After discussions between the Sacramento Board<br />

<strong>of</strong> Rabbis, congregational leadership, and Federation,<br />

a new model for teen programming began<br />

this fall.<br />

Declining enrollment, especially from eligible<br />

students who live 30 minutes or more from the<br />

Sacramento base, led community leaders to rethink<br />

teen programming and to create a new<br />

model that puts regularly scheduled educational<br />

programming back into the hands <strong>of</strong> individual<br />

synagogues with Federation coordinating quarterly<br />

retreats.<br />

―Yachad had been, for a number <strong>of</strong> years, a<br />

mainstay in our community,‖ said Rabbi Alan<br />

Rabishaw <strong>of</strong> Temple Or Rishon (TOR) in Orangevale,<br />

referring to the weekly communitywide<br />

program <strong>of</strong>fered to teens for the past nine<br />

years. ―While it was good at meeting the needs<br />

<strong>of</strong> a few, it was not meeting the needs <strong>of</strong> kids<br />

New Joint Midrasha Program<br />

Good day, I am Ian Lobel and I am excited and honored to introduce<br />

myself as the Director <strong>of</strong> the new Joint <strong>Mosaic</strong> <strong>Law</strong> and Beth Shalom<br />

Wednesday Midrasha Program. Our two congregations have<br />

vibrant youth communities, and as such we need a vibrant youth<br />

program that will channel their enthusiasm and reward their curiosity.<br />

That is what both congregations are coming together to create,<br />

and that is why I am so excited about this new program.<br />

Jessie Yoshpe Study Group<br />

The Jessie Yoshpe Hadassah Study Group will resume meeting at the KOH<br />

Library Center on Sept. 7 at 9:45 a.m. The group meets the 1st and 3rd<br />

Wednesday mornings each month, barring any holidays. This year the group<br />

will be studying the book "Pray Tell: Hadassah's Guide to Jewish Prayer".<br />

Even if you have studied this text before, you will enjoy it even more the 2nd<br />

time.<br />

The book costs $20.99 for Hadassah members, $29.99 for non-members.<br />

(Hadassah is having a very special membership fee this year only - $100. for a<br />

Life Membership, usually $360.) To order the book, or if you have any questions,<br />

New Senior Group at Or Rishon<br />

Freilache Menschen is the senior group affiliated with Temple Or Rishon. Seniors<br />

meet monthly on the second Wednesday <strong>of</strong> each month for lunch and a<br />

program. September's meeting will be on Wednesday, September 14th at noon<br />

at Temple Or Rishon. We will take you on a virtual trip to wherever you want<br />

on the earth! We will take a look at the places where people grew up and see<br />

what they look like today. This program is open to all Seniors in the community<br />

regardless <strong>of</strong> synagogue affiliation. If you plan to attend, or need more information,<br />

Reflections from the President<br />

Where did the summer go? Wasn’t it<br />

just yesterday that I was just attending<br />

graduation and siyyum ceremonies…or<br />

is that a line from ―Sunrise/Sunset‖?<br />

Many people equate Labor Day with<br />

the end <strong>of</strong> summer or, for those <strong>of</strong> us<br />

with school age children, the beginning<br />

<strong>of</strong> the school year (and with that, I<br />

breathe a sigh <strong>of</strong> relief for having survived<br />

another summer <strong>of</strong> kid-friendly programming at<br />

Camp Caren).<br />

This school year <strong>of</strong>fers a friendly twist for those <strong>of</strong> you<br />

that participated in Yachad, the Federation’s community<br />

high school program for 8th-12th graders. As you may<br />

know, Yachad no longer exists as the Federation acceded<br />

to the will <strong>of</strong> the majority <strong>of</strong> our community’s rabbis and<br />

reverted teen programming back to the synagogues while<br />

retaining quarterly community-wide programming. I was<br />

privileged to be associated with Yachad last year and I<br />

know that many were sad to see it disappear.<br />

This change, to make teen education programming a synagogue-centric<br />

activity, put <strong>Mosaic</strong> <strong>Law</strong> in a difficult position<br />

as Rabbi Taff and Orit Morgenshtern consistently<br />

encouraged both parents and teens to enroll in Yachad.<br />

MLC doesn’t have a dedicated educator to take on teen<br />

education nor does it have the budget to hire someone to<br />

run the program. Another synagogue, <strong>Congregation</strong> Beth<br />

Shalom, was in the same bind. Both Rabbis Taff and Nancy<br />

Wechsler-Azen wanted weekly teen programming and<br />

agreed to combine forces so that MLC and <strong>Congregation</strong><br />

Beth Shalom teens can attend Yachad-like programming<br />

together.<br />

I am pleased to inform you that Ian Lobel, MLC member<br />

and Yachad instructor, has been hired as the new Midrasha<br />

Administrator. (See Ian’s article below) Ian’s enthusiasm,<br />

excitement, energy and knowledge <strong>of</strong> the twisted teen<br />

brain will bring a new and distinctive vibe to both MLC’s<br />

and CBS’s campuses.<br />

You’re probably asking: How can we hire Ian if we don’t<br />

have a budget to run this program? Both synagogues agree<br />

that the program must fund itself – tuition must pay for<br />

Ian’s salary, teachers’ salaries and any supplies needed as<br />

neither synagogue has this as a budgeted item. Tuition is<br />

$360 for the year (same as the Yachad tuition) with classes<br />

meeting weekly beginning after Sukkot. Classes will be<br />

held on Wednesday evenings at Beth Shalom for the first<br />

semester and at <strong>Mosaic</strong> <strong>Law</strong> the second semester. Even<br />

though Midrasha is held weekly and may sound like the<br />

Yachad program, it isn’t. Ian brings his own stamp <strong>of</strong><br />

uniqueness on this effort and it will definitely be somewhere<br />

your kids will want to be!<br />

As Rosh Hashanah approaches, look for Midrasha kick<strong>of</strong>f<br />

activities tied in with USY events. All 8th through 12th<br />

graders are encouraged to enroll! For those <strong>of</strong> you who<br />

know Ian, take a moment to wish him well; talk to your<br />

teens about hanging out with their MLC and CBS friends<br />

for another fun-filled year at a place called Midrasha.<br />

MIDRASHA<br />

As a teacher at Yachad I created classes<br />

which focused on Judaism and the<br />

Jewish perspective in a way that was<br />

entertaining as well as educational,<br />

that focused on provoking laughs as<br />

well as thought. Midrasha will similarly<br />

be about important issues in a<br />

way that is relevant, thoughtprovoking,<br />

and fun. Our goal is to<br />

strengthen Jewish identity through<br />

education and engagement, so that<br />

our teens go from being inquisitive,<br />

bright youth to active, Jewishly committed<br />

adults. As a youth I went<br />

through Midrasha, and my activity<br />

during that time period was a big part<br />

<strong>of</strong> establishing my commitment to<br />

Judaism and Jewish principals such as<br />

tzedakah and tikkun olam, and I am<br />

committed to passing on that experience<br />

to today’s future leaders.<br />

Our curriculum will delve into who<br />

we are, where we have been, what we<br />

believe, social action and much more;<br />

in other words, Judaism as a faith, as<br />

a concept, and as action. The program<br />

will begin in late October,<br />

though we will be holding events to<br />

give the community a chance to connect<br />

with the program before then,<br />

details for those events will be provided<br />

soon. We are currently putting<br />

together an enthusiastic teaching<br />

staff, and would love to hear from<br />

those <strong>of</strong> you who would like to be a<br />

part <strong>of</strong> it. We are also looking for volunteers<br />

who would like to share their<br />

commitment and passion for Judaism,<br />

as part <strong>of</strong> special programs. Anyone<br />

interested in participating please contact<br />

We want to invite<br />

all <strong>of</strong> our youth to be a part <strong>of</strong> Midrasha,<br />

and look forward to the chance to<br />

help our students not only learn about<br />

Judaism, but come to define what it<br />

Education and Youth<br />

September 14th - First Day <strong>of</strong> Religious School 3rd through 7th grade<br />

September 18th - Opening day kick <strong>of</strong>f and BBQ<br />

September 25th - The S<strong>of</strong>er Stom program<br />

Wednesday, September 14th: First Day <strong>of</strong> Religious<br />

School for 3rd – 7th Grade<br />

Sunday, September 18th: First Day <strong>of</strong> Sunday Religious<br />

School (Kindergarten – 6th)/ First Youth Activities Day<br />

for kindergarten through 12th grade. We are kicking <strong>of</strong>f<br />

the 2011-2012 year on Sunday, September 18th.<br />

For the first day <strong>of</strong> Sunday Religious School, morning begins<br />

at 9:00am with a welcome back program in each<br />

classroom. This is an opportunity for students to meet their<br />

teachers and classmates. There will be a BBQ lunch at<br />

11:00am where the students & parents can meet their<br />

Youth Advisor. This will be in the courtyard. This is once<br />

again sponsored by Roger Cochran, Bill Thomas and the<br />

Men’s Club.<br />

Sunday, September 25th: Look for an exciting <strong>High</strong><br />

Holyday program at <strong>Mosaic</strong> <strong>Law</strong>. Students will learn to<br />

write on parchment with feathers just like the S<strong>of</strong>er does.<br />

They will learn about the entire process, from start to finish,<br />

on how a Torah is made.<br />

Dear Parents <strong>of</strong> Kindergarten, 1st & 2nd grade: We are<br />

pleased and excited to be able to <strong>of</strong>fer a Youth Group especially<br />

for K through 2nd grades! It will be called Perachim<br />

(Flowers) and will be led by one <strong>of</strong> our wonderful<br />

Youth Leaders. The enrollment fee is $48 for the entire<br />

year. There will be monthly programs in conjunction with<br />

the existing Youth Groups. We are looking forward to a<br />

fantastic year <strong>of</strong> the kids getting to know each other and<br />

f o r m i n g l i f e - l o n g f r i e n d s h i p s ! C o n t a c t<br />

Register for Religious School and Youth Groups:<br />

Please make sure your registration is completed and payments<br />

are in, so your children will have the necessary supplies<br />

ready to start school.<br />

Shabbat School: We are pleased to continue this exciting<br />

program! Shabbat School is a once-a- month program (in<br />

lieu <strong>of</strong> the following day <strong>of</strong> Sunday school), for students K<br />

through 6th grade.The program will meet in the chapel<br />

from 10am to 12pm on Shabbat. The First Hour will include<br />

a study <strong>of</strong> the Parsha <strong>of</strong> the week with Leslie Kuperstein<br />

and Yamit Shabti. The Second Hour will be a special<br />

learners minyan led by Rabbi Taff. This wonderful program<br />

gives students the opportunity to become familiar<br />

with the Shabbat Service and grow to be part <strong>of</strong> the Shabbat<br />

experience. This is a fun, exciting time <strong>of</strong> learning for<br />

our Religious School students. We are looking forward to<br />

your child’s continued participation in this unique program!<br />

Shalom school students are encouraged to join this<br />

Child Care: Please make Shabbat morning a day for your<br />

family to come to shul. We have wonderful staff and volunteers<br />

to run these programs so that families have the<br />

opportunity to experience Shabbat and become an integral<br />

part <strong>of</strong> the <strong>Mosaic</strong> <strong>Law</strong> family. Please help us to sustain<br />

these programs through your participation. If you are interested<br />

How quickly the summer passed<br />

and we are up and running as fast<br />

as we can to prepare for a new<br />

year.<br />

By now, you have received your<br />

packet for the 2011-2012 Directory.<br />

I hope that you realize how important<br />

this booklet is to you as a member <strong>of</strong> the Sacramento<br />

Jewish community. We try to make sure that you<br />

have easy access to our congregation members, staff and<br />

leadership. It also contains the necessary community information.<br />

I find that I use my book daily and keep it<br />

handy by my phone.<br />

Please be sure to return your member information sheets,<br />

even if you are just filling out the top section. The address,<br />

phone and email information up dates are so necessary<br />

to keep you connected to friends, old and new, and<br />

our entire congregation.<br />

The directory is an important source <strong>of</strong> revenue for Sisterhood.<br />

It allows us to support the education program, as<br />

well as, other synagogue needs. Your greeting to your<br />

fellow congregants creates such good will and helps us to<br />

continue the meaningful work <strong>of</strong> our organization.<br />

How did you enjoy our membership packet this year,<br />

Ladies? As you can see, we are busy bringing you many<br />

opportunities to join us and have some fun. We will need<br />

volunteers, as always, to make our events happen and we<br />

love the connection <strong>of</strong> our ―sisters in the hood.‖ We are<br />

a tight knit and warm group <strong>of</strong> ladies.<br />

Be sure to shop in our gift shop first for all your gift<br />

needs. We are still shopping to bring you the best in Judaica<br />

and alternative (okay, lots <strong>of</strong> sparkle) gifts for<br />

friends and family. If you have a need for some retail<br />

therapy, come to work in the shop and enjoy the goodies<br />

without having to buy everything!<br />

I was so excited when someone came into the shop, said<br />

the ―secret word‖ that I put at the end <strong>of</strong> each article.<br />

That entitled our customer to a 10% discount on their<br />

purchase. Stop by and see our new items and begin to<br />

Bar Mitzvah<br />

Shalom,<br />

<strong>My</strong> name is Nathaniel Spilkin. I will be starting the 8th grade at Harper Jr. <strong>High</strong><br />

School in Davis this fall. I will be called to the Torah as a Bar Mitzvah on Saturday,<br />

September 3, 2011, Parshat Sh<strong>of</strong>tim. <strong>My</strong> favorite subjects are science, social<br />

studies and English. <strong>My</strong> hobbies include basketball, drawing, swimming and judo.<br />

I enjoy spending time with my family, my cat Romeo, and my dog, Gloria. I was<br />

fortunate to travel to Israel for my first time with Rabbi Taff and my family a few<br />

summers ago, and I look forward to returning <strong>of</strong>ten. For my Mitzvah project, I<br />

planned and participated in a Martial Arts for St. Jude Children's Hospital event,<br />

and raised over $1,000. I appreciate everyone who helped<br />

make this possible! I am thankful to have family traveling from San Diego, Florida,<br />

Michigan and Toronto to celebrate my Bar Mitzvah with me. I hope you can be there<br />

too!<br />

Federation knew it had to readdress the needs <strong>of</strong> teens<br />

within the region to ensure kids remained involved in<br />

Jewish education post-B’nai Mitzvah.<br />

―We understand the unfortunate challenges due to pure<br />

geography,‖ said Federation Executive Director Melissa<br />

Chapman. ―Do we know better than synagogues<br />

about what they need? No, we don’t.‖<br />

Quarterly Federation programs will be coordinated by<br />

Rabbi Evon Yakar, from South Lake Tahoe, who has a<br />

successful track record with creating quality teen programs.<br />

Teens are not restricted to attending their synagogue<br />

program; rather, they are welcome at every synagogue.<br />

Rabishaw and his colleagues also are sending the message<br />

that area congregations are not competing with<br />

each other; instead, they are collaborating.<br />

―Do our community resources go into meeting the<br />

needs <strong>of</strong> congregations that are geographically close or<br />

creating programs to fill a wider need,‖ Rabishaw<br />

asked. ―<strong>My</strong> vote is to use those resources to teach more<br />

kids.‖<br />

our December 25th - January 5th<br />

Trip to Israel<br />

On Sunday, December 25, 2011, members <strong>of</strong> <strong>Mosaic</strong><br />

<strong>Law</strong>, relatives, friends, and others throughout our community<br />

will have the opportunity to join Rabbi Reuven<br />

Taff on a memorable 10 day tour <strong>of</strong> Israel.<br />

The trip is for adults and families, first-timers and those<br />

who have already been to Israel. <strong>High</strong>lights <strong>of</strong> the tour<br />

will include staying at deluxe five-star hotels, and an<br />

optional one-day tour <strong>of</strong> the ancient ruins <strong>of</strong> Petra,<br />

Jordan. The itinerary includes a jeep tour <strong>of</strong> the Golan<br />

Heights, including a visit to the mystical city <strong>of</strong> Tzfat, a<br />

tour <strong>of</strong> Massada and a day <strong>of</strong> leisure at the beautiful<br />

southern city <strong>of</strong> Eilat.<br />

Those traveling with Rabbi Taff will fly non-stop from<br />

Los Angeles on Sunday, December 25th. The group will<br />

return to Sacramento on Thursday, January 5, 2012. Opportunities<br />

to extend beyond the tour are available as<br />

well. Look for the complete information (itinerary and<br />

<strong>Congregation</strong> Archives<br />

Thanks to the very generous <strong>of</strong>fer from congregation<br />

member Jeffrey Berger we have a site in which to<br />

sort and catalogue our current collection <strong>of</strong> <strong>Mosaic</strong><br />

<strong>Law</strong> archives—the raw material <strong>of</strong> our synagogue’s<br />

history. We hope to start working on this project by<br />

September 1st <strong>of</strong> this year.<br />

In addition to our current congregational archives,<br />

the shul is actively seeking older documents, newsletters,<br />

photographs, programs, invitations, New<br />

Year Greeting Books, etc., to add to our archives. If<br />

you or other family members have served on the synagogue<br />

board and have agendas or minutes please<br />

consider donating them or copies to our synagogue<br />

archives. And, if you wish to donate any photographs<br />

to the collection, kindly identify the people in<br />

Reserve your <strong>High</strong> Holyday Seats Today!<br />

Reserve a seat for you and your family in the Main Sanctuary for this year’s <strong>High</strong> Holy Days. The reservation will include<br />

seating during all days <strong>of</strong> Rosh Hashanah as well as Yom Kippur. As a member in good standing, seats can be<br />

reserved for a donation <strong>of</strong> $300 per seat.<br />

―Shomrim‖ members can reserve seats for a donation <strong>of</strong> $150 per seat.<br />

All proceeds from these donations will benefit the Building and Grounds maintenance fund.<br />

Artificial Tears…In His Own Words<br />

Some <strong>of</strong> you are probably quite younger than I and don’t<br />

have to apply artificial tears to help moisturize your dry<br />

and irritated eyes. When you get older and reach my age<br />

<strong>of</strong> a still relatively young 77 years, the tear glands seem to<br />

dry up, requiring that extra little bit <strong>of</strong> artificial moisture<br />

to help them function better. This is essential to vision.<br />

Maybe over the years, I might have cried one too many<br />

times—a symptom <strong>of</strong> far too many sad circumstances during<br />

my life span. I have just used up the power to release<br />

my tears naturally. At times, however, I have shed my<br />

tears inwardly to avoid showing any emotion, which I<br />

thought would be interpreted wrongly.<br />

Wouldn’t it be wonderful if we were able to shed our tears<br />

as an expression <strong>of</strong> the good that flows through our lives,<br />

rather than just during those troubling and sorrowful moments?<br />

I smile more <strong>of</strong>ten then I did in the past, having learned to<br />

take more responsibility for my choices and past actions. I<br />

recognize that only I, and no one else, can decide my fate,<br />

except perhaps for the One that had my destiny in mind all<br />

the time. That One was, and still is, the infinite light <strong>of</strong> the<br />

Source <strong>of</strong> the Creator. It would have been nice if G-d<br />

would have let me know a little earlier in my life’s journey<br />

what His or Her intentions were for me…perhaps He<br />

or She could have provided some direction. Yet, I have no<br />

regrets about the pathways that I have followed.<br />

For those that know a little about me, I have come to believe<br />

that the greatest value in the world is love. It is the<br />

chief ingredient for a happy life, and I thank G-d that I<br />

have been blessed with so much love in my family. <strong>My</strong><br />

first and foremost love is for my wife Rita. The other is<br />

for my newly rekindled relationship with G-d. I have not<br />

always followed all the rules and regulations that one is<br />

supposed to pursue during the course <strong>of</strong> one’s life, but I<br />

can assure you I am a good, worthy person. I am also sure<br />

that our G-d understands me and, despite some <strong>of</strong> my<br />

transgressions, will always inspire me to do better, encourage<br />

actions that incite laughter, and foment the gift <strong>of</strong><br />

love.<br />

There is a saying in our Talmud: ―Who shares in the community’s<br />

troubles will also share in its consolation‖<br />

(Ta’anit 11a).<br />

Our synagogue <strong>of</strong>fers short-term counseling with a volunteer<br />

pr<strong>of</strong>essional licensed therapist. Rande Zaretsky, a licensed<br />

Marriage and Family Therapist (MFT) has <strong>of</strong>fered<br />

her services as a volunteer to the members <strong>of</strong> our congregation.<br />

Counseling is a process <strong>of</strong> confidential discussions with a<br />

trained licensed therapist. With the support <strong>of</strong> an objective<br />

therapist you can identify and develop alternative coping<br />

skills. Appointments are open to children, teens, adults<br />

and couples <strong>of</strong> all ages. The therapist will have private<br />

<strong>of</strong>fice hours on Tuesdays, hours to be arranged. Alternative<br />

arrangements may also be available.<br />

Cooking with Evie Lieb<br />

Savory and Sweet Treats for the New Year<br />

We have almost until the end <strong>of</strong> September to prepare for Rosh Hashanah this year, although as<br />

Rabbi Taff always says, the holidays aren’t late—they are always on time!<br />

For this year’s celebratory meals I am sharing two dishes to serve before it’s time for dessert<br />

(both red, coincidentally) and a new twist on honeycake.<br />

Beets are served around the world for the holiday because they are naturally sweet. In addition, the Hebrew word for<br />

beet, ―silka‖ sounds like ―siluk‖, the word for ―removal‖—expressing hope that our adversaries will disappear in the<br />

year ahead. There’s no question about why honey is a favored ingredient for <strong>High</strong> Holiday meals and for dipping apples<br />

and yom tov challah.<br />

While visiting Utah on our cross-country drive this summer, Larry and I learned that the state emblem is the beehive,<br />

chosen because it represents industry and perseverance. The big beehive that decorates the front <strong>of</strong> the Utah capitol<br />

building will now come to mind when I am (industriously) adding honey and sweetness to holiday dishes.<br />

I have been looking for unsalted parve margarine to use in baking ever since the Fleischmann’s product disappeared<br />

locally quite a long time ago. Recently, while shopping for ingredients for my recipe testing, I spotted the Saffola version<br />

at Bel Air Market. This ―new‖ discovery will surely be appearing in some future baking recipes in this column. Stay<br />

tuned!<br />

Zhanna’s Beets<br />

This dish has an interesting history. I requested it from<br />

Zhanna Elkinbard, one <strong>of</strong> the first Soviet Jews to settle in<br />

Sacramento in the wave that came in the’70s. While the<br />

Elkinbards lived here we enjoyed many tasty delicacies<br />

that reflected their culinary roots. Since it features beets,<br />

this is quite literally such a recipe! Perfect for adding colorful<br />

sweetness to a holiday menu from Rosh Hashanah<br />

through Sukkot. Serve as a side dish or as an hors<br />

d’oeuvre with crostini or corn chips--not very Russian but<br />

a very tasty match! Makes about 2 cups.<br />

1 16-oz can beets, drained and coarsely grated OR<br />

1 ½ C cooked, grated fresh beets, maybe 2 medium<br />

beets *<br />

½ C dill pickle, cut in ¼‖ dice (about 3 medium pickles)<br />

½ C mayonnaise (can use light mayo) or Miracle Whip<br />

(Zhanna’s preference, not mine)<br />

Fresh-squeezed lemon juice to taste<br />

Combine all ingredients in a bowl and chill.<br />

*To roast beets, place them in an<br />

ovenpro<strong>of</strong> casserole, add ¼‖ <strong>of</strong><br />

water and cover tightly. Roast at<br />

375° until the sharp point <strong>of</strong> a paring<br />

knife penetrates each beet easily.<br />

(Time will depend on the size <strong>of</strong><br />

the beets, probably 35-50 minutes.)<br />

Spicy Red Cabbage<br />

Here’s a lovely accompaniment for your holiday brisket. I<br />

adapted this from the Plugras Butter website, which no<br />

longer <strong>of</strong>fers it. You can substitute 2 8-oz. packages <strong>of</strong><br />

shredded red cabbage to streamline your preparation. Of<br />

course you can use butter if you aren’t serving it with<br />

meat. Serves 6<br />

1 small head red cabbage<br />

2/3 C water<br />

6 TBSP parve unsalted margarine<br />

2 Granny Smith apples,<br />

peeled, cored and sliced about ¼‖ thick<br />

4 whole cloves<br />

1 tsp salt<br />

2 TBSP brown sugar OR scant 2 TBSP honey<br />

2 TBSP fresh lemon juice<br />

1 TBSP balsamic vinegar, or to taste<br />

Shred the cabbage. Place it in a deep skillet with the water,<br />

2 TBSP <strong>of</strong> the margarine, the apples, cloves and salt.<br />

Cover and simmer until cabbage is tender but not mushy.<br />

(Start checking after 20 minutes.) Add rest <strong>of</strong> the margarine,<br />

brown sugar or honey and lemon juice. Cook a few<br />

more minutes to blend flavors, then add vinegar and adjust<br />

other seasoning to taste. Serve hot.<br />

This may be prepared a day ahead and refrigerated. It reheats<br />

well in the microwave.<br />

Chocolate Honey Bee Cake<br />

This cake is adapted from a recipe presented by Nigella<br />

<strong>Law</strong>son on THE COOKING CHANNEL; the glaze recipe<br />

was developed by chocolate maven Alice Medrich.<br />

Note the caveat about leaking batter. In testing this recipe<br />

twice, the leakage only happened once, but the<br />

―ounce <strong>of</strong> prevention‖ is surely the route to follow-- just<br />

in case. 12 or more servings<br />

Cake:<br />

1 1/3 cups s<strong>of</strong>t light brown sugar<br />

1 C (2 sticks) unsalted butter, s<strong>of</strong>tened<br />

2 eggs<br />

1 tsp vanilla extract<br />

½ C honey<br />

1 1/2 C all-purpose flour<br />

1 tsp baking soda<br />

Scant ½ tsp salt<br />

1 TBSP cocoa<br />

(shake through a strainer into processor)<br />

4 oz semisweet chocolate broken into<br />

pieces and melted over hot water<br />

1 C boiling or very hot water<br />

Chocolate Honey Glaze:<br />

6 oz bittersweet chocolate, cut up<br />

4 oz (l stick) unsalted butter<br />

3 TBSP honey<br />

Assemble all cake ingredients, setting the melted chocolate<br />

aside to cool a bit before mixing.<br />

Adjust oven rack to middle position and preheat the oven<br />

to 350° (325° convection). Grease or spray a 9‖ x<br />

3‖deep springform pan or one with a removable bottom<br />

and place a parchment round in the bottom. Wrap the<br />

bottom <strong>of</strong> the pan with a layer <strong>of</strong> heavy duty foil (or a<br />

double thickness <strong>of</strong> regular weight foil) to contain any<br />

batter that may leak from the pan.<br />

In the order given, place all the ingredients except the<br />

water into the bowl <strong>of</strong> a food processor fitted with the<br />

metal chopping blade. Process until smooth, scraping<br />

down the sides <strong>of</strong> the bowl as necessary. With the motor<br />

running, add the water, processing until the mixture is<br />

homogeneous. Pour batter into the prepared pan.<br />

Bake the cake about 55 minutes to an hour, or until a<br />

tester comes out clean. Let the cake cool completely in<br />

the tin on a rack. Don’t worry if there’s a crack on the<br />

top <strong>of</strong> the cake; the glaze will fill flow in and cover it.<br />

Meanwhile, make the glaze. Combine all ingredients in a<br />

glass or metal bowl and set over hot, not boiling water.<br />

Stir occasionally until butter and chocolate have melted<br />

and you can stir the mixture to a smooth consistency.<br />

Allow to cool a little but be sure it’s still fluid when<br />

you’re ready to glaze the cake (just warm it slightly if<br />

necessary).<br />

On your cake platter or stand place four strips <strong>of</strong> parchment<br />

or waxed paper to form a square outline. This will<br />

protect the plate from icing dribbles. Remove the sides<br />

<strong>of</strong> the pan, invert the cooled cake onto a rack and remove<br />

the paper liner. Invert cake right side up onto the<br />

prepared serving plate, making sure the bottom edges sit<br />

on the protective paper. Pour the glaze over the center <strong>of</strong><br />

the cake, letting it spread over the top run down the<br />

sides. It doesn’t have to cover the sides evenly or completely,<br />

but you can spread and smooth it if you think the<br />

cake will be more attractive that way. Allow glaze to set<br />

at room temperature, scrape <strong>of</strong>f any dribbles from the<br />

paper and then carefully slide out the paper. Serve within<br />

a few hours or store the cake in a covered container at<br />

room temperature for up to two days. Press a piece <strong>of</strong><br />

foil or plastic wrap over the exposed interior <strong>of</strong> the cake<br />

to keep in the moisture. Leftovers can be successfully<br />

frozen.<br />

Remembering September 11, 2001<br />

September 11, 2011, marks the 10 year anniversary <strong>of</strong> the September 11, 2001 terrorist<br />

attacks that took the lives <strong>of</strong> nearly 3,000 people. Americans across the nation will<br />

join in commemoration services for our fallen and active duty service men and women<br />

while celebrating our freedom because <strong>of</strong> their sacrifices.<br />

Here in Sacramento there will be a Tribute in the Park at Capitol Mall from 10am -<br />

3pm between 5th and 7th streets. The Tribute will be a family friendly event where<br />

members <strong>of</strong> the community are encouraged to gather in honor <strong>of</strong> all the families whose<br />

time together was cut short. We will honor these families by spending this day with our<br />

loved ones while remembering those who were lost.<br />
