SWEET POTATO, EGG AND AVOCADO HASH<br />

To enjoy this recipe a few more days throughout the week, make your sweet<br />

potatoes all at once — this will cut down on prep time in the morning.<br />

INGREDIENTS<br />

1/2 sweet potato<br />

1 teaspoon olive oil<br />

1 teaspoon paprika<br />

1 pinch cayenne pepper<br />

1 pinch ground black pepper<br />

1 pinch salt<br />

2 eggs<br />

1/4 medium avocado, sliced<br />

DIRECTIONS<br />

1. Preheat oven to 350 degrees.<br />

2. Peel and cut half a sweet potato into small, one-inch cubes.<br />

3. Toss with olive oil, paprika, cayenne pepper, pepper and salt.<br />

4. Bake on a roasting pan for approximately 40 minutes at 350 degrees.<br />

5. While the potato is cooking (about five minutes from finish), add cooking spray to a pan on medium-high heat and<br />

cook eggs to your liking.<br />

6. Once sweet potato is done, top with eggs and avocado.<br />
