please describe how your business evolved?<br />

eight years ago, a dairy and its equipment came up<br />

for sale and we seized the opportunity to create a<br />

complete cheeseboard, from hard to soft, to blue<br />

cheese, made from East Sussex milk. We now produce<br />

1.5 tons of cheese per week, which we supply to<br />

independent hotels, delis and restaurants, along<br />

with our own shop in London’s Borough Market.<br />

What do your customers tell you<br />

they like about your products?<br />

They love our ‘Super Gold’ World Cheese<br />

Award winner ‘<strong>May</strong>field’ which is the only<br />

Emmental style cheese produced in the UK.<br />

‘Lord London’ is a semi-soft bell shaped Silver<br />

awarded cheese and is popular for its natural<br />

creamy texture, with clean citrus undertone.<br />

please tell us about the journey from a<br />

new cheese idea to marketplace?<br />

It can be a very lengthy process. We make a<br />

new cheese, then wait for the maturing process,<br />

which can be anything from 12 weeks to six<br />

months. ‘Lord London’ only took 6-7 months<br />

in total but when a lot of tweaking is required it<br />

can take two years to develop a new cheese.<br />

What is your proudest moment so far?<br />

Whilst on vacation a French cheese maker tasted one<br />

of our cheeses and we were privileged enough to be<br />

asked back the next day to help them develop a new<br />

soft cheese. A dream come true!<br />
