Cognac, Calvados,Armagnac and GrappaCognac, named after the town ofCognac in France,is a brandy, which is produced inthe region surrounding the town.It must be made from at least 90percent Ugni Blanc, FolleBlanche, or Colombard grapes.The rest of the cognac can consistof ten selected grapes. However,most cognac is made from UgniBlanc only. It must be distilledtwice in copper pot stills andaged at least 2 and 1/2 years inoak barrels in order to be calledcognac.Calvados is a brandy from alimited and strictly controlled areaof Normandy in north-westFrance, where the temperatemaritime climate has long beenperfect for fruit orchards.
