Dear Forever You Readers,<br />

I am delighted to welcome you to the<br />

winter edition of Forever You.<br />

My goal is to provide you twice a year<br />

with tips on fashion, beauty, health,<br />

and planning your wedding in addition<br />

to honeymoon destinations and real<br />

wedding stories.<br />

The name ‘Forever You’ was chosen to highlight the most<br />

important part of this because in the end, a wedding is all<br />

about the promise that two people make: the promise to<br />

love and cherish each other forever.<br />

No editor-in-chief can produce a magazine alone. I feel<br />

Singita Explore is as close to nature as you can get. It’s a return to the simplicity and authenticity of safari life<br />

but with a thoroughly modern sensibility and freshness about it. It’s camping but without having to forfeit the<br />

creature comforts or attentive service that are intrinsic to a Singita experience. Everything about the camp<br />

is designed for minimal energy consumption with little environmental impact. A key difference with a mobile tented<br />

camp is that it can be moved directly into the path of the annual migration or to a particularly scenic location in the<br />

reserve depending on the season, the weather and movement of game. There’s nothing quite like having your tent<br />

pitched in the perfect spot.<br />

Being in the middle of the bush surrounded by miles and miles of nothingness lends an adventurous, spontaneous<br />

atmosphere to each day. Connecting guests to their natural surroundings is subtly orchestrated by a dedicated team<br />

of perceptive, creative staff in a myriad of ways, from conjuring up inventive meals to setting up unique locations<br />

in which you can enjoy it all. Cleverly curated spaces dedicated to relaxed lounging, casual dining or drinks with a<br />

view are set up beyond the tents in open grasslands or beneath the shade of trees, creating a sense of freedom and<br />

abundant space and enticing guests out into the open. Whether it’s a table set up for an intimate dinner beneath<br />

the stars or a wholesome breakfast cooked over the coals and eaten socially around the fire, each day has an air of<br />

expectation and excitement about it.<br />

With a private guide, chef, camp host and camp staff, activities can be arranged on a whim, game drives may be as<br />

long or as short as you choose, and interactive bush walks or a horseback safari can easily be arranged, too. The<br />

awe and wonder attached to each new discovery in the bush create precious bonds and priceless shared memories.<br />

Singita Explore has six spacious guest tents and two large tents for dining and relaxation, allowing for two individual<br />

mobile camps to be operated at the same time, depending on the number of guests. As few as two people can book<br />

one camp and have complete privacy while a second camp can be set up elsewhere in the reserve for a separate party.<br />

All the tents have luxurious, layered interiors by Cécile & Boyd’s, inspired by safari’s most dependable workhorse, the<br />

Land Rover. As enchanting as they are practical, each tent has an en suite bathroom with a hot bucket shower and a<br />

flush toilet. Attention to detail, from ample throws and cushions to books and deliciously scented bathroom amenities,<br />

enhances the sense of luxury, generosity and comfort.<br />

A couple of nights under canvas at Singita Explore followed by a few nights at Serengeti House maximises time spent<br />

in the reserve for guests wanting exclusive use. Although the two experiences are quite different, what they have in<br />

common is a level of privacy and exclusivity that meets a growing demand amongst global travelers for fluid, flexible<br />

schedules that doesn’t have to be shared with anyone else and, in fact, don’t feel like schedules at all.<br />

At Serengeti House, guests dictate the pace and rhythm of each day. Diversions such as tennis, swimming, spa<br />

treatments, archery, and mountain biking, offer a soft landing after two nights of camping – even if it is the Singita<br />

Explore way.<br />

Vintage would be the most popular if<br />

weddings were a clique. Why? Because<br />

vintage weddings never go<br />

out of style. Whether it’s vintage in terms of the<br />

reception design, the bride’s wedding dress,<br />

floral arrangements or any other wedding detail<br />

that you can think of, you’re clearly headed<br />

to the right direction because you can never go<br />

wrong on this one. Stunning and timeless, that’s<br />

what vintage is all about. Sadly, there are people<br />

out there that only limit vintage to things and<br />

schemes that are old or pre-loved. There are<br />

actually a lot of wedding magazines, websites<br />

and blogs out there that are all about vintage to<br />

help you out, so it is impossible that you’ll run<br />

out of inspiration. But one thing to start you off<br />

with is that vintage must always be around pastel<br />

shades of every sort, like lilac, blue, lemon,<br />

and white or ivory. At the end of the day, vintage<br />

will become more meaningful when it is personal<br />

and original according to your heritage.<br />

Also, it should be tagged not only as a theme,<br />

but as a form of celebration of what is going to<br />

be a life-long commitment. The wedding should<br />

embody the uniqueness of the traits, personalities,<br />

hobbies and interests of the couple that are<br />

all about to be merged together forever. Thus,<br />

don’t feel pressured to have this kind of wedding<br />

just because it is the current trend - do it<br />

because you both share a passion for vintage.

design studio. We provide everything<br />

from invitations to full production. What<br />

maintain all production under our roof.<br />

a team that does graphic design, and a<br />

from; where do all of the ideas come<br />

from?<br />

The inspiration for our events is a reflection<br />

of each client’s individuality and style. Our<br />

job is to best interpret what each person<br />

sees in her or his head and bring it to life<br />

while maintaining the white lilac stamp<br />

(which is always a bit restrained ).<br />

Speaking of themes, what is the most<br />

exciting, out of this world, or difficult<br />

wedding theme White Lilac Inc. has<br />

created?<br />

I would say the most difficult jobs /<br />

themes don’t stem from weddings. They<br />

come out of our corporate events for<br />

high end fashion brands and are difficult<br />

not because the clients are difficult, but<br />

rather the standard of creativity and<br />

uniqueness is set so high that we have<br />

to constantly re-invent the wheel and<br />

push ourselves beyond our comfort<br />

zone. These events in turn become the<br />

inspiration for our brides and weddings.<br />

What are the latest flower trends<br />

for weddings?<br />

Don’t get me started with trends<br />

for weddings and flowers! I try very<br />

hard to push brides out of their<br />

comfort zone of blush and ivory but<br />

it’s a difficult task. I would say the<br />

trend is slowly infusing elements<br />

brides see in our events into their<br />

wedding - meaning I’ll do an event<br />

with all custom walls and floors<br />

but it’s too far out of the comfort<br />

zone for a wedding so brides will<br />

incorporate bits and pieces like<br />

a custom floor but still within the<br />

frame of the super feminine floral<br />

desires of blush and ivory. If I had<br />

one piece of advice for a bride :<br />

be bold, be brave and push the<br />

envelope ever further!<br />

Does White Lilac Inc. have a<br />

signature style? If so, how has<br />

was it created and how has it<br />

evolved?<br />

White Lilac definitely has a signature<br />

style. The philosophy is<br />

restrain; more and more doesn’t<br />

mean it’s better. I often tell my<br />

clients, “No, you don’t need this.<br />

Even in the most over the top wedding<br />

or event you’ll never see an<br />

element that you can say, “Well the<br />

wedding was not necessary“.<br />

I can’t convince anyone to choose us vs. another<br />

design firm, but what I can tell you is that the deep<br />

level of care we have for the outcome of the event<br />

supersedes anything. We care; we care a lot about<br />

our clients and the end product. If things need to<br />

be added to make it perfect, but it’s out of a clients<br />

budget, we still do it. Heck, maybe we even care<br />

more than the client at times!<br />

INSPIRATION


How long in advance should couples contact White<br />

Lilac Inc. to begin planning?<br />

The time line for planning and production is different with<br />

every project. I’ve been asked to produce events for Louis<br />

Vuitton with custom walls, floors, tables, and chairs in less<br />

than 10 days and I can always pull it off. I think it’s more<br />

important to book in advance so I don’t get booked with<br />

multiple events. That way I can dedicate myself to the<br />

details of one project!<br />

Is there any advice you would like to give to future<br />

newlyweds out there?<br />

If there is any advice I could give, and I mentioned this<br />

earlier, try and break out of your comfort zone. You have<br />

one opportunity to make your big day a signature affair of<br />

your personal style, so do it! Do not conform!<br />

The diamond – the king of precious stones<br />

A sure fire way to knock her socks off: choose a solitaire, a single diamond with a brilliant cut. The<br />

diamond is a symbol for infinity and is the king of precious stones. As a “child of fire,” it was born millions<br />

of years ago. Deep beneath the earth’s surface, at over 1200 degrees celcius and under immense pressure,<br />

carbon is transformed step by step into a diamond.<br />

Carat is the mass of the precious stone. The word carat comes from the Latin word “Ceratonia siliqua,”<br />

which means: “St. John’s bread / carob.” In ancient times there were no scales, so people used seeds<br />

to measure the weight. Because there is no substance harder than a diamond, its transformation is an<br />

art form.<br />

Selecting between 350 different Cuts is a big task because it makes the “fire” burn brilliantly. Shaping<br />

the diamond causes the loss of half its weight. The third “C” is the Color. The color spectrum ranges<br />

from white, red and yellow to green and blue. Clarity describes the diamond’s visual appearance. The<br />

flawless diamond has no inclusions. The tradition of the diamond has evolved over time; until the 15th<br />

century, ONLY men could be seen wearing them. When Archduke Maximilian of Austria gave his fiancée<br />

We chat with Ben Yew, Australia-based expert in the field of natural and honest portraits of love, laughter and<br />

happiness, and ask his advice on videography, choosing someone to shoot your big day, and what’s hot on the<br />

horizon for the wedding photography industry.<br />

What would you say sets an outstanding wedding<br />

photographer apart from the rest?<br />

If the photographer is shooting firstly from the heart and<br />

then from the eyes. After that, it’s her or his combination<br />

of personality, creativity and experience. Photography<br />

is a journey there are always new ways to learn and explore<br />

exciting possibilities; the photographers who keep<br />

discovering really do set themselves apart.<br />

Your shots tend to focus on natural light and natural<br />

environments, as opposed to a more ‘staged’<br />

set-up. Why is it that you prefer to photograph<br />

weddings and couples in this way?<br />

I love working with natural light, natural environments<br />

and natural moments – it’s my recipe for photographing<br />

a passionate couple in love, creating the softest<br />

glow around them while capturing their raw emotion<br />

for each other.<br />

You also offer wedding videography - would you<br />

say that this is something that more couples are<br />

leaning towards?<br />

Thanks to technology, the gap between wedding<br />

photography and videography is smaller than ever<br />

before. Most cameras come with video features and<br />

photographers can now shoot both formats with the<br />

same camera.<br />

On top of the technological improvements, video<br />

records the vows and speeches while photos capture<br />

the candid moments and bridal party photos to<br />

be framed and displayed. Couples love to have this<br />

combination to be able look back and relive their<br />

memorable day in two different formats.<br />

You must have lost count of the number of weddings<br />

you’ve attended. What would you say is<br />

your favourite part of the event to photograph?<br />

My favorite part of a wedding is the bride getting ready.<br />

There’s so much excitement in the morning and mixed<br />

emotions from everyone there, with the bride receiving<br />

so much love and support from her family and friends;<br />

it’s the perfect time to capture the real emotion.<br />

Any unusual requests or particularly challenging<br />

shoots?<br />

I don’t think I’ve received any unusual requests from a<br />

couple yet... In general, the most challenging shoots<br />

are working in bad weather with a time constraint.<br />

This is when I need to push myself to be flexible and<br />

still make things work.<br />

Do you have any useful tips on how to choose a<br />

wedding photographer?<br />

Besides loving his or her work, it would be beneficial<br />

to find a photographer that really clicks with you, one<br />

who can really guide you, ensuring that everyone has<br />

a memorable and fun session.<br />

What can we expect from wedding photography<br />

in the future, both from your own work and from<br />

up-coming trends?<br />

Hmm... this is tough one. For me, my work will continuously<br />

evolve towards a fusion of contemporary art<br />

and weddings with real emotion.<br />

Future trends in wedding photography involve the<br />

technological advancement of the gadgets; for<br />

example, drones kitted out with cameras flying above<br />

the event to capture an aerial view. This will affect<br />

wedding photographers’ styles and really impact the<br />

industry.<br />

Mark & I were born in the<br />

same little hospital, in the<br />

same small country town<br />

of Donnybrook, WA. Mark being 2<br />

years older, meant we never spoke at<br />

school. Little did we know, we would<br />

end up marrying 15 years later! We<br />

had both moved to Perth after high<br />

school, where Mark added me on<br />

MySpace and asked me out on a<br />

date. I was 18 and Mark was 20. We<br />

went from small town country kids, to<br />

living in Melbourne and South Korea<br />

together…and so it went from there.


Our wedding day began, standing<br />

underneath an arch of Donnybrook<br />

stone in the cutest chapel at St<br />

George’s College, Nedlands. Here, we said<br />

our vows in front of the people closest to<br />

us and a priest who was a childhood family<br />

friend from Donnybrook. The chapel was decorated<br />

with white wisteria trees and candles<br />

down the aisle. A string quartet entertained<br />

guests. The bride and groom walked back<br />

down the aisle to Concerning Hobbits from<br />

Lord of the Rings, a happy piece of music!<br />

Our wedding reception was held at Fraser’s<br />

Kings Park overlooking the Perth skyline<br />

and Swan River. It was an elegant, all white<br />

affair, accented with large pink, purple and yellow<br />

blooms encasing silver candelabras as centerpieces.<br />

Small matching vases with flowers and candles sat on<br />

the tables. To tie in with the ceremony, white wisteria<br />

trees were dotted around the venue.<br />

We added whimsical touches to our day. A Hello Kitty<br />

bride and groom sat on top of our three-tier wedding<br />

cake decorated with blooms. A pink vintage typewriter<br />

was on display for our guests to type up their messages<br />

and the bonbonniere was handmade by my<br />

mum and nanna. It held sugared almonds representing<br />

my Italian heritage.<br />

I work in advertising and specialise in social media, so<br />

naturally Pinterest is where I found all of my inspiration<br />

for my wedding. Cutting up magazines and creating<br />

mood boards is another way to piece together your<br />

day. Having mood boards is a great way to look back<br />

on your day. Now we’re moving onto our honeymoon<br />

in the Maldives at Constance Halaveli Resort, complete<br />

with an overwater bungalow and private plunge<br />

pool. together…and so it went from there.<br />

CULINARY ART<br />

The most delicious part of any wedding is<br />

the wedding cake. A cake is so important<br />

that it has become the center of attention<br />

for traditions, television shows, magazines,<br />

and many Pinterest boards. Wedding<br />

cakes can be critical to continuing the<br />

theme of the wedding while allowing the<br />

bride and groom to show off personal style and tastes.<br />

Here are some different ways to spice up the traditional<br />

wedding cake:<br />

A POP OF COLOR<br />

Many wedding cakes are vanilla or have vanilla icing –<br />

what a great place to add some color! If you want to<br />

make it a surprise, just color the actual cake to match<br />

the centerpieces or the bridesmaids’ dresses. Maybe you<br />

could even be daring and go for a rainbow tiered cake?<br />

One way to make sure your cake stands out is to go for<br />

metallic accessories.<br />

DECONSTRUCTED CAKES<br />

Have your baker make a deconstructed cake with sprinkles<br />

or berries baked right into the cake to give it some<br />

color. You can choose to ice only the top of the cake,<br />

ice every other tier, or even mix it up with several smaller<br />

cakes in an arrangement.<br />

GROOM’S CAKE<br />

The Groom’s Cake is a tradition in the Deep South where<br />

the bride and groom have separate cakes. Often, the<br />

Groom’s cake will resemble something the groom enjoys<br />

such as the shape of a football or having the colors of his<br />

favorite baseball team. This is a great tradition because it<br />

allows your guests to have some variety and it also helps<br />

the groom feel included in some of the planning.<br />

Planning your wedding cake can be difficult. However,<br />

by simply thinking outside of the box, you can have a<br />

statement cake that takes everyone’s breath away and<br />

will have little girls dreaming of the day they can choose<br />

LADURÉE<br />

The Parisian tea room’s history is intimately tied to<br />

the history of the Ladurée family.<br />

It all began in 1862, when Louis Ernest Ladurée,<br />

a miller from France’s southwest, created a bakery in<br />

Paris at 16 rue Royale.<br />

The same year, the first stone of the Garnier Opera was laid, and the area surrounding the Madeleine was rapidly<br />

developing into one of the capital’s most important and elegant business districts. The most prestigious names in<br />

French luxury items had already taken up residence in this neighborhood.<br />

In 1871, while Baron Haussmann was giving Paris a “new face”,a fire in the bakery opened the possibility of a<br />

transformation into a pastry shop. The decoration of the pastry shop was entrusted to Jules Cheret, a famous turnof-the-century<br />

painter and poster artist. Monsieur Cheret sought inspiration from the painting techniques used for<br />

the ceiling of the Sistine Chapel and the Garnier Opera. By integrating them in his work, he added depth and relief<br />

to the ceilings ornamented with cherubic children.<br />

Under the Second Empire, cafés developed and<br />

became more and more luxurious. They attracted<br />

Parisian high society. Along with the chic<br />

restaurants around the Madeleine, they became<br />

the showcases of the capital. The beginning of<br />

this century found Paris wrapped up in a frenzy<br />

of distraction and going out in public. Parisians<br />

flocked to the Universal Exposition. Women<br />

were also changing. They wanted to make new<br />

acquaintances. Literary salons and literature<br />

circles were outmoded.<br />

Ernest Ladurée’s wife, Jeanne Souchard, had<br />

the idea of mixing styles : The Parisian café and<br />

pastry shop gave birth to one of the first tea<br />

rooms in town. The salon de thé had a definite<br />

advantage over the cafés : women could gather<br />

in complete freedom. Jeanne Souchard succeeded<br />

in combining the turn-of-the-century<br />

trend to modernism with knowledge of the<br />

merits of a craft transmitted by her family.<br />

The rue Royale tea room was enlarged in 1930<br />

by Pierre Desfontaines, second cousin of Louis<br />

Ernest Ladurée.<br />

What’s your top tip for couples faced with<br />

the daunting task of planning their wedding<br />

catering and finding a caterer?<br />

We are all about the street food wedding!<br />

Hiring a number of different street food<br />

vendors is the perfect choice because you<br />

can cater to all your guests’ needs as well as<br />

create a buzzing atmosphere.<br />

What do you think is the key to the perfect<br />

wedding cake?<br />

We don’t think there is one perfect wedding<br />

cake. We think every girl is different<br />

and therefore her wedding cake should be<br />

beautifully unique!<br />

When did your passion for<br />

baking and, more specifically,<br />

meringues develop?<br />

We have both been keen bakers<br />

our whole lives! Alex’s love for<br />

baking started when she was<br />

little, making meringue with her<br />

Dad and getting hooked straight<br />

away. Stacey’s love came from<br />

weekends away with Grandma;<br />

no matter what day of the week<br />

it was, dessert would always be<br />

on the menu. Grandma taught<br />

her everything she knows about<br />

baking and caking, and coming<br />

from New Zealand, pavlova was<br />

a family favorite.<br />

How did you come up with the<br />

idea of a meringue business?<br />

We were working in a hot,<br />

sweaty, male-dominated kitchen<br />

in Hackney, London, pondering<br />

ideas about how to get out and<br />

do it on our own! We were thinking,<br />

“What will be the next sweet<br />

food trend? The cupcakes have<br />

had it!” Then we had the light<br />

bulb moment!<br />

What’s been the highlight of<br />

your meringue-crafting careers<br />

so far?<br />

We’ve had a roller coaster of<br />

a ride over the last 2 years. I<br />

think the highlight for both of us<br />

was holding our first published<br />

Meringue Girls Cookbook in our<br />

hands and then getting a second<br />

cookbook deal; knowing that<br />

the book has been successful<br />

enough that they have come<br />

back for seconds!<br />

What is the most unusual<br />

request you’ve had?<br />

Why is it, do you think, that<br />

meringues and weddings go<br />

so well together?<br />

Ladies love to impress on their<br />

special day. Having a beautiful<br />

rainbow display of meringue<br />

Stacey’s dream wedding cake would be not<br />

one but eight different beautifully decorated<br />

cakes on vintage tiers. Alex’s would be a<br />

really tall naked cake: Victoria sponge with<br />

loads of berries and zero fondant icing to<br />

cover its natural beauty!<br />

THE SOMMELIER<br />

1) Why did you become a wine sommelier and<br />

what do you love most about your job?<br />

I grew up in a wine region, the Wachau, at a winery.<br />

I guess I took my first sip of wine when I was very<br />

little. We had a “Heurigen,” a little local wine tavern,<br />

where I used to help when I was a child. After this<br />

I went to culinary school in Krems and after my<br />

degree I started to work in great restaurants. I was<br />

always fascinated by the sommeliers who I worked<br />

with and I decided to start studying and became<br />

a certified sommelier. What I like the most about<br />

my job is that every day is different! You are able to<br />

travel, to meet new and interesting people, you find<br />

new friends who also love wine and food. And being<br />

a Sommelier brought me to NYC!<br />

2) How would you describe a typical day of work?<br />

KATJA<br />

Scharnagl<br />

We met Katja Scharnagl, a sommelier<br />

at ‘Le Bernadin’ in New York, to talk<br />

about her job and to get some essential<br />

advice about wine for your big day.<br />

Most people think that Sommeliers are only attending<br />

tastings and selling wine on the floor. Well, the<br />

truth is that there is so much more to do.<br />

Starting in the morning with answering emails, they<br />

are either from our sales rep regarding new wines,<br />

vintage or price changes, or from our event department<br />

asking for wine recommendations for upcoming<br />

events. Almost every day we have appointments<br />

for tasting in the morning at Le Bernardin. Lunch<br />

service can be very busy and we are a team of six<br />

Sommeliers here and there are always two of us on<br />

the floor. The afternoon is filled with more emails,<br />

phone calls, as well as taking care of deliveries,<br />

cellar work – putting new wines away, ordering new<br />

wines, working on the inventory program, tasting<br />

new dishes and finding the perfect pairing… and by<br />

5pm we are ready for the dinner service filled with<br />

great wines. At Le Bernardin we have a very extensive<br />

wine list with about 1200 references and we are<br />

also very well known for our wine pairings.<br />

3) What skills are required to be a successful<br />

sommelier?<br />

Besides a good knowledge and a taste? Most<br />

people forget that we are still servers – wine servers<br />

and we are here to provide a service. We are<br />

part of the restaurant team and the guest who is<br />

eating at the restaurant needs to get the whole<br />

perfect picture. You can be the best Sommelier<br />

who is perfectly trained and is a walking lexicon,<br />

but if you don’t listen to your guests you won’t<br />

be successful. You can guide people, you can<br />

introduce them to new regions, new grapes and<br />

they will be very thankful and happy and will come<br />

back. And please don’t forget to smile when you<br />

are on the floor.<br />

4) Which VIPs have you served?<br />

We have a very strong policy at the restaurant<br />

regarding VIP’s, we are protecting them and<br />

serve them as every other guest.<br />

5) What is your favorite wine?<br />

I don’t have just one favorite wine. It’s like asking<br />

a mum who’s your favorite child. I have memories<br />

of great wines which I shared with wonderful<br />

people! I do have some favorite regions: of<br />

course the Wachau, but also the whites and<br />

reds from the Burgundy region, old German<br />

Rieslings, Jura, old Cabernets from California, ….<br />

And there are so many more out there…<br />

ABOUT WINE<br />

6) What is the best way to store wine?<br />

If you have just a couple of bottles you can<br />

always keep them in the fridge. If you have<br />

more, a wine cooler makes sense. You can<br />

purchase great wines, but if you don’t store<br />

them properly they can go bad. It should be in<br />

a room or a cooler, where it’s dark, no shaking,<br />

steady temperature, not too much humidity<br />

and not too crowded. Don’t put your wines in<br />

the kitchen, laundry room or boiler room, you<br />

won’t be happy after you open the wine. If you<br />

spend money on great wines why not invest in<br />

something to properly store them?<br />

7) What is the ideal serving temperature?<br />

White Wine: young, fresh and easy one 8-10<br />

degrees (46 - 50 °F). Same for champagne<br />

and dessert wines, White wines with more<br />

weight and age to it can be a little be warmer:<br />

11-13 degrees (52 - 55 °F)<br />

Red Wine: never ever room temperature! Between<br />

15-18 degrees (59 - 64 °F) is fine.<br />

8) Can you give advice for pairing wine<br />

and food?<br />

What grows together goes together. A simple rule,<br />

but very effective. Also you should always look at<br />

all ingredients of a dish, sometimes you have a side, or a<br />

vegetable, or a sauce which is the key flavor. Or how the<br />

dish is prepared. For example, you have a pan-roasted<br />

or grilled fish with richer flavors you certainly can go into<br />

a red wine direction. We have currently a Striped Bass<br />

with Bhutanese Red Rise and a ginger red wine sauce<br />

on the tasting menu which we pair with a pretty bold red<br />

wine from the Ribera del Duero region in Spain. I also<br />

like to pair food with Champagne, which is probably the<br />

most versatile food wine in the world. And if you love<br />

big reds with your meal, go for it! At the end of the day<br />

it’s your dinner and you should enjoy it the way you like<br />

it the most! And if someone else is paying for a bottle of<br />

Petrus or La Tâche, don’t worry about the food.<br />

9) Does the type of glass affect the taste of<br />

wine? Which glasses can you recommend?<br />

Of course, if you put a bold, concentrated young red<br />

wine into a little glass you will not like the wine. If you<br />

give the same wine some room, for example in a bigger<br />

bowl and maybe more delicate and thinner you<br />

will discover the different. I personally love the Zalto<br />

DenkArt Glasses. All of them are hand blown in a small<br />

factory in Austria. The glasses are both powerful and<br />

subtle and along with their shape and architecture, help<br />

to enhance the wine.<br />

10) Some claim women have a better sense of<br />

smell than men. Are they better wine testers?<br />

I don’t know if we are better, I met so many great<br />

caffeine-free alternatives, such as green or<br />

white tea?<br />

• You should also try to replace sugar with<br />

agave syrup or a touch of raw honey, using<br />

any sweetener sparingly.<br />

• Try sprinkling cinnamon to add sweetness<br />

to foods – this will trick your senses and<br />

stabilise your cravings.<br />

• Avoid chemical ‘sugar-free substitutes’ at all<br />

costs, as these will only reverse your efforts<br />

in the long run.<br />

Red meat is high in saturated fat and difficult<br />

to digest and could disrupt healthy hormone<br />

functions. As your want to keep your tummy flat,<br />

your mood in control, your skin glowing, and the<br />

cellulite at bay, meat must go!<br />

Incorporate a pro-biotic as well; this<br />

hunger, too.<br />

White meat<br />

• Now’s the time to cut out all meat. In doing so, you’ll<br />

be optimising your body’s ability to process food. Try<br />

adding more fresh fish to your diet to compensate.<br />

• Don’t forget that eggs can still be used as a great<br />

source of protein, as can organic tofu.<br />

All alcohol during the week<br />

• Allow yourself two glasses of red wine at the weekend,<br />

though – it’s proven to benefit cardiovascular health<br />

and has anti-aging properties too! The grapes used to<br />

produce wine contain numerous phytonutrients, most<br />

significantly resveratol antioxidants. If you’re going to<br />

go without alcohol altogether, try a resveratrol supplement<br />

to enhance circulation, protect cells and improve<br />

the skin’s appearance.<br />

• In the case of an important social event, where you<br />

may want to have something a little stronger, try a<br />

vodka and soda with lemon or lime or a whisky and<br />

water.<br />

• Alcohol dehydrates you and makes you more susceptible<br />

to forming irregular eating habits, which will ruin all<br />

your hard work detoxing!<br />

IN<br />

Start the day with half a pint of water with lemon<br />

every morning.<br />

Tackle hunger pains by having a pear, apple or<br />

peach.<br />

Pick whole foods wherever possible. Think vegetables,<br />

fruit, nuts, fish and eggs.<br />

Have beans or pulses for lunch twice this week.<br />

• They are high in protein and fibre, and therefore<br />

both filling and nutritious.<br />

Add garlic and spices to your lunchtime meal.<br />

Try adding chia seeds to two of your meals this<br />

• Chia seeds are also high in protein and fibre;<br />

they’ll keep you full, keep your gut clean, and<br />

bring an extra dose of nutritious goodness.<br />

Try a cup of peppermint, ginger, or mint tea in the<br />

For optimal results, eat only fruit before 10am and<br />

only vegetables after 4pm. If you need a carb boost<br />

in the evening, try a bowl of oatmeal with berries<br />

and cinnamon, alongside an herbal tea.<br />

The night before:<br />

Dinner should consist of your favorite lean protein<br />

with grilled vegetables.<br />

Save the alcohol and high-sugar high-carb desserts<br />

for tomorrow!<br />

If you must have a treat, try a bowl of sweet berries.<br />

And most importantly, go to bed early!<br />

Vana Retreats recently opened the doors<br />

to its first path-breaking wellness retreat,<br />

Vana, Malsi Estate. Vana means forest,<br />

and the retreat is passionate in its nurturing and<br />

Dehradun, India, near clusters of reserve Sal forest.<br />
