Star Chef Crush
Rosie
Sykes
We speak to the new chef at
Pint Shop, Rosie Sykes, about
developing the menu and
what’s in store for spring.
“Developing the menu with the team is a
very organic process. We understand each
other well, so it is just a case of talking
about ideas that fit in with what Pint Shop
is about. I find it very interesting and
rewarding to have other views and to be
doing dishes I wouldn’t necessarily have
had in my sights in the past. For example,
our lamb kebab made from slow cooked
spit roast lamb that has been marinaded
in harissa and lemon juice. It’s a huge hit
and rightly so, as it’s a good version of a
ubiquitous after pub staple!
We’ve just launched our winter/early
spring menu, there are still some winter
warmers, but we are starting to think
about lighter, brighter times. I have
developed a little salad of winter leaves
with roast salsify (the vegetable oyster,
as it was known in Victorian times),
croutons, mustard and half a soft boiled
duck egg.”
