A … "Age is something that doesn't matter - unless you're a cheese" Billie Burke, actress, 1885 -1970 Did you know that people were making cheese as long ago as 3,000 years before the birth of Christ? Fragments of decorative pictures found in the remains of a Mesopotamian temple in present day Iraq, show details of the method of production. Perhaps it all started by accident when people realised that milk curdled if left too long in the heat of the sun, and then they began to experiment. Early man was a hunter, then he became a herdsman looking after, and rearing, goats in the beginning. Later on he had flocks of sheep and eventually herds of cows, so milk was available in larger quantities. Each of the three different milks have their own distinctive flavour and each type of animal produces very different quantities. Sheep produce between 0.5 and one litre of milk per day, goats between two and five litres, whilst cows can give up to 30 litres each day - so it's understandable that cheese made from sheep and goats' milk is much more expensive that cows' milk cheese. The production of all kinds of cheese begins in the same way - it is only in the later stages that differences occur. To make a traditional English hard cheese, the milk is heated in vats in order to destroy any unwanted bacteria, then special cultures are added to aid the ripening of the milk. Rennet is introduced to thicken the milk which is then left to set in a warm place. Once curds are starting to form, the mixture is heated again to begin the process of releasing the liquid whey. When the curds start to sink in the vats, the whey is poured off and the curds are salted then put into moulds lined with cheesecloth. The process of pressing then begins, when the curds are compacted and any remaining whey released - the higher the pressure, the more solid the cheese will be. The cheese is then ready for drying - this takes place in a cool, airy environment with the cheese being rotated every day so that it dries out evenly. Some cheeses are wrapped in cheesecloth "bandages" for two to three weeks, the cloth being replaced daily until all the moisture has been extracted, whilst others are sealed in a wax rind. Now begins the last and perhaps the allimportant stage in the whole production - the maturing. A cheese which is tasteless and bland when freshly made, becomes full of flavour and body after a proper ripening period - and this can take many months. So, whether you prefer your cheese included in a cordon bleue recipe, or as an accompaniment to a glass of port, or with some pickle in a humble sandwich, pause for a while and consider the journey the cheese has made ... and then just enjoy it!
