是 所 有 的 昂 貴 之 物 都 是 好 設 計 , 也 不 是 所 有 的 手 工 藝 品 都<br />
更 高 尚 。<br />
「 品 位 」 理 解 , 好 的 設 計 是 由 內 而 外 的 。 動 人 心 弦 的 作 品<br />
取 決 於 設 計 師 對 美 與 創 新 的 熱 愛 、 個 人 的 氣 質 修 養 與 堅 忍<br />

Good design goes from the inside out. At the heart<br />
of any touching design is surely a designer who<br />
sees his or her design as much more than work —<br />
it’s a love for beauty, innovation, commitment, and personal<br />
refinement.<br />
In ancient China, artists would empty their minds<br />
and purify their hearts, meditating and regulating their<br />
breathing before work. In their practice, they would calm<br />
their minds and harmonize themselves with nature, space<br />
and time. Naturally, their art would reflect these same<br />
meaningful cosmic relationships. Whether Song Dynasty<br />
porcelain or Ming Dynasty furniture, the exquisite design<br />
of those eras remains timeless, and even today inspires<br />
designers across Europe.<br />
Aristotle would agree with this Eastern approach. He<br />
has said, “The aim of art is to represent not the outward<br />
appearance of things, but their inward significance.”<br />
France’s Louis XIV also understood this marriage between<br />
spirit and design. He took great measures to popularize<br />
couture fashion and etiquette, not simply for aesthetic<br />
beauty, but to also establish a lifestyle of inner nobility.<br />
Today, just by a product’s presentation, you’re able to see<br />
whether there is artistic integrity, reflecting the designer’s<br />
moral values, understandings of life, and approach to beauty.<br />
In our spring edition, we share stories about creativity and<br />
beautiful works that make you think about the meaning of<br />
design and the role of the designer. One lesson becomes<br />
clear — exceptional design translates to happy customers,<br />
and of course, good business.<br />

“I very much like black, white, and camel colours, but I have always been<br />
influenced by strong and pure colours. There is playfulness in these colours,”<br />
says Wallén.<br />
“Sometimes I just have these thoughts and ideas<br />
that come up, like ‘What would happen if I used<br />
this material on capes?’ and I just really need to see<br />
it in reality,” says Pia Wallén, holding up a candy-pink,<br />
scallop-edged capelet. Elegant in an all-black ensemble,<br />
Wallén is warm and soft-spoken as we meet in her minimalist<br />
studio, joined by her daughter, Alva Xi Wallén<br />
Keller.<br />
“I became interested in felt because it’s in Swedish folk<br />
art tradition,” says the designer, whose edgy creations<br />
have secured her the status of one of Swedish design’s<br />
most recognizable names. “It’s an old material people<br />
used to make clothing and shoes. I saw it in our folk<br />
art and wanted to do it with new techniques, forms and<br />
shapes.”<br />
While her background is in fashion design, Wallén’s<br />
namesake line includes a range of clothing, accessories,<br />
and interior collections that combine modern design<br />
with traditional materials. Felted wool has starred in<br />
her collections for decades, whether to fashion blankets<br />

or line the insides of precious-metal cuff bracelets to<br />
keep the wrists warm during cold Scandinavian winters.<br />
“It’s not really about techniques; I want to discover<br />
different forms to work with this material,” says Wallén,<br />
referring to her line of avant-garde felt capes, a collaboration<br />
with textile designer Felix Roll. She demonstrates<br />
a vibrant green cape that evokes a vintage vibe with a<br />
touch of futurism.<br />
One of the few designers who handles every aspect of<br />
business on her own, Wallén is relentless when it comes<br />
to ensuring that each detail, from production to distribution,<br />
adheres to her uncompromising standards.<br />
“She has so many sketches and ideas,” says Wallén’s<br />
daughter, “but they are not released because she can’t<br />
find the right production people, and she doesn’t want to<br />
compromise, so she just puts it aside.”<br />
Wallén selects her collaborations with the same meticulous<br />
approach. While she has worked with big names<br />
such as Electrolux appliances, or Asplund, a Swedish<br />
furniture brand, she has a special appreciation for smallscale<br />
producers and artisans, taking the time to learn the<br />
workings of their craft.<br />
“I like to work with small companies with old skills,”<br />
says Wallén. “The more I work, the more experience I<br />
have, and the more I search for that certain sense.” Her<br />
Bible notebooks collection, for instance, uses a binding<br />
technique from an old-school bindery on an island in the<br />
Baltic Sea. “It’s an old gentleman, over 70 now, he makes<br />
the notebooks in a barn,” says Wallén’s daughter. “No one<br />
knows his old machines other than himself.” A unique<br />
feature of the binding is the exposed stitch pattern,<br />
which is typically hidden. “When I asked this gentleman<br />
about how to mention him in the collaboration, he said<br />
he doesn’t want to become known,” Wallén says. “A lot<br />
of craftsmen are just not interested in fame or money.”<br />
A long-established weaving mill in Scotland produces<br />
her line of sumptuously soft lambswool-andcashmere<br />
blankets. Originally made in Sweden, with<br />
an old technique of looping thread around the edge,<br />

Recently, Wallén has collaborated with Scotland’s most renowned<br />
weaving mills from 1866 to make the Annual Blankets. The blankets<br />
are inspired by an old Swedish handicraft tradition of weaving the<br />
year into textiles to commemorate a special occasion.<br />
「 斯 堪 的 納 維 亞 風 設 計 我 認 為 很 主 要 的 一 點 , 就 是<br />

the blankets went out of production after the former<br />
spinnery’s machine broke irreparably. After four years<br />
and a long list of customers awaiting the product’s<br />
return, Wallén found a manufacturer she could trust<br />
with the time-honed process.<br />
Wallén’s blankets, along with some other products,<br />
are marked with the cross pattern, a symbol of hope in<br />
Swedish folk culture, representing the meeting of heaven<br />
and earth. Another recurring motif is the circle, which<br />
echoes traditional Chinese design in the round golden<br />
knobs of the Chinese-inspired Xi Cabinet, a collaboration<br />
with Asplund. A smaller version is to be designed<br />
in <strong>2018</strong>.<br />
Chinese and Swedish design, she notes, share an admiration<br />
for nature, emphasizing wood and organic forms. Already<br />
popular throughout Japan and Korea, Scandinavian<br />
design has recently gained a following in China as well.<br />
“The simpleness in Scandinavian design is the essence<br />
of an idea,” says Wallén. “When simplified, the design<br />
becomes minimalistic.”<br />
For Wallén, China also carries a more personal<br />
significance.<br />
“I have a very strong connection with China because<br />
of my daughter, who is from Hefei. I named the cabinet<br />
after her Chinese name, Xi, which means happiness.”<br />
The cabinet is not an exception. Whether a piece of<br />
furniture or a pair of handmade slippers, each item<br />
Wallén creates is imbued with meaning. While she only<br />
produces a limited number of products each year, each<br />
carries forth a legacy for years to come.<br />
“All of my products have stories,” she says. “Especially<br />
for the handmade items, it is important to do the design<br />
well, so the person who buys it doesn’t do it as a gesture<br />
of charity. They should love it for the beauty, and when<br />
they use it, they will discover the story within and how<br />
it is made.”<br />

Royalty and celebrities adorned in<br />
couture dresses walk down red carpets<br />
all over the world. We’re entranced and<br />
captivated by their beauty, but the essence<br />
of bespoke fashion is far more than first<br />
meets the eye.<br />
“Couture is the most exquisite art of<br />
sewing, based on a very long tradition<br />
coming from France and Paris,” says<br />
Ingrid Giertz-Mårtenson, art and fashion<br />
historian and former director of the<br />
Swedish Fashion Council. “It is a unique<br />
craftsmanship with respect for creativity,<br />
the work of the hand and of intricate<br />
details and luxurious materials.”<br />

Couture, as we know it, hails from France’s King<br />
Louis XIV, who strictly mandated that no fashion<br />
goods could be imported that the French could make<br />
themselves. France’s employment in textile and clothing<br />
exploded, and the King formalized the couture industry<br />
into summer and winter seasons, and set specific<br />
codes of dress and etiquette. France quickly became the<br />
epicentre of culture, art and fashion in Europe.<br />
Though Louis XIV’s couture was beautifully ornate,<br />
the aim wasn’t purely extravagant. He organised<br />
professional guilds for the craftsmen and promoted an<br />
art form that puts the wearer and designer’s creativity<br />
at the centre. That timeless spirit is very much alive in<br />
bespoke fashion today.<br />
Valerie Steele, director of the museum at the Fashion<br />
Institute of Technology in New York, said a simple pair<br />
of couture pants could cost $50,000, or an elaborate<br />
beaded evening dress, $300,000. Couture items have a<br />
high price, but the work is highly demanding. It takes<br />
months to create one dress, including research, design,<br />
sewing and fittings. The designer needs to understand<br />
the client’s intangible qualities, personality, and<br />
behaviour, and choose the appropriate materials. It’s a<br />
precious and beautiful art form that allows people to<br />
think and dream, and perfectly reflects the individual.<br />
“To me, couture is the extreme opposite to what<br />
is generally called ‘fast fashion.’ A couture garment<br />
corresponds to many of the needs that we talk about<br />
in today’s society: Sustainability (it will last longer<br />
than ready-made garments), unique sense of quality<br />
and material, understanding of individual bodies<br />
and sizes. The wishes and needs of the customer<br />
for whom the garment is made are fully respected,”<br />
Giertz-Mårtenson says.<br />

There’s a reason why international dignitaries<br />
and royals wear couture pieces today — it<br />
captures not only the essence of their heritage<br />
but also their own unique presence.<br />
“We will feel a need to respect the creativity<br />
of couture as an expression of ‘slow art’ and<br />
the importance of unique and crafted goods,”<br />
says Giertz-Mårtenson, who is also one of<br />
the creative directors at the Sven-Harry’s Art<br />
Museum’s current couture exhibition.<br />

Representing the zenith of classic Chinese furniture, Ming Dynasty furniture is treasured for<br />
its precious hardwood, comfortable design, simple lines, and superb craftsmanship. In the<br />
past decades, Ming furniture has enjoyed an elevated reputation as art and as investment,<br />
with its value ever increasing.<br />
There are some designs memorable enough to<br />
reach the status of instantly recognizable icons,<br />
and the appeal of simple wooden chairs such as the<br />
Wishbone chair by Hans J. Wegner certainly fits the<br />
bill. An eloquent shape that would complement any<br />
interior, it exemplifies the sleek, minimalist style that<br />
has become synonymous with Danish Modern furniture.<br />
Yet, name notwithstanding, few people are<br />
aware of the inspiration behind this modern Danish<br />
classic, which has its roots in the ancient philosophy<br />
of a culture halfway across the globe.<br />
Prior to the sixth century, homes throughout most<br />
of China were furnished mainly with floor mats,<br />
upon which people kneeled or sat cross-legged.<br />
The concept of using chairs for sitting did not gain<br />
popularity until roughly the Tang Dynasty period,<br />
during the seventh century, preceded by the spread<br />
of Buddhism, which had religious dignitaries sit<br />
upon raised platforms. But it wasn’t until the Ming<br />
Dynasty, between the 15th and 17th centuries, said<br />
to be the golden age of Chinese furniture making,<br />
that the iconic Ming chairs made their appearance,<br />
with their clean-lined appeal proving an inspiration<br />
that would endure through centuries.<br />
Perhaps the best known of these classic designs is<br />
the official’s hat chair, known for the wide vertical<br />
splat running through its backrest and the crest rail.<br />
Typically made from a firm, fine-grained hardwood<br />
such as “zi-tan,” red sandalwood, or “huang-hua-li,”<br />
rosewood, Ming-era chairs were built to last using<br />
the mortise and tenon technique, enabling the wood<br />
to withstand aging. The design, too, is immune to<br />
time’s passage. The chair would not look out of place<br />
in the modern European home, sharing, in fact,<br />
many characteristics with the contemporary Scandinavian<br />
aesthetic, namely a focus on functional, enduring<br />
design, natural materials, and clean, graceful<br />
lines.<br />

his seemingly simple chair designs unite form and function. To<br />
Wegner, a chair is work of art made to support the human form.<br />

The concept of using high sitting chairs first appeared in the<br />
Tang court, preceded by the spread of Buddhism, which had<br />

The Chair from 1949 is one of Wegner’s most iconic pieces and a highlight of<br />
Danish design. The beautiful and minimalistic curve takes incredible craftsmanship,<br />
with each crescent-shaped armrest created from a single block of wood, and the<br />
mortise-and-tenon joints hiding the connection between the arms and legs.<br />

of furniture. It was featured in the first-ever televised U.S. presidential<br />
debate, with John F. Kennedy and Richard Nixon, and<br />
was eventually named “The Chair” after this historical event.<br />

More than simply a piece of well-crafted furniture,<br />
however, Ming chairs, like so much of Eastern<br />
culture, are rife with philosophic meaning. Taoism,<br />
for instance, gave rise to the concept of harmony<br />
between heaven, nature, and mankind, reflected in<br />
pieces such as the “Round Chair,” in which a square<br />
seat, representing the stability of Earth, meets the<br />
chair’s rounded arms, which allude to the Chinese<br />
concept of the “Round Heaven,” associated with<br />
movement. The contrasting elements complement<br />
each other, akin to the energies of yin and yang.<br />
Centuries after the Ming chair first emerged,<br />
Denmark’s Arne Jacobsen would conceive in 1935<br />
a yoke-back dining chair that bore significant resemblance<br />
to the official’s hat form. A decade later,<br />
Hans J. Wegner’s series of Chinese chairs, including<br />

said to be inspired by an image of Danish merchants in<br />
China on Ming-style chairs. Pared down to their basic<br />
elements — form, function, wood — these Danish<br />
designs interpret their Asian predecessors to become<br />
tomorrow’s modern classics. In a meeting of West and<br />
East, modernity and tradition, these designs are worlds<br />
apart yet share more than just physical form, linked by a<br />

Architect Peter Pennoyer’s country house that he<br />
built with his wife, interior designer Katie Ridder,<br />
has all the makings of a classic.<br />
Pennoyer anthropomorphically describes his<br />
home amid the horse farms in Millbrook, New<br />
York, as a “person obviously interested in history,<br />
with a whimsical and joyful aspect to the way it’s<br />
used — a spark to the imagination.”<br />

His home is a beautiful blend of sober classical<br />
architecture and vibrant, brilliant design — a tangible<br />
beauty that’s more than simply aesthetically captivating. Like<br />
quintessential Greek and Roman architecture, Pennoyer’s<br />
home starts and ends with the most important tenet of<br />
architectural design — harmony. For him and his wife,<br />
harmony is a pervasive perspective that begins with lifestyle<br />
and the land.<br />
A country house was particularly attractive to the<br />
architect-designer couple to keep their life in balance.<br />
Cattle, horses, walks outdoors, gardening — they wanted<br />
a connection with the<br />
land.<br />
“We were looking<br />
for a place that has<br />
already been built<br />
on because we didn’t<br />
want to take over a<br />
pasture or cut down<br />
trees in a forest that<br />
hadn’t been touched,”<br />
says Pennoyer. When<br />
they first saw the<br />
property, which had<br />
already had two<br />
homes built before,<br />
Pennoyer says they<br />
both knew, “This is it,<br />
this is perfect.”<br />
“It seemed like a natural place to build a house — the trees<br />
around it were really mature, and the land just seemed right<br />
for a house. We didn’t have to disturb the land that was part<br />
of a farm, so it just seemed respectful of the community.”<br />
A stone wall runs east-west along the southern border of<br />
the property, and all the fields are aligned north-south. “We<br />
lined up the house with the edge of the property so that<br />
everything fits into the kind of tapestry and pattern of all the<br />
land around us — not just ours, but the neighbours’,” he says.<br />
Early inspirations for the home’s perfectly square shape<br />
and Greek revival style came from a beautiful country<br />
home Pennoyer remembers in Maine, built in the 1830s.<br />
“Greek revival is a simple farmhouse meets some classical<br />
architecture,” he says. “We tried to simplify our architecture and<br />

「 我 認 為 最 難 的 地 方 是 , 當 你 在 室 內 , 你 希 望 所<br />

妻 子 之 間 取 得 平 衡 的 問 題 , 當 兩 人 的 理 念 和 想 法 出 現 分 歧 時<br />
又 該 如 何 協 商 解 決 呢 ?「 當 你 有 一 位 有 特 定 需 求 的 客 戶 時 ,<br />
事 情 是 要 簡 單 的 多 。 但 做 你 自 己 的 項 目 時 , 就 沒 那 麼 簡 單<br />
了 , 因 為 你 可 以 永 無 止 盡 地 去 幻 想 怎 麼 做 得 更 好 。」<br />
對 於 室 內 的 佈 局 , 夫 婦 二 人 首 先 確 認 的 是 , 他 們 都 想 要<br />
一 個 開 放 的 空 間 。 一 個 房 間 連 接 著 另 一 個 房 間 , 既 有 各 自 單<br />
獨 的 功 能 , 又 和 其 它 空 間 連 為 一 體 。 一 層 唯 一 封 閉 的 房 間 是<br />

The columns and their proportions on the porch and<br />
formal front door, with leaf decorations, and the temple-like<br />
structure in the garden — the mudroom — all speak to the<br />
classical Greek revival style. Yet, Pennoyer also wanted to<br />
lighten the mood.<br />
“I’ve always enjoyed working with artists and bringing<br />
sculpture into my projects,” he says. As you walk around the<br />
home, enjoying its four distinct facades, you see the charming<br />
spirit of one of the most important members of his family<br />
— his dog, a dachshund, chasing a rabbit on a bas-relief. “I<br />
thought this is the perfect place to celebrate our lazy dog,<br />
who never does actually chase a rabbit,” he says.<br />
Pennoyer not only designed his home to embrace nature<br />
and naturally intertwine with his environment, he kept<br />

traditional architectural elements at the<br />
forefront of his planning. “Many of the<br />
features in traditional architecture existed<br />
before houses were heated by fossil fuels,”<br />
he says. “So there was a real need to make<br />
the houses environmentally sensible<br />
because you couldn’t turn on your heat.<br />
You could set a fire, but you had to rely<br />
on the house as a living and breathing<br />
organism in a way to counteract nature.”<br />
He keeps his home cooler, for example,<br />
by shielding the large glass windows in<br />
the living and dining rooms by his porch,<br />
which keeps the sun out. He says, “It’s so<br />
hard to justify the glass box modernism,<br />
which is really, really irresponsible<br />
in terms of just using fuel, keeping a<br />
comfortable environment.”<br />
Pennoyer’s challenge — and brilliance<br />
when solved — wasn’t simply harmonizing<br />
the outdoors with his country home.<br />
“I think the hardest thing to do is, when<br />
you’re inside, you want it to feel like it<br />
was designed from the inside out, so you<br />
want all the windows and openings to<br />
align perfectly to your views and to other<br />
rooms,” says the architect. “But from the<br />
outside, you want it to be orderly and<br />
symmetrical. So, it’s how you can have it<br />
work both ways that can be challenging,<br />
but it just requires discipline.”<br />
Proportion, another core principle<br />
of classical architecture, is essential to<br />
effortlessly achieve this effect. Every<br />
windowpane, for example, is the same<br />
proportion, which “makes it very calm,”<br />
he says. “It doesn’t seem too over<br />
designed; it tames all the architecture.”<br />
Prioritizing design choices was equally<br />
hard and necessary when Pennoyer and<br />

his wife worked together on their own home. “It’s easier when<br />
you have a client because they have specific requirements, but<br />
it’s harder when it’s you yourself because you can daydream<br />
endlessly,” he says.<br />
One thing the creative couple knew they wanted was an<br />
open floor plan, so that rooms flowed one to the other, since<br />
oftentimes it would just be the two of them. The only room<br />
on the ground floor that can be closed is the library, while<br />
other rooms — the kitchen, dining room, living room, stair<br />
and entry halls — have no doors, just large five- to six-footwide<br />
openings with beautiful portieres hanging down.<br />
It’s quite regal, and with his wife’s blending purple tiles<br />
and hues throughout the interior, along with vibrant pinks,<br />
greens, blues and other complementary shades, the warmth,<br />
life and magic of this simple country home is unmistakable.<br />
When Pennoyer and his wife told friends they would<br />
design and build their home together, the reaction wasn’t<br />
encouraging, to say the least. “Many people thought — ‘How<br />
could you do that? You collaborate on your own house? It<br />
sounds like a disaster,’” Pennoyer says, chuckling. But what<br />
he found was another lesson in harmony and balance.<br />
“As far as my wife goes, she really wanted me to do what<br />
I thought was best, and so she really gave me a free hand,”<br />
he says. “And I was very open with her about her decoration<br />
and furnishings. I didn’t try to edit her at all. We actually<br />
really enjoyed it. I’d love to do another with her.”<br />

store situated at Stortorvet in the<br />
centre of Oslo. A large proportion of its<br />
range is of high-quality Scandinavian<br />
design. Glasmagasinet has long specialised<br />

Kronborg Castle towers above a very narrow<br />
promontory between the coasts of Denmark and<br />
Sweden. For 400 years, the castle was the headquarters<br />
for the collection of the Sound Dues, and was a legend<br />
in its heyday in the late 1500s.<br />
When the king throws a party<br />
Frederick II, who reigned from 1559 to 1588, held<br />
sumptuous banquets at Kronborg Castle. When the<br />
royal family welcomed visitors, the ballroom would be<br />
filled with long tables, adorned with silverware, crystal<br />
glasses, and fresh flowers. Chandeliers were fitted with<br />
honey-scented candles, and fragrant sandalwood was<br />
laid in the fireplace. The menu consisted of 24 dishes for<br />
each guest, including a variety of seafood, exotic fruits<br />
and other exquisite delicacies. Whenever the king got to<br />
his feet to make a toast, drums would roll and trumpets<br />
blare, and royal guards would salute the king by firing<br />
cannons outside the castle’s walls.<br />
Legends woven in gold and silver<br />
Frederick II originally left a wondrous collection of<br />
43 handwoven tapestries made of silk and yarn. The<br />
collection depicted 1,000 years of royal family history<br />
and mythology, starting with the legendary King Dan<br />
and going through Christian IV. The crowning glory<br />
was the canopy, woven in gold and silver. Sadly, only<br />
15 of these exquisite tapestries remain intact today, of<br />
which seven are hanging inside Kronborg Castle.<br />

The casemates<br />
Underneath Kronborg lie the castle’s underground passages.<br />
The casemates feel gloomy, cold and damp, but have saved<br />
many lives during times of war. There’s enough space there<br />
to accommodate 1,000 men and provisions for six weeks.<br />
The legendary knight Holger Danske, a Danish national<br />
hero, was buried under the casemates. According to ancient<br />
legends, he’s been sleeping there for hundreds of years, and<br />
will only wake up and lift his sword again if the Danish<br />
kingdom is in great danger.<br />

Esben Holmboe Bang is not even 40 years old, and<br />
has been named one of Time magazine’s 100 most<br />
influential chefs in the world. His Oslo restaurant,<br />
Maaemo, an old Norse word meaning “Mother<br />
Earth,” was awarded its third Michelin star, making<br />
Esben the youngest chef and the first in Norway to<br />
be an executive chef at a restaurant holding three of<br />
Michelin’s stellar accolades.<br />

There are reasons for this immediate and intense<br />
recognition. One is his creation of an unexpected culinary<br />
narrative specific to Norway, which combines both past<br />
and present in Norwegian culture. He is creating this<br />
narrative through foraging. His goal is “to gather the<br />
best that nature can give us,” he says. “We focus on the<br />
relationship between raw nature, produce, and <strong>Nordic</strong><br />
history.”<br />
But there is something else, also. Bang’s menu is based on<br />
his emphasis in locally sourced, natural, and seasonal produce:<br />
scallops from the coastal Arctic waters of Trondheim,<br />
grilled in the shell over burning embers; an emulsion of<br />
raw oysters from Bømlo in the South, served with a warm<br />
sauce of mussels and dill.<br />
“I want my cooking to reflect the rugged nature and<br />
climate of Norway,” Bang says. “I want to create a<br />
progressive environment that has an emphasis on the<br />
outstanding produce of our region.”<br />

In each Maaemo dining experience, Bang<br />
uses only organic, biodynamic or wild<br />
produce, and from farms and farmers local<br />
to the area, or local to Norway.<br />
Bang is a forager whose beliefs imply a<br />
deep green intelligence. One of his major<br />
principles is that natural produce should<br />
not be tainted with chemicals, or it will lose<br />
its natural flavour and true identity. “If you<br />
have carrots” he says as an example, “and<br />
you spray them with herbicides or growth<br />
enhancers, they will no longer be carrots.”<br />
This is the conviction of an eco-sensitive,<br />
biodynamic forager, who also knows<br />
Norway’s culinary limitations — its short<br />
growing season, six months of sunlight,<br />
six months of near sunset, and its range<br />
of climate and terrain. But Bang has<br />
discovered and nurtured the relationships<br />
of Norwegian ocean, forest, and land<br />

restaurant experience.<br />
With just eight tables in the main dining room,<br />
as well as a private test kitchen table, the food is<br />
sublime. The 10-course menu runs to 26 plates.<br />
These may include frozen cow’s milk, salsify pickled<br />
in juniper, red-cabbage gel with horseradish, a<br />
traditional porridge with reindeer heart and brown<br />
butter.<br />
The first course is usually the Maaemo signature<br />
plate: two langoustines with a glaze of pickled<br />
spruce juice that comes atop a rock and cuttings<br />
of spruce, with spruce smoke. Then following are<br />
hand-dived scallops created as a mousseline, with<br />
sea buckthorn.<br />
This is cuisine at a high level, as it is said that<br />
Bang is one of the few who combines his philosophy<br />
of classic foraging with that of great cuisine.<br />
“When you take fresh herbs in the forest and you<br />
eat them there, they have a clear flavour and are<br />
pure,” he says. “But everything else that happens<br />
on the way to the plate just dilutes the flavour.<br />
Our cooking? It’s personal because we cook from<br />
the heart and we want the flavours to be as clear as<br />
possible, no dilution, really clean.”<br />
At Maaemo, guided by the imagination of the<br />
forager/executive chef, what is served is a fraction of<br />
a forager’s bounty. Yet if the berries, flower petals,<br />
scallops or clams are treated with respect and<br />
kindness, nature reciprocates, and the results are<br />
seductive, and of course, priceless.<br />

You can almost feel the 24 centuries of history beneath your feet<br />
standing on the cobblestones of Rhodes. Once an important<br />
ancient seaport, revived by the Knights of the order of St. John and<br />
subsequently conquered by the Ottomans and Italians, Rhodes<br />
didn’t become an official part of Greece until 1948.<br />
Rhodes City is really two towns, the Old Town separated by two<br />
walls and a deep moat from the New Town. Getting lost in its maze<br />
of narrow streets is half the fun, but make sure to visit the Palace of<br />
the Grand Master, originally a Byzantine fortress, converted in the<br />
early 14th century into a palace and administrative building by the<br />
crusader Knights of the order of St. John, and now a museum. The<br />
best views of the city can be seen atop its fortified walls, accessed<br />
through the palace courtyard at midday.<br />
The New Town is perfect for an afternoon stroll, with boutiques<br />
and outdoor cafes. Nearby is the verdant and secluded Rodini Park,<br />
where you can wander amidst the oleander bushes and cyprus trees,<br />
across streams, and even spot a peacock or two. It is said that Rodini<br />
is where the school once stood that counted Julius Caesar, Cicero,<br />
and Marc Antony as students.<br />
Leave the city and travel down the east coast and you’ll come to<br />
the resort town of Kalithéa, where sun worshippers hit the famous<br />
Faliráki beach and explore the 1920s art deco Italian baths. The<br />
Acropolis of Lindos is the best-preserved classical site, with a<br />
towering 20-columned Hellenistic stoa. And for adventurers, the<br />
meeting of the Mediterranean and Aegean seas at Prasonisi in the<br />
southwest makes conditions ideal for kitesurfing and windsurfing.<br />

The largest of the Greek Islands, Crete has varied offerings for<br />
all walks of visitor. Like Rhodes, the island was passed from<br />
Byzantine, Venetian, and Ottoman rule, but it’s still most famous for<br />
its Minoan period, from 2700–1420 BC.<br />
This period is the time of the famous Greek myths, and Crete<br />
serves as the birthplace of the king of the gods, Zeus, who is fabled<br />
to have been born here atop Mt. Ida. With Leto, he conceived the<br />
twins Apollo and Artemis, god of war and goddess of the hunt.<br />
With Europa in Crete, he conceived the Minoan kings of Crete:<br />
Rhadamanthys and Minos, who became the ruler of the Elysian<br />
Fields and the judge of Hades, respectively.Today, you can visit<br />
the Bronze Age archaeological site of Knossos, where the myths<br />
Theseus and the Minotaur, and Icarus and Daedalus were set.<br />
Here you will see the ruins of great Minoan palaces, with their<br />
distinctive red pillars and bright frescoes.<br />
The jetset from all over Europe flock to the colourful coastal<br />
town of Agios Nikolaos during the high season, when the<br />
streets teem with fashionable visitors to the boutiques, seaside<br />
restaurants, and bars. At night, the town takes on a whole new<br />
dimension as the vibrant nightclubs start up and keep the party<br />

Crescent-shaped Santorini sits halfway between Athens<br />
and Crete in the Aegean Sea. The island, known locally as<br />
Thera, offers one of the most breathtaking panoramas on earth.<br />
With its sugar-cube-white buildings with occasional blue roofs<br />
perched atop rugged volcanic slopes, the black sand beach of<br />
Kamari, and unforgettable sunsets, it’s impossible to take a bad<br />
photograph here.<br />
The capital of the island is Fira, and it’s known for its shops,<br />
restaurants, and nightlife. While in Fira, make sure to visit the<br />
Museum of Prehistoric Thera, which tells the story of the nearby<br />
archeological site of Akrotiri, a Minoan civilization destroyed by<br />
volcano in 1613 BC.<br />
Active travellers will relish the hikes along the caldera, the<br />
volcanic ridge along the island. It only takes about half an hour<br />
to traverse from Fira to the charming village of Imerovigli.<br />
Catamaran cruises are also quite popular and a great way to spend<br />
a sunset after visiting some coastal villages or beaches.<br />
