Editor’s letter
The Heart of Romance
FLOOR COVERING
When I think of romance, I think of a love story, a concept so
multidimensional, it has as many faces as there are heartbeats.
In this issue, we explore France and are reminded of
often-forgotten aspects of love, from reverence of simple
beauty to the devotion of age-old custom and craft to lifelong
quests of refinement that inspire timeless art, which,
in turn, excites the world over.
You’ll be enticed to see how to blend the Pantone colours
of the season crossing the Parisian runways, a visual
feast as tasty as our recipe starring the “Nectar of the
Gods and Men.”
Our travel writer transports you to the cultural wonderland,
a nostalgic journey that inspired his next four decades
of personal growth and work, ringing a predestined bell
as clear as the Cathedral of Notre Dame.
The ‘Druid of Paris,’ a Renaissance man himself, is a
disciple of ancient ways who applies his knowledge of
smell, taste and herbal gems to elevate Paris’ most talked
about dishes today.
We also visit an old world monastery of nuns, hidden
from the barriers of time, who preserve an artform still
admired now as much as ever. The craft’s painstaking
nature provides the perfect medium to cultivate piety,
patience, and, above all, appreciation of divine beauty.
Our tastemaker — Geoffrey Bradfield—serves royalty
and other “silent celebrities,” and they revel in his signature
style harmonizing a perfect balance of simple beauty
and exquisite detail.
And surprisingly enough, a classical Chinese dancer’s
explanation of ‘bearing’—external movement originating
from inside oneself—may very well shed light on
why France, the heart of romance, continues beating the
world’s cultural pulse today.
The Power of Detail
and the Modern Order
of Serenity
Text by Yi Yang Translated by Tiantian
Acclaimed as the “Dean of American Design” by Architectural
Digest, Geoffrey Bradfield’s interior designs
have a synergy that reflect his charming wit and inimitable
sense of style. His work is easy to recognize. It has a distinctive
signature that is elegant and glamorous yet has a
whimsical and natural look, and above all, his works possess
a unique sense of order and serenity.
Among his many impressive achievements, Bradfield was
in recent years awarded the Hyland Award for Design Excellence
in 2012, as well as the New York School of Interior Design’s
Albert Hadley Lifetime Achievement Award in 2013.
Growing up on a bucolic farm in rural South Africa,
young Bradfield was surrounded by the beauty of nature.
The family house looked out to the Indian Ocean, flanked
by open fields lined with avenues of trees.
“The greatest artist of all is Mother Nature,” he said. “How
can one compete with the natural beauty of the sky, the sea?
There’s no way. Our human creativity follows second.”
At age 19, Bradfield travelled around the world for two years
and recommends that everyone in the visual arts explore the
wealth we have in the world today. “I was exposed to so
much, which was overwhelming and fabulous. It was one
of the best educations imaginable for me,” he said. “Our
museums have never been greater. Our galleries have never
been finer. Performing arts have never been as superior,” he
continued. “These are life-changing.”
Since embarking on his career at age 22, the famed interior
designer has worked with the most distinguished persons in
business, entertainment and even royalty. Bradfield discreetly
refers to his clients as “silent celebrities.” Among them, he
is known for being meticulously detailed, lending a personal
touch to all of his projects, where he designs literally everything.
In most cases, carpets, textiles, and even ironwork are
custom-made throughout to create the ultimate cohesive and
tranquil feel.
Bradfield believes that simplicity is the key to beauty. Perhaps
one of the most iconic spaces that Bradfield has created
is White Hall, appropriately named because of his use of
white throughout the house. Bradfield’s design of rich and
luxurious details, and his ingenious use of mirrors and art
add up to a glamourous yet surprisingly fresh atmosphere.
Bradfield was also the mastermind behind the recent décor
of the iconic Equinox Resort in Vermont. The heritage hotel
has, throughout centuries, hosted many of America’s presidents,
such as William Harrison, Ulysses Grant, William
Taft, and Teddy Roosevelt.
To every project, Bradfield brings his unique taste, which
embodies the finest of old-school charm and a classic contemporary
simplicity.
“I think if something is simple and easy to define, it’s beautiful,”
he said. “I believe that if one’s work has resonance, it
will outlive us.”
White Hall,
Bradfield is the founder of Geoffrey Bradfield Inc. Most recently, Bradfield has partnered with company vice president Roric Tobin, to form B & T Global
LLC to focus on their international projects across the globe.
Bradfield's FAVOURITE things:
“Many times we are told people recognize a sense of
serenity in the rooms that we do,” says Bradfield. His
taste for the understated and refined is unmistakable,
from the slim-fit navy blazer he throws on before
taking off on travels, to his floral fave, the elegant
tulip. In his downtime, he enjoys re-watching Italian
classics like Visconti’s The Leopard, wearing a pair of
comfortable Shipton velvet slippers. The designer’s
sartorial style speaks luxurious simplicity — classic
dark blue jeans topped with a Hermès cashmere jersey are
a staple, accessorized with a sleek and simple Bulgari
chronograph watch. He goes dark in scent, with the
sophisticated myrrh and vetiver notes of Eau Sauvage
by Dior, echoing the smoky aroma of his steaming
cup of Twinings English Breakfast tea. At home,
contemporary pieces like the acrylic and suede Coco
chair from his Millennium Modern Collection reflect
his love for the 21st century, as does his recent acquisition,
Damien Hirst “Porter Rhodes” 2006. Escaping
it all, Bradfield revels in the palatial grandeur of The
Ritz in Paris or marvels at the works of Michelangelo
and the antique streets of Rome, where his iconic
horsebit Gucci loafers feel right at home.
It’s 10 p.m. and for Las Vegas, the night is just
getting started. But Karina Fu, one of Shen
Yun Performing Arts’ dancers, just gave her heart
and soul for two hours at the Smith Center in
a performance that brought tears to my eyes.
Looking around the audience, I wasn’t alone.
Karina sits patiently in the green room, poised,
gently turning the pages of her novel. I rush in and
she smiles graciously, floating up from her seat.
After introductions, I ask her what she’s reading.
She tells me Romance of Three Kingdoms,
one of China’s all-time most beloved ancient
novels. It’s one of her favourites. That comes as
no surprise since she emanates the noble presence
I would expect from a Chinese classic. I
assume she’s been groomed in classical culture
her whole life, but she tells me otherwise.
“Teachers in China didn’t encourage us to
read except from textbooks,” she says, and explains
that she didn’t begin learning about the
lifestyle and culture of ancient China until she
left the country.
Karina is from Northeast China, and when
she was in elementary school, her parents immigrated
to the U.S. Worried about upsetting
their daughter, they told Karina they were just
going on a summer vacation. But once abroad,
her parents told her she wasn’t returning home,
the world and are praised by so many people, I really
worshiped them. I wanted to be like them.”
She was 12 years old and was now enamoured
by the dream of becoming a Shen Yun dancer,
but she had no prior dance instruction and didn’t
meet the height requirement. Even though she
feared that she might fail, she applied to the Fei
Tian Academy of the Arts in New York, a feeder
school for the globally-touring Shen Yun troupes.
Fortunately, the interviewers thought she would
continue to grow, so they enrolled her. She was so
thrilled she left without even telling her schoolmates
goodbye.
It was the first time she had ever been apart
from her parents, away from home, and living
with people her own age. “I’m the only child at
home,” she recalled. “I couldn’t bear hardship and
had a hot temper. I was afraid of pain when practicing
dance, and I didn’t like listening to others’
opinions even if I made mistakes.”
Karina learned firsthand the meaning of “one
minute on stage needs ten years of practice off stage.”
She gradually adapted to the physical and emotional
demands of five hours per day of dance classes plus
rehearsals and individual practice sessions at night.
Shen Yun
But the tumbling and acrobatic movements tested
the limits of her body and will.
“At the beginning, though I had relatively good
flexibility, I lacked strength. As a result, I could
not do the flipping and tumbling well. The more I
fell, the less confident I was. I felt upset and wanted
to lash out at people.”
Karina cringes as she recalls how the front
flip, in particular, plagued her. As with any type
of tumbling, confidence plays a huge factor. The
front flip requires springy strength thrown with
full confidence, confidence that she wouldn’t land
on her head. But with each failed attempt, she
grew more and more timid.
Then, a senior student offered a helping hand.
“She told me to practice the jumping back kicks
to overcome my weakness.” At first, Karina rejected
the advice but soon realized that to become an
excellent dancer, she had to conquer her shortcomings.
“So I made a plan to practice every day. About
two or three weeks later, I felt my legs had more
strength.” As she chipped away at the problem,
bit by bit, her confidence grew alongside her
physical strength. Six months later, she had perfected
the flip.
Despite the usefulness of their advice, Karina
still couldn’t stomach it when her classmates
pointed out her flaws. She soon learned that the
challenges of classical dance were not simply
external.
In 2014, when Karina was a new addition to the
touring company, something happened on stage
that thrust her problem into the spotlight in the
worst way: Karina stumbled in the middle of one of
the dances to the surprise of thousands of audience
members.
“I was upset and cried,” she laments. “But the
veteran dancers comforted me and helped me find
the core problem. I saw that my unwillingness
著 雍 容 華 貴 的 大 唐 侍 女 , 優 雅 曼 妙 的 滿 清 格 格 ;
problems accumulated over a long time and eventually
broke out on stage.”
She began to see life differently at that point.
“I had to be responsible to the audience. I had to
become more strong and mature to be able to accept
criticism.” Her parents’ wisdom also echoed inside
her: “If you throw a stone in a basin, a lot of water
will splash out. If you throw a stone in the sea, it
won’t cause even a single wave.” She reflects, “Only
by expanding your endurance can you maintain a
peaceful state of mind when adverse things happen
around you.”
In traditional Chinese dance, the symbiosis of
inner cultivation of character with the outward
expression of dance is known as “bearing.” Karina
explains, “The classical Chinese dancers’ movements
are motivated by their inner feelings. If
we don’t know the inner world of the characters
in our dance, we can’t create the feelings in our
movements. Then the audience can’t feel the culture
or bearing.”
Karina reminisces of the first time she saw Shen
Yun live, before her own training began. “It gave
me a sacred feeling.”
Touching the audience’s hearts in the same way
is what motivates Karina today. She dives wholeheartedly
into her study of classical culture and
thought, living and breathing it, so that her movements
originate from an authentic part of her.
She glances down at her novel, Romance of Three
Kingdoms. I see now that her interest does not
simply lie in learning about classical culture. Her
truest desire is to share it.
Stéphane talks to world renowned chef Yannick Alléno at Restaurant Ledoyen,
situated in the square gardens in the eastern part of the Champs-Élysées.
Stéphane
It’s early morning near the Champs-Élysées in
Paris, and world-renowned French chef Yannick
Alleno eagerly awaits a man known throughout
Paris’ finest dining rooms. The door to the exquisite
19th-century restaurant creaks open, and a twinkle
lights up the famous chef ’s eyes. In walks a man
dressed in simple attire and sandals, with hair down
to his shoulders and a long gray beard framing his
serene face. He carries a wide wicker basket full of
rare wild plants. Dispatching unneeded pleasantries,
Yannick eagerly paws through the herbal gems,
hungry to see the gifts of Mother Nature.
The wild-plant gatherer is Stéphane Meyer. His
knowledge and practice are used in the most delectable
restaurants in France for the pleasure of European
nobility, such as Prince Albert of Monaco.
Like the druids of ancient Gaul (an area of Western
Europe during the Roman Empire that encompassed
France), Stéphane has a special quasi-mystical
relationship with the plants he picks and the land on
which they grow. Like the other handful of wild plant
gatherers in France, his knowledge is not institutional
but was passed down from master to disciple.
Lineage
Stéphane studied oenology for seven years as he
grew up in a family of winemakers from the small
village of Voiteur, the French region of Jura famous
for its distinctive wines. “I didn’t receive official
training to become a gatherer,” he explains. “In my

family, we gathered wild plants for our own use. My
parents are very connected to nature, so I always had
an interest in it.”
In 1995, Stéphane met Gérard Ducerf, a distinguished
botanist in Europe whom students revered
and desperately wanted to study under. But Gérard
saw a unique character in Stéphane, deciding he
wanted to mentor him as student. “At that time, I
didn’t know much. He took me under his wing and
showed me the trade,” explains Stéphane who can
now recognize between 3,000 to 4,000 species of
plants. “We had a very strong bond.”
Stéphane’s acumen and pace of learning were
so quick, Gérard entrusted him to take over his
practice of finding rare wild plants for medicinal
purposes. Soon enough, Stéphane’s own reputation
began to grow. Journalists and chefs, enamored by
his ability to find rare plants and herbs that would
alchemise fine cuisine, titled him ‘Druid of Paris.’
Nature, a comprehensive system
“Plants touch me as much as people do. I consider
them as alive as animals. They’re intelligent forms of
life. Wild plants carry a message and an energy that is
stronger than farm-grown plants,” says Stéphane, a
founding member of the AFC (French Association
of Professional Wild Plant Gatherers). “They don’t
grow just by chance. They grow according to the
needs of the land. In nature, there is a very precise
reason for the survival or disappearance of different
types of plants in a specific area.”
His mentor Gérard’s approach emphasizes the
symbiosis between the plant and the land where it
grows, analogous to a druid’s holistic approach to
life and dissimilar to the segmented modern perspective.
Stéphane explains that plants grow and die
to help the land in its different life cycles. In some
cases, the plants can cure the land the same way they
cure people.
Yannick Alléno
“For instance, the dandelion grows on a field when
too many animals leave their feces or when a farmer
uses too much animal feces as fertilizer. The land is
then contaminated, and the flower detoxifies the land.”
Stéphane explains there is a direct correlation with its
medicinal properties for humans. “The dandelion is
used as a detoxifier when people eat and drink too much.”
Another example is Stéphane’s favourite plant, Achillea
millefolium, named after the mythical warrior
Achilles. As the legend goes, “Achilles used it to cure
his soldiers since it prevents hemorrhaging.”
Just like a human being, every time the soil turns over,
the skin of the land is open. “The plant grows when the
soil is turned over. It prevents erosion, making the soil
stable so the water flow or wind won’t transport it away.
When the soil stabilizes, the plant disappears.”
Family tree
Stéphane’s family is now part of some of his expeditions.
“When gathering plants was the main part of my job,
I could go picking for 6 to 8 months. Since I have kids
now, I only go for a month, and I try to arrange for my
kids to come with me. They pick plants too, and they
take it very seriously.” A smile cracks over his lips as he
thinks of his 6-year-old daughter, Appolline, and fouryear-old
son, Augustin, exploring the hillsides with him.
His wife, Isabelle, is also part of their adventures.
The two met over ten years ago, both practicing an
ancient Buddhist meditation from China called Falun
Dafa (or Falun Gong). Stéphane was touched by the
authenticity of Falun Dafa, and its teachings resonated
strongly with him, as spirituality had been an integrated
part of his life since a very young age. Following the
course of nature, cultivating compassion and thinking
of others first were similar to philosophies he was raised
on. Like plants that nurture the land where they grow,
he found cultivating honesty and compassion positively
impacted his environment, as his clients are inspired by
his work.
When gathering plants, “Falun Dafa creates a mental
state of emptiness that helps me be absorbed into my
job. I put myself in my clients’ shoes to find something
they’ll deeply appreciate.”
Chefs and the druid
Giving advice to chefs of three star Michelin restaurants
didn’t come right away. “At first, I was presenting chefs
with seasonal plants. Later on, they started to ask what I
would put in a meal. Since I know the aroma of plants, if
they want to create a contrast of flavors or create a more
harmonious taste, I would suggest something. And I
don’t make too many mistakes,” he smiles humbly.
While he is known as the ‘Druid of Paris’ by prestigious
chefs and restaurateurs of three-star Michelin establishments
like Pascal Barbot of L’Astrance and Alain Passard
of L’Arpège, he carries another nickname. The famous chef
Yannick Alleno calls him Santa Claus.
“My long beard might play a role, but it’s mainly because
of the gifts. I come with a basket full of surprises.
The chefs are very busy people, and they don’t have
many opportunities to step out of the city. I bring them
some fresh air. You should see them when I bring wild
plants they’ve never seen before. Their eyes sparkle!”
Stéphane doesn’t stop at delivering wild plants. He
now creates different lines of products, from natural
skin care to fine liquor that are popular among the European
and Mediterranean elite.
“I got a phone call from the ambassador of Morocco,
because one Moroccan princess drank one of the herb
teas I created. She wanted more.”
It seems princes and princesses alike crave Stéphane’s
royal touch. “Prince Albert of Monaco, for his birthday
in 2015, received a bottle of fine liquor that I produce
and sell. He really enjoyed it. I know he savored it on
different occasions.”
For a man whose refined craft is supported by a practice
of personal refinement, it’s clear that the Druid’s magic
will continue on for many years to come.
Colette
There is a fabric most rare and precious.
Its motifs spun from gold and linen thread as thin as angels hair.
For centuries the women who hold the secret of this sacred stitch say to
gaze at its beauty is to see a reflection of God.
“The lace of Argentan originates in Venice;
we are creating it with a thread that comes
from Belgium and needles that come from
England — and with that we produce a very
refined French product.”
Colette
Mother Colette’s profile is obscured by the wall
between us. Not a solid wall, but a grid of metal
bars. On one side, a life of solitude, prayer and purity;
on the other, the secular world.
Curiosity, and the quest for historical sites preserving
France’s finest handmade needle lace led to this
Benedictine monastery in the village of Argentan,
about 250 kilometres west of Paris.
History books paint a legacy of epic survival dating
back to the 6th Century — it was raided by Vikings,
dispersed by the French Revolution and bombed
during the Second World War. After each adversity,
the community of devout Benedictine sisters would
humbly rebuild in the shadows and continue a
contemplative life of prayer. The prestige saved the
community from expulsion, and its sacred stitches
continue to be held in great esteem.
As an act of penance and genuine appreciation for
hearing their story, I offer a box of homemade cookies
through the grille. Mother Colette receives them with
delight — and the warmth and goodness in her voice
is reassuring to even a stranger. As our eyes meet for
the first time, a joy seems to radiate from behind her
golden spectacles, suggesting this is a woman who
hasn’t wasted time looking for the meaning of life, but
has found it.
That’s when I notice the ring — a gold band on the
fourth finger of her right hand.
“Yes, we are married with the Lord,” says Mother
Colette, who made a personal decision to leave her
family and join the sisterhood at an early age. “I
entered when I was 23 years old, in 1967, so I am now
here for 48 years.”
History comes alive as Mother Colette provides a
narrative for the origins of needlepoint lace in France.
For a 16th century woman, it was of utmost
importance to wear the most exquisite lace she could
find. At the time of King Louis XIV’s reign, many
were importing luxurious needlepoint lace from Italy.
Concerned with the outflow of money, the king’s
finance minister Jean-Baptiste Colbert banned its
import and brought skilled teachers from Venice
to Normandy to instruct locals on how to create a
distinct handmade lace known as Point de France.
Cottage industries were set up in several French towns
including Alencon and Argentan, and a more delicate
lace with clearly defined pattern was born.
France rose to fame as the producer of the world’s
finest handmade lace, often referred to as “the lace of
queens.” Moreover, the skill and labour required in its
production gave lace immense value — only kings and
nobles could afford ornamental tissues.
During the 19th century, many of Normandy’s lace
artisans were killed or fled France, yet the craft was
preserved with a lacemaking school at this Benedictine
monastery in the village of Argentan.
Although Argentan lace is distinctly French, Mother
Collette explains how this luxury item is also a precious
union of multiple cultures. “I will amuse you; the lace
of Argentan originates in Venice, we are creating it
with a thread that come from Belgium and needles
that come from England. With that we produce a very
refined French product.”
As lace fell out of fashion in the 18th century, the
culture of handmade lace became, for the most part,
“nuns’ work.” Today, while a small five-centimetre
piece of finished Argentan lace is sold for 730 Euro
(C$1,146), Mother Colette muses that it barely “puts
butter on our broccoli.” Purely a luxury item, one piece
takes months to complete.
Running a needle lace atelier is not profitable, and the
primary work of their contemplative order is prayer —
at least six hours each day and every day, yet the sisters
are determined to preserve this tradition. Centuries
later, they continue
to fulfill orders
from a discerning
clientele who use
the decorative fabric
as embellishment
for wedding veils
and baptism bonnets and then collect them as valuable
pieces of art.
A knock at the door, a rustle of robes, and another
sister, Mother Prioress appears, excited to share a
sampling of the precious textiles. She is among the five
remaining sisters skilled at needle lace.
It begins with a drawing; then, with silent hands, the
sisters work with thread “as thin as angel’s hair” and
needle to create a delicate mesh of woven threads in
small motifs. The motifs are arranged around a vertical
axis, held together by invisible stitching, and linked
by buttonholed bars. The next step is to decorate it
with small loops of twisted thread called picots, add
a scalloped edge, and then polish with a lobster claw.
People often get confused between embroidery and
lace, says Mother Colette, who explains that “with lace
you start with nothing, whereas with embroidery you
have a base fabric as support.”
The women at the monastery seem intrigued at
the news that lace is enjoying a fashion revival,
appearing on ready-to-wear and couture collections of
Gucci, Alexander McQueen, Christian Dior, Chanel,
Valentino, Givenchy, Giambattista Valli, and Elie Saab,
spreading the beauty of the fabric to a wider audience.
“Perhaps it is a return back to the French court,”
muses Mother Colette, speaking with the authority
of one who recognizes lace’s true worth and beauty.
“But today they use industrial lace. It is not handmade
needle lace, that is not possible.”
“There are no
more people able to
make laces produced
with needles,” she
adds. “When you
think that the future
queen of England,
Kate Middleton, got married herself wearing a veil
made from mechanical lace. It was kilometres long
and made with laces from the French city of Caudry. It
would have cost an enormous amount of money, but it
was not real lace.”
Today Mother Colette and Mother Prioress are
among 32 sisters who live at the monastery. Among
them, only a few of the sisters are skilled at the craft of
lacemaking. However, “if there was a need for more, we
would figure things out. We have one very young nun
who is really into it,” says Mother Colette.
Prayer for the world, and the wish to bring beauty
to people impregnates the work of the sisters from
dawn to dusk, even as they turn tangled thread into a
finished art piece that reflects the beauty of creation.
“We are vigilant to live the heritage of our past and
faithfully preserve our tradition,” says Mother Prioress,
“and through this process develop virtues of patience,
perseverance, humility and silence.”
While the women are few in number, they are one in
spirit, and with extraordinary beauty and strength they
carry on both the endearing traditions of those who
walked this life before them.
“This is really a craft, this heritage is a craft and we
should not lose it,” says Mother Colette. “What we can
do with our hands is wonderful. If we can show to the
world something beautiful — as I am told that what is
on television is horrible, then for that reason alone, we
should carry on with this beautiful tradition.”
Text by Janine Mackie Translated by Rui Chen Photography by Keith Henderson Produced by Brett Price
Troy Van Vliet
South Granville
Tavan Developments
What’s the secret to building a home that
causes people to contemplate whether it’s
new or long been part of the fabric of Vancouver’s
exclusive South Granville neighbourhood?
“It’s all about being classy,” says Troy Van Vliet,
principal of Tavan Developments. “Like Shaughnessy,
there’s a lot of tradition in this neighbourhood,
with its remarkable French and English
Tudor-style homes.”
Van Vliet’s vision was to build an Old World
home from the ground up that has all the New
World conveniences and a modern interior.
Today, the 7,300-square-foot, six-bedroom Granville
Manor, valued at over $12.8 million, is among
Tavan’s signature collection of custom homes, which
the builder describes as “fancy, yet super-functional.”
The hybrid home is clad in natural stone and
brick, and embellished with dark wood-frame
windows, wrought-iron gates and exposed rafter
tails — an architectural eave detail accentuating
the roofline and home’s character. Mature 30-foot
maple trees were planted in the garden to give it
the impression of long being established.
Like his father, who built Vancouver’s iconic
A true classic, this 7,300-square-foot home fits midway between Old World traditional and the
New World of chrome and glass. Italian marble leads the way to an elegant sitting room where the
fireplace surround is dressed in herringbone tile.
Bloedel Conservatory, Van Vliet continues
to build his own real estate portfolio under
the Tavan brand, which focuses on historical
and cultural references together with new
technologies and novel design.
While the kitchen is often a home’s most
expensive room, Tavan delivers a twist on
tradition and invests in a space other builders
may leave unfinished.
“We spent as much or more in the basement
than any other room in this house,”
says Van Vliet, unveiling an über cool party
room of extravagant proportions. “This is
where we really sell the dream of living an
exceptional life.”
Eight leather-back chairs provide seating
at the hotel-style bar where Cabernet
Sauvignon and white Bordeaux blends line
a dramatic 1,000-bottle wine cellar. Medieval-style
chandeliers hang from dark walnut
coffered ceilings, and oversized barn doors
partition a massive entertainment space for
playing billiards or cards, or kicking back for
the ultimate home theatre experience.
“Entertainment is a massive part of this
home. People can really imagine themselves
and their friends having a great time here.”
When someone suggests this is “every
man’s dream home,” Van Vliet quips back
that it’s actually “the ultimate couple’s
home.” Ladies may be challenged to get
their men beyond the big screens, but the
upper two levels certainly have a stunning
mystique of their own.
In one word, the theme is transitional
— a trendy blend of traditional and
contemporary styles. Dark walnut millwork
are juxtaposed with high-gloss modern
Italian furniture in the dining room. In
Tavan Developments
Troy
“It’s not an easy design style to pull off, but when
transitional is done right, it’s really spectacular,”
says Van Vliet, who even commissioned the artwork
throughout the home to add a pop of colour to the
monochromatic palette.
A seamless transition from family room to outdoor
deck is achieved with innovative Eclipse doors,
allowing the wall to disappear and the entertaining
to expand onto a covered deck, complete with fireplace,
grill, and all-season patio furniture.
Van Vliet’s work is as rewarding to him as a finished
art piece is to an artist. Of all Tavan homes, he
says, this is the one he’d “love to keep” and “could
easily move into and be happy.”
Now on the market, Granville Manor has stolen
eye for architecture and a sense of history, pleasure
and timeless design.
Text by Elena Vosnaki Translated by Tiantian
of
Stealing my first drops of perfume in my grandfather’s Mercedes
Benz leather back seat feels like yesterday. Like a lick of scotch or
the smear of red lipstick, it was bittersweet, memorable, abstract, unmistakably
grown up. It was my Franco-loving mom’s French perfume.
Cabochard comes from the old French “caboche,” meaning “headstrong.”
And the French are fanatical about craftsmanship, aloofness, and
sensuality. Mom’s Cabochard embodied all three in spades.
Just what is it about the French and their perfume? What is its je ne
sais quoi?
Elisabeth de Feydeau, French historian and perfume expert,
describes perfume as an echo of the past and the future: “An echo
between the lived and the re-lived, perfumes awaken memory. In
less than one second, their nuances, their accents, their vibrations
lead us, sometimes in the past, sometimes to the future.”
Perfume’s journey in France began through the fragrant smoke from
the religious pyres of antiquity (from the Latin “per fumum”). Later during
the French renaissance, as the aristocracy demanded the smearing of
precious floral essences on their leather gloves to hide the remnants
of tanning, the art of perfume was elevated into a prestigious craft.
If Catherine de’ Medici, fanatical about gloves to protect her white
hands, hadn’t come to France in 1553 to marry King Henry II, the
perfume industry might have remained Italian, for all we know. When
she left Italy, she brought with her Renato the Florentine, her trusted
perfumer. Her arrival boosted the local industries of essences in
Montpellier and Grasse in the south of France.
The true turning point of elevating perfumery from alchemy into
full-blown artistry came with scent-obsessed King Louis XIV (1638–
1715). The King’s minister of finance, Jean-Baptiste Colbert, set out
to grant privileges to the guilds of “perfumers and glove-makers” on a
basis of excellence, encouraging the development of this delicate craft
and securing France as the centre of the European perfume industry.
Moving his court from Paris to Versailles, Louis XIV was
determined to elevate every activity into the pinnacle of elegance.
Inside the palace, “faire la toilette,” or the daily grooming of oneself,
involved applying cosmetics to the body and face, dusting scented
powders on hair wigs, and sprinkling fragrant waters on fresh
linen. This elaborate ritual is the source of the term “eau de toilette”
emblazoned on our fragrance bottles.
The palace itself was perfumed to the brim, earning Versailles the
name “the Perfumed Court.” In an era without indoor sanitation,
the French royalty found aromatic solutions to keep a pleasant
living environment. They filled water bowls with blossom petals and
scented their furniture, fabric, and feather fans — even the garden
fountains — to sweeten the air. Louis had his own shirts scented with
Aqua Angeli, made from nutmeg, cloves, benzoin (a sweet-smelling
gum), storax and aloeswood (two exotic Eastern materials) boiled in
rosewater to which orange flower, jasmine and musk were added.
Even after sanitation became more developed, the royal French
patrons continued their use of perfume. Queen Marie Antoinette
commissioned lavish scents to the House of Houbigant to reflect her
romantic moods. Even Napoléon Bonaparte, a military man, was mad
about them. He ingested cologne-soaked sugar cubes to rejuvenate!
(Catherine de´
House of Houbigant
Elisabeth de Feydeau
Pantone has revealed its colour of the year, and surprise, it’s actually two pale pastels on opposite ends of the colour
wheel: Rose Quartz and Serenity (a pale blue). That doesn’t mean they don’t play well together though; think of
them as yin and yang and pick the one that speaks (softly) in your ear.
Story by Kate Missine Original recipe by Gaelle Didillion Translated by Zhao Wen
Food styling and photography by Jie Freishter
Food of the gods, celestial nectar, liquid gold.
Shrouded in sacral legend, honey’s amber-hued
sweetness has been worshipped since its first discovery
by man around ten thousand years ago, likely in the
depths of a wild beehive. In its distinct intensity, unlike
anything tasted before, it isn’t surprising that the
fascinating substance was seen as a gift from above in
almost every culture.
In India, it was considered dew fallen from the
heavens; Egyptians (thought to be the first to cultivate
honey using logs to mimic hives), buried honey-filled
clay vessels in tombs — traces of it, still edible, have
been unearthed dating over 5,000 years back; and the
Greeks spoke of ambrosia, a drink of honey and milk
enjoyed by the deities.
Mythology aside, ancient Greece was also among the
first to tap into honey’s powerful medicinal potential.
While home cooks concocted newfound delicacies with
the first-ever sweetener, others explored its many therapeutic
properties. Homer and Aristotle wrote extensively
on its virtues, and Hippocrates, the father of Western
medicine, proclaimed the bees’ precious product as one
of nature’s most potent healing agents, using it to treat a
variety of ailments and dress wounds and burns.
In the physician’s footsteps, modern findings confirm
that the delicious condiment boasts a plethora
of disease-fighting compounds, even aiding in cancer
prevention. Perhaps we no longer attribute its powers
to the divine, yet honey is still something of a miracle
— the product of a team of petite workers, it’s a testament
to nature’s perfect design and the wonder of its
complex workings.
Honey-infused food and drink, such as the fabled
mead of the medieval table, starred in feasts and royal
tables throughout history, and the French courts were
not immune. A favourite of Louis XIV’s Queen, Maria
Theresa of Spain, the golden confection was elevated
to refined heights, maintaining its status as a darling of
French cuisine to this day.
This silky pudding, inspired by the regal desserts of
centuries past, brings out the nectar’s delicate floral
notes in a bouquet of fragrant almonds and verbena
leaves, an ideal finish to a light spring meal.
Vineyard in France
Champagne Winery, Epernay, France
Away from the glitz of Paris, resting on the mineral-rich soils
of northeast France’s Champagne-Ardenne region, lies the
quiet town of Épernay.
There, for those versed in the art of vin, the names of the champagne
houses lining Champagne Avenue are iconic: Moët &
Chandon, Mercier, and Perrier-Jouët — over 100 kilometers of oldworld
facades, in stately procession. This avenue, a dream to stroll
down, is the holy grail of the effervescent libation, and beneath your
feet is where the real magic is at work. Old underground chalk mines
have become champagne cellars that cocoon thousands of bottles of
the magical liquid as it slowly ferments to maturity in a fascinating
process that got its roots here centuries back.
Champagne’s journey began around 2,000 years ago, when the
Romans first planted grapes in the region, christening it ‘Campagnia.’
They intended to create a flat wine, but because of the cold
winters there, the wine didn’t fully ferment before it was bottled.
Come spring, it began its fermentation again inside the bottle.
The fragile bottles frequently exploded during fermentation, and
the surviving bottles were found unintentionally bubbly. While the
French sought to remove the bubbles, the Brits took to the
sparkling version, discovering a way to produce it deliberately, and
the French nobility soon followed.
The “wine of kings, the king of wines,” in the words of Guy de
Maupassant, spread in popularity, starting at the Versailles and
peaking during Louis XIV’s reign. Rumor has it that the king first
tasted champagne as a teenager at his coronation, and enjoyed it so
much he rarely drank anything else for the rest of his life.
Today, authentic French champagne retains its royal reputation.
While delightful in a glass, it also shines in culinary adaptations such
as delicate champagne jam. Lightly sweet, it is typically served as an
accompaniment to foie gras; here, we paired it simply with crusty
bread, goat cheese, and salty caviar for a bright and savory flavor burst.
In the romance of that moment, the seed of
my future was sown. Rather than write about
literature, I would write about life in the world.
I would become a travel writer.
fell in love with Paris when I was 22 years old. I
I moved there right after graduating from Princeton,
to work on a three-month internship at Kodak-
Pathé. After an initial week of desperate roomsearching,
I lucked out with an apartment on the
rue de Rivoli, overlooking the Jardin des Tuileries,
and just a five-minute walk from the Hotel Ritz and
the Seine. Every evening, I would wander the streets,
from the fashionable shops around my apartment to
the Quartier Latin, all the while inebriated with the
elegant avenues and facades, the arching bridges
and graceful streetlamps, the laughter spilling out
of bistros and bars, the musicians in the metro, and
the grand apartments on the Île Saint-Louis, whose
high-ceilinged, chandelier-lit rooms beckoned like
a dream.
That summer I gorged on Molière at the Comédie
Française and the Ballet Béjart in the park,
immersed myself in Manet and Monet in the Musée
d’Orsay, got lost in the ancient alleys of Montmartre
and the Marais, stood stunned in stained-glass
silence in Notre Dame and conjured Hemingway
and Fitzgerald on Rue Descartes and in Les Deux
Magots café.
One morning halfway through my stay, I took my
apartment building’s rickety old filigreed elevator as
usual from the fifth floor to the hushed shade of the
ground-floor entryway, then stepped through the
The River Seine
massive wooden doors into the street — and stopped.
All around me, people were speaking French, wearing
French, acting French. Shrugging their shoulders
and twirling their scarves and drinking their cafés
crèmes, calling out “Bonjour, monsieur-dame” and
paying for Le Monde or Le Nouvel Observateur with
francs and stepping importantly around me and
staring straight into my eyes and subtly smiling in a
way that only the French do.
Until that summer, I had spent most of my life in
classrooms, and I was planning after that European
detour to spend most of the rest of my life in
classrooms. Suddenly it struck me: This was the
classroom. Not the musty, ivy-draped halls in which I
had spent the previous four years. This world of wide
boulevards and centuries-old buildings and six-table
sawdust restaurants and glasses of vin ordinaire and
poetry readings in cramped second-floor bookshops
and mysterious women smiling at you so that your
the plane trees by the Seine. This was the classroom.
In the romance of that moment, the seed of my
future was sown. Rather than write about literature, I
would write about life in the world. I would become
a travel writer.
Four wonderful, wandering, travel-writing decades
later, I returned to Paris last summer for a celebratory
three-day stay. My initial plan had been to revisit
my old haunts, but on my first night, I stopped for a
glass of rosé at a clean, well-lighted sidewalk café and
became enchanted by the street theatre: parents and
children walking in a festive row, the kids occasionally
breaking free to skip ahead; couples with their arms
wound around each other, pausing to kiss long and
passionately; sleek, suntanned women in short skirts
and high heels walking arm in arm; solitary strollers
measuring pensive steps. I remembered what my first
love 40 years before had taught me: that Paris is a
place you see by surprise, not design. And in a brief
ritual over a second rosé, I tore up the scrupulous list
of things to do and places to go I had prepared, and
surrendered myself to the city instead.
Over the ensuing days I paid homage to my old
apartment at 200 rue de Rivoli, ambled through the
mind-greening Jardin des Tuileries, lingered before
Monet’s “Coquelicots” at the Musée d’Orsay, made one
pilgrimage to the soaring stone symmetry and stainedglass
splendor of Notre Dame and another to the
sacred secondhand bookshelves and reading rooms
at Shakespeare and Company. I bought Hemingway’s
A Moveable Feast there, then stopped at the charming
bistro next door, Le Petit Chatelet, which turned out
to be an exceptionally pleasant place to nibble on
camembert and baguettes and sip a crisp rosé.
I was doing just that when Notre Dame unexpectedly
erupted into a symphony of bells. The clarity and purity
of the sounds seemed to suspend the air, and I thought
of all the ages that pealing had descended like a blessing
balm over the city, from the 12th century to the 21st.
I remembered those same peals transporting me
four decades earlier, and I exulted in my journal: “I’m
feeling fantastically satisfied by my three-day stay
in Paris. I’ve done exactly what I wanted to do: I’ve
revisited the most important places from my past,
and let serendipity take me by the hand, wandering
through the streets, gazing up in awe at the elegant
buildings with their wrought-iron balconies, absorbing
the beauty and spirit of this intoxicating place. There
is such a celebration of art and philosophy and history
here, so much intelligence manifesting in the design
of the city and the preoccupations of its citizenry. Art
exhibits, concerts, the celebration of eating—la
bonne vie française. I’ve fallen in love all over again.”
That night, I paced a solitary path to the Seine. Before
I left the city, I wanted to get at the essential romance
of Paris, to understand how it exerted the enchantment
it did, why passion and sensuality seemed to grow so
lushly in its urban soil.
Then I reached the river, and the moonlight in
the leaves of the plane trees and the lamplights on
the surface of the water made a mockery of analysis.
Couples whispered, laughed, kissed; the leaves
applauded; the stars winked at the clouds.
Paris past and present seemed to march in a
procession of images before me: the bright, chic
streets, the haute couture shops, the boulangeries
and brasseries, the churches and museums; the green
parks with their burbling fountains and marble
statues; the leaves of the poplars rustling in the wind
and the leaves of the chestnut trees turning from green
to red; smoky dinners in centuries-old restaurants;
candlelit, table-clothed tables bright with flowers. I
thought of the smell of fresh baguettes, coffee and
chocolate, of walking and walking and walking, of
sun-dappled squares with little round tables and
cane chairs. And I thought of that morning 40 years
ago on the rue de Rivoli, when Paris had first opened
the life-path before me.
I recalled Hemingway’s final words in A Moveable
Feast: “There is never any ending to Paris and the
memory of each person who lives in it differs from that
of any other. We always returned to it no matter who
we were or how it was changed or with what difficulties,
or ease, it could be reached. Paris was always worth it
and you received return for whatever you brought to it.”
Suddenly the puzzle-pieces clicked together, and
I took out my journal and penned: “This is the real
romance of Paris, the essential lesson it bestows: that
past and present are all part of a vast, vibrant, lifecelebrating
whole. Paris evolves and I evolve, and the
decades infuse layering and rounding richness to it all.
The city I first loved and the 22-year-old who loved
it are still abundantly alive, outside and inside; they
always have been and always will be. On this return
40 years later, I’ve found that young man still enrapt in
Paris, and the romance of Paris still enwrapped in me.”
During the first days I spent in Laos, every
moment assaulted my senses. I marveled at the
vendors hawking their wares and goggled at skewers
of mysterious street eats. Each new experience
highlighted the differences and unknowns of this
new culture.
One day I found myself traveling to a rural hilltown
in the north. Our shared tuk-tuk, a converted pickup
truck with seats in the bed, careened to a stop just
past a young mother. A cloud of red dust settled
around the truck. The men made quick work of
storing her bags. Within moments all that was left
was the woman, a toddler playing at her feet, and
a large chicken wrapped in her arms. The mother
glanced at the remaining vacant seat, then raised her
eyebrows at me. The question was clear: chicken or
child? Baffled but compliant, I hauled the toddler
onto my lap. The mother wedged herself next to me
as the truck continued its ascent.
After weeks of assimilating to the new culture and
noticing each strange moment, I looked into that
baby’s eyes, and for the first time, I was no longer struck
by our many differences. The mother patted, tended,
and cooed to the little girl in my lap — I could have been
anywhere in the world and witnessed this same loving
care from a doting mother. For the first time in weeks,
I saw beyond that which separates Laotian culture
from my own. I began to notice our commonalities.
I continued travelling via shared taxi through dusty,
forgotten villages. I adjusted to the pace of life and
learned to read the cues. With alacrity, I opened my lap
to sacks of veggies, trays of eggs, and even the random
stray chicken. My slow pace of travel guaranteed that
with each heartbeat, I brushed against both new and
familiar customs. Once I left Laos, I journeyed through
India, Europe, and Central America. And in each place, I
learned more about what it means to be a global citizen.
Years later, my travels brought me to New York City.
On the subway, a little boy with winking dimples played
peek-a-boo from behind his mother’s legs. I chuckled
at his contagious grin and struck up a conversation
with his mom. Catching the hint of an accent, I asked
her where she was from. With breezy dismissal she
said, “Oh. Laos, it’s a small country in Asia.” I smiled
and told her I dreamed of the delicious taste of jeow
mak keua, a spicy Laotian eggplant dip. Startled by my
admission, she grabbed an old receipt and scrawled the
name of a local Laotian restaurant. The subway jostled
to a stop. Grabbing her son, she shoved the note into
my hand and exclaimed, “Try this, it’ll be the best dip
you’ve had outside of Laos!” In a flash, she was gone.
But wisps of memories floated around me.
My travels in Laos allowed me to make a connection
with a mother and son in New York that I otherwise
would have missed out on. One interaction on a subway
jolted from the memory vaults those wonderful little
moments I collected in Asia, and led me to “the best
dip outside of Laos.” It’s these simple acts and little
moments in our daily lives that allow us to foster deeper
understanding, curiosity, and empathy for each other.
Through my intertwining experiences, I began to see a
deeply connected life that celebrates and honours each
culture for its contribution to our fascinating world.
With this perspective, I start to shape and change the
very fabric of my life, and how I view my own role in
the world. Every encounter with a new friend, culture,
or tradition affords us the opportunity to look for shades
of similarities, learn from each other, and take a step
further towards a more interconnected world.
