Ivor Morgan has been<br />

head chef at Needham<br />

House Hotel since last<br />

December. He took time<br />

out from his busy kitchen<br />

to talk about his influences,<br />

who cooks at home and<br />

what’s popular on the<br />

hotel’s menu this month.<br />

What made you want to be a chef and how long have<br />

you been doing it?<br />

I’ve been a chef for just over 25 years now. I was unsure<br />

what I wanted to do when I left school and used to do<br />

some baking at home with my mother so I decided I’d<br />

look into becoming a chef and instantly fell in love with it!<br />

My passion for food and cooking continues to grow and<br />

grow so I’ve made the right decision.<br />

What do you look for when you create a new dish or<br />

menu? What are your main considerations?<br />

Firstly I look at what’s in season and what’s produced<br />

locally. I’ll evolve a dish from there and look at what<br />

flavours to add to enhance the dish.<br />

What’s proving to be the most popular dish on your<br />

menu this month and why do you think that is?<br />

Scotch egg - customers have commented on all aspects<br />

of the dish. The quality, the chutney, the flavour of the<br />

sausage meat and most importantly, the runny yolk!<br />

and spices always available on the shelf!<br />

What are yours and why?<br />

I do have five top ingredients, not so much herbs<br />

and spices though, but these are my essentials:<br />

Butter - enriches flavour.<br />

Salt - enhances flavour.<br />

Parsley - it’s a great universal herb for many dishes.<br />

Good stock - a good base for sauces and braising.<br />

Eggs - very versatile ingredient.<br />

What’s your favourite cuisine and why?<br />

Curry. There are so many varieties, they all taste very<br />

different and the spices vary massively. I don’t have a<br />

favourite dish and I always try a different curry when<br />

I do have one.<br />

Which famous person, dead or alive, would you<br />

love to cook for and what would you serve them?<br />

I would say my most memorable customer was Bob<br />

Monkhouse. He would always call ahead of visiting<br />

the hotel and make sure we had his favourite dessert<br />

which was a Baked Alaska. If he was still with us it<br />

would be great to cook for him again.<br />

If you were stranded on a desert island and<br />

allowed one item or ingredient from your kitchen,<br />

what would it be and why?<br />

Butter. Delicious with the fish I’d spear!<br />

When you go home, who does the cooking?<br />

Are you territorial in the kitchen!?<br />

My wife and I share the cooking at home, although<br />

when I’m cooking I want to be left to it. I like my food<br />

quite rich but my wife doesn’t, so she keeps a close<br />

eye on what I’m doing!<br />

Do any celebrity chefs inspire you? And if you<br />

had to compare yourself to one, who would you<br />

say you most resemble in terms of cooking style<br />

and/or temperament?<br />

It’s hard to pinpoint one chef as I’m influenced by so<br />

many in different ways. I do believe that chefs are all<br />

unique though and we all have different ways on how<br />

to run a kitchen, how to prepare the food and how to<br />

present it.<br />

You’re sharing a recipe with our readers today,<br />

why did you choose this one?<br />

Tiramisu. I’ve heard it’s the food of love! It’s also<br />

one of my wife’s favourites and popular with so<br />

many people. Enjoy!<br />

Tiramisu<br />

Serves 8<br />

The Sponge<br />

• 7 eggs<br />

• 125g castor sugar<br />

• 50g cocoa powder<br />

Ingredients<br />

Espresso liquor<br />

(for soaking the sponge)<br />

• 50g castor sugar<br />

• 100ml water<br />

• 350ml espresso coffee<br />

• 50ml Amaretto<br />

The Filling<br />

• 200g castor sugar<br />

• 4 egg yolks<br />

• 500g double cream<br />

• 500g mascarpone<br />

• 4 tbsp Marsala wine

Method<br />

For the sponge: Whisk the eggs<br />

and sugar together on a high speed<br />

(for about six minutes until the<br />

sabayon is stiff).<br />

Gently fold in the cocoa powder.<br />

Spread onto a tray lined with<br />

parchment paper or mafter mat.<br />

Bake at 150°c for about ten minutes.<br />

Allow to cool and then cut into rings<br />

ready to build the tiramisu.<br />

For the Espresso Liquor: Dissolve<br />

the sugar in the water with the<br />

espresso and Amaretto to make<br />

the liquor.<br />

Put the sugar into a pan and moisten<br />

it with a little water (not too much).<br />

Put it on the heat and bring it up<br />

to 120°c or to a soft boil stage.<br />

The Build<br />

Put a small amount of the<br />

mascarpone filling in the bottom<br />

of a cup or desert dish.<br />

Then add a layer for the sponge,<br />

brush some of the espresso liquor<br />

onto the sponge so it’s nicely<br />

covered and soaked in.<br />

Then add another layer of the<br />

mascarpone filling making sure<br />

it’s nice and level, followed by<br />

another layer of sponge and the<br />

espresso liquor.<br />

Repeat this one more time.<br />

Finish the top with the mascarpone<br />

filling and once this is done<br />

allow to chill.<br />

When ready to serve, dust the<br />

top with cocoa powder.<br />

Put aside to cool.<br />

For the filling: Whisk the egg yolks<br />

on a high speed, then slowly add the<br />

cooled sugar over the yolks while<br />

still whisking to form a sabayon.<br />

Continue whisking until all the sugar<br />

has been added and the mix is cool.<br />

In a different bowl, semi whisk the<br />

double cream to soft peaks.<br />

Gently fold the mascarpone and the<br />

Marsala wine into the sabayon.<br />

Fold in the semi whipped cream.<br />

Once all the parts are ready,<br />

we can build the tiramisu.<br />
