1/4 cup raw almonds<br />
1/2 cup pistachios<br />
1 tablespoon butter, room<br />
temperature<br />
1 / 2 t e a s p o o n g r o u n d<br />
cinnamon<br />
1 tablespoon sugar<br />
1/4 cup honey, divided<br />
12 sheets phyllo dough<br />
1. Preheat oven to 325 degrees F.<br />
S p r a y a c o o k i e s h e e t w i t h b u t t e r<br />
f l a v o r e d s p r a y .<br />
2. In a food processor, combine<br />
a l m o n d s a n d p i s t a c h i o s . P u l s e t o<br />
c o a r s e l y c h o p . A d d b u t t e r , c i n n a m o n ,<br />
a n d s u g a r a n d p u l s e t o c o m b i n e .<br />
Transfer to a bowl and set aside.<br />
3 . P l a c e 1 s h e e t o f p h y l l o o n a f l a t w o r k<br />
surface, short side facing you. Spray<br />
with butter flavored spray. Repeat with<br />
second layer. Spread 1/3 of nut mixture<br />
over the dough, leaving a 1-inch margin<br />
at the top and bottom.<br />
4. Drizzle with 2 tablespoons honey.<br />
5 . C o v e r w i t h a l a y e r o f p h y l l o , s p r a y<br />
with butter-flavored spray. Repeat with<br />
second layer of phyllo. Spray with<br />
butter-flavored spray.<br />
6 . S t a r t i n g f r o m t h e b o t t o m , r o l l u p i n t o<br />
a thin cylinder (like a cigar) to the top.<br />
7. Seam-side down, cut crossways into<br />
5 sections. Transfer to baking sheet,<br />
seam side down. Spray with butterflavored<br />
spray.<br />
8. Repeat with second and third batch.<br />
9. Bake until crust is evenly golden, 25<br />
to 30 minutes. Remove from oven,<br />

serve.
