First, make sure you cook your macaroni just to al dente. If you’re<br />

going to bake your mac & cheese, however, it needs to be less<br />

than al dente, so it doesn’t end up overcooked. A good béchamel<br />

sauce—which should include cream, butter, flour, <strong>and</strong> milk—is<br />

also key. Next, add whatever high-quality cheese <strong>and</strong> seasonings<br />

you want. This is also the best time to add any toppings, like bacon,<br />

jalapeños, etc.<br />
