GUANCIALE & LARDO<br />
Pancetta is made with pork belly, much like bacon. Unlike bacon, it is only<br />
cured, not smoked. Pancetta is often rolled and tied off to age. It is most commonly<br />
used as a savory component in soups and pasta.<br />
Guanciale is Italian cured meat made from pork jowl or cheek. The name guancile<br />
comes from guancia, the Italian word for cheek.<br />
Lardo is cured slabs of fat, usually fatback, from the pig. It is Italian in origin,<br />
and traditionally is cured with a mixture of salt, sugar, rosemary and garlic. It is<br />
sliced very thin for charcuterie platters, or may be used over grilled meat or in<br />
savory pastry.<br />
