Perú: Visión de Líderes, es un libro interactivo que analiza la situación actual del Perú con la mira puesta al Bicentenario. El objetivo de esta publicación es mostrar las riquezas del Perú al mundo y particularmente a los líderes de las 21 economías integrantes de APEC, poniendo énfasis en los sectores productivos más destacados, que impulsan nuestro crecimiento económico. alimentaria es una <strong>de</strong> las priorida<strong>de</strong>s<br />

<strong>de</strong> APEC 2016. En este aspecto, la<br />

agricultura familiar, practicada por<br />

parte significativa <strong>de</strong> la población<br />

mundial, es <strong>de</strong> gran importancia.<br />

one of the priorities for APEC 2016. In<br />

this respect, family farming, practiced<br />

by a significant part of the global<br />

population, is highly important.<br />

APEC established the Small and Medium Enterprises Working Group (SMEWG), to –in their own words– promote SME capabilities,<br />

in or<strong>de</strong>r for them to be able to leave the domestic sphere and grow and participate in the international tra<strong>de</strong> of the region.<br />

The APEC Ministerial Lea<strong>de</strong>rs’ Meetings, taking place since 1994, establish the gui<strong>de</strong>lines of the SMEWG. To this effect,<br />

the APEC Strategic Plan 2013-2016 for micro, small, and medium enterprises was presented in 2012, taking the following<br />

aspects into account: building management capability, entrepreneurship and innovation, financing, business environment,<br />

market access and internationalization.<br />

For the 2016 APEC meeting, Peru has proposed, as one of the priority issues, the mo<strong>de</strong>rnization of micro, small and medium<br />

business (SMEs and MEs). Hence, the <strong>de</strong>bates should focus on four main issues:<br />

a) Promote innovation and connectivity of SMEs and MEs.<br />

b) Move towards the integration and <strong>de</strong>velopment of production infrastructure.<br />

c) Integrate green SMEs and MEs into the global value chain.<br />

d) Internationalize SMEs and MEs and integrate them into the global value chain.<br />

SAFEGUARDING FOOD SAFETY<br />

According to the Food and Agriculture Organization of the United Nations (FAO), Peru has contributed to global food security<br />

with 13 crops, ten of which are native species: potato, string bean, peanut, quinoa, pumpkin, tomato, chirimoya, pineapple,<br />

chili pepper and cacao, as well as three introduced species (corn, yucca and papaya).<br />

Nowadays the world is more and more appreciative of our food products, partly thanks to a boom in our gastronomy.<br />

Therefore, it is necessary to adopt or improve practices that ensure the quality and suitability of our natural and processed<br />

food products for the domestic market as well as for export.<br />

One of the most important assets in the food industry is the trust from clients and consumers. This is why, beyond simply<br />

being a legal obligation, food safety is one of the key aspects of all food manufacturing and industrialization processes and<br />

is currently one of the main global concerns, for the industry as well as for governing bodies and the consumers. Moreover,<br />

several public health inci<strong>de</strong>nts caused by foodborne illnesses, which also caused a big impact on the food industry, have<br />

generated an increase in the attention paid to all issues related to food safety over the last <strong>de</strong>ca<strong>de</strong>s.<br />

The food industry faces a constant challenge: to implement and improve the quality management systems in or<strong>de</strong>r to<br />

guarantee food safety, prevent inci<strong>de</strong>nts concerning quality and eliminate <strong>de</strong>fects.<br />
