Food Network was filled with Thanksgiving
cooking shows over the weekend.
There were traditional menus, the “perfect”
roast turkey and debates about stuffing vs
dressing. One cook advocated
for corn bread
as the basis of her dressing,
another insisted
adding oysters was a
real holiday treat and a
third loaded her recipe
with mushrooms, to
which my son commented
as he passed
through the kitchen,
“Please don’t do that.”
The most interesting
were the classic side
MYRNA
WAGNER
dishes with a twist. Green beans, without
cream of mushroom soup. Caramelized Brussels
sprouts with butternut squash and dried
cranberries. Sweet potatoes with marshmallows
folded in, not sprinkled on top.
I decided to try that last one.
The celebrity chef I watched placed a baking
sheet of miniature marshmallows under the
broiler, toasted them until they were just one
step before charred, let them cool, then broke
them apart and folded into the sweet potato
mixture along with cream, eggs, butter and
brown sugar.
I kept a close eye on the broiler, thought the
marshmallows weren’t quite toasty enough, so
returned to the recipe and finished chopping
pecans.
Unfortunately, I finished that task and
moved onto another, completely forgetting my
marshmallows.
The smell of a campfire reminded me of the
oven. Too late. We were now several steps past
toasted.
That big black mess of marshmallows was
