Federation partner on
new teen programming
model
After discussions between the Sacramento Board
of Rabbis, congregational leadership, and Federation,
a new model for teen programming began
this fall.
Declining enrollment, especially from eligible
students who live 30 minutes or more from the
Sacramento base, led community leaders to rethink
teen programming and to create a new
model that puts regularly scheduled educational
programming back into the hands of individual
synagogues with Federation coordinating quarterly
retreats.
―Yachad had been, for a number of years, a
mainstay in our community,‖ said Rabbi Alan
Rabishaw of Temple Or Rishon (TOR) in Orangevale,
referring to the weekly communitywide
program offered to teens for the past nine
years. ―While it was good at meeting the needs
of a few, it was not meeting the needs of kids
New Joint Midrasha Program
Good day, I am Ian Lobel and I am excited and honored to introduce
myself as the Director of the new Joint Mosaic Law and Beth Shalom
Wednesday Midrasha Program. Our two congregations have
vibrant youth communities, and as such we need a vibrant youth
program that will channel their enthusiasm and reward their curiosity.
That is what both congregations are coming together to create,
and that is why I am so excited about this new program.
Reflections from the President
Where did the summer go? Wasn’t it
just yesterday that I was just attending
graduation and siyyum ceremonies…or
is that a line from ―Sunrise/Sunset‖?
Many people equate Labor Day with
the end of summer or, for those of us
with school age children, the beginning
of the school year (and with that, I
breathe a sigh of relief for having survived
another summer of kid-friendly programming at
Camp Caren).
This school year offers a friendly twist for those of you
that participated in Yachad, the Federation’s community
high school program for 8th-12th graders. As you may
know, Yachad no longer exists as the Federation acceded
to the will of the majority of our community’s rabbis and
reverted teen programming back to the synagogues while
retaining quarterly community-wide programming. I was
privileged to be associated with Yachad last year and I
know that many were sad to see it disappear.
This change, to make teen education programming a synagogue-centric
activity, put Mosaic Law in a difficult position
as Rabbi Taff and Orit Morgenshtern consistently
encouraged both parents and teens to enroll in Yachad.
MLC doesn’t have a dedicated educator to take on teen
education nor does it have the budget to hire someone to
run the program. Another synagogue, Congregation Beth
Shalom, was in the same bind. Both Rabbis Taff and Nancy
Wechsler-Azen wanted weekly teen programming and
agreed to combine forces so that MLC and Congregation
Beth Shalom teens can attend Yachad-like programming
together.
The Scroll
I am pleased to inform you that Ian Lobel, MLC member
and Yachad instructor, has been hired as the new Midrasha
Administrator. (See Ian’s article below) Ian’s enthusiasm,
excitement, energy and knowledge of the twisted teen
brain will bring a new and distinctive vibe to both MLC’s
and CBS’s campuses.
You’re probably asking: How can we hire Ian if we don’t
have a budget to run this program? Both synagogues agree
that the program must fund itself – tuition must pay for
Ian’s salary, teachers’ salaries and any supplies needed as
neither synagogue has this as a budgeted item. Tuition is
$360 for the year (same as the Yachad tuition) with classes
meeting weekly beginning after Sukkot. Classes will be
held on Wednesday evenings at Beth Shalom for the first
semester and at Mosaic Law the second semester. Even
though Midrasha is held weekly and may sound like the
Yachad program, it isn’t. Ian brings his own stamp of
uniqueness on this effort and it will definitely be somewhere
your kids will want to be!
As Rosh Hashanah approaches, look for Midrasha kickoff
activities tied in with USY events. All 8th through 12th
graders are encouraged to enroll! For those of you who
know Ian, take a moment to wish him well; talk to your
teens about hanging out with their MLC and CBS friends
for another fun-filled year at a place called Midrasha.
MIDRASHA
(Continued from page 1)
As a teacher at Yachad I created classes
which focused on Judaism and the
Jewish perspective in a way that was
entertaining as well as educational,
that focused on provoking laughs as
well as thought. Midrasha will similarly
be about important issues in a
way that is relevant, thoughtprovoking,
and fun. Our goal is to
strengthen Jewish identity through
education and engagement, so that
our teens go from being inquisitive,
bright youth to active, Jewishly committed
adults. As a youth I went
through Midrasha, and my activity
during that time period was a big part
of establishing my commitment to
Judaism and Jewish principals such as
tzedakah and tikkun olam, and I am
committed to passing on that experience
to today’s future leaders.
Our curriculum will delve into who
we are, where we have been, what we
believe, social action and much more;
in other words, Judaism as a faith, as
a concept, and as action. The program
will begin in late October,
though we will be holding events to
give the community a chance to connect
with the program before then,
details for those events will be provided
soon. We are currently putting
Page 3
together an enthusiastic teaching
staff, and would love to hear from
those of you who would like to be a
part of it. We are also looking for volunteers
who would like to share their
commitment and passion for Judaism,
as part of special programs. Anyone
interested in participating please contact
me at sacramentomidrasha@yahoo.com.
We want to invite
all of our youth to be a part of Midrasha,
and look forward to the chance to
help our students not only learn about
Judaism, but come to define what it
means for them. L’Shanah Tovah,
and may we have a sweet and fruitful
new year together.

How quickly the summer passed
and we are up and running as fast
as we can to prepare for a new
year.
By now, you have received your
packet for the 2011-2012 Directory.
I hope that you realize how important
this booklet is to you as a member of the Sacramento
Jewish community. We try to make sure that you
have easy access to our congregation members, staff and
leadership. It also contains the necessary community information.
I find that I use my book daily and keep it
handy by my phone.
Please be sure to return your member information sheets,
even if you are just filling out the top section. The address,
phone and email information up dates are so necessary
to keep you connected to friends, old and new, and
our entire congregation.
The directory is an important source of revenue for Sisterhood.
It allows us to support the education program, as
well as, other synagogue needs. Your greeting to your
fellow congregants creates such good will and helps us to
continue the meaningful work of our organization.
How did you enjoy our membership packet this year,
Ladies? As you can see, we are busy bringing you many
opportunities to join us and have some fun. We will need
―We understand the unfortunate challenges due to pure
Quarterly Federation programs will be coordinated by
Artificial Tears…In His Own Words
By Congregant Irv Frumberg
Some of you are probably quite younger than I and don’t
have to apply artificial tears to help moisturize your dry
and irritated eyes. When you get older and reach my age
of a still relatively young 77 years, the tear glands seem to
dry up, requiring that extra little bit of artificial moisture
to help them function better. This is essential to vision.
Maybe over the years, I might have cried one too many
times—a symptom of far too many sad circumstances during
my life span. I have just used up the power to release
my tears naturally. At times, however, I have shed my
tears inwardly to avoid showing any emotion, which I
thought would be interpreted wrongly.
Wouldn’t it be wonderful if we were able to shed our tears
as an expression of the good that flows through our lives,
rather than just during those troubling and sorrowful moments?
I smile more often then I did in the past, having learned to
take more responsibility for my choices and past actions. I
recognize that only I, and no one else, can decide my fate,
except perhaps for the One that had my destiny in mind all
the time. That One was, and still is, the infinite light of the
Source of the Creator. It would have been nice if G-d
would have let me know a little earlier in my life’s journey
what His or Her intentions were for me…perhaps He
or She could have provided some direction. Yet, I have no
regrets about the pathways that I have followed.
For those that know a little about me, I have come to believe
that the greatest value in the world is love. It is the
chief ingredient for a happy life, and I thank G-d that I
have been blessed with so much love in my family. My
first and foremost love is for my wife Rita. The other is
for my newly rekindled relationship with G-d. I have not
always followed all the rules and regulations that one is
supposed to pursue during the course of one’s life, but I
can assure you I am a good, worthy person. I am also sure
that our G-d understands me and, despite some of my
transgressions, will always inspire me to do better, encourage
actions that incite laughter, and foment the gift of
love.
Courtyard Bricks Update
At this time, the Friedman Courtyard Brick Committee
is sorry to announce that it does not have enough
pre-orders for bricks in time to requisition them for
the High Holydays. There is a minimum requirement
needed to place the order. It is hopeful that the committee
will be able to fulfill that requirement by the
beginning of the New Year (January 2012).
The brick program is an ongoing project. If you have
a special event or person you wish to honor or memorialize,
consider placing a brick in our Courtyard
to mark that special occasion or individual(s). Simply
contact Judy Persin, Courtyard Brick Chairperson, at
Cooking with Evie Lieb
Savory and Sweet Treats for the New Year
We have almost until the end of September to prepare for Rosh Hashanah this year, although as
Rabbi Taff always says, the holidays aren’t late—they are always on time!
For this year’s celebratory meals I am sharing two dishes to serve before it’s time for dessert
(both red, coincidentally) and a new twist on honeycake.
Beets are served around the world for the holiday because they are naturally sweet. In addition, the Hebrew word for
beet, ―silka‖ sounds like ―siluk‖, the word for ―removal‖—expressing hope that our adversaries will disappear in the
year ahead. There’s no question about why honey is a favored ingredient for High Holiday meals and for dipping apples
and yom tov challah.
While visiting Utah on our cross-country drive this summer, Larry and I learned that the state emblem is the beehive,
chosen because it represents industry and perseverance. The big beehive that decorates the front of the Utah capitol
building will now come to mind when I am (industriously) adding honey and sweetness to holiday dishes.
I have been looking for unsalted parve margarine to use in baking ever since the Fleischmann’s product disappeared
locally quite a long time ago. Recently, while shopping for ingredients for my recipe testing, I spotted the Saffola version
at Bel Air Market. This ―new‖ discovery will surely be appearing in some future baking recipes in this column. Stay
tuned!
Zhanna’s Beets
This dish has an interesting history. I requested it from
Zhanna Elkinbard, one of the first Soviet Jews to settle in
Sacramento in the wave that came in the’70s. While the
Elkinbards lived here we enjoyed many tasty delicacies
that reflected their culinary roots. Since it features beets,
this is quite literally such a recipe! Perfect for adding colorful
sweetness to a holiday menu from Rosh Hashanah
through Sukkot. Serve as a side dish or as an hors
d’oeuvre with crostini or corn chips--not very Russian but
a very tasty match! Makes about 2 cups.
1 16-oz can beets, drained and coarsely grated OR
1 ½ C cooked, grated fresh beets, maybe 2 medium
beets *
½ C dill pickle, cut in ¼‖ dice (about 3 medium pickles)
½ C mayonnaise (can use light mayo) or Miracle Whip
(Zhanna’s preference, not mine)
Fresh-squeezed lemon juice to taste
Combine all ingredients in a bowl and chill.
*To roast beets, place them in an
ovenproof casserole, add ¼‖ of
water and cover tightly. Roast at
375° until the sharp point of a paring
knife penetrates each beet easily.
(Time will depend on the size of
the beets, probably 35-50 minutes.)
Spicy Red Cabbage
Here’s a lovely accompaniment for your holiday brisket. I
adapted this from the Plugras Butter website, which no
longer offers it. You can substitute 2 8-oz. packages of
shredded red cabbage to streamline your preparation. Of
course you can use butter if you aren’t serving it with
meat. Serves 6
1 small head red cabbage
2/3 C water
6 TBSP parve unsalted margarine
2 Granny Smith apples,
peeled, cored and sliced about ¼‖ thick
4 whole cloves
1 tsp salt
2 TBSP brown sugar OR scant 2 TBSP honey
2 TBSP fresh lemon juice
1 TBSP balsamic vinegar, or to taste
Shred the cabbage. Place it in a deep skillet with the water,
2 TBSP of the margarine, the apples, cloves and salt.
Cover and simmer until cabbage is tender but not mushy.
(Start checking after 20 minutes.) Add rest of the margarine,
brown sugar or honey and lemon juice. Cook a few
more minutes to blend flavors, then add vinegar and adjust
other seasoning to taste. Serve hot.
This may be prepared a day ahead and refrigerated. It reheats
well in the microwave.
Chocolate Honey Bee Cake
This cake is adapted from a recipe presented by Nigella
Lawson on THE COOKING CHANNEL; the glaze recipe
was developed by chocolate maven Alice Medrich.
Note the caveat about leaking batter. In testing this recipe
twice, the leakage only happened once, but the
―ounce of prevention‖ is surely the route to follow-- just
in case. 12 or more servings
Cake:
1 1/3 cups soft light brown sugar
1 C (2 sticks) unsalted butter, softened
2 eggs
1 tsp vanilla extract
½ C honey
1 1/2 C all-purpose flour
1 tsp baking soda
Scant ½ tsp salt
1 TBSP cocoa
(shake through a strainer into processor)
4 oz semisweet chocolate broken into
pieces and melted over hot water
1 C boiling or very hot water
Chocolate Honey Glaze:
6 oz bittersweet chocolate, cut up
4 oz (l stick) unsalted butter
3 TBSP honey
Assemble all cake ingredients, setting the melted chocolate
aside to cool a bit before mixing.
Adjust oven rack to middle position and preheat the oven
to 350° (325° convection). Grease or spray a 9‖ x
3‖deep springform pan or one with a removable bottom
and place a parchment round in the bottom. Wrap the
bottom of the pan with a layer of heavy duty foil (or a
double thickness of regular weight foil) to contain any
batter that may leak from the pan.
In the order given, place all the ingredients except the
water into the bowl of a food processor fitted with the
metal chopping blade. Process until smooth, scraping
down the sides of the bowl as necessary. With the motor
running, add the water, processing until the mixture is
homogeneous. Pour batter into the prepared pan.
Bake the cake about 55 minutes to an hour, or until a
tester comes out clean. Let the cake cool completely in
the tin on a rack. Don’t worry if there’s a crack on the
top of the cake; the glaze will fill flow in and cover it.
Meanwhile, make the glaze. Combine all ingredients in a
glass or metal bowl and set over hot, not boiling water.
Stir occasionally until butter and chocolate have melted
and you can stir the mixture to a smooth consistency.
Allow to cool a little but be sure it’s still fluid when
you’re ready to glaze the cake (just warm it slightly if
necessary).
On your cake platter or stand place four strips of parchment
or waxed paper to form a square outline. This will
protect the plate from icing dribbles. Remove the sides
of the pan, invert the cooled cake onto a rack and remove
the paper liner. Invert cake right side up onto the
prepared serving plate, making sure the bottom edges sit
on the protective paper. Pour the glaze over the center of
the cake, letting it spread over the top run down the
sides. It doesn’t have to cover the sides evenly or completely,
but you can spread and smooth it if you think the
cake will be more attractive that way. Allow glaze to set
at room temperature, scrape off any dribbles from the
paper and then carefully slide out the paper. Serve within
a few hours or store the cake in a covered container at
room temperature for up to two days. Press a piece of
foil or plastic wrap over the exposed interior of the cake
to keep in the moisture. Leftovers can be successfully
frozen.
Remembering September 11, 2001
September 11, 2011, marks the 10 year anniversary of the September 11, 2001 terrorist
attacks that took the lives of nearly 3,000 people. Americans across the nation will
join in commemoration services for our fallen and active duty service men and women
while celebrating our freedom because of their sacrifices.
Here in Sacramento there will be a Tribute in the Park at Capitol Mall from 10am -
3pm between 5th and 7th streets. The Tribute will be a family friendly event where
members of the community are encouraged to gather in honor of all the families whose
time together was cut short. We will honor these families by spending this day with our
loved ones while remembering those who were lost.
