Viscofan is the only supplier in the world to make artificial casings for meat products in the four commerciallyavailable varieties: cellulose, collagen (large and small calibre), fibrous and plastic.CASINGSCollagenCollagen casingsThese casings use collagen as their raw material.Collagen is obtained from cow hides and processedusing sophisticated technology so that it can beshaped into casings. Collagen casings are made intwo main kinds: small- and large-calibre. The keydifference lies in the thickness of the casing walland the way the collagen is processed to withstanda given degree of stress when filled and holding inthe weight of the meat.Small-calibre collagen casingsSmall-calibre collagen casings are used to makesausages generally eaten with the skin. Examplesinclude fresh sausages, cabbanossi, frankfurters,bratwurst, Polish sausages, landjaeger and chistorra.Casings are made in a range of different colours,sizes and shapes (straight and curved).Large-calibre collagen casingsLarge-calibre collagen casings are used for sausageproducts like salami, salchichón, bierwurst and soforth. They are made in various sizes, colours andstraight and curved shapes, and are printable.Collagen filmViscofan uses collagen to make edible film wrap.The main application for collagen film (Coffi TM ) isto encase hams, roulades, salami, Coppa, andothers.Viscofan also sells the devices and machineryneeded to use the film. It makes printed collagenfilm for traceability and brand imaging purposes.38
