Meet Mohan Abraham who has 

just joined the team at Beamish 

Hall’s restaurant, The Stables. 

What made you want to be a chef and 

how long have you been doing it? 

My cooking career started when I was a little 

boy. My mother’s an amazing woman and 

cooking for our big family was never easy 

but I learnt a great deal from her. 

Her passion and enthusiasm have definitely 

inspired me and I’ve been a chef for 18 years 

now. 

What do you look for when you create 

a new dish or menu? What’s your main 

considerations? 

I look anywhere and everywhere! Reading 

industry publications, blogs, social media… 

I’m always absorbing new ideas. I’ll discuss 

ideas, trends, experiences and new ingredients 

with my colleagues and our suppliers of 

local produce. 

What’s proving to be the most popular dish 

on your menu this month and why do you 

think that is? 

Seafood and locally sourced Northumberland 

meats are always a winner. Healthy options 

are on the rise and we provide dishes which 

are both healthy and nutritional. We collaborate 

with local business so we can supply quality, 

regional food and continue to support other 

local business.

Yes. Michel Roux Jr. 

When you go home, who does the cooking? 

Are you territorial in the kitchen!? 

My Wife. She’s a talented person in the kitchen 

and likes to be the provider! 

The #shelfie - a chef’s five must have herbs 

and spices always available on the shelf! 

What are yours? 

Fresh Basil, Thyme, Rosemary, Lemongrass 

and Mint. 

What’s your favourite cuisine and why? 

My passion for cooking can’t allow me to 

choose! It’s like choosing your favourite movie. 

Given my mood, the weather and location, 

it can all change whether British, Italian, 

Indian, Thai and so on. My love for it all makes 

it impossible to decide! 

Which famous person, dead or alive, would 

you love to cook for and what would you 

serve them?

BEER DAY BRITAIN 

Thursday 15 June is Beer Day Britain, a day when we are 

positively encouraged to raise a glass and say cheers to beer! 

Chosen for the day the Magna Carta was sealed on 15 June 

1215 with Article 35 declaring: 

“Let there be throughout our kingdom a single measure 

for wine and a single measure for ale and a single measure 

for corn, namely the London quarter.” 

In medieval times a London quarter was 

the equivalent of two pints so while our 

glasses have got smaller, our love for beer 

remains! 

In 2015, the Community Pubs Minister 

(yes there really is one so let’s raise a glass to 

his job!) released figures announcing Britain 

has returned to its rightful role as a global 

brewing powerhouse with a new brewery 

opening every other day. 

With no signs of craft beer going flat, figures 

continued to rise throughout 2016 and thanks 

to the popularity of the pint, there’s now over 

1,700 breweries in the UK. 

From a seasonal pint of British bitter, locally 

produced lager, boozy barley wines to hoppy 

craft brews, there really is a pint for everyone! 

But what do you do when a pint just isn’t 

enough? 

Well, you head over to London Brewery 

Tours who will happily quench your thirst 

by getting you up close and personal with 

brewers so you can hear their stories, learn 

why they brew the beers they brew and 

sample new and exciting beers matched 

with charcuterie, cheese and chocolate! 

They offer five different tours, available for 

individuals, small groups or as corporate 

tours for up to 20 people.

The Bermondsey Micro-Brewery Tour takes 

in the famous Bermondsey Beer Mile and its 

ten breweries or enjoy the vibrant Street Art 

and Craft Beer Tour in Peckham. 

The East London Craft Beer Tap Tour starts 

at the White Hart Brew Pub and finishes in 

Redchurch Brewery, Bethnall Green’s most 

chilled and funky micro-brewery with some 

seriously great craft beers, or take the 

Southwark Brewery Tour and Tastings 

or the Fourpure Brewery Tour which shows 

the steps needed to make 6,000 litre batches, 

starting from the grain and ending with the 

finished beer! 

For a flavour of the Bristol brewing scheme 

it’s all aboard HMS Hops for a Craft Beer 

Boat and Brewery Tour! This private ferry 

sails down the canal with a tutored tasting of 

Bristol based Crane Beer before a behind the 

scenes tour of the Moor Brewery back on 

dry land. 

A sobering 20 minute walk follows to the 

Beer Emporium where a selection of cask and 

keg Bristol beers accompanied with meat and 

cheese parings can be enjoyed! 

The award-winning Thornbridge Brewery 

in the Peak District is playing its part in the 

British beer boom too! First brewed in 2005 

in the grounds of Thornbridge Hall, they focus 

on cask beers using traditional recipes with a 

modern day twist. 

They now operate from two sites, with a 

state-of-the-art brewery and bottling line at 

Bakewell and The Hall, where experimentation, 

barrel ageing and creating premium bottled 

products leads the way. With over 350 national 

and international awards, delighting drinkers 

of cask, keg or bottled beer is a passion this 

brewery excels in. Their 90 minute tour at the 

Bakewell site offers an introduction to the 

brewing process with sample beers served in 

a Thornbridge branded glass, which people 

can take home.

A walking tour of Manchester takes in 

three breweries. Smell the hops and grains at 

the Beer Nouveau Brewery before visiting the 

taproom at the Alphabet Brewery & GRUB 

which has live DJs and amazing street art 

on the walls. Finish in the Cloudwater Brewery, 

recognised across the word for award-winning 

beers, which you can enjoy on tap, at 

your leisure! 

North Brewing Co leads the way with a 

tour in Leeds. Opened in November 2015 with 

three signature beers it now has a core range 

of five as well as a number of one off creations. 

Next, nestled in the historic Thornton’s arcade 

is Tall Boys Beer Market, specialising in rare 

imports from the States, and sticking with the 

theme, Tapped is an American style brew 

pub with an impressive range of keg and cask 

beer. Completing the walking tour is Northern 

Monk Brewery, which pays homage to the 

monastic heritage of brewing. 

If you find yourself in Norfolk or Suffolk you’re 

guaranteed to be served a pint of Adnams. 

Established back in 1872, this independent 

company based in Southwold is producing 

around 85,000 barrels a year and until 1953, 

and a for a period between 1970 to 2006, casks 

of Adnams Ale were still being delivered to 

Southwold pubs by horse and dray. 

Today distribution is from the company’s 

state-of-the-art centre which features the UK’s 

largest living roof. Known as the Sky Garden, 

it’s made from a variety of sedum species 

which help insulate the building. Rain stored in 

the plants is harvested and used to flush staff 

toilets and clean company vehicles. Combined 

with solar panels, the company has reduced its 

energy bills by 50%. 

The Adnams brewery tour last 60 minutes 

followed by a 30 minute tutored beer tasting. 

Visitors will see one of the most modern 

breweries in the country, including a 

self-cleaning brew stream!

Fillet Tournedos

(Serves 4) 

Method 

Heat the oven to 180°/no.5 gas. 

Add the butter and oil to a pan and 

heat until hot. Add the fillets and seal 

on both sides then place them in the 

oven for six minutes. This will cook the 

fillets rare, leave for longer depending 

how you prefer your beef. 

Toast the Brioche. Slice the truffle and 

the Foie Gras and fry the Foie Gras for 

50 seconds. 

Ingredients 

4 beef fillets approx 170g each 

2 tbsp of oil 

2 tbsp of melted butter 

4 slices of Brioche 

Foie Gras x 4 slices 

Black truffle x 4 slices 

120 ml Madeira Sauce 

4 tbsp port 

250ml chicken stock 

50g butter 

1 tbsp lemon juice 

In a saucepan, add the Madeira and 

port and gently heat. Add the chicken 

stock and cook for two minutes before 

adding the lemon juice. 

Plating up 

Sit the fillet on top of the warm 

toasted brioche, place Foie Gras slices 

and truffle on top then spoon over 

Madeira sauce. 

Serve with chips or asparagus and 

spinach.
