Victoria Gastro Pub
Columbia MD
The term gastropub has
gained steam in the last
few years. It started off
with bars having a few
taps of craft beer that
wanted to serve a better quality of
food. Currently, it is actually developing
to fine dining menus with a casual
pub feel.
Victoria Gastro Pub is definitely
the latter, the seasonal menus that
crop through are complex and exciting.
To do yourself and the menu justice
you should read it with an open
mind as well as a pallet that is ready to
explore these fantastic combinations.
Chef Chad Wells develops the
offerings in conjunction with the seasons
both calendar and growing. The
owners of Victoria Gastro Pub also
own a 50-acre farm in Ellicott City
that supplies a significant number of
items to the menu based on seasonality.
Our lunch visit was a bit of a twist,
and the server probably thought we
were crazy with the way we ordered.
We started off with a variation of
the French Canadian dish Poutine,
instead of cheese curd they use a
mix of cheeses to go with the duck
fat fries. Additionally, we sampled
the lobster deviled eggs and roasted
Brussel sprouts with Virginia ham. All
had great flavor and presentation.
For our entrees, we decided
to take the sandwich
route, and there
are some interesting
choices.
A wild boar sloppy joe was a big
favorite, to go with the “Cloak and
Dagger” a pastrami sandwich with a
pickled slaw served on pumpernickel
bread. For the less adventurous the
burger that was ordered at the table
was a great piece of work as well.
We were there for lunch, so the
beer list wasn’t in play for us, but it
was impressive to have as many craft
beers on tap as they did.
