1. Samobor kremšnite (custard slice)<br />

Ingredients: 1 L milk, 250 g sugar, 70 g<br />

smooth flour, 8 eggs, 1 package vanilla<br />

sugar, 2 pastry crusts<br />

Separate the egg whites and yolks, and cook<br />

the milk to the boil. Mix the egg yolks, flour,<br />

50 g sugar, vanilla sugar, and 200 ml milk.<br />

Cook on high heat for 10 minutes, stirring<br />

constantly to prevent the custard from<br />

burning. Beat the egg whites with remaining<br />

sugar until stiff. Add the cooked cream to the<br />

egg white mixture and fold well. Pour the hot<br />

cream onto the pastry crust in an even layer and<br />

cover with the second pastry crust; cut into squares<br />

and sprinkle with powdered sugar.<br />

Plešivički Copanjak (Plešivica cheese dish)<br />

Dough: 500 g flour, 1 tbp pork lard, 3 tbsp<br />

cream, 50 ml water, salt to taste<br />

Knead the dough and leave for 30<br />

minutes. While waiting, make the filling.<br />

Filling: 500 g fresh cottage cheese,<br />

chopped parsley, green onions (1<br />

bunch), 3 tbsp butter, 2 eggs, salt to<br />

taste<br />

Grease the pan with lard and sprinkle<br />

with flour. Roll out the dough. Spread the<br />

filling over half <strong>of</strong> the dough, and then cover<br />

with the other half <strong>of</strong> the dough. Tuck in the<br />

ends so the filling does not leak. Bake about 40<br />

minutes at 200ºC.<br />

2. Rudarska Greblica (miner’s cake)<br />

Dough: 400 g flour, 50 g oil, 10 g fresh<br />

yeast, 300 ml milk, cream, 1 tsp sugar<br />

Filling: fresh cottage cheese, 1 egg,<br />

300 g ground walnuts (for sweet cake)<br />

or diced spinach (for salty cake)<br />

Mix the crumbled yeast with 100 ml milk, add<br />

1 sugar. Add flour; mix and allow to rise until<br />

doubled. Roll out the dough in two pieces.<br />

Place one layer <strong>of</strong> dough on a greased pan, add<br />

filling, and cover with second layer <strong>of</strong> dough.<br />

Bake approximately 15 minutes at 200ºC.
