Grandma Swain’s Beef Stew and Dumplings<br />
The boys loved the beef stew Grandma Swain made. She made her own biscuit<br />
dough until canned dough became readily available.<br />
It was one of the few shortcuts she took.<br />
Ingredients:<br />
Can of ready made biscuit dough<br />
1 onion chopped<br />
1 clove garlic - crushed<br />
Beef Stew Meat cut in cubes (leftover roast<br />
works good)<br />
2 cups water or beef stock<br />
1-2 tbs of plain flour (depending on how<br />
thick you like your gravy)<br />
Vegetables (Carrots, Celery, Okra, Turnip<br />
or potatos cubed, be creative, whatever your<br />
family likes)<br />
2 Tablespoons butter<br />
Directions:<br />
Fry onion and garlic in the butter then add the cubed beef.<br />
Next add the vegetables and water or stock.<br />
Mix the flour into a paste with a little cold water,<br />
and add to the pan and simmer for 10 minutes.<br />
Season with salt and pepper and leave to cool.<br />

Fill with the beef and vegetables<br />
in a glass baking dish and then<br />
drape the biscuit dough over it.<br />
Cook at 350 for 35-45 minutes<br />
until the tops of the biscuits<br />
are golden.<br />
