Sweet Potato Hash with a Fried Egg<br />

Ingredients:<br />

2 Eggs<br />

1 Large Sweet Potato<br />

1/2 Cup Chopped Red Onion<br />

4 Ounces Hot Breakfast Sausage<br />

1/2 t Garlic Powder<br />

1/2 t Onion Powder<br />

1 t Smoked Paprika<br />

1 T Butter<br />

Chives or Scallions for Garnish<br />

Directions:<br />

-Dice Sweet Potato into 1/4'' pieces.<br />

-Crumble sausage.<br />

-Saute onion, sausage and sweet potato over medium heat for 20 minutes or until cooked through but not too soft.<br />

-Melt butter in a saute pan over medium heat. Cook the eggs until set then flip for one more minute. You want them<br />

slightly soft so the yolk will break and become a sauce for the hash.<br />

-Place hash in a shallow bowl, set one egg on top and garnish with chives or scallions.<br />

Olive Oil Pancakes<br />

• 1bar of dark chocolate shaved<br />

Ingredients:<br />

• Flaky sea salt<br />

• 1.5cups all purpose flour<br />

• Good extra virgin olive oil<br />

• 1/2cup cornstarch<br />

• Orange zest<br />

• 3tablespoons sugar<br />

• Extra Chocolate shavings<br />

• 2teaspoons baking powder<br />

• 1/2teaspoon baking soda<br />

• 1/2teaspoon kosher salt<br />

• 2cups buttermilk<br />

From<br />

• 3tablespoons extra virgin olive oil<br />

• 1large egg, beaten a little<br />
