PROVOLONE<br />

Provolone is an Italian cheese with two distinct flavor profiles. Piccante is aged longer<br />

and has a distinctly tangy, beefy flavor. Dolce is aged far less and has a mellower,<br />

nutty flavor. Provolone produced in the U.S. tends to be very mild and bear little<br />

resemblance to its Italian counterparts. Provolone should be dense, smooth and<br />

buttery in texture, and will melt exceptionally well.<br />

Appearance: Pale yellow with a thin, hard, golden-yellow, shiny rind<br />

Texture: Firm, dense, smooth<br />

Flavor: Buttery, nutty, piquant, salty<br />
