CHEF’S CORNER
Let the food do
the talking...
Ivor Morgan has been
head chef at Needham
House Hotel since last
December. He took time
out from his busy kitchen
to talk about his influences,
who cooks at home and
what’s popular on the
hotel’s menu this month.
What made you want to be a chef and how long have
you been doing it?
I’ve been a chef for just over 25 years now. I was unsure
what I wanted to do when I left school and used to do
some baking at home with my mother so I decided I’d
look into becoming a chef and instantly fell in love with it!
My passion for food and cooking continues to grow and
grow so I’ve made the right decision.
What do you look for when you create a new dish or
menu? What are your main considerations?
Firstly I look at what’s in season and what’s produced
locally. I’ll evolve a dish from there and look at what
flavours to add to enhance the dish.
What’s proving to be the most popular dish on your
menu this month and why do you think that is?
Scotch egg - customers have commented on all aspects
of the dish. The quality, the chutney, the flavour of the
sausage meat and most importantly, the runny yolk!

The #shelfie - a chef’s five must have herbs
and spices always available on the shelf!
What are yours and why?
I do have five top ingredients, not so much herbs
and spices though, but these are my essentials:
Butter - enriches flavour.
Salt - enhances flavour.
Parsley - it’s a great universal herb for many dishes.
Good stock - a good base for sauces and braising.
Eggs - very versatile ingredient.
What’s your favourite cuisine and why?
Curry. There are so many varieties, they all taste very
different and the spices vary massively. I don’t have a
favourite dish and I always try a different curry when
I do have one.
Which famous person, dead or alive, would you
love to cook for and what would you serve them?
I would say my most memorable customer was Bob
Monkhouse. He would always call ahead of visiting
the hotel and make sure we had his favourite dessert
which was a Baked Alaska. If he was still with us it
would be great to cook for him again.
If you were stranded on a desert island and
allowed one item or ingredient from your kitchen,
what would it be and why?
Butter. Delicious with the fish I’d spear!
When you go home, who does the cooking?
Are you territorial in the kitchen!?
My wife and I share the cooking at home, although
when I’m cooking I want to be left to it. I like my food
quite rich but my wife doesn’t, so she keeps a close
eye on what I’m doing!
Do any celebrity chefs inspire you? And if you
had to compare yourself to one, who would you
say you most resemble in terms of cooking style
and/or temperament?
It’s hard to pinpoint one chef as I’m influenced by so
many in different ways. I do believe that chefs are all
unique though and we all have different ways on how
to run a kitchen, how to prepare the food and how to
present it.
You’re sharing a recipe with our readers today,
why did you choose this one?
Tiramisu. I’ve heard it’s the food of love! It’s also
one of my wife’s favourites and popular with so

Tiramisu

Serves 8

The Sponge
• 7 eggs
• 125g castor sugar
• 50g cocoa powder
Ingredients
Espresso liquor
(for soaking the sponge)
• 50g castor sugar
• 100ml water
• 350ml espresso coffee
• 50ml Amaretto
The Filling
• 200g castor sugar
• 4 egg yolks
• 500g double cream
• 500g mascarpone
• 4 tbsp Marsala wine

Method
For the sponge: Whisk the eggs
and sugar together on a high speed
(for about six minutes until the
sabayon is stiff).
Gently fold in the cocoa powder.
Spread onto a tray lined with
parchment paper or mafter mat.
Bake at 150°c for about ten minutes.
Allow to cool and then cut into rings
ready to build the tiramisu.
For the Espresso Liquor: Dissolve
the sugar in the water with the
espresso and Amaretto to make
the liquor.
Put the sugar into a pan and moisten
it with a little water (not too much).
Put it on the heat and bring it up
to 120°c or to a soft boil stage.
The Build
Put a small amount of the
mascarpone filling in the bottom
of a cup or desert dish.
Then add a layer for the sponge,
brush some of the espresso liquor
onto the sponge so it’s nicely
covered and soaked in.
Then add another layer of the
mascarpone filling making sure
it’s nice and level, followed by
another layer of sponge and the
espresso liquor.
Repeat this one more time.
Finish the top with the mascarpone
filling and once this is done
allow to chill.
When ready to serve, dust the
top with cocoa powder.
Put aside to cool.
For the filling: Whisk the egg yolks
on a high speed, then slowly add the
cooled sugar over the yolks while
still whisking to form a sabayon.
Continue whisking until all the sugar
has been added and the mix is cool.
In a different bowl, semi whisk the
double cream to soft peaks.
Gently fold the mascarpone and the
Marsala wine into the sabayon.
Fold in the semi whipped cream.
Once all the parts are ready,
we can build the tiramisu.
