<strong>Innkeeping</strong> <strong>NOW</strong> is a most appropriate title for PAII’s quarterly magazine. We’re all<br />

involved in an aspect of <strong>Innkeeping</strong>, whether as an innkeepers, aspiring innkeepers, interim<br />

innkeepers or as industry partners – the individuals & businesses who provide the services<br />

and products for managing the inn and pampering the guests. And as for the <strong>NOW</strong> – you’ll<br />

find timely articles on the topics that can positively or negatively affect your business now.<br />

Since I joined the PAII team March 1, <strong>2015</strong>, we’ve been in weekly communication with you<br />

by News You Can Use, Member’s Monthly Innfo and with this issue of <strong>Innkeeping</strong> <strong>NOW</strong>.<br />

Are we providing news you can use? I welcome your comments & suggestions on which<br />

topics and trends you want to read about; you can reach me at kris@paii.org.<br />

Both a topic (sometimes hot) and a trend describes Airbnb / the Share Economy / Short Term Rentals – these generate<br />

concern on many different levels including licensing, taxing, insurance, affordable housing and neighborhood zoning<br />

integrity. PAII Board member Janice DeLerno observed “what affects one of us affects all of us”. So, it makes sense for<br />

us here at PAII to not only share our information and advocacy efforts, but to make these reports prominent and easily<br />

accessible - because what benefits one of us may benefit all of us! News You Can Use will consistently lead with an<br />

update on Airbnb / Share Economy / Short Term Rentals. Recently, PAII Board member Jack North attended the<br />

FTC “The Sharing Economy” meeting in Washington D. C., met with AH&LA (American Hotel & Lodging<br />

Association), and met with legislators, advocating a ‘level playing field’ for all lodging properties – watch for his reports.<br />

So that you can conveniently get the information when you need it, the paii.org website Resources tab will have a topic<br />

dedicated to this – we’ll confirm for you when it is live.<br />

<strong>Innkeeping</strong> <strong>NOW</strong> is an apt descriptor for our webinar series with timely topics such as social media strategies,<br />

attracting millennials (and a separate webinar notes that millennials are more likely to post a review on Yelp over<br />

TripAdvisor), tax tips, yield management, and more. PAII’s webinar series is a ‘two-way-street’ by familiarizing innkeepers<br />

with the industry partners whose services just may be a good fit, and by familiarizing industry partners with the<br />

services desired by innkeepers.<br />

You have likely noticed that the webinar series is for PAII members only – and we are pleased to announce that on July<br />

1, <strong>2015</strong>, PAII membership will become even more affordable! The Professional Innkeeper membership will become<br />

$219 annually, the Aspiring Innkeeper membership will become $219 annually, and a new ‘small business’ Vendor<br />

membership will debut at $199. Details are on the paii.org website…and elsewhere in this magazine you’ll find a ‘why<br />

join PAII’ page.<br />

And on a final note … let’s all plan to meet in Austin TX for the <strong>Innkeeping</strong> Conference & Trade Show Janu-<br />

ary 10-14, 14, 2016. What’s new and exciting this year? PAII and HMS (Hospitality Marketing Summit) have entered<br />

into a partnership for this event! HMS, with principals Acorn Internet Services and White Stone Market-<br />

ing, will open the conference Monday ,January 11 with their top-notch educational program and continue with<br />

sessions thru Tuesday.<br />

Garlic FAQs and Some Tips<br />

WHAT? Garlic for breakfast?<br />

Salsas, frittatas, vegetable fruit casseroles, omelets, in fact<br />

many innkeepers add garlic to savory breakfast dishes.<br />

What is the best way to store garlic? In a cool place, away from direct<br />

sunlight and with good air circulation. Garlic prefers to have a<br />

stable temperature and humidity, as fluctuation will produce condensation<br />

and cause rot or sprouting. Ideally, the combination of temperature<br />

plus humidity should equal about 60 degrees at 40% humidity.<br />

Are there dangers associated with garlic? Yes, it can cause botulism<br />

if incorrectly stored. Its sulphurous nature makes it a prime breeding<br />

ground for botulism (clostridium botulinum). Botulism is a nasty toxin that can result in major stomach illness sometimes<br />

leading to death. The worst danger from botulism comes if raw garlic is stored in oil at room temperature - or even for too<br />

long in the refrigerator. Never store raw garlic in oil at room temperature.<br />

What’s the best way to peel garlic? It’s so sticky! Separate the individual cloves and place in a bowl, run hot water over the<br />

cloves and let them soak for about 5 minutes. You can then remove the peel with a knife, crush with the edge of a knife blade<br />

or with a meat pounder. Soaking them in hot water removes the sticky residue.<br />

Can you freeze garlic? Yes, finely chop the cloves either by hand or in a food processor. Cover with pure olive oil and wrap<br />

well. This is the best way to store fresh chopped garlic as well for up to a week in the refrigerator. If freezing, spread garlic<br />

out on a sheet pan, this way chunks can easily be removed. Garlic does pick up freezer orders, so wrap with extra layers.<br />

Frozen garlic keeps well for up to 3 months in the freezer without losing it’s flavor.

2 Eggs<br />

1 Large Sweet Potato<br />

1/2 Cup Chopped Red Onion<br />

4 Ounces Hot Breakfast Sausage<br />

1/2 t Garlic Powder<br />

1/2 t Onion Powder<br />

1 t Smoked Paprika<br />

Directions:<br />

-Dice Sweet Potato into 1/4'' pieces.<br />

-Crumble sausage.<br />

-Saute onion, sausage and sweet potato over medium heat for 20 minutes or until cooked through but not too soft.<br />

-Melt butter in a saute pan over medium heat. Cook the eggs until set then flip for one more minute. You want them<br />

slightly soft so the yolk will break and become a sauce for the hash.<br />

-Place hash in a shallow bowl, set one egg on top and garnish with chives or scallions.<br />

Olive Oil Pancakes<br />

• 1bar of dark chocolate shaved<br />

Ingredients:<br />

• Flaky sea salt<br />

• 1.5cups all purpose flour<br />

• Good extra virgin olive oil<br />

• 1/2cup cornstarch<br />

• Orange zest<br />

• 3tablespoons sugar<br />

• Extra Chocolate shavings<br />

• 2teaspoons baking powder<br />

• 1/2teaspoon baking soda<br />

• 1/2teaspoon kosher salt<br />

• 2cups buttermilk<br />

The Heartstone Inn’s Peanut Butter and Chocolate Chip Pancakes<br />

Ingredients:<br />

1 cup pancake mix, such as Bisquick or UpCountry Organics<br />

1 egg<br />

½ cup creamy peanut butter<br />

1 cup milk<br />

½ teaspoon vanilla<br />

1 cup semisweet chocolate chips (mini chips work nicely)<br />

1 Tablespoon unsalted butter<br />

Maple syrup<br />

Directions:<br />

Heat oven to 200 degrees. Stir the pancake mix, egg, peanut<br />

butter, milk, vanilla and chocolate chips together in a<br />

large bowl. Melt about 1 teaspoon butter in large nonstick<br />

skillet over medium high heat. Pour ¼ cup of batter on<br />

the heated skillet, three to four at a time, and cook until<br />

the tops bubble and the edges begin to crisp. Turn and<br />

continue to cook for about 2 more minutes, until both<br />

sides are golden. Transfer pancakes to a cookie sheet and<br />

keep warm in oven until ready to serve. Repeat with remaining butter and batter. Serve with maple syrup.<br />

Makes about 12 pancakes.<br />

Directions:<br />

1. In a medium bowl, whisk together the flour, cornstarch, sugar, baking powder, baking soda, and salt. In a<br />

small bowl, combine the buttermilk, 3 tablespoons of olive oil, and the beaten egg. Pour the liquid<br />

ingredients into the dry ingredients and whisk a few times, just till combined, and some lumps remain.<br />

Allow the batter to rest 30 minutes.<br />

2. Heat a large skillet over medium-low heat. Spray pan and heat until shimmery. Pour 1/2 cup of batter<br />

into the center of the pan and immediately scatter a generous tablespoon of chocolate shavings over the<br />

pancake, then top that with a small pinch of flaky sea salt. Cook 1-2 minutes, until hollow bubbles<br />

appear around the top of the pancake and the edge looks good and crispy. Flip, and cook about 1 minute<br />

more, or until the bottom is evenly browned. Repeat this step, one pancake at a time, until all the batter<br />

has been used.<br />

3. Serve the pancakes with a drizzle of good olive oil, some freshly grated orange zest, sprinkle of sea salt<br />

and chocolate shavings.<br />

It's a great day at the Cottage!


The Pros and Cons of Offering Pet Friendly Lodging<br />

Pros<br />

• Targets a niche demographic, usually people with double incomes, no kids or retired.<br />

• Offers something other area lodging may not, especially if you decide to allow larger<br />

dog breeds.<br />

• Pet friendly guests are year around, unlike tourism niches.<br />

Recommendations<br />

Cons<br />

• Other guests may be allergic or be turned off by the nearness<br />

of having pet friendly rooms.<br />

• Potential damage to rooms/property<br />

• Extra cleaning needed for rooms and property<br />

• Potential liability biting, issues with other dogs, barking,<br />

fleas<br />

• Pet odors<br />

• Ground-floor rooms, with separate entrances if possible.<br />

• Wood or tile/easy to clean floors.<br />

• In Room Amenities for the pets, dog beds, custom bowls etc.<br />

• A set aside area specifically for dogs to relieve themselves with waste bags and a disposal can,<br />

gravel or rock areas are great for this.<br />

• Develop relationships with your local vets and pet stores.<br />

• Develop a pet waiver and have it clearly state dos and don’t for guests and dog guests, including<br />

fees for damages.<br />

• Decide if you want a weight limit on dogs and/or a limit on how many.<br />

• Decide if you are going to accept any other types of animals.<br />

• In your pet policies, make it a requirement that pets be spayed/neutered.<br />

• Put together lists (and advertise online) of things to do and places to go for guests with their pets,<br />

as well area kennels and dog sitters.<br />

• Have a list of local vets and emergency services in the area, both on the website and in room.<br />

Dog Amenities and Suggestions<br />

• Plastic or metal water bowls with inns name, plastic ones can be gifts.<br />

• Easily cleanable dog beds.<br />

• Extra paper towels for guests.<br />

• Dog towels (if you have a rain storm and the dogs have muddy feet have some towels “for” the<br />

dogs so they are not using your good ones.<br />

• Consider having your pet fee refundable at the end of the stay, but mark-up pet friendly rooms.<br />

• Consider developing some specials, amenities and packages just for pet friendly guests.<br />

***Many people traveling with their pets bring their own bedding and toys with them, as well as<br />

food, but extras are always welcome
