these special models is made from
historic oak beams from the keep, the
HANDMADE SINCE 1869.
Since 1869, our Solingen Manufactory
has been making knives with the tree
symbol – our trademark of international
fame and the historic crest of the
Boker family (first registered as a
trademark in 1674). There couldn’t
be a better symbol for our identity
and our aspirations - the tree was
one of the earliest human symbols,
venerated as a mythical giver of life.
Unlike any other symbol, it stands for
our quality consciousness, our loving
attention to detail and our sustainable
environmental stewardship.
The tree has roots and a firm place to
stand. As an ecosystem, it is a living
being and a habitat. At the same time,
it grows and develops. This is how
we see ourselves, as well. We are
constantly optimizing the functionality
of our knives, using cutting-edge
metallurgical methods and the forms
of contemporary schools of design.
Managing Owners Kirsten Schulz-Dalichow and Carsten Felix-Dalichow
One of many examples is our kitchen
knife series Boker Pure CPM, in
which we realized the reduced design
vocabulary of Danish designer Jens
Ansø in powder metallurgical CPM-154
steel, combining it with domestic oak
wood. This CPM steel, produced with
the latest technology, far surpasses
more established types of kitchen
knife steel with its excellent properties
for cutting tools.
Our newly developed and handforged
kitchen knife series Boker Core
combines the traditional production
method and reliable benefits of a
die-forged bolster knife with light,
innovative lines. Two exclusive
highlights are our knives Boker Saga
Damascus and Boker Core Damascus,
both in strictly limited editions.
Both series are equipped with handforged
stainless Damascus. There are
only a few blacksmiths in the world who
have mastered the difficult technique
This medieval fortress is a famous
landmark of the Bergisches Land,
and was the ancestral seat of the
Counts von Berg, who gave our region
its name. These new special limited
edition models are reminiscent of our
local history, to which we owe our
craft. With purchasing a knife with
the tree logo as a seal of quality, you
begin an everlasting relationship full of
passion.
We support this with our strict
standards and quality requirements for
our knives – and we have stood behind
our products with a lifetime guarantee,
for 149 years. Visit us at our Solingen
BOKER CORE DAMAST
We are a modern and sustainable company
with roots in an industry with a long regional
history. Our region is the Bergisches Land,
where blade production was established
as early as the Middle Ages, thanks to two
main factors. The dense forests supplied
wood as a renewable resource that could be
carbonized for forging. Many rivers running
through narrow valleys – primarily the
Wupper River – supplied easily accessible,
renewable energy for grinding mills and
smithies.
Now, the Bergisches Land does not
actually take its name from its mountainous
topography (“Berg” being German for
“mountain”), but from the noble House von
Berg. Their mighty counts left their mark on
the region like no other dynasty, reaching all
the way to the Rhineland. It is no accident
that their ancestral seat of Burg Castle has
become the landmark of the Bergisches
Land. Thanks to our close relationship
with the castle preservation association,
Schlossbauverein Burg an der Wupper e.V.,
we were able to obtain a small amount of
wood from the 100-year-old oak beams of
this historic monument.
living quarters was rebuilt in the early 20th
century, modeled after Romanesque towers
built around the year 1130. From the top
with its three wooden brattices, visitors
have a panoramic view all the way to the
neighboring town of Remscheid. A covered
bridge connects the tower with the shield
wall and wall walk. In medieval times, it was
the only access to the tower.
Today, the west side of the keep has an
additional entrance to the ground floor.
The archway bears a sandstone plate with
information about the history of the mighty
tower. In the past, the ground floor was
called the dungeon, accessible only through
an opening from the floor above and used
as storage for stone balls. In case of an
attack, the defenders of the keep would
pelt attackers with the balls from the upper
floors. The ground floor could hold up to 12
tons of stones. From the first floor, stairs
in the outside walls, which are up to four
meters thick, lead to the upper floors. We
process pieces of the original oak beams of
the keep at Burg Castle with all due respect
and diligence to make handles for our Boker
Core Damascus, an edition strictly limited
to 199 pieces. The blade is truly special -
the hand forged stainless Damascus has
a breathtaking pattern and offers excellent
resilience and hardness (60 HRC), which
makes the Boker Core Damascus an
exclusive collector’s item and guarantees
exceptional performance for all cutting tasks
in the kitchen. In Solingen, the forged blade
piece consisting of 300 layers of Damascus
is brought to a red heat and die-forged
into its beautiful shape by a drop hammer
weighing two tons.
What better way to express our respect for
the history of our region and our craft than
by referring to the Counts von Berg and
their ancestral home? Each of these works
of art comes in an elegant leather covered
gift box with a certificate of authenticity and
individual serial number.
The wood was sourced from the so-called
keep, the main tower of Burg Castle, which
is an impressive 105 feet tall. The foundation
of the keep (46 ft. x 36 ft.) was laid in the
first building phase of the castle in the 12th
century. The six-storied defense tower with

BOKER DAMASCUS SUPERIOR
We asked ourselves how the knife of all
knives should be made. Which materials and
techniques should be used? Then we found
the answer, and developed a world premier.
For the Boker Damascus Superior series
we use, for the first time, a four strand
Torsion Damascus with a separately forged
Damascus cutting edge, which is done by
German Damascus forger Andreas Henrichs
with fascinating precision, exclusively for
Boker. In an extremely elaborate process,
single Damascus layers are forged by hand to
a massive square Damascus bar. This square
bar is twisted 15 times, which creates the
unique pattern of Torsion Damascus. Four
of those strands, and a fifth non-twisted
Damascus strand are forge-welded into the
final shape.
The result is a blade blank with extraordinary
structure, unbelievable stability, and the
basis for excellent cutting ability. In the
Boker Manufactory in Solingen, the blade
blank will then be processed by hand in
more than 150 steps to the complete knife.
THE ART OF DAMASCUS FORGING
This method of forging Damascus was used
in the Middle Ages to forge extremely high
class sword blades for the gentry. Swords
made of Torsion Damascus were extremely
rare and sought after, so much so that the
Vikings raided parts of Europe to obtain such
swords.
DAMASCUS DETAILS IN HANDLE
For the handles, we use African Grenadill
hardwood. Grenadill wood offers a beautiful
grain, which is a perfect addition to the
intricate blade, and provides an excellent
balance to the knife. Due to its high content
of oil, it is highly moisture resistant.
The impressive wooden handle is framed
by two Damascus bolsters and a Damascus
butt cap, both made of stainless powder
metallurgical Damascus with 300 layers.
The handle pieces are individually handfitted
to each blade, providing balance and
beauty.
Each of these works of art carries an
individual serial number, making it possible
to track the entire production process
in the Boker Manufactory. The knife will
be delivered in an exclusive wooden
presentation case and includes a certificate
of authenticity and owner‘s manual.
forged in this exclusive manner, is
1 BOKER CAMELLIA OIL
This high quality, pure camellia oil is made
according to a traditional Chinese recipe,
and has many uses. The thin oil is extracted
from the seed of the camellia tree, is
neutral in taste, odorless, and does not dry.
The camellia oil is food safe and impresses
with its special purity.
Corrosion protection: The acid-free,
non-resinous, and non-evaporating camellia
oil is traditionally used to protect from
corrosion in the care of high quality knife
blades made from carbon steel, as well as
tools and weapons. It is purely organic and
perfect for preserving non-stainless kitchen
knives and straight razors as – in contrast to
other care oils – does not form an emulsion
with water.
DAMASCUS
Damascus steel – a millennia-old blacksmithing
craft that still unfolds its
fascination today. The first proof of
Damascus is a Celtic sword from about
500 BCE. Even though this forging
technique most likely did not originate
with the Celts, they did manage to perfect
the process. The first artisan Damascus
blades were made by the Teutons during
the Great Migration Period (300 to 450
CE). They were able to use controlled
forging processes to make specific and,
more importantly, repeatable Damascus
patterns.
Swords made from torsion Damascus
were made with extremely sophisticated
production methods, even by today’s
standards. Artifacts like the sword from a
grave near Sutton Hoo (England) posed an
enormous challenge for today’s Damascus
blacksmiths, until they figured out how to
replicate this fascinating sword.
At the time of the development in Europe,
steel of excellent quality was also made
in Japan, which was mainly used in the
forged katana blades wielded by the
samurai. For the longest time, history
considered Japan to be the pioneer.
Japanese swords were generally seen as
superior to the European ones, although
that is historically incorrect.
Due to different cultural conditions, many
more high quality Japanese than European
swords have made it through the centuries
unscathed. While Japanese swords were
lovingly passed down from generation to
generation, the artisan swords of Northern
Europe were often sent to the grave with
their owners and got lost in the mists of
time.
This led to an apparent “supremacy” of old
Japanese swords in the present day, which
cannot be matched by European artifacts
in comparably flawless condition. Looking
back, it can be said that forging multilayered
steel was originally a means to
achieve the best possible material quality.
The decorative element of Damascus
took much longer to come into its own.
Today, Damascus steel is still very popular.
However, this general enthusiasm is no
longer rooted in technical consideration,
but rather an expression of passion for
the material and its special look that still
radiates a near magical fascination. Today,
there are several methods for making
Damascus steel:
13
CLASSIC HANDFORGED
DAMASCUS
For this oldest of all types of Damascus,
at least two types of steel of different
composition are forged together. After
forging, the piece of steel is folded and
forged again, which doubles the number
of layers. The process is repeated until
the desired number of layers is reached.
By using steel types with different
features, the blacksmith can influence
the quality of the Damascus significantly;
a particularly hard steel, for instance, can
be combined with an especially resilient
steel in order to achieve a balanced ratio
of hardness and edge retention. Since
stainless steel cannot be forged together
under normal circumstances, this classic
forging technique generally uses nonstainless
carbon steel. This means that
the resulting forged Damascus is not
stainless either.
Of course, the quality of Damascus steel
is also directly dependent on the quality
of the base steels. Damascus as such
is not necessarily a mark of quality but
simply denotes the production process
of the material. The Damascus pattern
is influenced by forging and the number
of layers, but it can also be created by
embossing the finished forged Damascus
bar. By embossing the bar with the help
of an embossing punch with a specific
pattern, the layers within the Damascus
shift against each other. The embossed
pattern appears as texture in the
Damascus steel once the embossed
material is ground into a blade.
On a freshly ground blade, the pattern is
barely visible. It needs to be finished in
a special acid bath, in which both types
of steel react to the acid by darkening
at different levels. This brings out the
pattern created by the texture and reveals
the true magnificent beauty of Damascus
steel.
14 BOKER DAMASCUS
HANDFORGED STAINLESS
DAMASCUS:
There are some basic differences between
this forging technique and that of classic,
non-stainless Damascus. Since stainless
steel cannot be forged together under normal
circumstances, some clever Damascus
blacksmiths came up with a technique that
circumvents this obstacle. The essential
factor is oxygen. While classic, non-stainless
Damascus is forged and folded in a regular
open forge, the ambient air is the deciding
factor for stainless Damascus – it prevents
stainless steel layers from being forged
together. Therefore, stainless Damascus
is made by preparing layer packages and
forging them in a vacuum.
All Damascus smiths have their own
tricks that fall under the heading of trade
secrets, and cannot be explained in detail
here. In the knifemaking community, Chad
Nichols, from Mississippi, is one of the
most renowned Damascus smiths who
makes stainless Damascus - his top-grade
material is not just utilized by various knife
manufacturers, but also by many custom
knifemakers around the globe as premium
Damascus for particularly fine models.
Nichols Damascus has a fine, rich patterning
that makes it very popular, but many users
also value the material’s great practical
functionality, which makes his Damascus
their first choice. Apart from many knives
in our “Outdoor & Collection” catalog, Chad
Nichols Damascus, which typically has more
than 200 layers, is also used in our kitchen
knife series Boker Pure Damascus.
HANDFORGED TORSION
DAMASCUS:
One of the most sophisticated methods
for forging Damascus steel is torsion
Damascus. Here, a twist is added to the
classic folding of the material. This creates
a unique pattern and the control needed
to master this forging process requires
the highest level of expertise. Torsion
Damascus was found in the few preserved
Vikings swords, made at a time when the
most sophisticated pieces were forged
with outstanding skill and craftsmanship, far
superior to the standard swords of the day,
even in technical terms.
The highly complex forging process that
creates the characteristic pattern makes
torsion Damascus one of the rarest and
most exclusive types of Damascus steel.
Boker uses such hand forged torsion
Damascus,made by the German Damascus
smith Andreas Henrichs, for the kitchen
knife series Boker Superior - a standout
in the world of kitchen knives due to their
individually handforged blades.
Chad Nichols
15
16 BOKER DAMASCUS
SAN-MAI-DAMASCUS/
CORE DAMASCUS:
One modern and very common variation is
San Mai Damascus, or core Damascus. In
its composition and production methods,
it is very different from the other types of
Damascus. San Mai really denotes a multilayered
blade that is not folded (unlike
Damascus), but typically consists of three
layers - a hard core as the center layer and
two softer outer layers that add stability and
flexibility. In the case of core Damascus,
the center layer of modern kitchen knives
is often made from a continuous piece of
Japanese VG-10, a high performance cobalt
alloy steel with a fine structure and high level
of corrosion resistance.
In contrast to a classic San Mai blade, the
outer layers are significantly softer than the
core but they consist of Damascus steel.
However, this Damascus is usually not hand
forged, but mass produced, by means of
the rolling method. These blades can be
recognized by their center layer of mono
steel that usually peeks out from underneath
the Damascus layers towards the cutting
edge. This concept basically leads to an
odd number of layers (typically 37, 67 or 69,
though other numbers are possible).
Since classically folded and forged
Damascus doubles its layers with each
fold, forged Damascus has an even number
of layers (usually 200 to 300), while San
Mai Damascus can also be distinguished
by its odd number of layers. The quality
mainly depends on the material of the
core; as a general rule, blades made from
contemporary mono steel can be just as
good as or even superior to a Damascus
blade. Such a core Damascus is used in
our Damascus Olive and Damascus Black
series, for instance, where its qualities and
exclusive look have won over enthusiastic
fans for many years.
POWDER METALLURGICAL
DAMASTEEL:
One special type of industrially produced
Damascus is the Swedish Damasteel. The
Damasteel company developed a procedure
to combine powder metallurgical steel into
a true Damascus steel in a continuous
production process. The special production
process of powder metallurgical steel
(such as the CPM-154 in our Boker Pure
CPM series) allows for higher alloys, which
create a particularly fine and even structure
– a basic requirement for the best cutting
performance. The production process
of Damasteel combines the advantages
of powder metallurgical steel with the
fascinating appearance of Damascus, which
gives it a special place among the Damascus
steel types.
Despite its exclusively industrial production,
Damasteel is definitely a premium Damascus
that offers outstanding edge retention and a
high level of corrosion resistance in everyday
use. Boker uses Damasteel for the blades of
our best straight razors, but also as appliqué
or handle inlay for other kitchen knives
(Boker Superior Damascus) and outdoor
knives.
In conclusion, it has to be said that Damascus
steel is not a technical requirement for
producing high quality blades today and that
Damascus as such is not a quality guarantee.
However, like an exclusive mechanical watch
that always radiates a special flair even
though a modern quartz watch would tell
time just as reliably at a much lower price, a
Damascus blade, with its breathtaking look
and often tangible texture, is a piece of living
history. It isn’t always purely a matter of
efficiency – even in our fast paced, high-tech
world, there is some space left for excellent
craftsmanship and the beautiful things in life.

BOKER DAMASCUS PURE
A milestone in the history of kitchen knives
by Boker. Made completely by hand, this
unique work of knife art impresses every fan
of high class cutting tools made in Solingen.
Famous custom knifemaker Jens Ansø from
Denmark created this puristic and extremely
functional knife concept for Boker, in a
traditional Scandinavian design. The main
focus of Jens Ansø was the demanding
user. The result, in his collaboration with
the Boker R & D team, is a knife series
that combines superior function with a
simple design and excellent ergonomics. In
keeping with the high end concept, only the
best quality materials were selected, which
takes the functionality of this series one
step further.
The knives in this series are not meant for
collector’s pieces for the showcase - they
are designed for daily use and downright
demand it!
The Damascus Pure models feature
stunning, 200-layer Damascus steel, forged
by Chad Nichols from Mississippi.
Chad is one of the most innovative
Damascus forgers worldwide and impresses
the international knife community with his
hand forged stainless Damascus steels.
We chose him as the ideal partner for this
demanding project when it came to the
selection of the adequate blade material.
The “Boomerang” pattern, with its unique
and attractive appearance, is the perfect
choice for a high end kitchen knife due to
its stainless features. The blades not only
show an appealing, contrasting pattern, they
are also razor sharp and well balanced, and
will conquer any cutting task with ease.
Another impressive feature of this series
is the handle material. The bog oak wood
is not a “species” of wood, but oak logs,
which laid in water or swamps for centuries
and came up when the ponds or swamps
dried out. Over this long period of time,
the tannic acid of the wood reacts with
the iron salts in the water, which results
in a very high hardness and a handsome,
deep brown coloring. This exquisite handle
material harmonizes perfectly with the Chad
Nichols Damascus blade.
The Pure Series has truly set new limits and
will become, with its puristic and functional
design concept and high end materials, the
new eye catcher in your kitchen.

22 BOKER DAMASCUS OLIVE & DAMASCUS BLACK
BOKER DAMASCUS OLIVE & BLACK
With the successful cutlery series Boker
Damascus Black and Boker Damascus
Olive, we present kitchen knives with a
stunning look and feel, and above-average
performance. The best of two worlds:
A traditional Japanese chef’s knife -
handmade in Solingen, Germany.
Not only do many top chefs swear by
Japanese kitchen knives - they are also
becoming increasingly popular with
ambitious home cooks. The merits of
a knife with Japanese handles and the
traditional construction of a blade with
stainless steel ferrule are obvious, because
delicate foods can be cut and cooked very
gently.
When chopping herbs, for example, the
very fine cut leaves hardly any essential
oils. Flavors are not lost, and the unwanted
tears when chopping onions can also be
avoided. The perceived sharpness when
cutting is breathtaking, and makes cooking
an experience.
The secret of the unusual sharpness lies
in the material and its processing. The
blade consists of 37 layers of Damascus
steel. The premium blade steel VG-10,
made in Japan, is used for the core, and is
characterized by a high degree of hardness,
toughness and a homogeneous crystalline
structure.
In a direct comparison of the cutting
performance with a product of an
established Solingen kitchen knife
manufacturer according to DIN EN ISO
8442-5, the series Boker Damascus Olive
and Boker Damascus Black are not only
superior in the proverbial sense - the cutting
performance of our knives is more than
68% higher than that of the competitor’s
product in the representative DIN test.
In addition, the series Boker Damascus
Olive and Boker Damascus Black convince
by an initial sharpness that is far superior,
making frequent re-sharpening a thing of
the past.
CHEF´S KNIFE
Close to the headquarters of the Boker
Manufactory in Solingen, Germany, lies
Burg Castle on the Wupper River - the
landmark of the Bergisches Land. It is
also one of the largest castles in western
Germany and the largest reconstructed
castle complex in North Rhine-Westphalia.
Today, Burg Castle is used for a variety of
cultural purposes, including as a museum,
event venue and memorial.
In order to be able to fully maintain this
landmark in the future and renew the
energy system, an extensive renovation
program was begun in 2017 and is set to
continue until 2024. The renovation has
enabled us to obtain an exclusive inventory
of original 100-year-old oak beams from the
mighty keep of Burg Castle.
With great care and craftsmanship, we
process these historic oak beams from the
keep into handle scales for our successful
kitchen knife Boker Saga, which is available
in a strictly limited edition of 199 pieces.
The design of the Saga series was created
by Danish knife designer and renowned
custom knifemaker Jesper Voxnæs, and has
already won the iF-Product Design Award.
This premium Damascus boasts 200 layers
and a Rockwell hardness of 60 HRC, as well
as the Damascus pattern “Fade,” with its
fine, high contrast lines.
While classic, non-stainless Damascus
can be forged and folded in an open forge,
the prepared layer packages of stainless
Damascus must be forged with great effort
in the vacuum. Damascus steel products
forged by Chad Nichols are known for their
exclusive look in the kitchen and, more
importantly, for the excellent edge retention
and everyday functionality of the beautiful
material.
Let this unique composition fascinate
you! With a knife from this strictly limited
edition, a piece of history will live on in your
kitchen. Each of these works of art comes
in an elegant leather covered gift box with
a certificate of authenticity and individual
serial number.
Keep of Castle Burg
The knife offers excellent handle
ergonomics, is perfectly balanced and can
handle all cutting tasks with ease, due to
the sturdy full tang. To complement the
handle material, which is not only beautifully
patterned but also rather exclusive and
historic, we selected the handforged
stainless Damascus steel made by Chad
Nichols from Mississippi.
36 CONSTRUCTION OF A KITCHEN KNIFE
CONSTRUCTION METHODS & BLADE JOINTS
The knife has been an essential universal tool for more than 2.4 million years. Knives are available in a wide variety of shapes and designs for
almost any purpose. As a tool, kitchen implement, decorative object or collector’s item – people value the advantages of these sharp tools
in every kitchen. The construction possibilities for a kitchen knife are almost as varied as the possible uses – from cutting fresh bread to
carving a beef tenderloin or filleting fresh fish. At the Boker Manufactory, we use three different blade and handle joint designs, depending
on the knife series.
Each design has its own tradition and purpose, and offers different advantages in terms of production, handling and use. Despite all
differences, these designs of Boker kitchen knives have one thing in common - they are all excellent and superior kitchen knives that you
will never want to put down. Depending on your individual and personal preferences in terms of design, weight, ergonomics and balance,
you are sure to find the right knife in our collection.
Bevel
Forged
bolster
Tang
Cutting
edge
THE FORGED BOLSTER
European kitchen knives are mainly used to cut with pressure.
The die-forged bolster offers a few distinct advantages. For this
cutting technique, the index finger or middle finger presses down
on the end of the blade. Thanks to its three dimensional shape, the
bolster serves as a comfortable pressure point. At the same time,
its weight supports the cutting movement when the blade moves
forward.
The knives in our Boker Core series are die-forged with a
bolster. Die-forging is a technique with roots in the early days of
industrialization. First, a roughly shaped piece is cut off from the
raw material. This piece is brought to a red heat and hammered
into shape inside a massive form consisting of two halves, top and
bottom. This process is also called drop forging. The bottom die
serves as a counter surface. The die dropping down onto the blade
is affixed to a drop hammer weighing two tons. The resulting blade
blank needs to be soft-annealed before the blanks are deburred,
which means that the excess material created during the forging
process is removed. The blank is calibrated again on a knuckle joint
press with 800 tons of pressing force. This process is particularly
suitable for sharply contoured blade profiles.
The bolster remains a technical challenge, even and especially
after forging. A grinder now shapes the knife’s fine contour
from the rough blank. The complex three-dimensional and conical
structure of the bolster requires the grinder’s full experience and
concentration. Careless handling can cause unsightly dents or
notches at all junctions of the blade and handle.
CONSTRUCTION OF A KITCHEN KNIFE
37
Full tang
Handle scale
Forged bolster
THE FULL TANG — ROBUST & SIMPLE
The full tang is the simplest and most robust solution. The concept
comes from outdoor knives, and is most often used for knives
that need to be particularly sturdy and withstand even abuse and
improper usage, such as prying or chopping. The full tang follows
the entire handle shape; the scales are riveted on from both sides.
Then, the handle scales are fitted to the tang on a belt sander and
also rounded so that they offer a pleasant and secure grip. The
knives in our Boker Saga series feature a full tang.
Push tang
Guiding sleeve
Stainless
steel sleeve
Rivet
THE PUSH TANG —
AS MUCH AS NEEDED, AS LITTLE AS POSSIBLE
The push tang is the lightest of the listed joints. Its philosophy
is “as much as needed, as little as possible”. The actual tang is
narrower than the ricasso that goes on into the handle. The tang
runs through about a third of the length of the handle. Here, it is
held by a single stainless steel rivet. The wood at the front end
of the handle is protected by a finely satinized ferrule. Fitting the
ferrule is particularly difficult, because its spot on the handle is both
conical and oval. This means that it doesn’t have a regular geometric
shape. This construction follows the Japanese tradition and we use
it for our series Boker Damascus Olive and Boker Damascus Black.
In Japanese cooking, most cuts are pulled. With this technique,
the blade is easier to control if the handle is lighter compared to the
blade. If flexural forces came into play during the cutting process –
though those are negligible when working with food – they would
be happening in the strongest spot of this connection.
38 MANUFACTURE OF A KITCHEN KNIFE
MANUFACTURE OF A KITCHEN KNIFE
Depending on the series, making a kitchen
knife requires up to 80 different production
steps. About ten in-house departments
are involved. Each build and finish requires
some of the same processing steps and
some different ones. Before production
can begin, the product idea is built digitally
with the help of CAD software. A simple
hand-drawn sketch made by one of our
knife designer and custom knife makers
often serves as the basis for the first
construction drawing. Once the design
engineer has determined all productionrelevant
components, they are either made
in-house or procured from suppliers. Then,
production can begin.
THE DROP FORGE
The base material is cut into pieces, brought
to a red heat and hammered in a massive
die with a drop hammer weighing two tons.
The resulting blade blank needs to be softannealed
before it can be deburred, which
means that the excess material created
during the forging process is removed. The
blank is calibrated again on a knuckle joint
press with 800 tons of pressing force. We
use this process exclusively for knives with
a forged bolster.
STAMPING
Here, the blades of the non-forged knives are
stamped out of plates or coils – depending
on the material’s commercial form – or cut
with a laser or water jet cutter. Forging and
stamping are the respective first steps in
making a knife. The purpose and shape of
the product is already recognizable.
HARDENING
The heat treatment of steel is a high art.
When we harden and anneal steel, we push
for the limits of the steel in question. In
order to attain the required edge retention,
the steel needs to be as hard as possible,
while also having enough resilience not to
break during use.
GRINDING
Here, the blade receives its long tapering
grind from spine to edge. Cooling the
piece requires great diligence at this stage.
Otherwise, heat might warp the blade or
even take away some of its hardness.
GLAZING
True Solingen handcraft begins with
glazing. Here, the spine is ground, the
transition from blade to tang is cleaned
up and the unique Solingen blue finish is
applied. The blades of the Boker Saga Satin
series keep their blue satin finish surface.
For the series Boker Damascus Olive and
Damascus Black, the blades are also sand
blasted, which brings out the texture of the
stainless Damascus.
DAMASCUS ETCHING
Here, the blades of the hand forged
Damascus knives are etched in order to
bring out the lines of the different steel
layers. We use a specially formulated
acid bath, which is precisely adapted to
the Damascus and the desired look of the
blade.
SCALES
This department stores lumber from
indigenous trees, 5,000-year-old bog oak
and rare burl varieties. The first step of
handle production is cutting the wood by
hand on a bench saw – with a level of
accuracy down to 1/10 of a millimeter. The
resulting piece is then finished by hand or
on a CNC milling machine. Our carpenters
say, “It’s all black before the saw.” This
means that you have to cut into the wood
in order to be able to tell which parts and
how much of the purchased raw material is
actually usable.
MOUNTING & FINE GRINDING
In mounting, handles and blades are
‘married.” Depending on the build, the
knife is assembled with rivets, hollow rivets
or extremely durable adhesive connections.
The contour is also pre-shaped on the
grinding belt. The contour that was prepared
in mounting is now given its final finish on
fine grained grinding belts and discs. Apart
from the blade, the knife receives its final
aesthetics and functionality.
FINAL CHECK - HONING
At the end of the process, experienced
eyes scrutinize the knives. Only completely
flawless knives are hand-honed and then
checked again, cleaned and packaged.

BOKER PURE CPM
Danish design emerged as a style in
the middle of the 20th century, strongly
influenced by the ideas of the German
Bauhaus. This design movement
developed its own no-nonsense look
characterized by simple formalism,
minimalism, clarity and functionality,
as well as by the use of cutting edge
industrial technology in the realization
of this design vocabulary. This is
the tradition of Danish designer and
custom knifemaker Jens Ansø, who
designed the kitchen knife series
Boker Pure following these exact
design principles.
The knives have unique, classically
simple lines and offer excellent balance,
handle ergonomics and functionality.
This minimalistic design is highlighted
with the use of “Bergische Eiche,” a
regional oak wood, for the handles.
The pleasing pattern of the elaborately
finished oak wood is only interrupted
by three understated stainless steel
rivets, which are applied with great
care in a completely manual process.
This steel is made by melting the
already excellent base steel 154-CM in
order to add more carbides.
The steel is then atomized in a
vacuum and quenched with a cold
air jet. The resulting steel powder is
pressed and sintered below melting
temperature. This process makes
it possible to give the steel a much
higher carbide concentration than
regular blade steel; and the carbides
give the steel additional hardness and
edge retention.
The bar graph (left) shows the edge
retention compared to an established,
popular kitchen knife steel, the
chromium-molybdenum-vanadium
steel X50CrMoV15, as well as to the
excellent 440C. The superior edge
retention of the 440C is far surpassed
by the powder metallurgical steel
CPM-154, which is a guarantee for a
sharp knife that keeps its edge for a
very long time.
The Pure Series has truly set new
limits and is, with its puristic and
functional design concept and high end
materials, the new eye catcher in your
kitchen.
In order to match the aesthetic
quality of the series with its technical
properties, we use the powder
metallurgical steel CPM-154, made by
the American manufacturer Crucible
Industries.
WALNUT
BOKER CORE — RECOMMENDED
BY LEADING RETAILERS
What do Trier, Wiesbaden, Münster and
Lüneburg have in common? Apart from
a historic city center, landmarks that are
famous beyond the borders of the region
and a long standing tradition as important
trade cities, they share another important
aspect: these cities are the homes of
excellent cutlery retailers, who have built
their outstanding reputation over many
years by means of their extensive selection
and first rate expertise.
We harnessed their decades of experience,
excellent know-how and finely honed
everyday sense for the requirements and
needs of cooking and kitchen enthusiasts
in our product development of the Boker
Core series, combined with our almost
150 years of experience as a Solingen
Knife Manufactory. The result is a product
with dynamic lines, excellent handling and
breathtaking cutting capability that earned
the quality rating “recommended by leading
retailers.”
The solid blade blank, made from a
chromium-molybdenum-vanadium
alloy
(X50CrMoV15), perfectly suited for making
premium kitchen knives, is handforged
with Solingen craftsmanship, structurally
optimized and then hardened to 58 HRC. In
order to give the blade a longer service life
and even finer cut, our traditional hand grind
is then highly polished.
“I’m particularly impressed with the
absolute focus on functionality in the Boker
Core kitchen knife series. The design is
very pleasing – not too elaborate – and has
a clean and flush connection of the forged
bolster and the walnut handle, which also
meets our hygiene requirements.”
Jörg Lamskemper,
Head of the Craft Guild Messerschmiede-Innung
Schneidwerkzeugmechanikermeister
Carl Herlitzius GmbH & Co. KG, Münster
The forged bolster ensures a secure grip
and protects the user from possible injuries
in case of a slip. A special design feature
of all knives in this series is the gently
rounded spine. This makes the knife easy
and pleasant to handle in any position
and prevents unpleasant pressure on the
hand – even if strong pressure is applied
to the spine, while executing a rock chop,
for instance. The perfectly proportioned
handles round out the cohesive and
appealing look, and are available in finely
grained walnut, or durable synthetic, in our
Core Professional Series.
“Domestic wood types like the walnut
used in this series are becoming more and
more popular and can be found in many
trendy kitchen accessories. We support
the use of local materials and products
that are still made with traditional Solingen
craftsmanship.”
KEEP ON TRADITION
In Münster’s historic district of
Kiepenkerlviertel, Martina Herlitzius and
Jörg Lamskemper manage the retail store
that has been nurturing the culture and
tradition of premium artisanal knives since
1881. Their inventory consists of more than
10,000 products. They focus on German
manufacturers, but also offer international
brands – always made by true experts.
Durable, repairable – with functionalities
that meet just about any needs in the
kitchen, home or garden, for hobbies or
professional purposes.
Quality and durability can no longer be taken
for granted. The market is dominated by
mass-produced knives, scissors and cutlery.
You cannot re-grind or fix those if there is a
problem – you can only throw them away.
That is why there are only a few knifemakers
left in Germany. At the Carl Herlitzius cutlery
store, you can expect a knowledgeable
consultation and first rate service, as well as
many tips for taking care of your knives. Of
course, you can entrust the in-house master
workshop with every product you buy at
the store – for maintenance, sharpening or
repairs.
In the skilled crafts and trades, it is still
fairly common to pass a company from
one generation to the next. This is certainly
true for Carl Herlitzius GmbH & Co.
KG, Münster – the company celebrated
its 125th anniversary in 2006. In 1881,
knifemaker Carl Herlitzius settled down
in Münster, on Jüdefelder Straße. The
company remained at its next address
(Am Drubbel) until the building was torn
down in 1905. The company then moved
to the Kiepenkerlviertel, and Carl Herrmann
Herlitzius was born the same year.
After the store building Bogenstraße 43
was bombed and leveled in 1945, he was
the one who rebuilt it with his own hands.
In the late 1970’s, Carl Herlitzius III took over
the business and managed it with his wife,
Gertrud. In the mid 1990,s, their daughter,
Martina Herlitzius, and Jörg Lamskemper
joined the family company. And the next
generation is already waiting in the wings…

52 BLADE SHAPES & APPLICATIONS
BLADE SHAPES — PURPOSE & USE
At first glance, the wide variety of lengths, widths and shapes of kitchen knife blades might seem a little confusing. Since all knives are
ultimately made for cutting, they are distinguished by their specific intended purpose. The advantages of the different shapes for different
applications are fairly clear and easy to understand, so that the overwhelming number of choices can be narrowed down. The following list
of knife descriptions will help you find the right tools for your kitchen.
THE PARING KNIFE
The paring knife is a small solid foundation for any kitchen knife set.
The blade is narrow so that it can follow the outer circumference
of a small potato as well as the inner circumference of an apple
core. Paring knives are most often used without a board, they are
simply held above a pot or bowl. But you can also use them with
your cutting board to quickly cut a single onion used in a meal for
one or two people or the ingredients of a quick lunch salad.
THE CARVING KNIFE
The carving knife has a long narrow blade capable of cutting paperthin
slices of roast beef, pot roast or ham. The blade is narrow to
provide a smaller surface for the meat to stick to. The first choice
for foods with a juicy and dense texture.
THE PEELING/PARING KNIFE
The length of a peeling knife blade is comparable to that of the
paring knife, though the edge is straight with a sheepfoot tip. This
makes for better utilization of the full cutting length, because the
blade is pulling itself into the cut. The straight edge is also better
suited for cleaning and scraping root vegetables, because the
blade has more contact with the surface and is easier to control.
THE MEAT FORK
Compared to a regular tableware fork, the meat fork offers the
advantage of its two long and very pointy tines that can easily
penetrate deep into the meat. That makes it perfect for carving and
serving large pieces of cooked meat. Thanks to its long tines and
handle, the meat fork also makes a great barbeque tool.
THE STEAK KNIFE
Steak knives are set on the table. Unlike regular tableware knives,
a steak knife is sharp enough to cut meat into clean bites without
ripping or tearing it. Depending on your personal preference, we
offer steak knives with a smooth cutting edge for the purists, or
with a serrated edge.
THE FILLET KNIFE
The fillet knife is an extreme form of the carving knife. Its main
purpose is the preparation of fish. The fine tip can be used for
opening fresh fish. The slender blade offers raw or smoked salmon
practically no surface for adhesion. The flexible blade can be
flattened onto the cutting board in order to separate the fish skin
from the fillet just above the board. A light knife for light cooking.
BLADE SHAPES & APPLICATIONS
53
THE SANTOKU
The Santoku knife, or just Santoku for short, serves the same
purpose as the European Chef’s Knife. The literal translation
emphasizes this: San = three and Toku = virtues. The three virtues
are fish, meat and vegetables. The Santoku became popular after
World War II, when the Japanese economic boom meant that
meat began to appear on menus next to fish. A Japanese blade
shape was combined with a symmetrical European blade grind.
One striking feature is the shorter length with the sheepfoot tip.
It is proper to use the Santoku for pulling cuts, following Japanese
tradition. The front part of European kitchen knives used to guide
the knife on the cutting board is not necessary for a Santoku.
THE BREAD KNIFE
Professional chefs refer to the bread knife as “the saw.” However,
they are not just cutting bread with this knife, but all foods that are
not strongly textured, e.g., cabbage. Pastry chefs use their bread
knives to separate cake layers. The wide blade makes it easy to
control in soft materials. Another advantage is the knife’s excellent
edge retention. When used correctly, a knife is not dulled in contact
with the material but with the cutting board. With a serrated edge,
only the tips touch the cutting board, protecting the real edge
behind them.
THE ALL-PURPOSE/UTILITY KNIFE
The all-purpose/utility knife combines the best of all worlds. It can
be used in hand and on the cutting board. The medium-size blade
offers a reasonable compromise for easy straight and curved cuts.
An aesthetically pleasing all-purpose knife can also serve as a very
nice table or steak knife.
THE SMALL CHEF’S KNIFE
Like the Santoku, the small chef’s knife is popular because of its
shorter, easily controlled blade and universal applications. Thanks to
the sturdy, wide blade, you can use the small kitchen knife for many
tricky cutting tasks.
THE CHEF’S KNIFE
The Chef’s Knife is the knife you buy when you can only have one
knife. It is a workhorse, built for fast-paced kitchen battles. You use
it to cook for your extended family, whole circle of friends or for an
entire banquet. It is also the perfect knife for all passionate home
chefs who like convenient cooking tools. The wide blade can be
passed along the knuckles of your retracted fingers, which enables
you to make swift cuts without risking injury. The food is pushed
forward with the thumb. The classic long and pointy European
chef’s knives cut with pressure. With this technique, you really just
use the back half of the blade. The front half is used to guide the
knife on the board. You develop a fluid, even and easy motion and
cutting rhythm. You can also use the spine to push the cut food off
the board into the pot.
54 BOKER SAGA
THE OLDEST TOOL OF HUMANITY
WAS INVENTED OUTSIDE.
The production of a blade and the use of fire
were the first two cultural achievements
on which each further built. Even today,
the knife is one of the most versatile and
sustainable tools, and its tasks are still the
same as in the early days of human history.
We have never forgotten that.
For almost a century and a half, our
customers have been using our Boker
knives in the most adverse conditions
where it matters, right where they were
invented - in the open air. We owe our
knowledge and skills to their experience.
This enables us to produce knives that
simply do more in all conditions. In our
series Boker Saga, this origin is most
apparent. Three categories determine the
essence of a knife: the material, the form
and the surface.
THE MATERIAL — SUPERIOR
STANDARD
Steel is the basis on which knives are made.
The demands on steels are many times
higher in the hunting and outdoor area than
in the range of kitchen knives - you could
almost say - merciless. For the kitchen
knife series Saga, we use the hunting
knife steel 440C stainless. This steel is
well above the already high standard of
X50CrMoV15, which is commonly used
for high quality Solingen kitchen knives by
established market entrants.
The high steel quality can be visualized by
the standardized DIN test for determining
the cutting performance. In a direct
comparison, the cutting performance
of the Saga kitchen knife series tested
according to DIN EN ISO 8442-5 is exactly
100% higher in the paper-cut test after 60
strokes than in the case of well known
competitors. The initial sharpness also
convinces with a result that is more than
20% better.
In the production of perfectly contoured
handles, only the highest quality
raw materials are used. Available in a
lovely, high density Grenadill wood, or
indestructible G10 - both resistant to
temperature and humidity. With the first
touch, the ergonomics become apparent.
Every arc, every sweep in the line adapts
to a point of the hand and communicates
absolute control and an outstanding
cutting experience. The wide, dovetailed
end of the handle, found in the larger
models, provides additional grip safety.
The high strength is based on the full tang
construction, which reaches from the tip of
the blade to the end of the handle.
THE FORM – SCANDINAVIAN
DESIGN
The substance is nothing if its superior
potential is not used in the appropriate
form. Scandinavians are known for a
straightforward, clear and, above all, highly
functional design. The custom principle
of “form follows function” is consistently
implemented in Scandinavian design.
And our partner, Danish knifemaker and
designer Jesper Voxnæs, has been working
hard at this for more than 20 years.
Our decades-long experience in
manufacturing outdoor knives and the
creativity of knifemaker Jesper Voxnæs
combine to present the concept and design
of the Saga series, setting a new standard in
cutting and ergonomics. The transfer of the
design into the culinary sector guarantees
that working with the Saga has become a
unique event - the Boker Saga chef’s knife
was awarded the iF Product Design Award
in 2013.
THE SURFACE – SLICK AND ROBUST
The finish is key. It crowns the knife both
aesthetically and functionally. For the
Saga G10 series, the optimized cutting
performance is not only guaranteed by the
full flat grind of the 440C blade, but also
by the surface finish, which is achieved
in a specialized grinding process, and is
characterized by outstanding gliding
properties through the cutting material,
thus enhancing the already superior cutting
performance. For the Saga Grenadill series
we offer, for the first time in the sector
of kitchen cutlery, a stonewash finish.
This special finishing method upgrades
the existing cutting performance, as well
as providing extreme resistance against
scratches, with the micro structure of the
finish. This tried and true finish has been
used in outdoor sector for years.
Mankind’s oldest tool was invented for
life in nature - we also perfected it for
the needs of our time.
The handle scales of the Boker Saga knife
are a typical feature of outdoor knives that
you ordinarily would not see on a kitchen
knife.
Our series Boker Saga with G10
handles and stonewash finished
blades is also still available!
3 - 5 BOKER KNIFE BLOCKS
Matching the innovative and advanced
Damascus knife series from Boker, we
developed an innovative concept for a knife
block, which simultaneously holds and
presents up to seven kitchen knives. The
block consists of seven panels, made of
wood, which contain strong magnets. Six
panels form a semi circle, and a seventh
panel in the center, all mounted on a
solid wooden base plate, allow a safe and
decorative storage of seven high quality
kitchen knives of all standard size. The
annoying “guessing and fishing” for the right
knife will never happen again. The innovative
Boker wood knife block provides for easy
handling, simple cleaning without any slots,
and holds your kitchen knives ready for
use at all times. A real eye-catcher for your
kitchen. Made in Europe. Dimensions:
The slanted wooden block stands securely
Width 10 cm. Depth 25 cm. Weight 2,4 kg.
Handmade knives deserve attractive
presentation in every kitchen. These high
quality Boker magnet rails are available in
solid brushed oak, walnut and smoked oak.
Since the magnets are recessed into the
wood, the blades can be stored securely and
gently without scratching the blade finish.
Boker knife rails are stylish and practical, and
offer a space-saving alternative to the well
known knife blocks. Dimensions:
Width: 42 cm. Height: 4,5 cm. Depth 2 cm.
4 - 6 BOKER CUTTING BOARD
CLASSIC
Rounding out our premium kitchen knife
series and matching knife blocks, we
added exclusive cutting boards made from
premium solid wood (oak, smoked oak and
walnut) to our product line. The design of
the Classic is sturdy and secure, with a
generous cutting surface of 15¾” x 11¾”.
Rubber feet keep the cutting board from
sliding or shifting. Milled grip handles on
both sides allow for a secure grip and easy
positioning of the board. The bottom right
corner is adorned with a subtle Boker logo.
Weight: 3 kg.
7 - 9 BOKER CUTTING BOARD
MODERN
Form follows function – this architectural
design principle inspired us in creating our
new Modern cutting boards. The typical
angled corner catches the eye, but also
serves as a handle to reposition the board.
Thanks to the elaborate pin joint, the angled
corner is firmly attached to the cutting
board. With its dimensions of 15” x 10⅝”,
this extraordinary kitchen accessory offers
plenty of space for cutting and carving. This
minimalist cutting board is available in solid
oak, smoked oak and walnut. The beautiful
pattern of the wood makes each board a
one-of-a-kind piece, branded with a subtle
Boker logo. Weight: 1,6 kg..

KNIFE SHARPENING
79
KNIFE SHARPENING
The knife is humankind’s oldest tool. The
need for sharp blades is just as old and still
very pressing today. According to a survey,
more than 90% of German households
use dull knives. Even though everybody
uses knives in the kitchen, the subject
of sharpening knives is still shrouded in
mystery. For many people, sharpening and
honing are unfamiliar territory - skills ascribed
only to an elite circle of select specialists
who use secret methods to make dull knives
sharp again; it is almost like magic.
Today, machine sharpening has become a
good, practical alternative. A vast variety
of home sharpening tools are available, but
our experience has shown that machines
with sharpening belts achieve a far superior
quality of the finished product than machines
working with grinding wheels. Therefore, a
sharpener like the Worksharp (shown on
page 80-81) combines this technology with
angle guides for easiest and safest handling
and ensures quick, professional-grade
results.
However, there’s really no wizardry involved.
If you find the method that is right for you,
you can restore the edge of your own knives
to exquisite sharpness without a problem.
One more thing about manual sharpening -
there is an old adage saying that things done
quickly are not worth much. If something is
worth doing, it is worth doing slowly. A good
manual sharpening process always takes a
little more time. A manual knife sharpener
who is primarily advertising his high speed
will never be able to offer the desired result
that can be achieved with the methods
described below.
We hope that our overview on the following
pages will take some of the “mystery” out
of the subject of sharpening knives and
motivate you to take a closer look at this
practical and useful skill.

WORKSHARP CULINARY
The Work Sharp Culinary series takes sharpening
kitchen knives to a new level. The
device offers angle guides and timer-controlled
sharpening intervals, as well as different
speeds for the integrated grinding belts
to ensure easy handling. The automated
maintenance-free dust removal system and
the low noise level make operation clean
and quiet so that your countertop doesn‘t
mutate into a workbench. But the Worksharp
Culinary series offers even more innovation:
everyone knows the high efficiency
of a fine serrated edge, e.g. when cutting
tomatoes or similar cutting chores. With the
included ceramic sharpening rod with integrated
MicroForge (depending on model), you
can convert your favorite plain edge knife
within seconds into a high effective micro
serration, which increases the “bite” of the
blade significantly. By honing the knife on
the belt, this MicroForge-made serration
can be converted back to a plain edge most
easily.
1 E5 CULINARY SHARPENER
The premium model comes with 3 sharpening
speeds: for creating an edge, for
sharpening and stropping. Fully automated
timer control for perfectly calibrated sharpening
intervals. The additional ceramic rod
(usable length: 20 cm) with a coarse-grain
and fine-grain grinding surface and an angle
guide can be used to touch up the edge. It
also offers the MicroForge to turn a straight
edge into a micro-serrated edge in seconds.
Power: 220V. Comes with 3 grinding belts
(medium /P120). (medium /P120).
SHARPENING
Of course, modern technology is catching
up with the subject of sharpening, but
many of the “experts” on this subject are
traditionalists. And that usually means:
you use stones.
Such stones can be very different in
nature; they can be natural stones,
synthetically produced, or even hybrids.
Stones are generally not used dry.
Depending on the stone, you need water
(such as Japanese water stones, which
need to be watered, or the Belgian
Chunks, which only moisturizes the
surface), or oil, as in the centuries-proven
Arkansas stones. While the oil in the
oil stone only has the task of ensuring
the sliding on the stone and wash away
worn steel particles from the stone, the
water forms a grinding sludge, especially
in the Japanese water stones, which is
instrumental in sharpening.
Especially for very fine cutting, the
highest qualities of the Arkansas oil
stones have tremendous potential, but
here as well, it’s generally a matter of
personal preference.
There are different methods of sharpening
with the bench stone - some prefer a
circular motion or “8” trajectory with
the edge (i.e. with the spine of the blade
ahead), sharpening one side of the blade
until a burr emerges and then changing
sides. In particular, in the case of the fine
print, the respective mutual pull against
the cutting edge (i.e. with the cutting
edge ahead) is a popular method. And as
so often in life, there is not one correct
method here - trying out and finding the
personally preferred method is the way
to go.
When sharpening, it is essential
to maintain the correct angle. When
sharpening on the stone, on the one
hand, it has to be determined correctly
and, on the other hand, to be constantly
maintained during the entire sharpening
process, which of course requires some
practice and experience.
If you appreciate the traditional method
but are open to more modern materials,
you can of course also consider ceramic
or diamond coated bench stones. While
the handling is identical to water or oil
stones, it can usually be dispensed with
oil or water, and the wide range of grits
also offers all options.
It is important that after creating a burr,
depending on the grinding method, it
is removed cleanly. For this purpose, a
leather strop will do, which, possibly also
treated with abrasive paste, represent the
final step and the cutting edge “meets the
finishing touch.”
84 ARKANSAS OIL STONES
SHARPENING (CONTINUED)
The finely tapered edge that can bend
when coming in contact with a bone or a
hard cutting surface is straightened with
a sharpening steel. The knife is carefully
placed on the steel and pulled across on
alternating sides with light pressure and
with the spine first (important!). This
straightens the bent edge and refreshes
the knife’s cutting power.
The steel should not be confused with
its similar half-brother, the rod sharpener.
Though they look very similar, the
difference is that the rod sharpener is
made with abrasive materials, such as
ceramic, synthetic ruby or diamondcoated
steel. Since these rods are used
for sharpening, they are also handled
differently.
Perfect for quick touch-up sharpening,
the sharpener is used by pulling the
knife along the rod, edge first, until the
desired level of sharpness is reached.
Unlike the steel, the rod sharpener does
take material off the edge; this is a true
sharpening process. You need to know
that neither of the two tools is suitable
for replacing the function of the other.
ARKANSAS OIL STONES – The oil stones by RH Preyda
are hand-hewn in Hot Springs in the Ouachita Mountains
in Arkansas, the world’s only deposit of these stones.
The unique micro-crystalline structure makes Arkansas oil
stones extremely durable. Unlike other whetstones, the
oil stones never need to be trued or planed. The stones
consist of Novaculite, based on 99.9% pure silicon that
possesses its unmatched sharpening properties only in
this particular configuration. Depending on the quality of
the stone, the sharpening properties range from coarse
to ultra-fine, which should satisfy even the most sophisticated
users. The sharpening oil is completely non-toxic
and food-safe (USDA approved), so that the stones can be
used even for knives used in food preparation. Arkansas
oil stones are not classified by grit but by density; the
denser the stone, the finer the edge.
1 – 5 BENCH STONES – The classic bench stones
are available in all 5 grades in two different sizes, to
satisfy all sorts of knife and tool sharpening needs. The
smaller sized stones are 6” x 2” x ½” , while the larger
stones are 10” x 2” x ½”, and thus offer significantly
more work space, especially for larger knives. Available
ORIGINAL LAGUIOLE STEAK
KNIVES & STEAK FORKS
In high class restaurants steak is served
with original Laguiole cutlery. The slim
shape of the blade and their elegant lines
have made Laguiole knives famous. Handmade
by famous cutler Robert David in
Thiers, France, the stainless steel blades are
mirror-polished and ground to as razor sharp
edge. The traditional shepherd´s cross on
the handles, the hand engraving on the back
of the handle, and, like all original French
Laguiole knives, the Napoleonic emblem of
the bee must all be there - even on steak
knives. These knives and their matching
forks are carefully made by hand, reflecting
French tradition and cuisine. In both build
quality and the sharpness of the blade, they
stand out against cheap imitations from
Asia. Supplied with gift box and certificate.
98 CHAMPAGNE SABERS
1
Fox Knives Champagne Saber.
Item No. 09FX2006
€ 143,95
1 FOX KNIVES CHAMPAGNE SABER
The tradition of opening a Champagne bottle
with a saber was born in the Napoleonic
era. The “sabrage” with the Briquet saber
was founded in 1812 by the general himself
after winning a battle. This unique custom
has survived to this day, and not only in
France. It is a special highlight at any festive
occasion. When done correctly, it generally
works without issue.
After the wire basket is removed from the
cork, one drives the blade of the saber along
the bottleneck and onto the thickening of
the neck below the bottle head. The whole
bottle head comes off with a bang and the
Champagne flows out. Any resulting glass
fragments fly forward, propelled by the
pressure. The torn off bottle head with the
cork will be labeled with the date and will
then serve as a reminder of the celebration
or as a talisman. True to the original, the
especially high quality Champagne Saber by
Fox is manufactured in the famous cutlery
workshop in Maniago, Italy.
The blade is made of corrosion resistant
T5MOV stainless steel. The sturdy handle
is adorned with an intricate, elegant design.
This Champagne Saber is certainly ready
for any challenges at celebrations. Comes
complete with an elegant wooden box and
a decorative stand. Overall length 53 cm.
Blade length 40 cm.
2 VIPER MATHUSALEM DAMAST
occasions in life. The fascinating Damascus
guard also consists of hand forged, 200 layer
Damascus steel. Matching the exclusive
blade, the handle is crafted of finely grained,
beautifully polished cocobolo wood. Also
features decorative handle screws, made
of polished stainless steel, and a deep red
handle cord with tassel. Limited to just
high quality 440C, are also noticeably shorter
compared to classic kitchen knives. The
1 BOKER PLUS CHEFYOUGO
Compared to the SanYouGo, the blade of
this model is a little longer. In order to keep
the right balance, the dimensions of the
handle are slightly more generous as well
- which doesn’t at all diminish the compact
and flexible qualities of this concept!
SanYouGo was made from the essence of
a Santoku, while the classic chef’s knife was
the source of inspiration for the ChefYouGo.
The blades of these two extremely compact
and flexible models are finely satined, while
the scales consist of black G10 with a red
fiber layer. Leather sheath included.
middle and ring finger. This concept provides
outstanding cutting control!
