HANDMADE SINCE 1869.<br />

Since 1869, our Solingen Manufactory<br />

has been making knives with the tree<br />

symbol – our trademark of international<br />

fame and the historic crest of the<br />

<strong>Boker</strong> family (first registered as a<br />

trademark in 1674). There couldn’t<br />

be a better symbol for our identity<br />

and our aspirations - the tree was<br />

one of the earliest human symbols,<br />

venerated as a mythical giver of life.<br />

Unlike any other symbol, it stands for<br />

our quality consciousness, our loving<br />

attention to detail and our sustainable<br />

environmental stewardship.<br />

The tree has roots and a firm place to<br />

stand. As an ecosystem, it is a living<br />

being and a habitat. At the same time,<br />

it grows and develops. This is how<br />

we see ourselves, as well. We are<br />

constantly optimizing the functionality<br />

of our knives, using cutting-edge<br />

metallurgical methods and the forms<br />

of contemporary schools of design.<br />

One of many examples is our kitchen<br />

knife series <strong>Boker</strong> Pure CPM, in<br />

which we realized the reduced design<br />

vocabulary of Danish designer Jens<br />

Ansø in powder metallurgical CPM-154<br />

steel, combining it with domestic oak<br />

wood. This CPM steel, produced with<br />

the latest technology, far surpasses<br />

more established types of kitchen<br />

knife steel with its excellent properties<br />

for cutting tools.<br />

Our newly developed and handforged<br />

kitchen knife series <strong>Boker</strong> Core<br />

combines the traditional production<br />

method and reliable benefits of a<br />

die-forged bolster knife with light,<br />

innovative lines. Two exclusive<br />

highlights are our knives <strong>Boker</strong> Saga<br />

Damascus and <strong>Boker</strong> Core Damascus,<br />

both in strictly limited editions.<br />

Both series are equipped with handforged<br />

stainless Damascus. There are<br />

only a few blacksmiths in the world who<br />

have mastered the difficult technique<br />

We are a modern and sustainable company<br />

with roots in an industry with a long regional<br />

history. Our region is the Bergisches Land,<br />

where blade production was established<br />

as early as the Middle Ages, thanks to two<br />

main factors. The dense forests supplied<br />

wood as a renewable resource that could be<br />

carbonized for forging. Many rivers running<br />

through narrow valleys – primarily the<br />

Wupper River – supplied easily accessible,<br />

renewable energy for grinding mills and<br />

smithies.<br />

Now, the Bergisches Land does not<br />

actually take its name from its mountainous<br />

topography (“Berg” being German for<br />

“mountain”), but from the noble House von<br />

Berg. Their mighty counts left their mark on<br />

the region like no other dynasty, reaching all<br />

the way to the Rhineland. It is no accident<br />

that their ancestral seat of Burg Castle has<br />

become the landmark of the Bergisches<br />

Land. Thanks to our close relationship<br />

with the castle preservation association,<br />

Schlossbauverein Burg an der Wupper e.V.,<br />

we were able to obtain a small amount of<br />

wood from the 100-year-old oak beams of<br />

this historic monument.<br />

living quarters was rebuilt in the early 20th<br />

century, modeled after Romanesque towers<br />

built around the year 1130. From the top<br />

with its three wooden brattices, visitors<br />

have a panoramic view all the way to the<br />

neighboring town of Remscheid. A covered<br />

bridge connects the tower with the shield<br />

wall and wall walk. In medieval times, it was<br />

the only access to the tower.<br />

Today, the west side of the keep has an<br />

additional entrance to the ground floor.<br />

The archway bears a sandstone plate with<br />

information about the history of the mighty<br />

tower. In the past, the ground floor was<br />

called the dungeon, accessible only through<br />

an opening from the floor above and used<br />

as storage for stone balls. In case of an<br />

attack, the defenders of the keep would<br />

pelt attackers with the balls from the upper<br />

floors. The ground floor could hold up to 12<br />

tons of stones. From the first floor, stairs<br />

in the outside walls, which are up to four<br />

meters thick, lead to the upper floors. We<br />

process pieces of the original oak beams of<br />

the keep at Burg Castle with all due respect<br />

and diligence to make handles for our <strong>Boker</strong><br />

Core Damascus, an edition strictly limited<br />

to 199 pieces. The blade is truly special -<br />

the hand forged stainless Damascus has<br />

a breathtaking pattern and offers excellent<br />

resilience and hardness (60 HRC), which<br />

makes the <strong>Boker</strong> Core Damascus an<br />

exclusive collector’s item and guarantees<br />

exceptional performance for all cutting tasks<br />

in the kitchen. In Solingen, the forged blade<br />

piece consisting of 300 layers of Damascus<br />

is brought to a red heat and die-forged<br />

into its beautiful shape by a drop hammer<br />

weighing two tons.<br />

What better way to express our respect for<br />

the history of our region and our craft than<br />

by referring to the Counts von Berg and<br />

their ancestral home? Each of these works<br />

of art comes in an elegant leather covered<br />

gift box with a certificate of authenticity and<br />

individual serial number.<br />

The wood was sourced from the so-called<br />

keep, the main tower of Burg Castle, which<br />

is an impressive 105 feet tall. The foundation<br />

of the keep (46 ft. x 36 ft.) was laid in the<br />

first building phase of the castle in the 12th<br />

We asked ourselves how the knife of all<br />

knives should be made. Which materials and<br />

techniques should be used? Then we found<br />

the answer, and developed a world premier.<br />

For the <strong>Boker</strong> Damascus Superior series<br />

we use, for the first time, a four strand<br />

Torsion Damascus with a separately forged<br />

Damascus cutting edge, which is done by<br />

German Damascus forger Andreas Henrichs<br />

with fascinating precision, exclusively for<br />

<strong>Boker</strong>. In an extremely elaborate process,<br />

single Damascus layers are forged by hand to<br />

a massive square Damascus bar. This square<br />

bar is twisted 15 times, which creates the<br />

unique pattern of Torsion Damascus. Four<br />

of those strands, and a fifth non-twisted<br />

Damascus strand are forge-welded into the<br />

final shape.<br />

The result is a blade blank with extraordinary<br />

structure, unbelievable stability, and the<br />

basis for excellent cutting ability. In the<br />

<strong>Boker</strong> Manufactory in Solingen, the blade<br />

blank will then be processed by hand in<br />

more than 150 steps to the complete knife.<br />

THE ART OF DAMASCUS FORGING<br />

This method of forging Damascus was used<br />

in the Middle Ages to forge extremely high<br />

class sword blades for the gentry. Swords<br />

made of Torsion Damascus were extremely<br />

rare and sought after, so much so that the<br />

Vikings raided parts of Europe to obtain such<br />

swords.<br />

DAMASCUS DETAILS IN HANDLE<br />

For the handles, we use African Grenadill<br />

hardwood. Grenadill wood offers a beautiful<br />

grain, which is a perfect addition to the<br />

intricate blade, and provides an excellent<br />

balance to the knife. Due to its high content<br />

of oil, it is highly moisture resistant.<br />

The impressive wooden handle is framed<br />

by two Damascus bolsters and a Damascus<br />

butt cap, both made of stainless powder<br />

metallurgical Damascus with 300 layers.<br />

The handle pieces are individually handfitted<br />

to each blade, providing balance and<br />

beauty.<br />

Each of these works of art carries an<br />

individual serial number, making it possible<br />

to track the entire production process<br />

in the <strong>Boker</strong> Manufactory. The knife will<br />

be delivered in an exclusive wooden<br />

presentation case and includes a certificate<br />

of authenticity and owner‘s manual.<br />

1 BOKER CAMELLIA OIL<br />

This high quality, pure camellia oil is made<br />

according to a traditional Chinese recipe,<br />

and has many uses. The thin oil is extracted<br />

from the seed of the camellia tree, is<br />

neutral in taste, odorless, and does not dry.<br />

The camellia oil is food safe and impresses<br />

with its special purity.<br />

Corrosion protection: The acid-free,<br />

non-resinous, and non-evaporating camellia<br />

oil is traditionally used to protect from<br />

corrosion in the care of high quality knife<br />

blades made from carbon steel, as well as<br />

tools and weapons. It is purely organic and<br />

perfect for preserving non-stainless kitchen<br />

DAMASCUS<br />

Damascus steel – a millennia-old blacksmithing<br />

craft that still unfolds its<br />

fascination today. The first proof of<br />

Damascus is a Celtic sword from about<br />

500 BCE. Even though this forging<br />

technique most likely did not originate<br />

with the Celts, they did manage to perfect<br />

the process. The first artisan Damascus<br />

blades were made by the Teutons during<br />

the Great Migration Period (300 to 450<br />

CE). They were able to use controlled<br />

forging processes to make specific and,<br />

more importantly, repeatable Damascus<br />

patterns.<br />

Swords made from torsion Damascus<br />

were made with extremely sophisticated<br />

production methods, even by today’s<br />

standards. Artifacts like the sword from a<br />

grave near Sutton Hoo (England) posed an<br />

enormous challenge for today’s Damascus<br />

blacksmiths, until they figured out how to<br />

replicate this fascinating sword.<br />

At the time of the development in Europe,<br />

steel of excellent quality was also made<br />

in Japan, which was mainly used in the<br />

forged katana blades wielded by the<br />

samurai. For the longest time, history<br />

considered Japan to be the pioneer.<br />

Japanese swords were generally seen as<br />

superior to the European ones, although<br />

that is historically incorrect.<br />

Due to different cultural conditions, many<br />

more high quality Japanese than European<br />

swords have made it through the centuries<br />

unscathed. While Japanese swords were<br />

lovingly passed down from generation to<br />

generation, the artisan swords of Northern<br />

Europe were often sent to the grave with<br />

their owners and got lost in the mists of<br />

time.<br />

This led to an apparent “supremacy” of old<br />

Japanese swords in the present day, which<br />

cannot be matched by European artifacts<br />

in comparably flawless condition. Looking<br />

back, it can be said that forging multilayered<br />

steel was originally a means to<br />

achieve the best possible material quality.<br />

The decorative element of Damascus<br />

took much longer to come into its own.<br />

Today, Damascus steel is still very popular.<br />

However, this general enthusiasm is no<br />

longer rooted in technical consideration,<br />

but rather an expression of passion for<br />

the material and its special look that still<br />

radiates a near magical fascination. Today,<br />

there are several methods for making<br />

Damascus steel:

CLASSIC HANDFORGED<br />

DAMASCUS<br />

For this oldest of all types of Damascus,<br />

at least two types of steel of different<br />

composition are forged together. After<br />

forging, the piece of steel is folded and<br />

forged again, which doubles the number<br />

of layers. The process is repeated until<br />

the desired number of layers is reached.<br />

By using steel types with different<br />

features, the blacksmith can influence<br />

the quality of the Damascus significantly;<br />

a particularly hard steel, for instance, can<br />

be combined with an especially resilient<br />

steel in order to achieve a balanced ratio<br />

of hardness and edge retention. Since<br />

stainless steel cannot be forged together<br />

under normal circumstances, this classic<br />

forging technique generally uses nonstainless<br />

carbon steel. This means that<br />

the resulting forged Damascus is not<br />

stainless either.<br />

Of course, the quality of Damascus steel<br />

is also directly dependent on the quality<br />

of the base steels. Damascus as such<br />

is not necessarily a mark of quality but<br />

simply denotes the production process<br />

of the material. The Damascus pattern<br />

is influenced by forging and the number<br />

of layers, but it can also be created by<br />

embossing the finished forged Damascus<br />

bar. By embossing the bar with the help<br />

of an embossing punch with a specific<br />

pattern, the layers within the Damascus<br />

shift against each other. The embossed<br />

pattern appears as texture in the<br />

Damascus steel once the embossed<br />

material is ground into a blade.<br />

On a freshly ground blade, the pattern is<br />

barely visible. It needs to be finished in<br />

a special acid bath, in which both types<br />

of steel react to the acid by darkening<br />

at different levels. This brings out the<br />

pattern created by the texture and reveals<br />

the true magnificent beauty of Damascus<br />

steel.

HANDFORGED STAINLESS<br />

DAMASCUS:<br />

There are some basic differences between<br />

this forging technique and that of classic,<br />

non-stainless Damascus. Since stainless<br />

steel cannot be forged together under normal<br />

circumstances, some clever Damascus<br />

blacksmiths came up with a technique that<br />

circumvents this obstacle. The essential<br />

factor is oxygen. While classic, non-stainless<br />

Damascus is forged and folded in a regular<br />

open forge, the ambient air is the deciding<br />

factor for stainless Damascus – it prevents<br />

stainless steel layers from being forged<br />

together. Therefore, stainless Damascus<br />

is made by preparing layer packages and<br />

forging them in a vacuum.<br />

All Damascus smiths have their own<br />

tricks that fall under the heading of trade<br />

secrets, and cannot be explained in detail<br />

here. In the knifemaking community, Chad<br />

Nichols, from Mississippi, is one of the<br />

most renowned Damascus smiths who<br />

makes stainless Damascus - his top-grade<br />

material is not just utilized by various knife<br />

manufacturers, but also by many custom<br />

knifemakers around the globe as premium<br />

Damascus for particularly fine models.<br />

Nichols Damascus has a fine, rich patterning<br />

that makes it very popular, but many users<br />

also value the material’s great practical<br />

functionality, which makes his Damascus<br />

their first choice. Apart from many knives<br />

in our “Outdoor & Collection” catalog, Chad<br />

Nichols Damascus, which typically has more<br />

than 200 layers, is also used in our kitchen<br />

knife series <strong>Boker</strong> Pure Damascus.<br />

HANDFORGED TORSION<br />

DAMASCUS:<br />

One of the most sophisticated methods<br />

for forging Damascus steel is torsion<br />

Damascus. Here, a twist is added to the<br />

classic folding of the material. This creates<br />

a unique pattern and the control needed<br />

to master this forging process requires<br />

the highest level of expertise. Torsion<br />

Damascus was found in the few preserved<br />

Vikings swords, made at a time when the<br />

most sophisticated pieces were forged<br />

with outstanding skill and craftsmanship, far<br />

superior to the standard swords of the day,<br />

even in technical terms.<br />

The highly complex forging process that<br />

creates the characteristic pattern makes<br />

torsion Damascus one of the rarest and<br />

most exclusive types of Damascus steel.<br />

<strong>Boker</strong> uses such hand forged torsion<br />

Damascus,made by the German Damascus<br />

smith Andreas Henrichs, for the kitchen<br />

knife series <strong>Boker</strong> Superior - a standout<br />

in the world of kitchen knives due to their<br />

individually handforged blades.

SAN-MAI-DAMASCUS/<br />

CORE DAMASCUS:<br />

One modern and very common variation is<br />

San Mai Damascus, or core Damascus. In<br />

its composition and production methods,<br />

it is very different from the other types of<br />

Damascus. San Mai really denotes a multilayered<br />

blade that is not folded (unlike<br />

Damascus), but typically consists of three<br />

layers - a hard core as the center layer and<br />

two softer outer layers that add stability and<br />

flexibility. In the case of core Damascus,<br />

the center layer of modern kitchen knives<br />

is often made from a continuous piece of<br />

Japanese VG-10, a high performance cobalt<br />

alloy steel with a fine structure and high level<br />

of corrosion resistance.<br />

In contrast to a classic San Mai blade, the<br />

outer layers are significantly softer than the<br />

core but they consist of Damascus steel.<br />

However, this Damascus is usually not hand<br />

forged, but mass produced, by means of<br />

the rolling method. These blades can be<br />

recognized by their center layer of mono<br />

steel that usually peeks out from underneath<br />

the Damascus layers towards the cutting<br />

edge. This concept basically leads to an<br />

odd number of layers (typically 37, 67 or 69,<br />

though other numbers are possible).<br />

Since classically folded and forged<br />

Damascus doubles its layers with each<br />

fold, forged Damascus has an even number<br />

of layers (usually 200 to 300), while San<br />

Mai Damascus can also be distinguished<br />

by its odd number of layers. The quality<br />

mainly depends on the material of the<br />

core; as a general rule, blades made from<br />

contemporary mono steel can be just as<br />

good as or even superior to a Damascus<br />

blade. Such a core Damascus is used in<br />

our Damascus Olive and Damascus Black<br />

series, for instance, where its qualities and<br />

exclusive look have won over enthusiastic<br />

fans for many years.<br />

POWDER METALLURGICAL<br />

DAMASTEEL:<br />

One special type of industrially produced<br />

Damascus is the Swedish Damasteel. The<br />

Damasteel company developed a procedure<br />

to combine powder metallurgical steel into<br />

a true Damascus steel in a continuous<br />

production process. The special production<br />

process of powder metallurgical steel<br />

(such as the CPM-154 in our <strong>Boker</strong> Pure<br />

CPM series) allows for higher alloys, which<br />

create a particularly fine and even structure<br />

– a basic requirement for the best cutting<br />

performance. The production process<br />

of Damasteel combines the advantages<br />

of powder metallurgical steel with the<br />

fascinating appearance of Damascus, which<br />

gives it a special place among the Damascus<br />

steel types.<br />

Despite its exclusively industrial production,<br />

Damasteel is definitely a premium Damascus<br />

that offers outstanding edge retention and a<br />

high level of corrosion resistance in everyday<br />

use. <strong>Boker</strong> uses Damasteel for the blades of<br />

our best straight razors, but also as appliqué<br />

or handle inlay for other kitchen knives<br />

(<strong>Boker</strong> Superior Damascus) and outdoor<br />

knives.<br />

In conclusion, it has to be said that Damascus<br />

steel is not a technical requirement for<br />

producing high quality blades today and that<br />

Damascus as such is not a quality guarantee.<br />

However, like an exclusive mechanical watch<br />

that always radiates a special flair even<br />

though a modern quartz watch would tell<br />

time just as reliably at a much lower price, a<br />

Damascus blade, with its breathtaking look<br />

and often tangible texture, is a piece of living<br />

history. It isn’t always purely a matter of<br />

efficiency – even in our fast paced, high-tech<br />

world, there is some space left for excellent<br />

craftsmanship and the beautiful things in life.

A milestone in the history of kitchen knives<br />

by <strong>Boker</strong>. Made completely by hand, this<br />

unique work of knife art impresses every fan<br />

of high class cutting tools made in Solingen.<br />

Famous custom knifemaker Jens Ansø from<br />

Denmark created this puristic and extremely<br />

functional knife concept for <strong>Boker</strong>, in a<br />

traditional Scandinavian design. The main<br />

Another impressive feature of this series<br />

is the handle material. The bog oak wood<br />

is not a “species” of wood, but oak logs,<br />

which laid in water or swamps for centuries<br />

and came up when the ponds or swamps<br />

dried out. Over this long period of time,<br />

the tannic acid of the wood reacts with<br />

the iron salts in the water, which results<br />

in a very high hardness and a handsome,<br />

deep brown coloring. This exquisite handle<br />

material harmonizes perfectly with the Chad<br />

Nichols Damascus blade.<br />

blade consists of 37 layers of Damascus<br />

steel. The premium blade steel VG-10,<br />

made in Japan, is used for the core, and is<br />

toughness and a homogeneous crystalline<br />

structure.<br />

In a direct comparison of the cutting<br />

performance with a product of an<br />

established Solingen kitchen knife<br />

manufacturer according to DIN <strong>EN</strong> ISO<br />

Close to the headquarters of the <strong>Boker</strong><br />

Manufactory in Solingen, Germany, lies<br />

Burg Castle on the Wupper River - the<br />

landmark of the Bergisches Land. It is<br />

also one of the largest castles in western<br />

Germany and the largest reconstructed<br />

castle complex in North Rhine-Westphalia.<br />

Today, Burg Castle is used for a variety of<br />

cultural purposes, including as a museum,<br />

event venue and memorial.<br />

In order to be able to fully maintain this<br />

landmark in the future and renew the<br />

energy system, an extensive renovation<br />

program was begun in 2017 and is set to<br />

continue until 2024. The renovation has<br />

enabled us to obtain an exclusive inventory<br />

of original 100-year-old oak beams from the<br />

mighty keep of Burg Castle.<br />

With great care and craftsmanship, we<br />

process these historic oak beams from the<br />

keep into handle scales for our successful<br />

kitchen knife <strong>Boker</strong> Saga, which is available<br />

in a strictly limited edition of 199 pieces.<br />

The design of the Saga series was created<br />

by Danish knife designer and renowned<br />

custom knifemaker Jesper Voxnæs, and has<br />

already won the iF-Product Design Award.<br />

This premium Damascus boasts 200 layers<br />

and a Rockwell hardness of 60 HRC, as well<br />

as the Damascus pattern “Fade,” with its<br />

fine, high contrast lines.<br />

While classic, non-stainless Damascus<br />

can be forged and folded in an open forge,<br />

the prepared layer packages of stainless<br />

Damascus must be forged with great effort<br />

in the vacuum. Damascus steel products<br />

forged by Chad Nichols are known for their<br />

exclusive look in the kitchen and, more<br />

importantly, for the excellent edge retention<br />

CONSTRUCTION METHODS & BLADE JOINTS<br />

The knife has been an essential universal tool for more than 2.4 million years. Knives are available in a wide variety of shapes and designs for<br />

almost any purpose. As a tool, kitchen implement, decorative object or collector’s item – people value the advantages of these sharp tools<br />

in every kitchen. The construction possibilities for a kitchen knife are almost as varied as the possible uses – from cutting fresh bread to<br />

carving a beef tenderloin or filleting fresh fish. At the <strong>Boker</strong> Manufactory, we use three different blade and handle joint designs, depending<br />

on the knife series.<br />

Each design has its own tradition and purpose, and offers different advantages in terms of production, handling and use. Despite all<br />

differences, these designs of <strong>Boker</strong> kitchen knives have one thing in common - they are all excellent and superior kitchen knives that you<br />

will never want to put down. Depending on your individual and personal preferences in terms of design, weight, ergonomics and balance,<br />

THE FORGED BOLSTER<br />

European kitchen knives are mainly used to cut with pressure.<br />

The die-forged bolster offers a few distinct advantages. For this<br />

cutting technique, the index finger or middle finger presses down<br />

on the end of the blade. Thanks to its three dimensional shape, the<br />

bolster serves as a comfortable pressure point. At the same time,<br />

its weight supports the cutting movement when the blade moves<br />

forward.<br />

The knives in our <strong>Boker</strong> Core series are die-forged with a<br />

bolster. Die-forging is a technique with roots in the early days of<br />

industrialization. First, a roughly shaped piece is cut off from the<br />

raw material. This piece is brought to a red heat and hammered<br />

into shape inside a massive form consisting of two halves, top and<br />

bottom. This process is also called drop forging. The bottom die<br />

serves as a counter surface. The die dropping down onto the blade<br />

is affixed to a drop hammer weighing two tons. The resulting blade<br />

blank needs to be soft-annealed before the blanks are deburred,<br />

which means that the excess material created during the forging<br />

process is removed. The blank is calibrated again on a knuckle joint<br />

press with 800 tons of pressing force. This process is particularly<br />

suitable for sharply contoured blade profiles.<br />

The bolster remains a technical challenge, even and especially<br />

after forging. A grinder now shapes the knife’s fine contour<br />

from the rough blank. The complex three-dimensional and conical<br />

structure of the bolster requires the grinder’s full experience and<br />

concentration. Careless handling can cause unsightly dents or<br />

notches at all junctions of the blade and handle.

THE FULL TANG — ROBUST & SIMPLE<br />

The full tang is the simplest and most robust solution. The concept<br />

comes from outdoor knives, and is most often used for knives<br />

that need to be particularly sturdy and withstand even abuse and<br />

improper usage, such as prying or chopping. The full tang follows<br />

the entire handle shape; the scales are riveted on from both sides.<br />

Then, the handle scales are fitted to the tang on a belt sander and<br />

also rounded so that they offer a pleasant and secure grip. The<br />

knives in our <strong>Boker</strong> Saga series feature a full tang.<br />

THE PUSH TANG —<br />

AS MUCH AS NEEDED, AS LITTLE AS POSSIBLE<br />

The push tang is the lightest of the listed joints. Its philosophy<br />

is “as much as needed, as little as possible”. The actual tang is<br />

narrower than the ricasso that goes on into the handle. The tang<br />

runs through about a third of the length of the handle. Here, it is<br />

held by a single stainless steel rivet. The wood at the front end<br />

of the handle is protected by a finely satinized ferrule. Fitting the<br />

ferrule is particularly difficult, because its spot on the handle is both<br />

conical and oval. This means that it doesn’t have a regular geometric<br />

shape. This construction follows the Japanese tradition and we use<br />

it for our series <strong>Boker</strong> Damascus Olive and <strong>Boker</strong> Damascus Black.<br />

In Japanese cooking, most cuts are pulled. With this technique,<br />

the blade is easier to control if the handle is lighter compared to the<br />

blade. If flexural forces came into play during the cutting process –<br />

though those are negligible when working with food – they would<br />

be happening in the strongest spot of this connection.

can begin, the product idea is built digitally<br />

with the help of CAD software. A simple<br />

hand-drawn sketch made by one of our<br />

knife designer and custom knife makers<br />

often serves as the basis for the first<br />

construction drawing. Once the design<br />

engineer has determined all productionrelevant<br />

components, they are either made<br />

in-house or procured from suppliers. Then,<br />

production can begin.<br />

THE DROP FORGE<br />

The base material is cut into pieces, brought<br />

to a red heat and hammered in a massive<br />

die with a drop hammer weighing two tons.<br />

The resulting blade blank needs to be softannealed<br />

before it can be deburred, which<br />

means that the excess material created<br />

during the forging process is removed. The<br />

blank is calibrated again on a knuckle joint<br />

press with 800 tons of pressing force. We<br />

use this process exclusively for knives with<br />

a forged bolster.<br />

STAMPING<br />

Here, the blades of the non-forged knives are<br />

stamped out of plates or coils – depending<br />

on the material’s commercial form – or cut<br />

with a laser or water jet cutter. Forging and<br />

stamping are the respective first steps in<br />

making a knife. The purpose and shape of<br />

the product is already recognizable.<br />

HARD<strong>EN</strong>ING<br />

The heat treatment of steel is a high art.<br />

When we harden and anneal steel, we push<br />

for the limits of the steel in question. In<br />

order to attain the required edge retention,<br />

the steel needs to be as hard as possible,<br />

while also having enough resilience not to<br />

break during use.<br />

GRINDING<br />

Here, the blade receives its long tapering<br />

grind from spine to edge. Cooling the<br />

piece requires great diligence at this stage.<br />

Otherwise, heat might warp the blade or<br />

even take away some of its hardness.<br />

GLAZING<br />

True Solingen handcraft begins with<br />

glazing. Here, the spine is ground, the<br />

transition from blade to tang is cleaned<br />

up and the unique Solingen blue finish is<br />

applied. The blades of the <strong>Boker</strong> Saga Satin<br />

series keep their blue satin finish surface.<br />

For the series <strong>Boker</strong> Damascus Olive and<br />

Damascus Black, the blades are also sand<br />

blasted, which brings out the texture of the<br />

stainless Damascus.<br />

DAMASCUS ETCHING<br />

Here, the blades of the hand forged<br />

Damascus knives are etched in order to<br />

bring out the lines of the different steel<br />

layers. We use a specially formulated<br />

acid bath, which is precisely adapted to<br />

the Damascus and the desired look of the<br />

blade.<br />

SCALES<br />

This department stores lumber from<br />

indigenous trees, 5,000-year-old bog oak<br />

and rare burl varieties. The first step of<br />

handle production is cutting the wood by<br />

hand on a bench saw – with a level of<br />

accuracy down to 1/10 of a millimeter. The<br />

resulting piece is then finished by hand or<br />

on a CNC milling machine. Our carpenters<br />

say, “It’s all black before the saw.” This<br />

means that you have to cut into the wood<br />

in order to be able to tell which parts and<br />

how much of the purchased raw material is<br />

actually usable.<br />

MOUNTING & FINE GRINDING<br />

In mounting, handles and blades are<br />

‘married.” Depending on the build, the<br />

knife is assembled with rivets, hollow rivets<br />

or extremely durable adhesive connections.<br />

The contour is also pre-shaped on the<br />

grinding belt. The contour that was prepared<br />

in mounting is now given its final finish on<br />

fine grained grinding belts and discs. Apart<br />

from the blade, the knife receives its final<br />

aesthetics and functionality.<br />

FINAL CHECK - HONING<br />

At the end of the process, experienced<br />

eyes scrutinize the knives. Only completely<br />

flawless knives are hand-honed and then<br />

checked again, cleaned and packaged.

BOKER PURE CPM<br />

Danish design emerged as a style in<br />

the middle of the 20th century, strongly<br />

influenced by the ideas of the German<br />

Bauhaus. This design movement<br />

developed its own no-nonsense look<br />

characterized by simple formalism,<br />

minimalism, clarity and functionality,<br />

as well as by the use of cutting edge<br />

industrial technology in the realization<br />

of this design vocabulary. This is<br />

the tradition of Danish designer and<br />

custom knifemaker Jens Ansø, who<br />

designed the kitchen knife series<br />

<strong>Boker</strong> Pure following these exact<br />

design principles.<br />

The knives have unique, classically<br />

simple lines and offer excellent balance,<br />

handle ergonomics and functionality.<br />

This minimalistic design is highlighted<br />

with the use of “Bergische Eiche,” a<br />

regional oak wood, for the handles.<br />

The pleasing pattern of the elaborately<br />

finished oak wood is only interrupted<br />

by three understated stainless steel<br />

rivets, which are applied with great<br />

care in a completely manual process.<br />

This steel is made by melting the<br />

already excellent base steel 154-CM in<br />

order to add more carbides.<br />

The steel is then atomized in a<br />

vacuum and quenched with a cold<br />

air jet. The resulting steel powder is<br />

temperature. This process makes<br />

it possible to give the steel a much<br />

higher carbide concentration than<br />

regular blade steel; and the carbides<br />

give the steel additional hardness and<br />

edge retention.<br />

The bar graph (left) shows the edge<br />

retention compared to an established,<br />

popular kitchen knife steel, the<br />

chromium-molybdenum-vanadium<br />

steel X50CrMoV15, as well as to the<br />

excellent 440C. The superior edge<br />

retention of the 440C is far surpassed<br />

by the powder metallurgical steel<br />

CPM-154, which is a guarantee for a<br />

sharp knife that keeps its edge for a<br />

very long time.<br />

The Pure Series has truly set new<br />

limits and is, with its puristic and<br />

functional design concept and high end<br />

materials, the new eye catcher in your<br />

kitchen.<br />

In order to match the aesthetic<br />

KEEP ON TRADITION<br />

In Münster’s historic district of<br />

Kiepenkerlviertel, Martina Herlitzius and<br />

Jörg Lamskemper manage the retail store<br />

that has been nurturing the culture and<br />

tradition of premium artisanal knives since<br />

1881. Their inventory consists of more than<br />

10,000 products. They focus on German<br />

manufacturers, but also offer international<br />

brands – always made by true experts.<br />

Durable, repairable – with functionalities<br />

that meet just about any needs in the<br />

kitchen, home or garden, for hobbies or<br />

professional purposes.<br />

Quality and durability can no longer be taken<br />

for granted. The market is dominated by<br />

mass-produced knives, scissors and cutlery.<br />

You cannot re-grind or fix those if there is a<br />

problem – you can only throw them away.<br />

That is why there are only a few knifemakers<br />

left in Germany. At the Carl Herlitzius cutlery<br />

store, you can expect a knowledgeable<br />

consultation and first rate service, as well as<br />

many tips for taking care of your knives. Of<br />

course, you can entrust the in-house master<br />

workshop with every product you buy at<br />

the store – for maintenance, sharpening or<br />

repairs.<br />

In the skilled crafts and trades, it is still<br />

fairly common to pass a company from<br />

one generation to the next. This is certainly<br />

true for Carl Herlitzius GmbH & Co.<br />

KG, Münster – the company celebrated<br />

its 125th anniversary in 2006. In 1881,<br />

knifemaker Carl Herlitzius settled down<br />

in Münster, on Jüdefelder Straße. The<br />

company remained at its next address<br />

(Am Drubbel) until the building was torn<br />

down in 1905. The company then moved<br />

to the Kiepenkerlviertel, and Carl Herrmann<br />

Herlitzius was born the same year.<br />

After the store building Bogenstraße 43<br />

was bombed and leveled in 1945, he was<br />

the one who rebuilt it with his own hands.<br />

In the late 1970’s, Carl Herlitzius III took over<br />

the business and managed it with his wife,<br />

Gertrud. In the mid 1990,s, their daughter,<br />

Martina Herlitzius, and Jörg Lamskemper<br />

joined the family company. And the next<br />

generation is already waiting in the wings…

BLADE SHAPES — PURPOSE & USE<br />

At first glance, the wide variety of lengths, widths and shapes of kitchen knife blades might seem a little confusing. Since all knives are<br />

ultimately made for cutting, they are distinguished by their specific intended purpose. The advantages of the different shapes for different<br />

applications are fairly clear and easy to understand, so that the overwhelming number of choices can be narrowed down. The following list<br />

of knife descriptions will help you find the right tools for your kitchen.<br />

THE PARING KNIFE<br />

The paring knife is a small solid foundation for any kitchen knife set.<br />

The blade is narrow so that it can follow the outer circumference<br />

of a small potato as well as the inner circumference of an apple<br />

core. Paring knives are most often used without a board, they are<br />

simply held above a pot or bowl. But you can also use them with<br />

your cutting board to quickly cut a single onion used in a meal for<br />

one or two people or the ingredients of a quick lunch salad.<br />

THE CARVING KNIFE<br />

The carving knife has a long narrow blade capable of cutting paperthin<br />

slices of roast beef, pot roast or ham. The blade is narrow to<br />

provide a smaller surface for the meat to stick to. The first choice<br />

for foods with a juicy and dense texture.<br />

THE PEELING/PARING KNIFE<br />

The length of a peeling knife blade is comparable to that of the<br />

paring knife, though the edge is straight with a sheepfoot tip. This<br />

makes for better utilization of the full cutting length, because the<br />

blade is pulling itself into the cut. The straight edge is also better<br />

suited for cleaning and scraping root vegetables, because the<br />

blade has more contact with the surface and is easier to control.<br />

THE MEAT FORK<br />

Compared to a regular tableware fork, the meat fork offers the<br />

advantage of its two long and very pointy tines that can easily<br />

penetrate deep into the meat. That makes it perfect for carving and<br />

serving large pieces of cooked meat. Thanks to its long tines and<br />

handle, the meat fork also makes a great barbeque tool.<br />

THE STEAK KNIFE<br />

Steak knives are set on the table. Unlike regular tableware knives,<br />

a steak knife is sharp enough to cut meat into clean bites without<br />

ripping or tearing it. Depending on your personal preference, we<br />

offer steak knives with a smooth cutting edge for the purists, or<br />

with a serrated edge.<br />

THE FILLET KNIFE<br />

The fillet knife is an extreme form of the carving knife. Its main<br />

purpose is the preparation of fish. The fine tip can be used for<br />

opening fresh fish. The slender blade offers raw or smoked salmon<br />

practically no surface for adhesion. The flexible blade can be<br />

flattened onto the cutting board in order to separate the fish skin<br />

from the fillet just above the board. A light knife for light cooking.

THE SANTOKU<br />

The Santoku knife, or just Santoku for short, serves the same<br />

purpose as the European Chef’s Knife. The literal translation<br />

emphasizes this: San = three and Toku = virtues. The three virtues<br />

are fish, meat and vegetables. The Santoku became popular after<br />

World War II, when the Japanese economic boom meant that<br />

meat began to appear on menus next to fish. A Japanese blade<br />

shape was combined with a symmetrical European blade grind.<br />

One striking feature is the shorter length with the sheepfoot tip.<br />

It is proper to use the Santoku for pulling cuts, following Japanese<br />

tradition. The front part of European kitchen knives used to guide<br />

the knife on the cutting board is not necessary for a Santoku.<br />

THE BREAD KNIFE<br />

Professional chefs refer to the bread knife as “the saw.” However,<br />

they are not just cutting bread with this knife, but all foods that are<br />

not strongly textured, e.g., cabbage. Pastry chefs use their bread<br />

knives to separate cake layers. The wide blade makes it easy to<br />

control in soft materials. Another advantage is the knife’s excellent<br />

edge retention. When used correctly, a knife is not dulled in contact<br />

with the material but with the cutting board. With a serrated edge,<br />

only the tips touch the cutting board, protecting the real edge<br />

behind them.<br />

THE ALL-PURPOSE/UTILITY KNIFE<br />

The all-purpose/utility knife combines the best of all worlds. It can<br />

be used in hand and on the cutting board. The medium-size blade<br />

offers a reasonable compromise for easy straight and curved cuts.<br />

An aesthetically pleasing all-purpose knife can also serve as a very<br />

nice table or steak knife.<br />

THE SMALL CHEF’S KNIFE<br />

Like the Santoku, the small chef’s knife is popular because of its<br />

shorter, easily controlled blade and universal applications. Thanks to<br />

the sturdy, wide blade, you can use the small kitchen knife for many<br />

tricky cutting tasks.<br />

THE CHEF’S KNIFE<br />

The Chef’s Knife is the knife you buy when you can only have one<br />

knife. It is a workhorse, built for fast-paced kitchen battles. You use<br />

it to cook for your extended family, whole circle of friends or for an<br />

entire banquet. It is also the perfect knife for all passionate home<br />

chefs who like convenient cooking tools. The wide blade can be<br />

passed along the knuckles of your retracted fingers, which enables<br />

you to make swift cuts without risking injury. The food is pushed<br />

forward with the thumb. The classic long and pointy European<br />

chef’s knives cut with pressure. With this technique, you really just<br />

use the back half of the blade. The front half is used to guide the<br />

knife on the board. You develop a fluid, even and easy motion and<br />

cutting rhythm. You can also use the spine to push the cut food off<br />

the board into the pot.

The production of a blade and the use of fire<br />

were the first two cultural achievements<br />

on which each further built. Even today,<br />

the knife is one of the most versatile and<br />

sustainable tools, and its tasks are still the<br />

same as in the early days of human history.<br />

We have never forgotten that.<br />

For almost a century and a half, our<br />

customers have been using our <strong>Boker</strong><br />

knives in the most adverse conditions<br />

where it matters, right where they were<br />

invented - in the open air. We owe our<br />

knowledge and skills to their experience.<br />

This enables us to produce knives that<br />

simply do more in all conditions. In our<br />

series <strong>Boker</strong> Saga, this origin is most<br />

apparent. Three categories determine the<br />

essence of a knife: the material, the form<br />

and the surface.<br />

THE MATERIAL — SUPERIOR<br />

STANDARD<br />

Steel is the basis on which knives are made.<br />

The demands on steels are many times<br />

higher in the hunting and outdoor area than<br />

in the range of kitchen knives - you could<br />

almost say - merciless. For the kitchen<br />

knife series Saga, we use the hunting<br />

knife steel 440C stainless. This steel is<br />

well above the already high standard of<br />

X50CrMoV15, which is commonly used<br />

for high quality Solingen kitchen knives by<br />

established market entrants.<br />

The high steel quality can be visualized by<br />

the standardized DIN test for determining<br />

the cutting performance. In a direct<br />

comparison, the cutting performance<br />

of the Saga kitchen knife series tested<br />

according to DIN <strong>EN</strong> ISO 8442-5 is exactly<br />

100% higher in the paper-cut test after 60<br />

strokes than in the case of well known<br />

competitors. The initial sharpness also<br />

convinces with a result that is more than<br />

20% better.<br />

In the production of perfectly contoured<br />

handles, only the highest quality<br />

raw materials are used. Available in a<br />

lovely, high density Grenadill wood, or<br />

indestructible G10 - both resistant to<br />

temperature and humidity. With the first<br />

touch, the ergonomics become apparent.<br />

Every arc, every sweep in the line adapts<br />

to a point of the hand and communicates<br />

absolute control and an outstanding<br />

cutting experience. The wide, dovetailed<br />

end of the handle, found in the larger<br />

models, provides additional grip safety.<br />

The high strength is based on the full tang<br />

construction, which reaches from the tip of<br />

the blade to the end of the handle.<br />

THE FORM – SCANDINAVIAN<br />

DESIGN<br />

The substance is nothing if its superior<br />

potential is not used in the appropriate<br />

form. Scandinavians are known for a<br />

straightforward, clear and, above all, highly<br />

functional design. The custom principle<br />

of “form follows function” is consistently<br />

implemented in Scandinavian design.<br />

And our partner, Danish knifemaker and<br />

designer Jesper Voxnæs, has been working<br />

hard at this for more than 20 years.<br />

Our decades-long experience in<br />

manufacturing outdoor knives and the<br />

creativity of knifemaker Jesper Voxnæs<br />

combine to present the concept and design<br />

of the Saga series, setting a new standard in<br />

cutting and ergonomics. The transfer of the<br />

design into the culinary sector guarantees<br />

that working with the Saga has become a<br />

unique event - the <strong>Boker</strong> Saga chef’s knife<br />

was awarded the iF Product Design Award<br />

in 2013.<br />

THE SURFACE – SLICK AND ROBUST<br />

The finish is key. It crowns the knife both<br />

aesthetically and functionally. For the<br />

Saga G10 series, the optimized cutting<br />

performance is not only guaranteed by the<br />

full flat grind of the 440C blade, but also<br />

by the surface finish, which is achieved<br />

in a specialized grinding process, and is<br />

characterized by outstanding gliding<br />

properties through the cutting material,<br />

thus enhancing the already superior cutting<br />

performance. For the Saga Grenadill series<br />

we offer, for the first time in the sector<br />

of kitchen cutlery, a stonewash finish.<br />

This special finishing method upgrades<br />

the existing cutting performance, as well<br />

as providing extreme resistance against<br />

scratches, with the micro structure of the<br />

finish. This tried and true finish has been<br />

used in outdoor sector for years.<br />

Mankind’s oldest tool was invented for<br />

life in nature - we also perfected it for<br />

the needs of our time.<br />

The handle scales of the <strong>Boker</strong> Saga knife<br />

are a typical feature of outdoor knives that<br />

you ordinarily would not see on a kitchen<br />

The knife is humankind’s oldest tool. The<br />

need for sharp blades is just as old and still<br />

very pressing today. According to a survey,<br />

more than 90% of German households<br />

use dull knives. Even though everybody<br />

uses knives in the kitchen, the subject<br />

of sharpening knives is still shrouded in<br />

mystery. For many people, sharpening and<br />

honing are unfamiliar territory - skills ascribed<br />

only to an elite circle of select specialists<br />

who use secret methods to make dull knives<br />

sharp again; it is almost like magic.<br />

Today, machine sharpening has become a<br />

good, practical alternative. A vast variety<br />

of home sharpening tools are available, but<br />

our experience has shown that machines<br />

quality of the finished product than machines<br />

working with grinding wheels. Therefore, a<br />

Of course, modern technology is catching<br />

up with the subject of sharpening, but<br />

many of the “experts” on this subject are<br />

traditionalists. And that usually means:<br />

you use stones.<br />

Such stones can be very different in<br />

nature; they can be natural stones,<br />

synthetically produced, or even hybrids.<br />

Stones are generally not used dry.<br />

Depending on the stone, you need water<br />

(such as Japanese water stones, which<br />

need to be watered, or the Belgian<br />

Chunks, which only moisturizes the<br />

surface), or oil, as in the centuries-proven<br />

Arkansas stones. While the oil in the<br />

oil stone only has the task of ensuring<br />

the sliding on the stone and wash away<br />

worn steel particles from the stone, the<br />

water forms a grinding sludge, especially<br />

in the Japanese water stones, which is<br />

instrumental in sharpening.<br />

Especially for very fine cutting, the<br />

highest qualities of the Arkansas oil<br />

stones have tremendous potential, but<br />

here as well, it’s generally a matter of<br />

personal preference.<br />

There are different methods of sharpening<br />

with the bench stone - some prefer a<br />

circular motion or “8” trajectory with<br />

the edge (i.e. with the spine of the blade<br />

ahead), sharpening one side of the blade<br />

until a burr emerges and then changing<br />

sides. In particular, in the case of the fine<br />

print, the respective mutual pull against<br />

the cutting edge (i.e. with the cutting<br />

edge ahead) is a popular method. And as<br />

so often in life, there is not one correct<br />

method here - trying out and finding the<br />

personally preferred method is the way<br />

to go.<br />

When sharpening, it is essential<br />

to maintain the correct angle. When<br />

sharpening on the stone, on the one<br />

hand, it has to be determined correctly<br />

and, on the other hand, to be constantly<br />

maintained during the entire sharpening<br />

process, which of course requires some<br />

practice and experience.<br />

If you appreciate the traditional method<br />

but are open to more modern materials,<br />

you can of course also consider ceramic<br />

or diamond coated bench stones. While<br />

the handling is identical to water or oil<br />

stones, it can usually be dispensed with<br />

oil or water, and the wide range of grits<br />

also offers all options.<br />

It is important that after creating a burr,<br />

depending on the grinding method, it<br />

is removed cleanly. For this purpose, a<br />

leather strop will do, which, possibly also<br />

treated with abrasive paste, represent the<br />

final step and the cutting edge “meets the<br />

The finely tapered edge that can bend<br />

when coming in contact with a bone or a<br />

hard cutting surface is straightened with<br />

a sharpening steel. The knife is carefully<br />

placed on the steel and pulled across on<br />

alternating sides with light pressure and<br />

with the spine first (important!). This<br />

straightens the bent edge and refreshes<br />

the knife’s cutting power.<br />

The steel should not be confused with<br />

its similar half-brother, the rod sharpener.<br />

Though they look very similar, the<br />

difference is that the rod sharpener is<br />

made with abrasive materials, such as<br />

ceramic, synthetic ruby or diamondcoated<br />

steel. Since these rods are used<br />

The tradition of opening a Champagne bottle<br />

with a saber was born in the Napoleonic<br />

era. The “sabrage” with the Briquet saber<br />

was founded in 1812 by the general himself<br />

after winning a battle. This unique custom<br />

has survived to this day, and not only in<br />

France. It is a special highlight at any festive<br />

occasion. When done correctly, it generally<br />

works without issue.<br />

After the wire basket is removed from the<br />

cork, one drives the blade of the saber along<br />

the bottleneck and onto the thickening of<br />

the neck below the bottle head. The whole<br />

bottle head comes off with a bang and the<br />

Champagne flows out. Any resulting glass<br />

fragments fly forward, propelled by the<br />
