Since converting to acalendar-based fiscal year, our budgeting has been madesomewhat easier since the bulk of our cash flow occurs inDecember. To that end, we have seen the website updated,American Express credit cards are now accepted and wehave online donations. In the next few weeks, you willalso be able to PAY YOUR DUES ONLINE. So whenthe mood strikes at 2am and you don’t want to wait forbusiness hours, hop online and make a payment on thesecure website.While MLC makes an effort to standardize the dues structure,in truth, there are a myriad of dues levels to accommodatecongregants’ financial status. We don’t requirethat you pay your dues in one lump nor do we insist thatyou adhere to a strict payment plan. Your duesaccount for 80% of the operating budget, including payroll. Paying dueskeeps the lights on (literally), the air conditioning and heat running and toiletpaper in the restrooms. Youhave seen her leadership with Hadassah, AIPAC, ShalomSchool and that list does not include her involvement outsideof the Jewish Community. Shira and her husband,Don, have been long-time Mosaic Law members. Theirchildren, Jonathan, Miriam and Adam, are familiar faces inall of the youth activities. They are dedicated members ofour community. When Shira agreed to join the women’sNetwork of our synagogue, I was so excited to welcomethe assistance of such a gifted and capable woman.Vice President, Events - Lorraine KatzLorraine is a long-term member of our congregation. As aresident of Lincoln and having a full-time job, Lorraine hadto put her desire to volunteer on the back burner until shehad a lighter schedule. We became acquainted through theperiod of mourning for her husband, Jules, when illnesstook him way too early. As we kept in touch through themany months after, Lorraine became a dear friend. Lorraine’sson, Jeffery, graduated from college, went on topursue his career and soon Lorraine found the space in herlife to join our volunteer team. Last year, she served amember-at-large and you saw her smiling face in the giftshop as well as preparing for our main events. It is a pleasureto have her accept the leadership of our exciting eventsthis year.Financial Secretary - Jody WickhamThe last two years, Jody has served as our event chair. Aftermodeling in our Torah Fund fashion show several yearsago, Jody discovered that the Women’s Network was aplace where she would enjoy the friendship of peers andactively volunteer with her few limited hours. Jody is employedfull time as an executive in finance and is the lovingmom of her daughter Ally. When Jody accepts a job, it isdone with every ounce of dedication one could hope tohave on any project. She does all the accounting for ourshop and works the retail side as often as needed. She wasthe force that moved our events last year and kept usworking on our timelines. Now, her new job with us is theperfect place. We can stay on budget and keep our accountingin good order.Recording Secretary - Sheri PearlI am amused in a way to introduce someone that is so wellknown to our Mosaic Law Family. Sheri is the daughter ofArlene and Elliot and the sister of Robin. Need I say more,this is a family that was born with the volunteer gene. Nosooner did Sheri get settled in Sacramento that she made avisit to a Board meeting to see what the Women’s Networkwas doing. As a grant writer and volunteer leader extraordinaire,I couldn’t believe that when I asked her to participate,she would give me that beautiful smile of hers andjust say yes. I was thunder struck at my good fortune. AlthoughSheri fills the job of recording secretary, she bringsso much knowledge and talent to us. We will have a chanceto learn and grow from her participation.Correspondence Secretary - Debra SandersThat’s right, it’s our very beautiful “Raffle Queen” that hasaccepted the position of our “Sunshine Committee.” Howappropriate! Debbie served as our Membership Chair forthe last two years. She joined us after the Torah Fund fashionshow and immediately stepped up to a leadership positionwith us. Debbie’s warmth, generosity and humor tookus through some moments when we weren’t so sure thatwe could succeed in all that we wanted to take on. Debbiehas been a long-time member of Mosaic Law and many ofyou know her children, Scott and Zoe. While Debbie hasspectacular ideas for us and tries to participate in everything,she has some health issues that prevent her from alwaysbeing in attendance. Therefore, she graciously acceptedthe job of correspondence since she can stay intouch with our ladies on her own time frame. We are sograteful because we would not want to lose her vision andcreativity, not to mention, how much she makes us laugh!Treasurer - Melanie SeigelSeems a bit silly to be introducing our readers to Melanie,the woman who has held the office of Treasurer for longerthan anyone can even remember. We were trying to countthe years at our last meeting. Melanie has filled most everyrole for Sisterhood, now the Women’s Network. I don’tthink I need to remind anyone of her devotion to the bettermentof our synagogue and the women’s group. Melanie,Malcolm, their children and grandchildren are representativeof all that makes Mosaic Law Congregation the warmand connected community that we all enjoy. Melanie’scalm and reassuring contribution to our success shows atevery meeting. Her length of experience keeps us in touchwith why we exist and all that is wonderful about being apart of connection and friendship through our membership.(Continued on page 6)Page 5

The ScrollCooking with Evie LiebA Sweet Start for the New YearThis year September encompassesall the major fall Jewishholidays and my recipe for thismonth would be a good choicefor any of them—except Yom Kippur, of course! Servethis unique honey cake for Rosh Hashanah or to break theFast. It’s a great choice for Sukkot, as it also celebrates thefall apple harvest and will keep well for meals over severaldays of the holiday. In fact, you really don’t need a holidayto justify making this dessert; it’s fun to prepare andwould turn any Jewish meal or snack into a celebration! Ithink that the cake could be made ahead and frozen, butmy Scroll deadline did not allow time for me to verify this.Honey-Almond Crunch CakeThis is an adaptation of a recipe by pastry chef Gale Gandin her book Butter Sugar Flour Eggs. Like me, she did notlike the traditional dark, heavy honey cake served for Jewishcelebrations so she created this lighter version with atopping reminiscent of taiglach, another old-fashioneddessert. This is best prepared at least a day ahead to allowthe flavors to mellow. I recommend using a good supermarkethoney with somewhat strong flavor; a delicate onewill not add the traditional honey taste when baked intothe cake. Be sure to verify that your pan holds at least 6cups; the batter will overflow in a smaller pan.Softened unsalted butter for greasing pan3 TBSP + 4 TBSP unsalted butter, melted¼ C + ¾ C light brown sugar, packed2 TBSP +½ C honey (clover honey is a good choice)½ C sliced almonds, toasted (T.J.’s sells them alreadytoasted!)1 egg1 C buttermilk2 C all-purpose flour1 tsp baking powder½ tsp baking soda½ tsp saltPreheat the oven to 350°. Coat a 6-cup loaf pan very generouslywith softened butter.Pour 3T of the melted butterinto the bottom of the pan; tiltpan to coat the bottom evenly.Evenly sprinkle in the ¼ C ofbrown sugar. Drizzle in the 2tablespoons of honey andsprinkle the almonds evenlyover the bottom.I would very much appreciate hearing from Scroll readersabout my monthly column. Do you read it regularly? Doyou ever try the recipes? Since the Scroll has gone to PDFform sent by email, comments and responses to my columnhave practically disappeared. I truly enjoy the research,recipe testing and writing the articles, but if theyare not utilized (or at least read) by Mosaic Law congregants,then they do not fulfill their purpose. Please dropme a note at our email address in the MLC directory andshare your thoughts about this.In a large bowl, whisk the egg. Add the remaining ¾ Cbrown sugar and whisk to combine. Add the 4 TBSP meltedbutter and ½ C honey and mix. Whisk in the buttermilk.In another large bowl, combine the flour, baking powder,baking soda, and salt. Whisk to combine them well, thenadd them to the liquid mixture in three batches, mixinggently until smooth.Pour the batter into the prepared pan. Bake until a testerinserted into the middle of the cake comes out dry andalmost clean (a few crumbs are okay) 50 to 60 minutes.Keep a close eye on the cake to avoid over-baking it.Let cool in the pan for only 5minutes, then turn out onto awire rack and let cool until thetopping is firm. If some toppingsticks to the pan, gently scrape itout and “paste” it back on thebare spots of the cake. If the topping left in the pan hardenstoo much, place it in the turned-off oven for a coupleof minutes, it will soften and become much more manageable.Cool the cake completely before storing in a box or wrappingloosely in foil. When ready to serve, use a serratedknife and cut with a sawing motion to avoid shattering thepretty crust. Offer with apple compote for a real RoshHashanah treat.Page 8


The ScrollApple Compote for Honey-AlmondCrunch CakeI decided that the cake needed something to moisten it alittle and also to cut the sweetness of the almond crunch.On a whim I invented this cooked chunky “sauce”, choosingtwo Golden Delicious, one Fuji and one Granny Smithapple from the supermarket display. They did not all cookup to the same degree of tenderness, but that turned out tobe OK!4 medium apples (about 1 ½ lb, one variety or mixed),peeled, quartered, cored and cut into ½” chunks2 TBSP lemon juice¼ C light brown sugar½ tsp cinnamon½ tsp ground coriander (optional)1 ½ tsp or more honeyIn a large bowl toss the appleswith the lemon juice;transfer to a 10” skillet orwide saucepan with a heavybottom. Mix the brown sugarwith the cinnamon and corianderand add to the apples,mixing gently.Toss and stir over medium high heat until you hear juicessizzling. Reduce heat to lowand cover. Stir occasionallyuntil apple pieces are cookedthrough but still hold theirshape, about 5 or 6 minutes(Ideally the ultimate texture ofthe compote should be a nicecomplement to the verycrunchy almond topping and the soft cake.) Uncover thepan and raise the heat to high. Toss and stir constantlywhile juices thicken and almost disappear. Remove fromheat and stir in honey to taste. Adjust the seasoning withmore spice and/or lemon juice to taste.Allow compote to cool, then store in covered container inthe fridge. More juices will accumulate as compote coolsand chills. Bring to room temperature and stir in the juicesfor serving with the cake.Mosaic Law Counseling CenterThere is a saying in our Talmud: “Who shares in the community’stroubles will also share in its consolation”(Ta’anit 11a).Our synagogue offers short-term counseling with a volunteerprofessional licensed therapist. Rande Zaretsky, alicensed Marriage and Family Therapist (MFT), has offeredher services to the members of our congregation.Counseling is a process of confidential discussions with atrained licensed therapist. With the support of an objectivetherapist you can identify and develop alternative copingskills. Appointments are open to children, teens, adultsand couples of all ages. Rande will have private officehours on Tuesdays, hours to be arranged. Alternative arrangementsmay also be available.A fee to the synagogue of $36 is to be paid at eachsession. No one will be turned away because of inability toafford the fee, but everyone will be expected to pay something.To schedule a confidential appointment, please call (916)488-1166 and upon hearing the recording, immediatelyenter extension 25 to leave a message.
