Foods By Tedman Oscar Black eye beans with plantain and sweet potatoes(Vegetarian) - From Nigeria Ingredients (for 4 people) 400g black eye beans, 300g plantain, 300g sweet potatoes, 200g onions, 400g tomatoes, 3 tablespoons palm oil, 1 slice garlic, 3 vegetable bouillon cubes, 1 small sharp red pepper, 1 spring onions, salt. Preparation Time: 10 Minutes Cooking Time: 50 minutes Preparation Method 1 2 3 4 5 6 Boil some water in a pot. Wash and cook the beans in the hot water. Cover the pot. In between, wash tomatoes, spring onions, pepper and tomatoes. Peel the potatoes, plantain, onions and garlic. Cut the plantain and potatoes in slices. Press the garlic. Cut the onions, spring onions, pepper, and tomatoes. Add oil, tomatoes, garlic, bouillon, pepper to the cooking beans and cover. Cook for 30 minutes.
