This charming old coaching inn, full of character,
is in the village of Lifton, in a valley with five rivers
and close to the uplands of Dartmoor. The surfing
beaches of the Cornish north coast, the ruins of
Tintagel Castle and the ancient fishing villages of
Boscastle and Port Isaac are all in close proximity.
All 25 bedrooms are decorated in a traditional
country style, with generous bathrooms, power

Top ten tips for
travelling with
your dog
1. Keep your dogs ID
tags on and make sure
your contact information
is up to date with the
microchip company.
Consider a temporary
tag with your hotel’s
contact details on.
2. Avoid feeding
your dog immediately
before travelling.
Feed him or her at least
a few hours before your
journey to avoid getting
carsick.
3. Exercise your dog
before leaving.
A tired dog will travel
better than a fully
rested one!
4. Pack appropriate
supplies. Make your
dog’s area comfortable
with its own bedding
or blankets. Bring water,
treats for stops and some
chew toys along with
poop bags.
Avoid squeaky toys!
5. Place a few chew
toys in the back with
your dog to keep
them occupied.
It’s better to not give
him or her a bone or
food treats to avoid
car sickness.

INTERVIEW
What made you want to be a chef and how
long have you been doing it?
I started my catering career by working part
time in a gastro pub while studying at college.
This sparked my interest in food and I’ve
never looked back. I have now been cooking
for 23 years.
Which famous person, dead or alive, would
you love to cook for and what would you
serve them?
Right now, I would love to cook for Donald
Trump to see if he’s serious about some of his
ideas! I would give him a traditional English
meal of roast beef with all the trimmings.
What do you look for when you create
a new dish or menu? What’s your main
considerations?
I am always inspired by the changing seasons
and so our menus reflect what’s in season and
available. I’m also driven by the quality of our
supplies and thankfully in Devon, we are
blessed with great suppliers.
When you go home, who does the cooking?
Are you territorial in the kitchen!?
I do the cooking at home but I like to get my
children involved as much as possible so they
know what’s going on.
The #shelfie - a chef’s five must have herbs
and spices always available on the shelf!
What are yours and why?
All fresh herbs are a must and I keep mine in
the fridge all the time.
Do any celebrity chefs inspire you? And if
you had to compare yourself to one, who
would you say you most resemble in terms
of cooking style and/or temperament?
Tom Kerridge from the Hand and Flowers at
Marlow is amazing and a great chef. My cooking
style is like Phil Vickery and my temperament
is the same - when we are busy, there’s no
shouting, just head down and get on with
working.
What’s your favourite cuisine and why?
My style is modern British with a hint of French.
I enjoy cooking modern British food with our
local produce and adding some traditional
French techniques and ideas to the dish.

What’s proving to be the most popular
dish on your menu this month and why
do you think that is?
This month it’s the casserole of Cornish
Lobster, Monkfish, Red Mullet and Turbot with
saffron potatoes, leeks and chives. It’s as fresh
as can be and is a perfect spring dish.
If you were stranded on a desert island and
allowed one item or ingredient from your
kitchen, what would it be and why?
I would chose to take beef from our local
butcher, Philip Warren. It is truly world class
and consistently good.

Casserole of
Sea Fishes
by Steven Pidgeon
(Serves 2)

To make the fish glaze:
Bring all the ingredients to boil and
then lower the heat to a simmer for no
longer than 20 minutes (otherwise the
stock will become cloudy and bitter).
Pass the stock through a fine
sieve or muslin, return to heat and
reduce to a semi-glaze.
For future use, freeze the glaze in
an ice cube tray and add to sauces
as and when required.
How to make the
Casserole of Sea Fishes:
Place all the fish into shallow pan,
season with salt and pepper and add
the fish glaze, wine and bay leaf.
Slowly bring to boil and then cover
with a butter paper and place in a hot
oven 200 - 225˚C for 10 minutes.
Ingredients
For the fish glaze:
• 2lb white fish bones
(good fish - sole, turbot,
brill, monkfish)
• 1 onion peeled and sliced
• 1 leek peeled and sliced
• 1 sprig parsley
• 1 lemon halved
• 1 cup dry white wine
• 2 pints water
• 2 bay leaves
• 1 small bunch thyme
• 1 celery stalk
• 15 peppercorns
For the Casserole
of Sea Fishes:
• 1/2kg monkfish tail
• 4 scallops
• 10 oz. red mullet filleted
• 1 bay leaf
• 1 tablespoon dry white wine
• 2 tablespoons fish glaze
• 4 tablespoons double cream
• A pinch of saffron
• 2 oz cold unsalted butter
cut into cubes
• Salt and pepper
Remove fish and arrange on a
serving dish, keeping it warm.
Add the saffron to the cooking
liquors, boil fast until the liquid has
reduced to almost nothing.
Add the cream and bring back to the
boil. Whisk in the cold butter cubes
to thicken sauce.
Pour the sauce over the fish
and serve.
