onion, and 4 garlic cloves; saute 5<br />

minutes till tender. Add mush -<br />

rooms; saute 3 minutes. Stir in<br />

1/4 c. sherry, 1/2 t. salt, 1/2 t.<br />

pepper, rice and next 4 ingredi -<br />

ents. Spoon mixture in<strong>to</strong> a <strong>13</strong>x9<br />

baking dish coated with cooking<br />

spray. Arrange chicken, bone<br />

side down, over rice mixture.<br />

Combine remaining sherry and<br />

garlic; drizzle over chicken.<br />

Sprinkle chicken with remaining<br />

salt and pepper. Cover and bake<br />

@ 350 for 1 hour and 20 minutes<br />

or until chicken is done.<br />

Yield: 6 servings. Serving size-1<br />

chicken breast and 1 c. rice.<br />

Brick park project still in full swing<br />

The <strong>Fairhaven</strong> High School Class <strong>of</strong> 1961 continues with its annual planting at <strong>the</strong><br />

<strong>Fairhaven</strong> High School Memorial Brick Park Garden. The landscaping <strong>of</strong> <strong>the</strong> garden has<br />

been provided by <strong>the</strong> Class <strong>of</strong> ’61 for <strong>the</strong> last five years bringing a serene setting <strong>to</strong> <strong>the</strong><br />

area dedicated <strong>to</strong> current and former members <strong>of</strong> <strong>the</strong> graduating classes <strong>of</strong> <strong>Fairhaven</strong><br />

High School. ABOVE: Betsy Lebeau and Eagan Cabral, an eleven year old student <strong>of</strong><br />

Roger’s School, who volunteered <strong>to</strong> help Betsy with <strong>the</strong> planting as a community project,<br />

carefully selected and planted a lovely variety <strong>of</strong> plants for <strong>the</strong> garden. Bringing younger<br />

generations in<strong>to</strong> <strong>the</strong> project has been a long time goal <strong>of</strong> <strong>the</strong> class and <strong>the</strong>y hope it<br />

encourages o<strong>the</strong>rs <strong>to</strong> volunteer in <strong>the</strong> beautification <strong>of</strong> this area that welcomes people<br />

<strong>to</strong> <strong>the</strong> Media Center at <strong>the</strong> rear <strong>of</strong> <strong>the</strong> school. Submitted pho<strong>to</strong>. See it in color at<br />
