No Room? 

The Gospel of Luke records the following about the birth of 

Jesus:“She brought forth her firstborn son, and wrapped him in 

swaddling clothes, and laid him in a manger; because there 

was no room for them in the inn” (Luke 2:7). No room for Jesus, 

the Son of God? Why? This was no poorly planned event! God 

moved the emperor to order a world-wide decree precisely timing 

the birth of His Son in Bethlehem in order to fulfill a prophecy made 

700 years beforehand,“But thou, Bethlehem Ephratah, though 

thou be little among the thousands of Judah, yet out of thee 

shall he come forth unto me that is to be ruler in Israel; whose 

goings forth have been from of old, from everlasting” (Micah 

5:2). Had God forgotten to make a reservation at the inn? Hardly! 

Did God plan this aspect of the birth of His Son to illustrate our tendency 

to become so busy with our own activities that we have no 

room for Him in our lives? The prophet Isaiah foretold the rejection 

of Jesus, “He is despised and rejected of men…we hid as it 

were our faces from him…we esteemed him not” (Isaiah 53:3). 

When Jesus came, the world had no room for Him, “He was in 

the world, and the world was made by him, and the world knew 

him not” (John 1:10). Even His own people, Israel, had no room 

for Him! “He came unto his own, and his own received him not” 

(v.11). However, there were those who made room for Jesus in 

their hearts and lives, “But as many as received him, to them 

gave he power to become the sons of God” (v.12). 

Is there room for Jesus in your life? Jesus is at the door of your 

heart right now saying, “Behold, I stand at the door, and knock: if 

any man hear my voice, and open the door, I will come in to 

him” (Revelation 3:20). If you haven’t already done so, will you 

open your heart to Jesus now and give Him room in your life?

As I drive through the Lehigh Valley every winter I am continually amazed a how dramatically evergreens stand out in the stark winter 

landscape. Then my eye is drawn to other plants offering winter interest. It’s like all of a sudden I am seeing them for the first time. 

Jenn Stumer The vivid evergreens and attractive deciduous plants are providing a winter scene for my enjoyment. I’ve put together a discussion of 

how including these types of plants can do that for your winter landscape. While evergreen shrubs and conifer trees undeniably add 

visual interest to winter landscapes, many other plants can add value to winter landscapes. A winning plant for winter landscapes will have one of more of the 

following characteristics: 

 

 

 

 

Bears evergreen foliage 

Readily catches snow in its branches 

Contains colorful berries (that attract birds) 

Has bark that is colorful or that has an unusual texture 

 

Has an interesting branching pattern 

Conifers (cone-bearing) encompass the majority of evergreen trees seen towering in the landscape and standing out amidst the deciduous trees along roadsides 

and in forests. The wispy kelly-green of the White Pine, the subtle hunter green of Norway Spruce and Douglas Fir, the graceful lilt of Canadian Hemlock, the 

brilliant slate-blue of the majestic Colorado Blue Spruce are just a few of them. All bear evergreen foliage and all are truly an amazing sight laden with snow. 

Winterberry Holly is a popular native holly shrub that actually loses its leaves in the winter. All the attention is drawn to the plant’s display of red berries, with no 

foliage to obstruct the view. China and Blue Holly also sport red berries but have the added bonus of their pointed, glossy leaves as a backdrop. 

And even I have to admit that Yews can have their place in the winter landscape. I tend to prefer the Repandens Yew (also known as the Dwarf English Yew) 

because of its adaptability to shade or sun and the tendency to weep gracefully rather than grow upright. Plus the bright red berries show up in the fall and last 

through winter (or until the birds eat them). 

But let’s not forget those rarely seen gems like the Red Twig Dogwood. Actually a shrub, the Red Twig’s maximum height reaches 6-10’. Their stems are only 

visible once they are bereft of foliage and are an eye-catching fiery red against a backdrop of crystal white snow. 

Two other examples of deciduous shrubs with characteristics for winter interest are the Winged Euonymus (also known as the Burning Bush) and the Japanese 

Barberry. The stems of the Winged Euonymus have a “wing” or flap of bark running along their edges that can catch and hold snow. The Japanese Barberry 

develops oval red berries that can last well into the winter. 

Perhaps one of the best unusual texture trees has to be the Birch. The Paper Birch and the River Birch are both well-known for their shedding bark. Not only is 

the bark interesting on these trees but the clump form (having 2 or more trunks) lends to an interesting branching habit. Some other intriguing branching habits 

include pendula (weeping) and contorted (twisted). White Pine, Norway Spruce, Alaskan Cypress and Blue Atlas Cedar are a few examples of evergreen that can 

be found in pendula forms while the most popular deciduous is the Weeping Cherry. Lavender Twist Redbud and Walking Stick are examples of a contorted form. 

All can promise distinctive interest in a winter landscape. 

Incorporating color, texture and intrigue into a planned “man-made” landscape is absolutely a must and can end up being striking. Mother Nature does it for us all 

the time. The trees and shrubs mentioned here are just a few example of plantings that can turn any drab winter landscape into an unforgettable winter scene.

Asparagus Tart 

1 sheet frozen puff pastry, thawed 

2 cups Jarlsberg cheese, shredded 

1 pound asparagus 

1 tablespoon olive oil 

1 tablespoon fresh thyme leaves 

salt and pepper 

Heat oven to 400 F. Prepare baking sheet with 

parchment paper. 

Roll out puff pastry into 16-by-10-inch 

rectangle, trimming uneven edges. Place on 

baking sheet. With knife, lightly score pastry 

dough 1 inch from edges to mark rectangle. 

Using fork, pierce dough inside markings at 

1/2-inch intervals. Bake until golden, about 

15 minutes. 

Remove pastry shell from oven and sprinkle 

with shredded cheese. Trim asparagus spears 

to fit crosswise inside pastry shell. Arrange in 

single layer over cheese, alternating ends and 

tips. Brush with oil, sprinkle thyme leaves and 

season with salt and pepper. Bake until spears 

are tender, about 20 minutes. 

Tomato Gratin 

8 medium ripe tomatoes 

1/4 cup balsamic vinegar 

1/2 cup extra-virgin olive oil 

4 garlic cloves, sliced 

4 sprigs fresh thyme (or 4 basil 

leaves, chopped) 

salt and pepper, to taste 

2 ounces toasted pine (pignoli) nuts 

1/2 pound (8 ounces) grated Jarlsberg 

cheese 

Heat oven to 350 F. 

Cut tomatoes in half. 

In bowl, whisk together vinegar, olive oil, 

garlic, thyme, salt and pepper; gently mix in 

tomatoes. Transfer to ovenproof dish, turning 

tomatoes cut side up before baking 15 minutes. 

When tomatoes are cool enough, remove 

skins before returning to baking dish. Sprinkle 

tomatoes with nuts and cheese. Return to oven 

and bake about 10 minutes, or until cheese turns 

golden and bubbly. 

Serve as bruschetta on sliced, toasted Italian 

bread or as a side dish to fish and meat.

Reduce heat to medium-low, cover and simmer until tender. Drain 

and bring potatoes to food processor. 

In food processor, add cheese, milk, sour cream, butter, salt and 

pepper. Process all ingredients with potatoes until smooth. Pour 

mixture into baking pan and cover with tin foil. 

Bake 30 minutes. Uncover potatoes during last 10 minutes to 

allow browning.
