to a traditional recipe by a small producer in Liguria. Top with feta and olives<br />

BUILD YOUR<br />

OWN BRUSCHETTA<br />

Bruschetta is a classic Italian<br />

antipasto, or appetiser, consisting of<br />

grilled bread rubbed with garlic and<br />

topped with sweet, ripe tomatoes.<br />

To rustle up a super-easy starter, use<br />

slices of ready-made garlic bread.<br />

Make sure it’s nice and crisp – this is<br />

the key to a good bruschetta; a soggy<br />

base is likely to collapse when you pick<br />

it up. Once baked, leave the bread<br />

slices to cool, then top with Italianinspired<br />

ingredients, such as vibrant<br />

green pesto – ours is packed with basil,<br />

pine nuts and pecorino romano cheese<br />

– chopped fresh tomatoes and finely<br />

diced red onion. Finish with whole<br />

fresh basil leaves to serve.<br />
