just joined the team at Beamish<br />

Hall’s restaurant, The Stables.<br />

What made you want to be a chef and<br />

how long have you been doing it?<br />

My cooking career started when I was a little<br />

boy. My mother’s an amazing woman and<br />

cooking for our big family was never easy<br />

but I learnt a great deal from her.<br />

Her passion and enthusiasm have definitely<br />

inspired me and I’ve been a chef for 18 years<br />

now.<br />

What do you look for when you create<br />

a new dish or menu? What’s your main<br />

considerations?<br />

I look anywhere and everywhere! Reading<br />

industry publications, blogs, social media…<br />

I’m always absorbing new ideas. I’ll discuss<br />

ideas, trends, experiences and new ingredients<br />

with my colleagues and our suppliers of<br />

local produce.<br />

What’s proving to be the most popular dish<br />

on your menu this month and why do you<br />

think that is?<br />

Seafood and locally sourced Northumberland<br />

meats are always a winner. Healthy options<br />

are on the rise and we provide dishes which<br />

are both healthy and nutritional. We collaborate<br />

with local business so we can supply quality,<br />

regional food and continue to support other<br />

local business.<br />

BEER DAY BRITAIN<br />

Thursday 15 <strong>June</strong> is Beer Day Britain, a day when we are<br />

positively encouraged to raise a glass and say cheers to beer!<br />

Chosen for the day the Magna Carta was sealed on 15 <strong>June</strong><br />

1215 with Article 35 declaring:<br />

“Let there be throughout our kingdom a single measure<br />

for wine and a single measure for ale and a single measure<br />

for corn, namely the London quarter.”<br />

In medieval times a London quarter was<br />

the equivalent of two pints so while our<br />

glasses have got smaller, our love for beer<br />

remains!<br />

In 2015, the Community Pubs Minister<br />

(yes there really is one so let’s raise a glass to<br />

his job!) released figures announcing Britain<br />

has returned to its rightful role as a global<br />

brewing powerhouse with a new brewery<br />

opening every other day.<br />

With no signs of craft beer going flat, figures<br />

continued to rise throughout 2016 and thanks<br />

to the popularity of the pint, there’s now over<br />

1,700 breweries in the UK.<br />

From a seasonal pint of British bitter, locally<br />

produced lager, boozy barley wines to hoppy<br />

in the famous Bermondsey Beer Mile and its<br />

at the White Hart Brew Pub and finishes in<br />

Redchurch Brewery, Bethnall Green’s most<br />

chilled and funky micro-brewery with some<br />

seriously great craft beers, or take the<br />

Southwark Brewery Tour and Tastings<br />

or the Fourpure Brewery Tour which shows<br />

the steps needed to make 6,000 litre batches,<br />

starting from the grain and ending with the<br />

For a flavour of the Bristol brewing scheme<br />

it’s all aboard HMS Hops for a Craft Beer<br />

Boat and Brewery Tour! This private ferry<br />

sails down the canal with a tutored tasting of<br />

Bristol based Crane Beer before a behind the<br />

scenes tour of the Moor Brewery back on<br />

dry land.<br />

A sobering 20 minute walk follows to the<br />

Beer Emporium where a selection of cask and<br />

keg Bristol beers accompanied with meat and<br />

cheese parings can be enjoyed!<br />

The award-winning Thornbridge Brewery<br />

in the Peak District is playing its part in the<br />

British beer boom too! First brewed in 2005<br />

in the grounds of Thornbridge Hall, they focus<br />

on cask beers using traditional recipes with a<br />

modern day twist.<br />

They now operate from two sites, with a<br />

state-of-the-art brewery and bottling line at<br />

Bakewell and The Hall, where experimentation,<br />

barrel ageing and creating premium bottled<br />

products leads the way. With over 350 national<br />

and international awards, delighting drinkers<br />

of cask, keg or bottled beer is a passion this<br />

brewery excels in. Their 90 minute tour at the<br />

Bakewell site offers an introduction to the<br />

brewing process with sample beers served in<br />

a Thornbridge branded glass, which people<br />

can take home.<br />

A walking tour of Manchester takes in<br />

three breweries. Smell the hops and grains at<br />

the Beer Nouveau Brewery before visiting the<br />

taproom at the Alphabet Brewery & GRUB<br />

which has live DJs and amazing street art<br />

on the walls. Finish in the Cloudwater Brewery,<br />

recognised across the word for award-winning<br />

beers, which you can enjoy on tap, at<br />

your leisure!<br />

North Brewing Co leads the way with a<br />

tour in Leeds. Opened in November 2015 with<br />

three signature beers it now has a core range<br />

of five as well as a number of one off creations.<br />

Next, nestled in the historic Thornton’s arcade<br />

is Tall Boys Beer Market, specialising in rare<br />

imports from the States, and sticking with the<br />

theme, Tapped is an American style brew<br />

pub with an impressive range of keg and cask<br />

beer. Completing the walking tour is Northern<br />

Monk Brewery, which pays homage to the<br />

monastic heritage of brewing.<br />

If you find yourself in Norfolk or Suffolk you’re<br />

guaranteed to be served a pint of Adnams.<br />

Established back in 1872, this independent<br />

company based in Southwold is producing<br />

around 85,000 barrels a year and until 1953,<br />

and a for a period between 1970 to 2006, casks<br />

of Adnams Ale were still being delivered to<br />

Southwold pubs by horse and dray.<br />

Today distribution is from the company’s<br />

state-of-the-art centre which features the UK’s<br />

largest living roof. Known as the Sky Garden,<br />

it’s made from a variety of sedum species<br />

which help insulate the building. Rain stored in<br />

the plants is harvested and used to flush staff<br />

toilets and clean company vehicles. Combined<br />

with solar panels, the company has reduced its<br />

energy bills by 50%.<br />

The Adnams brewery tour last 60 minutes<br />

followed by a 30 minute tutored beer tasting.<br />

Visitors will see one of the most modern<br />

breweries in the country, including a<br />

self-cleaning brew stream!<br />

(Serves 4)<br />

Method<br />

Heat the oven to 180°/no.5 gas.<br />

Add the butter and oil to a pan and<br />

heat until hot. Add the fillets and seal<br />

on both sides then place them in the<br />

oven for six minutes. This will cook the<br />

fillets rare, leave for longer depending<br />

how you prefer your beef.<br />

Toast the Brioche. Slice the truffle and<br />

the Foie Gras and fry the Foie Gras for<br />

50 seconds.<br />

Ingredients<br />

4 beef fillets approx <strong>17</strong>0g each<br />

2 tbsp of oil<br />

2 tbsp of melted butter<br />

4 slices of Brioche<br />

Foie Gras x 4 slices<br />

Black truffle x 4 slices<br />

120 ml Madeira Sauce<br />

4 tbsp port<br />

250ml chicken stock<br />

50g butter<br />

1 tbsp lemon juice<br />

In a saucepan, add the Madeira and<br />

port and gently heat. Add the chicken<br />

stock and cook for two minutes before<br />

adding the lemon juice.<br />

Plating up<br />

Sit the fillet on top of the warm<br />

toasted brioche, place Foie Gras slices<br />

and truffle on top then spoon over<br />

Madeira sauce.<br />

Serve with chips or asparagus and<br />

spinach.<br />
