GOAT<br />

Known in France as chévre, Spain as queso de cabra and Italy as formaggio di<br />

capra, Goat Cheese takes many forms and flavors, and is produced widely throughout<br />

the world. The flavor can range from mild and lemony to flinty and tart, and the<br />

texture varies from creamy to hard.<br />

Milk: Goat<br />

Appearance: White to pale yellow<br />

Texture: Soft and spreadable to firm and grateable<br />

Flavor: Earthy, lemony, tangy, tart, barnyard<br />

Aroma: Bright, lemony, barnyard<br />

Pairing Suggestions: Olives, roasted nuts, dried fruit, chutneys, cured meats<br />

Interesting Fact: Goat cheeses are typically lower in fat, and higher in vitamin A<br />

and potassium. Goat cheeses are also well-tolerated by those that otherwise cannot<br />

consume cow’s milk.<br />
