Dear Forever You Readers,
I am delighted to welcome you to the
winter edition of Forever You.
My goal is to provide you twice a year
with tips on fashion, beauty, health,
and planning your wedding in addition
to honeymoon destinations and real
wedding stories.
The name ‘Forever You’ was chosen to highlight the most
important part of this because in the end, a wedding is all
about the promise that two people make: the promise to
love and cherish each other forever.
No editor-in-chief can produce a magazine alone. I feel
very fortunate to be surrounded by people who are as
passionate about Forever You as I am. I want to thank the

A Slice of HEAVEN
at SINGITA GRUMETI

Singita Explore is as close to nature as you can get. It’s a return to the simplicity and authenticity of safari life
but with a thoroughly modern sensibility and freshness about it. It’s camping but without having to forfeit the
creature comforts or attentive service that are intrinsic to a Singita experience. Everything about the camp
is designed for minimal energy consumption with little environmental impact. A key difference with a mobile tented
camp is that it can be moved directly into the path of the annual migration or to a particularly scenic location in the
reserve depending on the season, the weather and movement of game. There’s nothing quite like having your tent
pitched in the perfect spot.
Being in the middle of the bush surrounded by miles and miles of nothingness lends an adventurous, spontaneous
atmosphere to each day. Connecting guests to their natural surroundings is subtly orchestrated by a dedicated team
of perceptive, creative staff in a myriad of ways, from conjuring up inventive meals to setting up unique locations
in which you can enjoy it all. Cleverly curated spaces dedicated to relaxed lounging, casual dining or drinks with a
view are set up beyond the tents in open grasslands or beneath the shade of trees, creating a sense of freedom and
abundant space and enticing guests out into the open. Whether it’s a table set up for an intimate dinner beneath
the stars or a wholesome breakfast cooked over the coals and eaten socially around the fire, each day has an air of
expectation and excitement about it.
With a private guide, chef, camp host and camp staff, activities can be arranged on a whim, game drives may be as
long or as short as you choose, and interactive bush walks or a horseback safari can easily be arranged, too. The
awe and wonder attached to each new discovery in the bush create precious bonds and priceless shared memories.
Singita Explore has six spacious guest tents and two large tents for dining and relaxation, allowing for two individual
mobile camps to be operated at the same time, depending on the number of guests. As few as two people can book
one camp and have complete privacy while a second camp can be set up elsewhere in the reserve for a separate party.
All the tents have luxurious, layered interiors by Cécile & Boyd’s, inspired by safari’s most dependable workhorse, the
Land Rover. As enchanting as they are practical, each tent has an en suite bathroom with a hot bucket shower and a
flush toilet. Attention to detail, from ample throws and cushions to books and deliciously scented bathroom amenities,
enhances the sense of luxury, generosity and comfort.
A couple of nights under canvas at Singita Explore followed by a few nights at Serengeti House maximises time spent
in the reserve for guests wanting exclusive use. Although the two experiences are quite different, what they have in
common is a level of privacy and exclusivity that meets a growing demand amongst global travelers for fluid, flexible
schedules that doesn’t have to be shared with anyone else and, in fact, don’t feel like schedules at all.
At Serengeti House, guests dictate the pace and rhythm of each day. Diversions such as tennis, swimming, spa
treatments, archery, and mountain biking, offer a soft landing after two nights of camping – even if it is the Singita
Explore way.

Vintage would be the most popular if
weddings were a clique. Why? Because
vintage weddings never go
out of style. Whether it’s vintage in terms of the
reception design, the bride’s wedding dress,
floral arrangements or any other wedding detail
that you can think of, you’re clearly headed
to the right direction because you can never go
wrong on this one. Stunning and timeless, that’s
what vintage is all about. Sadly, there are people
out there that only limit vintage to things and
schemes that are old or pre-loved. There are
actually a lot of wedding magazines, websites
and blogs out there that are all about vintage to
help you out, so it is impossible that you’ll run
out of inspiration. But one thing to start you off
with is that vintage must always be around pastel
shades of every sort, like lilac, blue, lemon,
and white or ivory. At the end of the day, vintage
will become more meaningful when it is personal
and original according to your heritage.
Also, it should be tagged not only as a theme,
but as a form of celebration of what is going to
be a life-long commitment. The wedding should
embody the uniqueness of the traits, personalities,
hobbies and interests of the couple that are
all about to be merged together forever. Thus,
don’t feel pressured to have this kind of wedding
just because it is the current trend - do it
because you both share a passion for vintage.

design studio. We provide everything
from invitations to full production. What
sets us apart is that we often custom
make each item to suit a client and we
maintain all production under our roof.
We have a team that builds structures,
a team that does graphic design, and a

from; where do all of the ideas come
from?
The inspiration for our events is a reflection
of each client’s individuality and style. Our
job is to best interpret what each person
sees in her or his head and bring it to life
while maintaining the white lilac stamp
(which is always a bit restrained ).
Speaking of themes, what is the most
exciting, out of this world, or difficult
wedding theme White Lilac Inc. has
created?
I would say the most difficult jobs /
themes don’t stem from weddings. They
come out of our corporate events for
high end fashion brands and are difficult
not because the clients are difficult, but
rather the standard of creativity and
uniqueness is set so high that we have
to constantly re-invent the wheel and
push ourselves beyond our comfort
zone. These events in turn become the
inspiration for our brides and weddings.

COME TRUE...
What are the latest flower trends
for weddings?
Don’t get me started with trends
for weddings and flowers! I try very
hard to push brides out of their
comfort zone of blush and ivory but
it’s a difficult task. I would say the
trend is slowly infusing elements
brides see in our events into their
wedding - meaning I’ll do an event
with all custom walls and floors
but it’s too far out of the comfort
zone for a wedding so brides will
incorporate bits and pieces like
a custom floor but still within the
frame of the super feminine floral
desires of blush and ivory. If I had
one piece of advice for a bride :
be bold, be brave and push the
envelope ever further!
Does White Lilac Inc. have a
signature style? If so, how has
was it created and how has it
evolved?
White Lilac definitely has a signature
style. The philosophy is
restrain; more and more doesn’t
mean it’s better. I often tell my
clients, “No, you don’t need this.
Even in the most over the top wedding
or event you’ll never see an
element that you can say, “Well the
wedding was not necessary“.

designers?

we keep everything under one

I can’t convince anyone to choose us vs. another
design firm, but what I can tell you is that the deep
level of care we have for the outcome of the event
supersedes anything. We care; we care a lot about
our clients and the end product. If things need to
be added to make it perfect, but it’s out of a clients
budget, we still do it. Heck, maybe we even care
more than the client at times!

INSPIRATION

How long in advance should couples contact White
Lilac Inc. to begin planning?
The time line for planning and production is different with
every project. I’ve been asked to produce events for Louis
Vuitton with custom walls, floors, tables, and chairs in less
than 10 days and I can always pull it off. I think it’s more
important to book in advance so I don’t get booked with
multiple events. That way I can dedicate myself to the
details of one project!
Is there any advice you would like to give to future
newlyweds out there?
If there is any advice I could give, and I mentioned this
earlier, try and break out of your comfort zone. You have
one opportunity to make your big day a signature affair of
your personal style, so do it! Do not conform!

Getting engaged is back in fashion
Until recently, it was not very trendy - now the art of getting engaged has made a comeback. There is
no recipe for the perfect proposal. The way men pop the question, just like people, can be very different
from each other. Whether it’s an extravagant affair in a hot air balloon or a simple setting among rose
petals, it won’t be perfect without an engagement ring. With a silver, gold or platinum ring, men can
show women they are meant to be together.
The diamond – the king of precious stones
A sure fire way to knock her socks off: choose a solitaire, a single diamond with a brilliant cut. The
diamond is a symbol for infinity and is the king of precious stones. As a “child of fire,” it was born millions
of years ago. Deep beneath the earth’s surface, at over 1200 degrees celcius and under immense pressure,
carbon is transformed step by step into a diamond.
The four “C”s indicate the value.
Carat is the mass of the precious stone. The word carat comes from the Latin word “Ceratonia siliqua,”
which means: “St. John’s bread / carob.” In ancient times there were no scales, so people used seeds
to measure the weight. Because there is no substance harder than a diamond, its transformation is an
art form.
Selecting between 350 different Cuts is a big task because it makes the “fire” burn brilliantly. Shaping
the diamond causes the loss of half its weight. The third “C” is the Color. The color spectrum ranges
from white, red and yellow to green and blue. Clarity describes the diamond’s visual appearance. The
flawless diamond has no inclusions. The tradition of the diamond has evolved over time; until the 15th
century, ONLY men could be seen wearing them. When Archduke Maximilian of Austria gave his fiancée
a diamond ring, everything changed.

We chat with Ben Yew, Australia-based expert in the field of natural and honest portraits of love, laughter and
happiness, and ask his advice on videography, choosing someone to shoot your big day, and what’s hot on the
horizon for the wedding photography industry.
What would you say sets an outstanding wedding
photographer apart from the rest?
If the photographer is shooting firstly from the heart and
then from the eyes. After that, it’s her or his combination
of personality, creativity and experience. Photography
is a journey there are always new ways to learn and explore
exciting possibilities; the photographers who keep
discovering really do set themselves apart.
Your shots tend to focus on natural light and natural
environments, as opposed to a more ‘staged’
set-up. Why is it that you prefer to photograph
weddings and couples in this way?
I love working with natural light, natural environments
and natural moments – it’s my recipe for photographing
a passionate couple in love, creating the softest
glow around them while capturing their raw emotion
for each other.
You also offer wedding videography - would you
say that this is something that more couples are
leaning towards?
Thanks to technology, the gap between wedding
photography and videography is smaller than ever
before. Most cameras come with video features and
photographers can now shoot both formats with the
same camera.
On top of the technological improvements, video
records the vows and speeches while photos capture
the candid moments and bridal party photos to
be framed and displayed. Couples love to have this
combination to be able look back and relive their
memorable day in two different formats.
You must have lost count of the number of weddings
you’ve attended. What would you say is
your favourite part of the event to photograph?
My favorite part of a wedding is the bride getting ready.
There’s so much excitement in the morning and mixed
emotions from everyone there, with the bride receiving
so much love and support from her family and friends;
it’s the perfect time to capture the real emotion.
Any unusual requests or particularly challenging
shoots?
I don’t think I’ve received any unusual requests from a
couple yet... In general, the most challenging shoots
are working in bad weather with a time constraint.
This is when I need to push myself to be flexible and
still make things work.
Do you have any useful tips on how to choose a
wedding photographer?
Besides loving his or her work, it would be beneficial
to find a photographer that really clicks with you, one
who can really guide you, ensuring that everyone has
a memorable and fun session.
What can we expect from wedding photography
in the future, both from your own work and from
up-coming trends?
Hmm... this is tough one. For me, my work will continuously
evolve towards a fusion of contemporary art
and weddings with real emotion.
Future trends in wedding photography involve the
technological advancement of the gadgets; for
example, drones kitted out with cameras flying above
the event to capture an aerial view. This will affect
wedding photographers’ styles and really impact the
industry.

Mark & I were born in the
same little hospital, in the
same small country town
of Donnybrook, WA. Mark being 2
years older, meant we never spoke at
school. Little did we know, we would
end up marrying 15 years later! We
had both moved to Perth after high
school, where Mark added me on
MySpace and asked me out on a
date. I was 18 and Mark was 20. We
went from small town country kids, to
living in Melbourne and South Korea
together…and so it went from there.

Our wedding day began, standing
underneath an arch of Donnybrook
stone in the cutest chapel at St
George’s College, Nedlands. Here, we said
our vows in front of the people closest to
us and a priest who was a childhood family
friend from Donnybrook. The chapel was decorated
with white wisteria trees and candles
down the aisle. A string quartet entertained
guests. The bride and groom walked back
down the aisle to Concerning Hobbits from
Lord of the Rings, a happy piece of music!

REAL WEDDINGS
Our wedding reception was held at Fraser’s
Kings Park overlooking the Perth skyline
and Swan River. It was an elegant, all white
affair, accented with large pink, purple and yellow
blooms encasing silver candelabras as centerpieces.
Small matching vases with flowers and candles sat on
the tables. To tie in with the ceremony, white wisteria
trees were dotted around the venue.
We added whimsical touches to our day. A Hello Kitty
bride and groom sat on top of our three-tier wedding
cake decorated with blooms. A pink vintage typewriter
was on display for our guests to type up their messages
and the bonbonniere was handmade by my
mum and nanna. It held sugared almonds representing
my Italian heritage.

I work in advertising and specialise in social media, so
naturally Pinterest is where I found all of my inspiration
for my wedding. Cutting up magazines and creating
mood boards is another way to piece together your
day. Having mood boards is a great way to look back
on your day. Now we’re moving onto our honeymoon
in the Maldives at Constance Halaveli Resort, complete
with an overwater bungalow and private plunge
pool. together…and so it went from there.

LADURÉE
The Parisian tea room’s history is intimately tied to
the history of the Ladurée family.
It all began in 1862, when Louis Ernest Ladurée,
a miller from France’s southwest, created a bakery in
Paris at 16 rue Royale.
The same year, the first stone of the Garnier Opera was laid, and the area surrounding the Madeleine was rapidly
developing into one of the capital’s most important and elegant business districts. The most prestigious names in
French luxury items had already taken up residence in this neighborhood.
In 1871, while Baron Haussmann was giving Paris a “new face”,a fire in the bakery opened the possibility of a
transformation into a pastry shop. The decoration of the pastry shop was entrusted to Jules Cheret, a famous turnof-the-century
painter and poster artist. Monsieur Cheret sought inspiration from the painting techniques used for
the ceiling of the Sistine Chapel and the Garnier Opera. By integrating them in his work, he added depth and relief
to the ceilings ornamented with cherubic children.
Under the Second Empire, cafés developed and
became more and more luxurious. They attracted
Parisian high society. Along with the chic
restaurants around the Madeleine, they became
the showcases of the capital. The beginning of
this century found Paris wrapped up in a frenzy
of distraction and going out in public. Parisians
flocked to the Universal Exposition. Women
were also changing. They wanted to make new
acquaintances. Literary salons and literature
circles were outmoded.
Ernest Ladurée’s wife, Jeanne Souchard, had
the idea of mixing styles : The Parisian café and
pastry shop gave birth to one of the first tea
rooms in town. The salon de thé had a definite
advantage over the cafés : women could gather
in complete freedom. Jeanne Souchard succeeded
in combining the turn-of-the-century
trend to modernism with knowledge of the
merits of a craft transmitted by her family.
The rue Royale tea room was enlarged in 1930
by Pierre Desfontaines, second cousin of Louis
Ernest Ladurée.

What’s your top tip for couples faced with
the daunting task of planning their wedding
catering and finding a caterer?
We are all about the street food wedding!
Hiring a number of different street food
vendors is the perfect choice because you
can cater to all your guests’ needs as well as
create a buzzing atmosphere.
What do you think is the key to the perfect
wedding cake?
We don’t think there is one perfect wedding
cake. We think every girl is different
and therefore her wedding cake should be
beautifully unique!
When did your passion for
baking and, more specifically,
meringues develop?
We have both been keen bakers
our whole lives! Alex’s love for
baking started when she was
little, making meringue with her
Dad and getting hooked straight
away. Stacey’s love came from
weekends away with Grandma;
no matter what day of the week
it was, dessert would always be
on the menu. Grandma taught
her everything she knows about
baking and caking, and coming
from New Zealand, pavlova was
a family favorite.
How did you come up with the
idea of a meringue business?
We were working in a hot,
sweaty, male-dominated kitchen
in Hackney, London, pondering
ideas about how to get out and
do it on our own! We were thinking,
“What will be the next sweet
food trend? The cupcakes have
had it!” Then we had the light
bulb moment!
What’s been the highlight of
your meringue-crafting careers
so far?
We’ve had a roller coaster of
a ride over the last 2 years. I
think the highlight for both of us
was holding our first published
Meringue Girls Cookbook in our
hands and then getting a second
cookbook deal; knowing that
the book has been successful
enough that they have come
back for seconds!
What is the most unusual
request you’ve had?
Making edible artwork of British
diver Tom Daley using only hula
hoops...
Why is it, do you think, that
meringues and weddings go
so well together?
Ladies love to impress on their
special day. Having a beautiful

THE SOMMELIER
1) Why did you become a wine sommelier and
what do you love most about your job?
I grew up in a wine region, the Wachau, at a winery.
I guess I took my first sip of wine when I was very
little. We had a “Heurigen,” a little local wine tavern,
where I used to help when I was a child. After this
I went to culinary school in Krems and after my
degree I started to work in great restaurants. I was
always fascinated by the sommeliers who I worked
with and I decided to start studying and became
a certified sommelier. What I like the most about
my job is that every day is different! You are able to
travel, to meet new and interesting people, you find
new friends who also love wine and food. And being
a Sommelier brought me to NYC!
2) How would you describe a typical day of work?
KATJA

We met Katja Scharnagl, a sommelier
at ‘Le Bernadin’ in New York, to talk
about her job and to get some essential
advice about wine for your big day.
Most people think that Sommeliers are only attending
tastings and selling wine on the floor. Well, the
truth is that there is so much more to do.
Starting in the morning with answering emails, they
are either from our sales rep regarding new wines,
vintage or price changes, or from our event department
asking for wine recommendations for upcoming
events. Almost every day we have appointments
for tasting in the morning at Le Bernardin. Lunch
service can be very busy and we are a team of six
Sommeliers here and there are always two of us on
the floor. The afternoon is filled with more emails,
phone calls, as well as taking care of deliveries,
cellar work – putting new wines away, ordering new
wines, working on the inventory program, tasting
new dishes and finding the perfect pairing… and by
5pm we are ready for the dinner service filled with
great wines. At Le Bernardin we have a very extensive
wine list with about 1200 references and we are
also very well known for our wine pairings.
3) What skills are required to be a successful
sommelier?
Besides a good knowledge and a taste? Most
people forget that we are still servers – wine servers
and we are here to provide a service. We are
part of the restaurant team and the guest who is
eating at the restaurant needs to get the whole
perfect picture. You can be the best Sommelier
who is perfectly trained and is a walking lexicon,
but if you don’t listen to your guests you won’t
be successful. You can guide people, you can
introduce them to new regions, new grapes and
they will be very thankful and happy and will come
back. And please don’t forget to smile when you
are on the floor.

4) Which VIPs have you served?
We have a very strong policy at the restaurant
regarding VIP’s, we are protecting them and
serve them as every other guest.
5) What is your favorite wine?
I don’t have just one favorite wine. It’s like asking
a mum who’s your favorite child. I have memories
of great wines which I shared with wonderful
people! I do have some favorite regions: of
course the Wachau, but also the whites and
reds from the Burgundy region, old German
Rieslings, Jura, old Cabernets from California, ….
And there are so many more out there…

6) What is the best way to store wine?
If you have just a couple of bottles you can
always keep them in the fridge. If you have
more, a wine cooler makes sense. You can
purchase great wines, but if you don’t store
them properly they can go bad. It should be in
a room or a cooler, where it’s dark, no shaking,
steady temperature, not too much humidity
and not too crowded. Don’t put your wines in
the kitchen, laundry room or boiler room, you
won’t be happy after you open the wine. If you
spend money on great wines why not invest in
something to properly store them?
7) What is the ideal serving temperature?
White Wine: young, fresh and easy one 8-10
degrees (46 - 50 °F). Same for champagne
and dessert wines, White wines with more
weight and age to it can be a little be warmer:
11-13 degrees (52 - 55 °F)
Red Wine: never ever room temperature! Between
15-18 degrees (59 - 64 °F) is fine.
8) Can you give advice for pairing wine
and food?
What grows together goes together. A simple rule,
but very effective. Also you should always look at
all ingredients of a dish, sometimes you have a side, or a
vegetable, or a sauce which is the key flavor. Or how the
dish is prepared. For example, you have a pan-roasted
or grilled fish with richer flavors you certainly can go into
a red wine direction. We have currently a Striped Bass
with Bhutanese Red Rise and a ginger red wine sauce
on the tasting menu which we pair with a pretty bold red
wine from the Ribera del Duero region in Spain. I also
like to pair food with Champagne, which is probably the
most versatile food wine in the world. And if you love
big reds with your meal, go for it! At the end of the day
it’s your dinner and you should enjoy it the way you like
it the most! And if someone else is paying for a bottle of
Petrus or La Tâche, don’t worry about the food.
9) Does the type of glass affect the taste of
wine? Which glasses can you recommend?
Of course, if you put a bold, concentrated young red
wine into a little glass you will not like the wine. If you
give the same wine some room, for example in a bigger
bowl and maybe more delicate and thinner you
will discover the different. I personally love the Zalto
DenkArt Glasses. All of them are hand blown in a small
factory in Austria. The glasses are both powerful and
subtle and along with their shape and architecture, help
to enhance the wine.
10) Some claim women have a better sense of
smell than men. Are they better wine testers?
I don’t know if we are better, I met so many great
tasters who have been men and women. Each of
us has great and sometimes not so great days in
terms of tasting.
11) What do you think about the health effects
of wine?
I think it’s like all things that give us pleasure. If you
overdo it, it will be too much and you will lose the
enthusiasm. In the right dose, everything can be
fun.
12) Which wine would you take with you as a
gift to a wedding?
Champagne!!! It can be pink, white, vintage or
new. And the couple can open it and enjoy it and
reminisce about memories of their most beautiful
day of their lives! And they can do it by themselves
or surrounded by beloved people, creating new
memories….

health, which is likely to already be affected

• Why not try replacing coffee with organic,
caffeine-free alternatives, such as green or
white tea?
• You should also try to replace sugar with
agave syrup or a touch of raw honey, using
any sweetener sparingly.
• Try sprinkling cinnamon to add sweetness
to foods – this will trick your senses and
stabilise your cravings.
• Avoid chemical ‘sugar-free substitutes’ at all
costs, as these will only reverse your efforts
in the long run.
Red meat is high in saturated fat and difficult
to digest and could disrupt healthy hormone

• Now’s the time to cut out all meat. In doing so, you’ll
be optimising your body’s ability to process food. Try
adding more fresh fish to your diet to compensate.
• Don’t forget that eggs can still be used as a great
source of protein, as can organic tofu.
All alcohol during the week
• Allow yourself two glasses of red wine at the weekend,
though – it’s proven to benefit cardiovascular health
and has anti-aging properties too! The grapes used to
produce wine contain numerous phytonutrients, most
significantly resveratol antioxidants. If you’re going to
go without alcohol altogether, try a resveratrol supplement
to enhance circulation, protect cells and improve
the skin’s appearance.
• In the case of an important social event, where you
may want to have something a little stronger, try a
vodka and soda with lemon or lime or a whisky and
water.
• Alcohol dehydrates you and makes you more susceptible
to forming irregular eating habits, which will ruin all
your hard work detoxing!
IN
Start the day with half a pint of water with lemon
every morning.
Tackle hunger pains by having a pear, apple or
peach.
Pick whole foods wherever possible. Think vegetables,
fruit, nuts, fish and eggs.
Have beans or pulses for lunch twice this week.
• They are high in protein and fibre, and therefore
both filling and nutritious.
Add garlic and spices to your lunchtime meal.
Try adding chia seeds to two of your meals this
week.
• Chia seeds are also high in protein and fibre;
they’ll keep you full, keep your gut clean, and
bring an extra dose of nutritious goodness.
Try a cup of peppermint, ginger, or mint tea in the
evening.
• This will give your digestive system a helping
hand and control hunger, too.

calorific treat.
Put almond butter on your fruit for a tasty snack.
Drink plenty of water between meals.
How about a vegetable soup or stew for dinner?
Now that the hard part is over, this week is all about
reincorporating protein before the big day.
Choose only organic sources of protein and only
one per meal.
• For example, wild-caught fish, eggs, legumes,
and other vegetables high in protein. These
are light and will stimulate long, lean muscles.
As far as carbs are concerned, bread, rice, pasta,
and white potatoes are still not on our ‘OK’ list, but
sweet potato is!
For optimal results, eat only fruit before 10am and
only vegetables after 4pm. If you need a carb boost
in the evening, try a bowl of oatmeal with berries
and cinnamon, alongside an herbal tea.
The night before:
Dinner should consist of your favorite lean protein
with grilled vegetables.
Save the alcohol and high-sugar high-carb desserts
for tomorrow!
If you must have a treat, try a bowl of sweet berries.
And most importantly, go to bed early!

Vana Retreats recently opened the doors
to its first path-breaking wellness retreat,
Vana, Malsi Estate. Vana means forest,
