Siddhartha by Hermann Hesse<br />

Hermann Karl Hesse 2 July 1877 – 9 August 1962 was a German-born<br />

poet, novelist, and painter. His best-known works<br />

include Demian, Steppenwolf, Siddhartha, and The Glass Bead<br />

Game, each of which explores an individual’s search for authenticity,<br />

self-knowledge and spirituality. In 1946, he received the Nobel<br />

Prize in Literature.<br />

Siddhartha is a novel by Hermann Hesse that deals with the<br />

spiritual journey of self-discovery of a man named Siddhartha<br />

during the time of the Gautama Buddha. The book, Hesse’s ninth<br />

novel, was written in German, in a simple, lyrical style. It was published<br />

in the U.S. in 1951 and became influential during the 1960s.<br />

In Hesse’s novel, experience, the totality of conscious events of a<br />

human life, is shown as the best way to approach understanding<br />

of reality and attain enlightenment—Hesse’s crafting of Siddhartha’s<br />

journey shows that understanding is attained not through<br />

intellectual methods, nor through immersing oneself in the carnal<br />

pleasures of the world and the accompanying pain of samsara. It<br />

is the completeness of these experiences that allows Siddhartha<br />

to attain understanding.<br />

The word Siddhartha is made up of two words in Sanskrit language,<br />

siddha (achieved) + artha (what was searched for), which<br />

together means “he who has found meaning (of existence)” or “he<br />

who has attained his goals”. In fact, the Buddha’s own name, before<br />

his renunciation, was Siddhartha Gautama, Prince of Kapilavastu.<br />

In this book, the Buddha is referred to as “Gotama”.<br />

Perquimans Chamber<br />

One thing about the Perquimans River (I don’t know<br />

if you’ve noticed): it is always beautiful. Driving<br />

through the county, or down Grubb Street in Hertford<br />

where you can see the historic S-Bridge, any time of<br />

day, any day of the year, in any weather, the river is just<br />

so beautiful. No matter how dreary or gloomy the day<br />

might be, a view of the river is a joyous thing.<br />

I’ve seen it in the summer when the blue of the river is<br />

intoxicating or delicious – almost edible -- and not jumping<br />

in and being part of it seems impossible. All those<br />

bridges and docks and boat ramps and piers throughout<br />

the county seem like open invitations to join the ducks<br />

and the fish and turtles. With a little effort, you can<br />

probably find a cypress knuckle that’s unoccupied to<br />

sun yourself on (or maybe the local turtle residents will<br />

make room for one more).<br />

I’ve seen it on one of the characteristic late autumn<br />

days when the weather suddenly warms after a cold<br />

spell and fog is strolling across the surface of the water.<br />

The rest of the world seems grey and a little damp,<br />

but you find yourself thinking, do I really have to go to<br />

work today? Because putting a boat into the water and<br />

drifting with that fog suddenly seems like the only way to<br />

spend the morning. Maybe a thermos of coffee. Maybe<br />

a fishing pole. Maybe a camera.<br />

you’re not careful, a picture of the river reflection taken<br />

in the evening will look the same no matter how you<br />

turn it. I’ve seen it in the rain, wrinkled like washed linen<br />

and when one of those pink-orange sunsets makes it<br />

look like a Valentine card. And I’ve seen it on a day like<br />

today with a bright sky but no visible sun. An ordinary,<br />

slightly dull day that challenges the spirit to be bright,<br />

no matter how festive the season. And, even today, the<br />

river is beautiful.<br />

Health and Nutrition Strategies For<br />

Cancer Survivors and Everybody Else<br />

WHAT’S IN YOUR DIET?<br />

hope everyone had a wonderful holiday season.<br />

Well, it’s <strong>Jan</strong>uary and my annual optimizing time.<br />

This year rather than dreading the task of modifying my<br />

diet and behavior, I’m looking forward to it. I’ve tailored<br />

mine this time by eliminating dairy (except probiotic<br />

yogurt) , and I’ve reduced refined carbohydrates to bare<br />

minimums (that’s primarily bread with less than 4gms of<br />

fiber). I’ve cut down dramatically on cured red meat and<br />

poultry. I call my diet a “Modified Mediterranean Diet”.<br />

There’s preliminary evidence that regular consumption<br />

of olive oil, which is a major component of the diet, lowers<br />

the risk of cancer, stroke and cardiac issues.<br />

I’ve been gathering data on federally subsidized<br />

animal products and how they relate to health and the<br />

economy. Agriculture subsides total about 20 billion dollars<br />

a year with a major share going to the dairy industry.<br />

So let’s connect the dots:. 90% of the population of the<br />

United States are lactose intolerant. That’s nine out of<br />

ten Americans. Milk products have unlabeled growth<br />

hormones, unlabeled antibiotics, and a plethora of<br />

unlabeled medications. Earlier I wrote that circa 1996,<br />

Monsanto petitioned the administration and was granted<br />

permission to use rBGH hormones in dairy cows. The<br />

hormone necessitates the use of antibiotics because<br />

antibiotics mitigates the inflammation and fattens the<br />

animals. Antibiotics have been linked to serious nerve<br />

damage, and damage to the immune system. Cancer<br />

survivors should avoid dairy products at all cost.<br />

Congress has passed theturkey 867 billion dollar farm<br />

bill. The bill removes the restriction on hemp farming<br />

allowing it to be legally grown in the United States<br />

and regulated by the States. The bill includes money<br />

to promote and protect dairy industries. And, provides<br />

PERMANENT FUNDING FOR ORGANIC FARMING<br />

RESEARCH. I’m ecstatic.<br />

True Grits<br />

One of the failings of growing up eating a local staple is we<br />

sometimes take for granted that everyone is familiar with<br />

what is truly a regional dish and not well known beyond our<br />

personal borders. This is the case for the southern specialty<br />

grits. History reveals that at least in 1579, Native American<br />

tribes used the dried pounded local maize to prepare a boiled<br />

corn product. Around 1585, one member of Sir Walter Raleigh’s<br />

Roanoke Island exploration party posted this original Yelp-like<br />

review upon dining with local American natives, “very white,<br />

faire, and well-tasted” boiled corn.<br />

Grits do not have much to offer in the way of nutrition, they<br />

are low in fat but low in almost everything thing else too. A<br />

serving of grits has about 10% carbohydrate content and approximately<br />

8% iron. One of the greatest benefits of a hot bowl<br />

of grits on a cold morning is that it is warming and sticks to your<br />

ribs for a while. Even though purists would never consider eating<br />

neutral-tasting grits with anything more than salt and butter,<br />

many variations include the addition of syrup, jelly, bacon and<br />

eggs, gravy, and of course cheese.<br />

Grits is or are (do not get me started) a product of our past but<br />

also enjoy fancified modern recipes that are popular throughout<br />

the country across many cuisines. Grits, known as polenta in<br />

some circles, are associated with hominy, corn mush, and corn<br />

meal depending upon the size to the particles, type of corn, and<br />

the method of preparation. Proper cooking of grits is both an art<br />

and a science littered with many disgruntled cooks who cannot<br />

seem to get the hang of successful grit-ology.<br />

Creamy Shrimp + Cheddar Grits<br />

SERVINGS 3-4<br />

For the Grits:<br />

• 1 tablespoons of olive oil<br />

• 1 small diced yellow onion<br />

• 2 cups of white grits<br />

• 6 cups of chicken stock<br />

• 4 tablespoons of unsalted butter<br />

• 8 ounces of shredded white cheddar grits<br />

• Kosher salt and fresh cracked pepper to taste<br />

For the Shrimp:<br />

• 1 teaspoon of olive oil<br />

• 6 strips of bacon thinly sliced<br />

• 5 minced cloves of garlic<br />

• 1 pound of peeled and deveined shrimp<br />

• ¾ cup of cream sherry<br />

• 1 ½ cups of heavy whipping cream<br />

DIRECTIONS<br />

1. Grits: Add the olive oil to a medium size pot<br />

on medium heat and cook the onions for 6 to 8<br />

minutes or until lightly browned.<br />

2. Add in the grits and chicken stock, stir and<br />

cover for 20 to 25 minutes or until the grits are<br />

al dente.<br />

3. Finish the grits with butter, shredded cheddar,<br />

salt and pepper and keep warm.<br />

4. Shrimp: In a large saute pan on high heat<br />

with 1 teaspoon of olive oil, cook the bacon until it<br />

is crispy.<br />

5. Once cooked, remove the bacon and the<br />

shrimp and garlic to the pan with the rendered<br />

bacon fat and saute for 3 to 4 minutes or until the<br />

shrimp is done.<br />

6. Once the shrimp is cooked, remove them<br />

from the pan and deglaze with cream sherry and<br />

reduce until there is 2 tablespoons of liquid left.<br />

7. Add the cream and cook over medium heat<br />

until it becomes very thick, think Alfredo sauce.<br />

8. Add the shrimp, bacon, salt and pepper to the<br />

cream mixture and mix.<br />

9. Serve the creamy shrimp over the cheddar<br />

grits.<br />

WARRANTY that will cover you car for an additional amount<br />

of time and mileage that overlaps the manufactures warranty<br />

.. TOTAL WASTE OF YOUR MONEY.. Just like buying<br />

any extended warranty for appliances or ANYTHING!!<br />

You all see the ads on t.v. or get calls on the phone that<br />

your warranty from the manufacture is running out and<br />

now is the time to buy over EXTENDED warranty to protect<br />

having GROUP LIFE INSURANCE at work and this is all a<br />

family needs to protect them..Boys and Girls, I have been in<br />

my business now for 51 years, and by far, this is the biggest<br />

problem I have run across!! Most workers do not even know<br />

how much they have or how it suppose to work.. They do<br />

not understand that it is not set up by any one entity who<br />

tries to match the family’s needs, no it is mostly a replacement<br />

of salary for 6 month, or one year.. they just know they<br />

problem is not new. The History TV channel reports that<br />

reports of sexual assault began when people started recording<br />

history. They cite records from ancient Greece,<br />

such violence as long standing. Tell your friend that she<br />

is not to blame, it can happen to anyone. She or other<br />

girls should get away from the creep asap and call 911<br />

and a family member she trusts. Do not clean anything,<br />

I have in past columns given you clear evidence of the<br />

pot effects. The <strong>Jan</strong>uary, <strong>2019</strong> issue of Monitor on<br />

Psychology has a new report on that. It seems that research<br />

following 3,826 kids for years found that marijuana<br />

caused harm to the adolescent brain. That involved<br />

memory, reasoning and self-control. In fact, it was<br />

worse that alcohol in causing such harm. I stick by my<br />

position: Kids, stay away from pot unless your physician<br />

prescribes it for medical use.<br />

Dear Dr. Crime: Are we having changes in the fundamental<br />

nature of humanity? Is there “social change” and<br />

what are the effects on people? I know church membership<br />

has dropped. Concerned Pastor<br />

Dear Pastor: A quick answer is yes and the effects are<br />

too many and complex to adequately document in my<br />

column. But I can attempt a limited response, simply<br />

because the issues you raise must be addressed and<br />

resolved or we risk frightening future events. An eloquent<br />

and descriptive discussion of the social problems<br />

may be found in the profound essays of Holly Audette,<br />

as for example her Daily Advance column of 8/1/2018.<br />

Her work is highly recommended. Another illustration of<br />

our social problems is the rise in suicide rates. The rise<br />

in suicide rates among females in America from 2000 to<br />

2016 was 50%. Wow! In the same period male suicide<br />

rates went up 21%.<br />

Dear Dr. Crime: This is a strong objection to your portrayal<br />

of males as the cause of bad behavior and social<br />

problems, while sweet little girls contribute nothing! The<br />

reason men excel beyond women is that they earn it!<br />

Dear Sir: Please put the gender problems in perspective.<br />

Do you know that for years psychological and<br />

medical research was based on studies of men only with<br />

generalizations to all humans? It was assumed to apply<br />

to women. While that has changed now so categories<br />

of sex and race are included in research, men still hold<br />

most of the top leadership positions across public and<br />

private operations. Men commit 90% of the homicides<br />

and are 77% of murder victims. The current issue of<br />

Monitor on Psychology reviews gender role stereotypes<br />

and finds the research shows what we attribute to men,<br />

stoicism, competitiveness, dominance and aggression<br />

has been shown to be harmful. The research showed<br />

that the positive traits expected of men actually are more<br />

often expected of women. Your concerns focus on a<br />

major sociological issue we must address. Keep up the<br />

conversation on gender issues and problems, we can<br />

improve the future.<br />

Chowanoke History<br />

glimpse into several Native American civilizations<br />

A centuries prior to European colonization will reveal an<br />

American Indian culture that overall was not primitive, considering<br />

the period of time. In fact, one could view American<br />

Indian culture as being far more advanced when compared<br />

to many other cultures during the same time frame, including<br />

those of the European sector. Such American Indian<br />

communities indeed existed within the United States where<br />

one example can be seen by examining the culture of the<br />

Chacoan people, who in 800 AD once lived in an area known<br />

today as New Mexico. Much has been written that details the<br />

advanced techniques that allowed the Chacoan people to<br />

construct a community in the 800’s that was larger than England.<br />

Their community contained the largest buildings in the<br />

United States that were not surpassed in size until the 19th<br />

century. In fact, the Chacoans used unique techniques for<br />

constructing massive stone buildings that spanned several<br />

stories high and contained hundreds of rooms that were held<br />

up by massively thick walls purposely designed to hold the<br />

weight.<br />

The Chacoan community was comprised of several of<br />

these massive homes which were all connected by roads.<br />

One can imagine the complexity of social organization<br />

required in order to construct these massive structures and<br />

build community infrastructure. Not only were the buildings<br />

massive, but they were oriented to solar and lunar cycles<br />

and lined in such a manner to allow communication between<br />

the buildings. To put this in modern perspective, the Chacoan<br />

people are ancestors of the Pueblo and Hopi Indians<br />

who live in Arizona and New Mexico today. Without going<br />

into detail, the Chacoan community also exhibited many aspects<br />

of Mayan culture particularly during its rituals, trading<br />

of exotic artifacts and in the construction of its massive buildings,<br />

irrigation systems, and roads. Keep in mind that this<br />

occurred in the 800’s, 700 years before colonial contact. Also<br />

prior to the construction of this massive community, these<br />

Indians had been accustomed to constructing and living in<br />

smaller stone houses for centuries prior.<br />

While the Chacoan community may have had more<br />

complex infrastructure due to its community size and to the<br />

arid climate of the Southwest, social organization was also<br />

required on the east coast to maintain its American Indian<br />

communities. Some similarities have been noted in historical<br />

documents that reveal stories of interesting and complex<br />

interactions that the North Carolina coastal plains Indians<br />

had with the Europeans. There are documents noting that in<br />

1609, explorers of the Lost Colony were living in a Tuscarora<br />

village called Pakerikinick to reports in 1614 that Jamestown<br />

explorers went to a Tuscarora village called Ocamahawan<br />

where the Indians had built two-story “stone” houses and<br />

used brass utensils, and to another report noting that in<br />

1654, a wealthy Spaniard, possessing slaves, had been<br />

living among the Tuscarora for several years. In 1670, it was<br />

noted that the Spanish had set up a trading post in a Tuscarora<br />

village called Kateras, which was described as a place<br />

of “great Indian trade and commerce.” The Chowanoke<br />

Indians were also reported as building two story houses in<br />

the 1600s, although these houses were not particularly noted<br />

as being made from stone. As historical documents are<br />

pieced together along with archaeological findings, theories<br />

and perpetuation of a primitive mode of Native existence will<br />

hopefully be quenched. The communities mentioned in this<br />

article are just a small number of communities that existed<br />

across the United States prior to colonial invasion.<br />

Albemarle Loop<br />

Back in 2014 when Jack Atwell and Steve Harris were<br />

thinking of ways to increase the number of visitors<br />

to Albemarle Plantation’s marina, they hit upon the idea<br />

of creating a promotional vehicle they called the Albemarle<br />

Loop. Aimed primarily at the 2,500 boaters who<br />

migrate along the Atlantic Intracoastal Waterway (ACW)<br />

from Norfolk to Florida every spring and fall, “The Loop”<br />

would invite boaters to pause on their journey and visit<br />

the marinas and towns along the Albemarle Sound. Jack<br />

and Steve got the Dismal Swamp Canal Visitor Center<br />

and marinas in Edenton, Manteo, Columbia, Hertford,<br />

Elizabeth City, and Plymouth to join Albemarle Plantation<br />

as members, and began promoting the idea of exploring<br />

the Albemarle Sound to the boating public with a colorful<br />

brochure and a website http://www.albemarleloop.com.<br />

Albemarle Plantation is a good example of the results<br />

of Albemarle Loop promotions. In 2014 only 2 transient<br />

boaters had stopped at Albemarle Plantation’s marina.<br />

In 2015 that number jumped to 43 and then to 44 the following<br />

year, in spite of the closure of the Dismal Swamp<br />

Canal to repair damage from Hurricane Matthew. In 2017<br />

transient visitors numbered 59 and increased their number<br />

to 76 in 2018. As a result of a number of promotional<br />

programs initiated in 2017 and 2018, member marinas<br />

have also enjoyed significant increases in visitors.<br />

In the past year the “The Loop” initiated a Facebook<br />

a registered North Carolina corporation with by-laws<br />

and a Board of Directors; and added volunteer assistant<br />

directors for the website and Facebook, marketing and<br />

announcements about an exciting new promotional idea,<br />

SWAMPROOTS ~ A Timeless Gift<br />

wamproots” is a local magazine compiled by<br />

“S high school students from 1974 through 1984.<br />

The project started in 1974 by a group of junior year<br />

Columbia high school English students taught by<br />

Mrs. Madge Vanhorne. As topics were discussed<br />

for a class project … writing a journal about local<br />

folklore and history took precedent. The project was<br />

approved by the powers that be and the first staff was<br />

organized. The original staff was composed of Bobby<br />

Albanese, April Clough, Grady Fenner, <strong>Jan</strong>ice Pledger,<br />

and Terri Spencer. Bobby was the artist in the<br />

group and designed the cover art which was used for<br />

every issue just changing the cover color each time.<br />

The 1983 Volume 10 edition of “Swamproots” won the<br />

Hodges Award given by the North Carolina Society<br />

Of County & Local Historians for the best publication<br />

of local history by high school students in North<br />

Carolina. Another tribute was paid to “Swamproots”<br />

in 1993 when local author Fiona Finch included a<br />

group of her favorite stories from “Swamproots” in her<br />

book “A Heart’s Delight” which celebrated Columbia’s<br />

bicentennial. The series of 12 issues have been read<br />

and enjoyed by thousands over the years and are still<br />

popular today. The students who participated in this<br />

project over the 10 years it was published learned a<br />

great deal about local history and left a great legacy<br />

of Tyrrell folklore for many future generations to enjoy.<br />

The Crown of the Year<br />

On New Year’s Day, the Orthodox Church offers a special<br />

prayer that is all about “beginnings”:<br />

“Bless the crown of the year with Your loving-kindness.”<br />

This beautiful line comes after a number of other requests:<br />

“Have mercy on the people according to the uncountable<br />

number of Your mercies. Fill their cupboards with every<br />

good thing. Preserve their marriages in peace and harmony.<br />

Raise the infants in tenderness. Guide the young in wisdom.<br />

Support the aged. Encourage the faint-hearted. Reunite the<br />

separated. Sail with those who sail upon the seas, journey<br />

with those who journey by land and air. Defend the widows,<br />

protect the orphans, free the captives and heal the sick.”<br />

Then the prayer turns to even deeper concerns: “Remember,<br />

O God, those who are being judged against, those who<br />

are in prison, in exile, at hard and desperate labor, and those<br />

in any kind of affliction, iron necessity or distress. Lead back<br />

those who are wandering in confusion and join them to Your<br />

holy, catholic and apostolic church.”<br />

There is a bright confidence in these requests. We would<br />

never ask such things from a powerful figure who had no<br />

compassion, and was only about power. These prayers can<br />

only be offered out of a conviction that God is Father, and<br />

that He is Love.<br />

All beginnings, even this New Year, are rooted in divine<br />

goodness. In every beginning, God calls His creation to a<br />

destiny of beauty and peace. And between the beginning and<br />

the destiny, God is never absent. He is closer than any other<br />

friend. Indeed, He is closer to you than you are to yourself.<br />

The prayer continues: “You Yourself remember everyone, O<br />

God, since You know the name and age of each, even from<br />

their mother’s womb. You O Lord, are the Help of the helpless,<br />

the Hope of the hopeless, the Savior of the bestormed,<br />

the Haven of the voyager, the Physician of the sick. Be all<br />

things to all mankind …”<br />

This prayer is from the Liturgy of St Basil the Great, a<br />

fourth-century bishop in the center of present-day Turkey.<br />

New Year’s Day happens to be the day of his commemoration.<br />

So we celebrate the liturgy that was written by him.<br />

It is a wonderful coincidence that on his day we pray such<br />

a beautiful prayer for the New Year. The best resolution that<br />

we can make is to ask the God of all beginnings to bless the<br />

“crown of the year” with His loving-kindness.”<br />

The grocery store scoop: Debunking common myths<br />

(BPT) - When you enter a grocery store, you’re suddenly<br />

faced with thousands of options. You want to get<br />

the staples you need and you want the best nutrition for<br />

your family, but it’s easy to get overwhelmed. How do<br />

you know what’s your best choice?<br />

“Options like brown versus vitamin-enriched white<br />

bread, or, grade A versus AA eggs can cause confusion<br />

for even savvy shoppers,” says Registered Dietitian and<br />

Nutritionist Dawn Jackson Blatner, winner of the ABC<br />

television show “My Diet Is Better Than Yours.” “With so<br />

many choices it’s difficult to know what’s what.”<br />

When fresh fruits aren’t available, she reminds people to<br />

look for frozen alternatives, noting many frozen options<br />

are picked at the peak of freshness and flash frozen to<br />

capture high nutrient content. The best frozen varieties<br />

are those without added sauces or seasonings.<br />

“When you know the truth, you are empowered to make<br />

smart decisions while you shop so you can get superior<br />

products with superior nutrition,” says Blatner. “Then<br />

you can have fun making tasty recipes your family will<br />

devour.”<br />

Blatner reveals the truth about some of the most common<br />

myths and misconceptions of grocery store staples<br />

to streamline trips and ensure you’re bringing home the<br />

most nutritious options.<br />

Bread<br />

Many people believe the darker the bread, the healthier<br />

it is, causing them to skip labels and grab a brown<br />

loaf on the go. The problem is, just because bread is<br />

brown doesn’t mean it’s whole grain. That color could be<br />

achieved through caramel coloring.<br />

“What you see doesn’t tell the whole story, so it’s important<br />

to look at labels to get the facts,” says Blatner.<br />

“Whole grain and sprouted grain are always good bread<br />

choices for better nutrition. It’s also important to pay<br />

attention to sugar content. There are many great options<br />

available with 0 grams of sugar.”<br />

Eggs<br />

Egg-grading systems were created by the USDA to<br />

mark interior and exterior quality of eggs. Many people<br />

ignore this system and simply choose eggs based on<br />

appearance or price. To get the best nutrition, buy from<br />

a producer that has its own quality standards that go<br />

above and beyond USDA requirements.<br />

Blatner provides an example: “Grade A specifications<br />

for Eggland’s Best eggs are actually more strict than<br />

standard grade AA specifications for regular eggs. That<br />

means, no matter what grade you choose, they provide<br />

the highest quality egg that’s fresher and tastier. And<br />

with six times more vitamin D, 25 percent less saturated<br />

fat, more than double the Omega-3s, 10 times more vitamin<br />

E, and more than double the vitamin B12 compared<br />

to ordinary eggs, they’re also the most nutritious choice.”<br />

Produce<br />

The produce section is one of the healthiest places in<br />

the grocery store, but the notion that the misters are<br />

there to make items look good and add water weight so<br />

they cost more at checkout is a myth. That water helps<br />

ensure fruits and vegetables stay fresh, especially items<br />

that could wilt, like lettuce.<br />

“Give items a good shake to get rid of water weight,”<br />

suggests Blatner. “And remember to always rinse fresh<br />

produce well once you’re home to clean the surface of<br />

any dirt and bacteria. The mist at the store isn’t meant to<br />

clean, only to help maintain freshness.”<br />

Blatner offers one such recipe for inspiration:<br />

Zesty Egg Fried Rice Lettuce Wraps<br />

Ingredients:<br />

4 Eggland’s Best eggs (large)<br />

2 tablespoons Sriracha sauce<br />

6 strips lean smoked bacon, chopped<br />

2 cups cooked jasmine rice<br />

1/4 teaspoon black pepper<br />

2 tablespoons low sodium soy sauce<br />

1/3 cup sliced scallion greens<br />

12 leaves Boston/Bibb lettuce<br />

Directions:<br />

In a medium bowl, whisk eggs and Sriracha together<br />

until well combined.<br />

In large non-stick skillet, over medium-high heat, cook<br />

bacon until crisp. Transfer bacon to plate, leaving drippings<br />

in the skillet. When cooled, chop bacon into small<br />

pieces.<br />

Drizzle the egg mixture into the skillet, stirring as you<br />

drizzle. Add bacon, black pepper, rice and soy sauce to<br />

skillet and stir-fry 3-4 minutes, or until eggs are set. Stir<br />

in scallion tops.<br />

Remove from heat. Divide the mixture among the lettuce<br />

leaves and serve immediately.<br />

Happy New Year. Boy, that was fast. 2018 is in<br />

the books and I don’t feel like I got past the first<br />

chapter.<br />

Now that the decorations have been put away, the<br />

last cookie eaten, and Aunt Mabel’s heirloom fruitcake<br />

has been discreetly disposed of – it’s time for Encore’s<br />

opening of the first production of our 2018-<strong>2019</strong> season.<br />

Time Warp is a locally developed production by<br />

our own Sarah Lee. The production opens on <strong>Jan</strong>uary<br />

18, <strong>2019</strong> with additional shows on <strong>Jan</strong>uary 19, a matinee<br />

on <strong>Jan</strong>uary 20, and evening shows on <strong>Jan</strong>uary<br />

24,25, and 26.<br />

as well as in person at the Arts of the Albemarle, 516<br />

We hit a glitch with our distribution of season tickets<br />

Elizabeth City Habitat for Humanity receives calls frequently<br />

from people in urgent need of housing. While<br />

we wish that we could help people with immediate housing<br />

needs, Habitat builds and rehabs houses for qualified<br />

homebuyers. We don’t have houses available for immediate<br />

occupancy.<br />

The process to become a Habitat homeowner is lengthy<br />

because our loans are zero interest. Contrary to the<br />

common misconception, Habitat houses are not free but<br />

their cost due to the zero interest is much lower than most<br />

rentals.<br />

Elizabeth City Habitat for Humanity is chartered to build and<br />

rehab houses in Pasquotank County and applicants must<br />

live in the county.<br />

Since applicants are applying to purchase a house, they<br />

must meet financial requirements and be approved by a<br />

mortgage officer. All homeowners must provide documentation<br />

of household income and show the ability to pay a<br />

mortgage and must provide their credit score. Per Habitat<br />

requirements, applicants must not pay more than 30% of<br />

their gross income for their mortgage payment. Since the<br />

average payment is approximately $500 (which includes<br />

taxes and insurance), that means a monthly gross income of<br />

at least $1500.<br />

Unlike a conventional mortgage, applicants must also have<br />

a specific need. Some examples are poor quality housing,<br />

rent of more than 30% of the gross income, crowded conditions,<br />

bad neighborhood or high utility bills. The need must<br />

be verified when we conduct a home visit.<br />

Habitat builds houses WITH, not FOR, partner families.<br />

Applicants must be willing to complete 500 hours of sweat<br />

equity on their house as well as other Habitat projects. Applicants<br />

must complete a First Time Homebuyer class at River<br />

City Community Development Corporation which includes<br />

budgeting and credit counseling. The hours for these classes<br />

count toward the sweat equity requirement. The sooner<br />

applicants begin completing these hours, the better because<br />

this shows a willingness to partner with Habitat. At least 50<br />

hours must be completed before we order any materials for<br />

a house. Family members and friends can also work and<br />

have their hours credited to the family.<br />

Habitat chooses a floor plan to meet the family’s needs on<br />

he Museum of the Albemarle is currently working on new exhibits<br />

themes for <strong>2019</strong>. We are excited that our main themes for exhibits<br />

and programming will revolve around topics such as the Outlander<br />

television series, the Harlem Renaissance, Masons, agriculture, farming,<br />

historic documents, photographs, and the Vietnam and Gulf wars.<br />

Artifacts from Outlander is a traveling exhibit from Jefferson Patterson<br />

Park and Museum in Maryland featuring artifacts related to the<br />

detailed history and setting found in the Outlander book and television<br />

series.<br />

The Boomer List is a traveling exhibit from the Newseum features<br />

framed photographs, artifacts, informational panels, and recorded<br />

videos.<br />

Contemporary Response to the Harlem Renaissance relates to the<br />

African American cultural movement of the 1920s and early 1930s.<br />

Blue Masonic Lodges of the Albemarle recognizes Freemasons and<br />

the charitable works they perform in and around their communities.<br />

The First Gulf War: The War to Free Kuwait recounts the conflict with<br />

text panels and graphics.<br />

Clucker Plucker focuses on the chicken and its importance to Northeast<br />

North Carolina.<br />

Treasures from the Archives will showcase documents, photographs<br />

and other media, from the State Archives of North Carolina.<br />

High on the Hog will focus on the pig, barbeque, sausage, ham,<br />

butchering, and collectable items. Staples of the southern diet for<br />

centuries.<br />

A Thousand Words: Photographs by Vietnam Veterans is a collection<br />

of images, assembled by photographer Martin Tucker, was taken by<br />

North Carolina soldiers in Vietnam.<br />

Eating healthy, eating safe<br />

(BPT) - You try to eat healthy, but the one thing you can’t<br />

control is who has been handling your food and whether<br />

they are practicing adequate food safety. Each year,<br />

foodborne illnesses sicken close to 50 million Americans<br />

and lead to more than 130,000 hospitalizations and 3,000<br />

deaths. A lot of these illnesses are caused by simple things<br />

like restaurant employees’ failure to properly wash hands,<br />

cooking surfaces and fruits and vegetables.<br />

Foodborne illnesses present a greater challenge to certain<br />

groups of people with reduced immunity, such as children<br />

younger than age 4 and people older than age 50. Food can<br />

also become compromised much earlier in the production<br />

process, and for this reason food producers are using a<br />

variety of means to keep our food safe.<br />

One approach uses the concept of hurdle technology in<br />

which a variety of mild steps (hurdles) are used to limit<br />

microbial growth at each stage of production. These include<br />

combinations of weak acid treatments with gentle heating<br />

and reduced humidity, or alternating low heat and chilling<br />

treatment. The fresh-bagged salads you see at the grocery<br />

store are a good example of this. Vacuum-packed products,<br />

prepared under rigorous hygienic conditions and heated at<br />

lower temperatures, are another.<br />

Other technologies include the addition of antimicrobial<br />

agents such as enzymes and other natural compounds that<br />

inhibit the growth of bacteria or prevent oxidation. Salt too is<br />

a very effective anti-bacterial in food. In fact, it is the oldest<br />

known food preserver. Salt is widely used in the production<br />

of all cheeses, cured meats and many fish dishes.<br />

Salt preservation works by influencing the amount of water<br />

that all microorganisms require to survive and grow. The<br />

use of salt in controlling water means that the levels of other<br />

preservatives or processes can be reduced. This means that<br />

microbiological safety can be achieved with reduced heat,<br />

acidity and other preservatives. This results in a product of<br />

vastly improved taste and nutritional quality because of the<br />

improved retention of other nutrients.<br />

However, as the federal government pushes companies<br />

toward lower salt content there are some concerns that it<br />

could affect food safety and increase the amount of preservatives<br />

that must be used. Many prefer salt as the more<br />

natural choice.<br />

Fortunately, food safety is a leading concern of the Food<br />

and Drug Administration and its Commissioner, Scott Gottlieb,<br />

and the newly appointed Deputy Commissioner, Frank<br />

Yiannas, who was previously Vice President of Food Safety<br />

at Walmart, and Director of Safety and Health at Walt Disney<br />

World.<br />

Food safety is an ongoing challenge for an enormous and<br />

complex food system, and although challenges continually<br />

arise, exercising caution and attention in food purchasing,<br />

storage and preparation will minimize the risks. Remember<br />

to not only eat healthy but to also eat safely.<br />

Winter is here and with the exception of<br />

some Rockfish biting here and there, not<br />

much fishing is going on from the piers, surf<br />

or boats. However, <strong>Jan</strong>uary is a great time<br />

to prepare for the upcoming fishing season.<br />

Let’s start with your rod and reels. Now is a<br />

great time to strip off that old line and take or<br />

mail your reels in for servicing. Some of us are<br />

lucky because we have someone local who<br />

performs this service. For others, they have to<br />

be mailed to shops that specialize in repairs<br />

of specific brands or to the factories that offer<br />

service on their brands. If you mail them off,<br />

make sure you get tracking and insurance for<br />

the replacement value of your reel. I prefer<br />

sending mine with UPS or FedEx because<br />

they have a better insurance guarantee should<br />

the reels be lost or stolen. I always call or<br />

email and communicate with someone before I<br />

send my reel to make sure how long it is going<br />

to take, what service they will be doing, and<br />

how much it will cost. Email is great but there<br />

is nothing better than speaking to the person<br />

who will be working on my reel.<br />

After you get your reel serviced, take it to a<br />

local tackle shop and get it respooled by them.<br />

People often ask – Do I need a will? No, you don’t<br />

need a will, but you may not like the plan North Carolina<br />

has made for you.<br />

A person who dies without a will is said to have died<br />

“intestate.” Some assets which you may own have<br />

special legal significance and will automatically pass to<br />

designated persons at your death regardless of whether<br />

you have a will. These assets include joint tenancy with<br />

rights of survivorship, tenancy by the entirety property,<br />

retirement plan and IRA proceeds, life insurance proceeds,<br />

payable on death accounts and property held in<br />

trust. To change the person who will inherit these types<br />

of assets at your death, you need to change the way<br />

you hold title to these assets or the beneficiary you have<br />

designated.<br />

All other assets, will comprise your “intestate estate” and<br />

be distributed according to the State’s statutory will provisions.<br />

Most of the time, the terms of the statutory will<br />

are NOT the results that my clients would have selected.<br />

Your spouse will inherit all your intestate estate only if<br />

you do not have any surviving descendants and both of<br />

your parents predecease you. If you have any surviving<br />

descendants at your death, your spouse will inherit<br />

only about one-half to one-third of your intestate estate<br />

(depending on how many descendants survive you). Or,<br />

if you do not have any surviving descendants, but either<br />

of your parents are living, your spouse will inherit only<br />

about one-half of your intestate estate.<br />

If you have any children or other descendants living at<br />

your death, they will share an inheritance of one-third<br />

to one-half (depending on the number of descendants<br />

living) of your intestate estate if your spouse is still living<br />

at your death.<br />

Your parents will not inherit any of your intestate estate if<br />

you have any descendants living at your death. If you do<br />

not have any descendants living at your death, and your<br />

spouse survives you, your parents will take approximately<br />

one-half of your intestate estate. Your parents will<br />

inherit your entire estate if you have neither a surviving<br />

spouse nor surviving descendants.<br />

So, take a married couple (no children) and the husband<br />

has living parents. The couple builds a home on land<br />

given to him by his family. He dies and now his wife<br />

owns a one-half (½) interest in the real property. The<br />

other one-half (½) is owned by his parents.<br />

If you have been living with your significant other for<br />

many years without the benefit of marriage, and you die<br />

- he or she does not inherit from you, if you don’t have a<br />

will.<br />

**North Carolina does not recognize common law marriages.<br />

**<br />

If the statutory will does not produce the results that you<br />

would like, you should prepare your own will – where<br />

you select the persons that will inherit from you and the<br />

proportions that they will receive. If you don’t have a will,<br />

the State of North Carolina will distribute your property at<br />

your death pursuant to the current law.<br />

NATIVE AMERICAN MUSIC<br />

As we end a holiday season filled with music, have you<br />

ever wondered about the earliest musical instruments?<br />

Some historians maintain that rocks shaped to create<br />

differing sounds and used as drums were the first musical<br />

devices while others consider the flute the oldest melodious<br />

instrument constructed by humans. Native American flutes<br />

made of bone can be traced back thousands of years with<br />

evidence that instruments made from reed and both hard<br />

and soft woods soon followed.<br />

“People sometimes assume that a flute is a flute is a<br />

flute—that once you have heard one, you have more or less<br />

heard what they all sound like,” explained Carl Bornfriend,<br />

Executive Director for the Frisco Native American Museum.<br />

“The flute actually has a wide range of sound with a haunting<br />

beauty that has often been called a portal to take the listener<br />

to the most beautiful places in their heart and mind.”<br />

Even the simplest flute crafted by a native artist has beauty<br />

from the form and design. Other instruments are truly works<br />

of art, designed and created with such elegance that they<br />

are sought after for their decorative value even by those who<br />

have no interest in actually playing them.<br />

Staff at the Frisco Native American Museum & Natural<br />

History Center put out a call for native flute makers and players<br />

to take part in the music and dance festival scheduled for<br />

April 27 & 28, <strong>2019</strong> at the museum. The festival will include<br />

drumming and dancing as well as demonstrations and workshops<br />

on a variety of musical instruments.<br />

Located on Hatteras Island, the museum is open 10:30<br />

AM—5:00 PM Saturdays and Sundays for the winter. The<br />

regular six days a week schedule will resume on April 16,<br />

Celebrate The Versatile Sweet Potato<br />

This month, I’m celebrating the sweet potato – our<br />

official state vegetable. With North Carolina being the<br />

Number 1 sweet potato producing state in the country, this<br />

versatile root vegetable is a fundamental southern food,<br />

finding itself on many a menu throughout the state and<br />

walking the diverse flavor profile line between sweet and<br />

savory.<br />

Today, I have two sweet potato recipes for you – one savory<br />

and one sweet. Please enjoy.<br />

Savory Hasselback Sweet Potatoes<br />

2 sweet potatoes<br />

About ½ stick unsalted butter, softened<br />

Kosher salt<br />

8 oz. ground sausage (Preferably Jimmy Dean’s hot sausage.)<br />

1 Granny Smith apple, cored, peeled, and minced<br />

½ cup grated apple-smoked Gruyère cheese<br />

Prepare the potatoes, Hasselback-style. Hasselback-style<br />

is a Swedish method of preparation in which the potato is<br />

very thinly sliced, accordion-like, without cutting all the way<br />

through the potato. Liberally apply butter to the potato,<br />

on the outside and in between the slices. Sprinkle with<br />

kosher salt.<br />

Bake potatoes in a 350° oven for 50 or so minutes, until<br />

potato is tender. Throughout baking, spoon the melted<br />

butter over the potatoes, gently separating the slices.<br />

While potatoes are baking, cook sausage in a medium<br />

skillet, breaking the pieces into crumbles. Drain on paper<br />

towels. Add minced apple to the sausage.<br />

When potatoes are cooked, add sausage mixture in between<br />

the slices. Top with grated Gruyère cheese and run<br />

under the broiler until cheese is melted and slightly golden<br />

brown.<br />

Sweet Potato In Orange Cups<br />

1 large sweet potato<br />

3 oranges (I prefer Cara Cara oranges which are now<br />

available.)<br />

1 TB unsalted butter<br />

1/2 tsp pure vanilla extract<br />

1 egg, beaten<br />

a few tablespoons cream<br />

2 TB brown sugar<br />

2 TB unsalted butter<br />

½ cup chopped pecans<br />

mini marshmallows<br />

Peel and chop the sweet potato. Cook potato in boiling<br />

salted water until tender. Drain.<br />

Transfer sweet potato pieces to a medium bowl and add in<br />

a tablespoon of unsalted butter.<br />

Mash until butter is melted. With electric mixer, beat in<br />

vanilla, egg, and<br />

a tablespoon of cream at a time until creamy smooth.<br />

Season to taste with kosher salt.<br />

Halve oranges and scoop out the segments. I hold the<br />

orange over the sweet potato mixture to collect any juices<br />

that drip out. Eat the segments.<br />

Scoop the sweet potato mixture into the orange cups.<br />

In a small bowl, mix together 2 TB softened unsalted butter,<br />

2 TB brown sugar,<br />

and ½ cup coarsely chopped pecans. Spoon mixture over<br />

filled orange cups and top with mini marshmallows.<br />

Bake at 325° about 20 minutes until heated through and<br />

marshmallows are melted and lightly browned.<br />

Mix it up- A New Type of Taproom<br />

Historically, taprooms differ from breweries in the fact that they<br />

don’t brew their beer. Taprooms carry and sell the beers of<br />

other breweries. Not brewing their beers allows them to have the<br />

capacity to give more beer options. “Mix it up” on shore drive has<br />

taken this idea to another level, offering over 50 beers on tap or in<br />

a bottle. Another revolutionary idea that Mix it up is doing is offering<br />

a full bar! I have had book signings at a lot of tap houses and Mix it<br />

up was the first one to provide the services of a full bar.<br />

Starting as a small venue for people to only pick up mixers that<br />

were not sold at the nearby ABC store, Mix it Up quickly grew into<br />

coming to the Ted Constance center on <strong>Jan</strong>uary 18, <strong>2019</strong>!<br />

Trevor Noah is the most successful comedian in Africa and is<br />

the host of the Emmy and Peabody Award-winning “The Daily<br />

Show” on Comedy Central. This past year, “The Daily Show”<br />

was nominated for a Writers Guild Award (Comedy/Variety<br />

Series) and a GLAAD award for Outstanding Talk Episode, as<br />

As the New Year begins, we here at the Currituck<br />

Chamber of Commerce are excited about the possibilities<br />

December was full of fun. We had many come out to<br />

support new member Currituck County Arts Council as<br />

they hosted a Business After Hours Event. We all had a<br />

wonderful time meeting new members, enjoying great<br />

food and music, and learning about all the Arts Council<br />

does for our community. Many thanks to all who came<br />

Chesapeake’s history dates back much further than 1963<br />

when Norfolk County and the City of South Norfolk<br />

merged to create Chesapeake. The first English settlement<br />

began around 1620 along the banks of the Elizabeth<br />

River. In December 1775, the historic Battle of Great Bridge<br />

played a critical role in the Revolutionary War, just a few<br />

hundred yards from where the Chesapeake Municipal Center<br />

stands today. Shortly after the war, work began on the<br />

Dismal Swamp Canal, an idea first envisioned by George<br />

Washington when he visited in 1763. In the 1800s, the area<br />

recovered quickly from the Civil War thanks to its miles<br />

of riverfront and deep water harbors and the fertile, level<br />

farmland.<br />

In the mid-1900s, the City of South Norfolk and the more<br />

rural Norfolk County found themselves struggling to plan<br />

for the future on their own. City and county officials got<br />

together to approve a merger agreement. In 1962, citizens<br />

of both communities turned out in near-record numbers for<br />

a special election, approved the merger, and selected the<br />

name “Chesapeake” for the new city. On <strong>Jan</strong>uary 2, 1963,<br />

the Chesapeake City Council met for the first time.<br />

During the 1960s and 1970s, the young city began to<br />

develop a comprehensive network of city services, including<br />

police and fire protection, schools, libraries, parks and<br />

recreation, health, utilities, land use planning, transportation<br />

network and more. Chesapeake’s 353 square miles offered<br />

ample opportunity for development, much of which began in<br />

the 1980s, both residential and industrial.<br />

Chesapeake’s population has grown from approximately<br />

78,000 in 1963 to nearly 239,000 in 2016. Today, Chesapeake<br />

is a unique blend of rural and urban centers, providing<br />

its citizens with excellent schools, recreational and<br />

cultural facilities, and strong municipal leadership.<br />

Mum Bett fights slavery in Massachusetts<br />

In 1829, Elizabeth Freeman passes away. The woman<br />

better known as “Mum Bett” was the first woman to<br />

be declared free from slavery under the Massachusetts<br />

Constitution of 1780. That document joined the Declaration<br />

of Independence in declaring: “All men are born free<br />

and equal.”<br />

In 1781, with mere months left in the American Revolution,<br />

Mum Bett decided to put those words to the test—in<br />

court. It couldn’t have been easy. Her owner, Colonel<br />

John Ashley, was a powerful judge in Sheffield, Massachusetts.<br />

Interestingly, though, one of Ashley’s own projects may<br />

have prompted Mum Bett into action. Ashley was among<br />

those who worked on a 1773 document known as the<br />

Sheffield Declaration. Did Mum Bett overhear some of<br />

these conversations? Some historians think so.<br />

“Mankind in a state of nature are equal, free, and independent<br />

of each other,” the Sheffield Declaration affirmed,<br />

“and have a right to the undisturbed enjoyment of their<br />

lives, their liberty and property.”<br />

Mum Bett was quick on her feet. She intervened,<br />

preventing the blow from hitting its intended target. Mrs.<br />

Ashley struck and injured Mum Bett’s arm instead.<br />

It was the last straw. Mum Bett couldn’t take it anymore.<br />

“Anytime,” Mum Bett later recollected, “anytime while I<br />

was a slave, if one minute’s freedom had been offered<br />

to me, and I had been told I must die at the end of that<br />

minute, I would have taken it—just to stand one minute<br />

on God’s earth a free woman—I would.”<br />

Mum Bett ran away. She sought help from Theodore<br />

Sedgwick, a local attorney whom she may have known<br />

because of his work on the Sheffield Declaration. Sedgwick<br />

agreed to represent both Mum Bett and another<br />

slave by the name of Brom.<br />

The surviving court records are not entirely clear, but<br />

it appears that Mum Bett’s main argument was that<br />

she wasn’t a “legal” servant of Ashley and that any law<br />

enabling him to make such a claim was “annulled by the<br />

new Constitution.”<br />

A jury agreed. Mum Bett was free! She renamed herself Elizabeth<br />

Freeman.<br />

The Ashleys tried to get Mum Bett back as a paid domestic<br />

worker, but Mum Bett refused. Instead, she went to work for<br />

the Sedgwicks. She came to be a much loved member of that<br />

household. In fact, when she passed away in 1829, the family<br />

had her buried in the Sedgwick family plot.<br />

Perhaps the tombstone that they created for her says it best:<br />

“She was born a slave and remained a slave for nearly thirty<br />

years. She could neither read nor write; yet in her own sphere<br />

she had no superior nor equal. She neither wasted time nor<br />

property. She never violated a truth, nor failed to perform a duty.<br />

In every situation of domestic trial she was the most efficient<br />

helper and the tenderest friend. Good mother, farewell!”<br />

On the other hand, maybe an incident involving Mrs.<br />

Ashley pushed Mum Bett over the edge. Reportedly, Mrs.<br />

Ashley flew into a rage and tried to hit a slave named<br />

Lizzie with a hot kitchen shovel. The record is unclear,<br />

but it appears that Lizzie was either Mum Bett’s sister or<br />

daughter.<br />

In other words, she was claiming that the institution of<br />

slavery was illegal under the new Massachusetts Constitution.<br />

Thus, Mum Bett could not be a “legal” servant of<br />

Ashley, nor could he demand her return.<br />

As Independent Bookstores Make A Comeback, E-Book Sales Take A Dive by: Chloe Anagnos<br />

echnology is a wonderful thing: It gives entrepreneurs<br />

and visionaries the tools to transform our lives for the<br />

better. But sometimes, innovations designed to replace<br />

ancient technology don’t quite catch on—at least, not as<br />

expected.<br />

While consumers are increasingly choosing to stream their<br />

entertainments, they seem to be going back to an old-fashioned<br />

artifact—the book—for their reading needs, boosting<br />

the publishing industry. In the meantime, however, declining<br />

e-book sales are beginning to concern the industry.<br />

The Market Speaks<br />

The non-profit trade organization American Booksellers<br />

Association (ABA), which represents independent bookstores,<br />

reports that its membership numbers have been increasing<br />

for the past nine years, meaning more bookstores<br />

are opening across the country. In addition, ABA claims that<br />

sales at these bookstores are also up, rising 5 percent since<br />

2017 alone.<br />

With bookstores in more than 2,400 locations across the<br />

country, hardback and paperback book sales have grown<br />

6.2 and 2.2 percent, respectively. That, along with the fact<br />

ABA’s membership is growing, shows us there’s a real<br />

demand for physical books over their digital version. That’s<br />

particularly true if you observe that e-book sales fell by 3.9<br />

percent this year alone.<br />

Overall, the sales of both paperback and hardback books<br />

generated nearly $4 billion to the publishing and independent<br />

bookstore industry during the first nine months of 2018,<br />

while e-book sales brought in only $770.9 million.<br />

As it is with anything else, the market is clearly speaking,<br />

and it’s shown it favors the tried-and-true print over digital<br />

format, proving that competition is important even when it<br />

comes to demonstrating that not all that is new will automatically<br />

take over. After all, if we hadn’t seen the industry shift<br />

toward e-books, consumers may have not rediscovered their<br />

love for old-fashioned books.<br />

Print vs. Digital: A Return to Decentralized Learning<br />

Despite the obvious growth in the small, independent bookstore<br />

industry, large, corporate, and chain bookstores like<br />

Barnes & Noble are not doing so well. As a matter of fact,<br />

the firm is closing several locations and might even be put<br />

up for sale if things don’t pick up.<br />

While these super bookstores entered the picture to offer<br />

readers a full immersion experience, giving them space to<br />

read and catch up with their friends over coffee all in one<br />

place, it seems the model became too expensive and, over<br />

time, unsustainable.<br />

Small bookstores, on the other hand, have a small overhead,<br />

meaning they don’t have to sell an exorbitant number<br />

of books to cover their fixed costs. It’s clear that, as they<br />

thrive in a market that is devouring the large, corporate-run<br />

bookstores, the industry is experiencing a new moment, one<br />

marked by a return to a more decentralized approach to<br />

shopping.<br />

With the internet making everything so accessible, we<br />

have seen a revolution in how people learn. From online<br />

college education to free university courses and widespread<br />

access to PDF book copies, people have turned their back<br />

to large, real-world conglomerates, favoring a more customized<br />

experience.<br />

Perhaps the return to<br />

the neighborhood bookstore<br />

is an extension of<br />

this movement, making<br />

the book shopping experience<br />

less about having<br />

all options laid out right<br />

before your eyes to<br />

make it more intimate<br />

and, yes, even simpler.<br />

It’s All about Human Action<br />

The Observer pointed out that the fact digital book technology<br />

made reading so convenient is precisely why small<br />

bookstores have gained so much traction. With everything<br />

in our lives going digital, the simple joy of reading a physical<br />

book has become a novelty once again.<br />

“Book lovers are reading these big scary headlines about<br />

the death of the book industry,” Katie Presley, an indie Upshur<br />

Street Books shopper, told MarketWatch, “and they’re<br />

motivated to put their dollars into an industry and an art form<br />

that they love and want to keep around.”<br />

It’s almost as if the competition provided by the invention<br />

of the e-book made consumers look at real books a little<br />

differently, adding more value to the traditional format.<br />

While it’s difficult to argue against the convenience of<br />

e-books, it’s also easy to see why shopping for physical<br />

books makes so many of us happy. Perhaps that is the<br />

lesson behind the triumphant comeback of independent<br />

bookstores: economics is all about human action, and trying<br />

to pin it down or dictate it by law will always backfire.<br />

Northeast North Carolina Family History – these are a few of my favorite (and new) things...<br />

As the new year was hovering in the future I couldn’t<br />

help but think about some of the past year’s new experiences.<br />

Our move to Currituck provided a number of them.<br />

Some were very recent. When our kids came home in<br />

mid-December to celebrate Christmas early, we were able<br />

to attend the 115th anniversary of the Wright Brothers first<br />

flight. We had never attended as a family and it was great<br />

to see all the information about the brothers’ family that<br />

has been added. Our oldest son said this was his favorite<br />

experience.<br />

Our daughter-in-law’s favorite for this trip was seeing the<br />

Christmas lights at the Elizabethan Gardens in Manteo.<br />

That was a first experience for all of us. The lights in the<br />

trees that made it seem like thousands of multi-colored fireflies<br />

were dancing around, were admittedly pretty impressive.<br />

There was just enough chill in the air in the evening<br />

to make it feel very seasonal! You can still see them on<br />

Fridays or Saturdays through <strong>Jan</strong>uary 19th, from 6 to 9 pm.<br />

If the weather held out, I wanted to climb Jockey’s Ridge<br />

to see the sunset, something none of us had ever done.<br />

We were able to take a number of family pictures, get our<br />

daily cardio in and watch the more energetic members race<br />

each other over the dunes. It was pretty brisk so I was<br />

surprised when our brave daughter-in-law had our son take<br />

a video of her rolling down a very chilly dune. There were<br />

a few other brave souls out there but everyone pretty much<br />

had their own dune!<br />

Two summers ago, when Shelly Island was briefly in<br />

existence, we went there to pick up shells and I found out I<br />

LOVE that activity. Last year our kids visited in early <strong>Jan</strong>uary<br />

and we spent a couple of happy hours picking up shells<br />

there on the one day it hit the 50’s. For Christmas this year<br />

my husband bought me a bag for collecting shells - never<br />

knew such a thing existed. With no Shelly Island, we tried<br />

a few spots before finding quite a nice cache of shells at the<br />

National Seashore. Back in the fall we got up early to be in<br />

Carova at sunrise so we could be among the first looking for<br />

shells and not a one was in sight. It seems that whenever<br />

there is a storm that would bring lots of shells on shore we<br />

are working and can’t get there so I was glad to find a large<br />

collection again.<br />

I’ve really enjoyed learning new things at work, from<br />

learning the Ghost Tour for the summers to Christmas<br />

traditions from the 1920’s and how they came to be for<br />

the Candlelight Christmas tours at Whalehead. And I am<br />

always learning new things about the area, some for fun<br />

and some for necessity. I think our favorite food discovery<br />

has been the pizza at Barefoot Bernie’s. I can honestly say<br />

I have never had pizza that was as good reheated as when<br />

it first comes out of the oven, until eating theirs. That was a<br />

family consensus not just mine.<br />

My top favorite thing for the year is not new - spending<br />

time with family and friends. I listened to a Christmas special<br />

with Hugh Bonneville, the father on Downton Abbey and<br />

the Paddington Bear movies. A comment he made has hit<br />

home and is something I want to remember to do. He said<br />

that at Christmas when his family and friends get together<br />

they “raise a glass” in memory of those who are no longer<br />

with them and share memories about them to include them<br />

in their holiday gathering. I’m sorry I haven’t made a habit<br />

of this in the past, but I will do it in the future. Our kids had<br />

already left but in phone conversations I made a point to<br />

share some memories of my mom that they had not heard.<br />

Our son shared that his wife’s mother had fled Nazi<br />

Germany as a young child with her mother and siblings<br />

after their father abandoned them. She had written her<br />

memories and given a copy to all her grandchildren. So my<br />

challenge to you and myself is to do better sharing memories<br />

good and bad. Let’s keep family members alive in<br />

more than just our hearts by sharing their stories in the new<br />

year.<br />

Irene Hampton earned a certificate in Genealogy<br />

from Brigham Young University and worked as<br />

the Genealogical/Local history Researcher for the<br />

Pasquotank-Camden Library for over 12 years. She<br />

has also abstracted and published “Widow’s Years<br />

Provisions, 1881-1899, Pasquotank County, North<br />

Carolina”; “1840 Currituck, North Carolina Federal<br />

Census” and “Record of Marriages, Book A (1851-<br />

Sleep consistency<br />

You harp on the kids about the importance of a good night’s<br />

sleep, but when it comes to your own sleep, it’s often the<br />

first thing that’s sacrificed. Sleep deprivation is common<br />

among moms for a variety of reasons. Make it a priority<br />

to get 7 or 8 hours of quality rest each night. Keeping the<br />

bedroom quiet, cool, dark and free from the distractions of<br />

devices such as cell phones and tablets can help you relax<br />

and sleep.<br />

Annual physicals<br />

Just like with your kids, proactively seeing a doctor every<br />

year can help you tackle health issues head on rather than<br />

putting them off until they become a bigger problem. During<br />

wellness visits, your doctor will use health indicators like<br />

weight, blood pressure and heart rate to screen for common<br />

conditions such as diabetes and heart disease. Doctors can<br />

then recommend treatments to help you stay healthy and<br />

feel your best.<br />

Fill prescriptions<br />

Your doctor’s treatment plan may include a prescription<br />

medication. Doctors advise that it’s important to fill and use<br />

the medication as prescribed. If you are not insured, or if<br />

your health insurance plan doesn’t cover the medication you<br />

were prescribed, you can check a free prescription savings<br />

Roth vs. Traditional 401(k): Which Is Right<br />

For You?<br />

For many years, employees of companies that offered 401(k) plans only<br />

faced a couple of key decisions – how much to contribute and how to<br />

allocate their dollars among the various investment options in their plan.<br />

But in recent years, a third choice has emerged: the traditional versus Roth<br />

401(k). Which is right for you?<br />

To begin with, you need to understand the key difference between the<br />

two types of 401(k) plans. When you invest in a traditional 401(k), you<br />

put in pre-tax dollars, so the more you contribute, the lower your taxable<br />

income. Your contributions and earnings grow tax-deferred until you begin<br />

taking withdrawals, which will be taxed at your ordinary tax rate. With a<br />

Roth 401(k), the situation is essentially reversed. You contribute after-tax<br />

dollars, so you won’t lower your taxable income, but withdrawals of contributions<br />

and earnings are tax-free at age 59½, as long as you’ve held the<br />

account at least five years.<br />

So, now that you’ve got the basics of the two types of 401(k) plans,<br />

which should you choose? There’s no one right answer for everyone. You<br />

essentially need to ask yourself these questions: When do you want to pay<br />

taxes? And what will your tax rate be in the future?<br />

If you’re just starting out in your career, and you’re in a relatively low<br />

income tax bracket, but you think you might be in a higher one when you<br />

retire, you might want to consider the Roth 401(k). You’ll be paying taxes<br />

now on the money you earn and contribute to your Roth account, but you’ll<br />

avoid being taxed at the higher rate when you start taking withdrawals.<br />

Conversely, if you think your tax rate will be lower when you retire, you<br />

might be more inclined to go with the traditional 401(k), which allows you to<br />

avoid paying taxes on your contributions now, when your tax rate is high.<br />

Of course, you can see the obvious problem with these choices – specifically,<br />

how can you know with any certainty if your tax bracket will be lower<br />

or higher when you retire? Many people automatically assume that once<br />

they stop working, their tax liabilities will drop, but that’s not always the<br />

case. Given their sources of retirement income from investment accounts<br />

and Social Security, many people see no drop in their tax bracket once<br />

they retire.<br />

Since you can’t see into the future, your best move might be to split the<br />

difference, so to speak. Although not all businesses offer the Roth 401(k)<br />

option, many of those that do will allow employees to divide their contributions<br />

between the Roth and traditional accounts. If you chose this route,<br />

you could enjoy the benefits of both, but you still can’t exceed the total<br />

annual 401(k) contribution limit, which for <strong>2019</strong> is $19,000, or $25,000 if<br />

you’re 50 or older.<br />

You may want to consult with your tax advisor before making any decisions<br />

about a Roth or traditional 401(k) – or Roth and traditional 401(k)<br />

– but in the final analysis, these are positive choices to make, because a<br />

401(k), in whatever form, is a great way to save for retirement.<br />

Try to take full advantage of it.<br />

New Life of Currituck<br />

have often said at the end of a year and the beginning of a<br />

I new one that I don’t really think to much of new year’s resolutions.<br />

Any time of the year is a good time to take the time to<br />

reflect and adjust things in your life for your health and wellbeing.<br />

Yet the end of this year has brought its challenges as two<br />

dear friends of ours passed away. It is difficult to see friends and<br />

loved ones pass at a time that is to be filled with joy and peace.<br />

My mind has flashed back 32 years ago at the passing of my<br />

grandfather whose birthday was December 25th. My grandfather<br />

seemed to see things in me that maybe I did not even see, or my<br />

parents did not see. Always the encourager even through failure<br />

he would find a way and words to make things better. In 1986<br />

Grandpa found out he had lung cancer he chose a quality of life<br />

over treatment at the time. Within a year he started to weaken<br />

and could no longer care for himself. My parents moved him into<br />

their house for care and that became overwhelming at times. So,<br />

we as grandchildren would come in and help at night to give Dad<br />

and Mom some rest. The thought was scary to me whether it was<br />

the reality of facing death or being uncomfortable with the responsibility<br />

of care I don’t know but you just did it anyway despite the<br />

fear. Being with Grandpa was not unusual I had worked beside<br />

him on the farm my whole life and for the last nine years of my<br />

marriage he often would walk to my house on Sunday afternoon<br />

to talk either interrupting me working on my cars or watching a<br />

football game.<br />

One night as I was sitting with him, he could not sleep so we<br />

began to talk. He asked me what my dreams were for my life,<br />

I quickly answered with some things I wanted to do. Grandpa<br />

listened carefully and quietly as always, it was dark, so I could not<br />

see his facial expressions. I stopped for a moment trying to think<br />

of something else to say and without hesitate he replied. Daniel<br />

the most important thing in life is a relationship with Jesus Christ<br />

....<br />

off to sleep. Two nights later I received a call saying Grandpa<br />

had passed away. Two weeks after the funeral one night I could<br />

not sleep with the last words of Grandpa ringing in my head, that<br />

night in the darkness of my room I made a choice to believe in<br />

those last words he had spoken to me. God has granted me the<br />

power through His Holy Spirit to restore the strained relationship<br />

with my parents, to see my children and grandchildren love Jesus<br />

like I do, and to serve the Church here in the States and other<br />

parts of the world. All because of a loving Grandpa who saw more<br />

in me then I saw in myself. This year I saw my children taking<br />

care of and loving on those families who lost dear ones and I<br />

could not help but be thankful for the legacy that was passed on<br />

to me. Now is the time to start a legacy of your own, I pray that<br />

you will. “But Jesus said, “The things that are impossible with<br />

people are possible with God.” Luke 18:27<br />

1975. I was a merchant seaman from 1982 through 1988.<br />

In between I dug ditches, washed dishes, sold used cars,<br />

and even drove a cab. I graduated from Elizabeth City<br />

State University in 1995 with a Bachelor of Science in Accounting.<br />

What differentiates MOAA from other military organizations<br />

with the Elizabeth City community and ROTC programs<br />

at local colleges.<br />

Lee-Jackson Day is a day set aside since <strong>Jan</strong>uary 19, 1904 to<br />

commemorate two of the south’s greatest leaders, Robert E.<br />

Lee and Thomas J. (Stonewall) Jackson on <strong>Jan</strong>uary 12, 2018<br />

and the whole 4-day weekend. The celebration began to honor<br />

the birthday of Robert E. Lee on <strong>Jan</strong>uary 19, 1889 and Stonewall<br />

Jackson’s remembrance was added to the holiday in 1904.<br />

Robert E. Lee was from Stafford West Moreland County in Virginia.<br />

His father, Henry Hall Lee was Light Horse Henry Lee who<br />

was a cavalry leader during the Revolution War. Robert was born<br />

in 1807 and passed in 1870. Known as the Marble Man, Robert<br />

E. Lee was the leading confederate General during the war of<br />

Northern Aggression. Offered the position of total Commanding<br />

General of all Yankee troops he refused it to stay with his native<br />

state of Virginia. Lee out witted and out fought every Yankee<br />

general put up against him but eventually had to give in to the<br />

Yankee atrocities of the actions of attrition and the overwhelming<br />

numbers. After the war he was named President of Washington<br />

College. Robert E. Lee passed on as one of the greatest soldier<br />

and General of his time had a stroke that took his life in 1870.<br />

Thomas Jonathan “Stonewall” Jackson was born <strong>Jan</strong>uary 21,<br />

1824 in Clarksburg, Virginia (which later became West Virginia).<br />

He graduated from West Point in 1846 where he first met Robert<br />

E. Lee during the Mexican-American War where Jackson was a<br />

second Lieutenant and later promoted to Major. In 1851 Jackson<br />

resigned his military commission and accepted a teaching<br />

position at Virginia Military Institute in Lexington, VA. As professor<br />

of natural and experimental philosophy (Theology) and instructor<br />

of artillery.<br />

At the outbreak of the War of Northern Aggression Jackson<br />

accepted orders as a Colonel of Virginia Militia and then was<br />

promoted to Brigadier General and led troops to the epic battle<br />

of “Stonewall”. This was in 1861 and his charge saved the day<br />

and sent the Yankees to running with their tails between their<br />

legs all the way back to Washington D.C. This brought on another<br />

promotion for Jackson to Major General. He was dispatched to<br />

the Shenandoah Valley and then to Chancellorsville, VA where he<br />

out flanked the Yankee army and again got them fleeing like rats.<br />

That same night of May 2, 1863 Jackson was shot and passed<br />

away on May 10th.<br />

So fly your flags and banners high on <strong>Jan</strong>uary 18-21, 2018 in<br />

honor of these great men.<br />

5 tips for avoiding the cold & flu this year<br />

(BPT) - Last year we experienced an unprecedented cold<br />

and flu season. The CDC reported an early flu season and<br />

much higher than expected rates of hospitalizations for the<br />

flu. It is never too early to start preparing your home and<br />

workplace to prevent the spread of this viral and infectious,<br />

but also life-threatening, illness. These tips can help prevent<br />

you and your family from catching the virus.<br />

Disinfect<br />

Flu-related viruses can live outside the body for a long period<br />

of time, which is why it’s important to disinfect surfaces in<br />

your home and workplace. Germs are everywhere and disinfecting<br />

works by using chemicals to kill germs on surfaces or<br />

objects. This will decrease the spread of germs and subsequently<br />

reduce the risk of infection. The CDC suggests daily<br />

sanitizing surfaces and objects that are touched often, such<br />

as desks, countertops, doorknobs, computer keyboards,<br />

hands-on learning items, faucet handles, phones and toys.<br />

Wash your hands<br />

The flu is a very contagious disease so it’s important to stop<br />

the spread of the related viruses. Washing your hands can<br />

help limit the spread by killing some of the viruses and thus<br />

decreasing your risk for infection. Wash them with warm<br />

water and soap for 60 seconds or longer as your best way to<br />

avoid germs. Make it a habit to wash your hands regularly at<br />

work and at home.<br />

Eat healthy foods<br />

Keeping nutritious food at your home and workplace and<br />

eating balanced meals can strengthen your immune system.<br />

With a healthier immune system, you will be better equipped<br />

to fight off infections and actually decrease the risk of getting<br />

sick. Eating balanced meals and a diet rich in fruits and vegetables<br />

can strengthen your immune system and help you<br />

avoid the risk of catching the flu.<br />

Get vaccinated<br />

Getting vaccinated will overwhelmingly decrease the risk of<br />

getting the flu this cold and flu season, thus keeping your<br />

home and workplace safer environments in general. It’s the<br />

best defense against the flu, and getting it early can help<br />

decrease the chance of you getting sick. According to the<br />

CDC, it’s best to get vaccinated before flu begins spreading<br />

in your community. The flu vaccine takes at least two weeks<br />

to become fully effective, so getting the shot early is highly<br />

recommended.<br />

Avoid the waiting room<br />

Crowded waiting rooms can expose you to other people’s<br />

germs along with spreading yours. To avoid these spaces<br />

and get the treatment you or your dependents need, consider<br />

using a telemedicine service to avoid the waiting room<br />

altogether this flu season.<br />

see in the grocery store. In Spanish, the word simply<br />

means cheese, and Hispanic cheeses rival anything else<br />

you might see in the supermarket aisles, with a wide range<br />

of flavor profiles to tempt any palate.<br />

Cacique, the number one brand of Hispanic cheeses, chorizos<br />

and cremas, wants to give quesos like Queso Fresco,<br />

Panela, Oaxaca and Cotija their day in the sun. Just like<br />

Mexican cuisine, Hispanic cheeses have great crossover appeal.<br />

“American cooks may not be as familiar with Hispanic<br />

cheeses as they are with others at the grocery store,”<br />

Sánchez says. “The names might come across as intimidating,<br />

and they may not be sure of how to incorporate<br />

these cheeses into their cooking routine. But there’s really<br />

no mystery. Hispanic cheeses can be used for a wide range<br />

of dishes in your everyday routine, and not just Mexican<br />

classics.”<br />

Here’s a primer in Queso 101.<br />

Queso Fresco, one of the most widely used cheeses in<br />

Mexican cooking, is a soft, fresh cheese similar in flavor and<br />

texture to ricotta, but with more savory, milky notes. Mexican<br />

cooks use it to top or stuff dishes like tacos, empanadas and<br />

enchiladas. But you don’t need to limit it to Mexican cuisine.<br />

Crumble it on hot dogs, sprinkle it on soups and chowders,<br />

or make a Mexi-grilled cheese with queso fresco and green<br />

chiles.<br />

Panela has a mild and creamy flavor, and is a crumbly, curdstyle<br />

basket cheese - similar to a cross between paneer<br />

and halloumi, but less salty. This cheese is great for baking,<br />

grilling or frying. Fry a slice of panela cheese in a pan to<br />

achieve a perfectly seared snack with a gooey, delicious<br />

inside. Or, make a baked dip! Cover the cheese with roasted<br />

salsa, then bake it in a 375-degree oven for 20 minutes.<br />

Enjoy with chips or bread.<br />

Cotija, named after the town where it originated, is like Parmesan<br />

and dry feta but creamier, with a savory flavor and<br />

crumbly texture. Use it just like you’d use Parmesan. Crumble<br />

it on salads, top pasta dishes with it, or even substitute<br />

Cotija for Parm in Fettuccine Alfredo, adding a dash of chili<br />

powder or chipotle for a little Mexican-inspired zing.<br />

Oaxaca has a mellow, earthy flavor and buttery texture,<br />

similar to mozzarella, with a superior melt. Use it just like<br />

you’d use its Italian cousin, including pizza, lasagna, melting<br />

on sandwiches or snacking.<br />

Manchego has a nutty, earthy flavor and creamy texture.<br />

Similar to Colby in tanginess and cheddar in aroma, Manchego<br />

will be the star of your cheese board. Or bake it into<br />

a frittata, shred it for mac and cheese, or use it anywhere<br />

you’d use cheddar.<br />

Cotija-Crusted Quesadilla<br />

Ingredients:<br />

· Non-stick spray<br />

· ½ cup Cacique® Cotija, crumbled<br />

· 1 cup Cacique® Queso Quesadilla, shredded<br />

· 4 flour tortillas<br />

Directions:<br />

1. First spray a skillet with non-stick spray, then sprinkle 1<br />

tablespoon of crumbled Cotija evenly around the skillet and<br />

cover with a tortilla.<br />

2. Next, sprinkle 1/2 cup of shredded Cacique® Queso Quesadilla<br />

over the top of the tortilla and cover with a second<br />

tortilla. Press down and let this brown for 1 minute.<br />

3. With a spatula, lift up the entire quesadilla and sprinkle<br />

remaining Cotija evenly around the skillet. Then flip and let<br />

the other side brown for 30 seconds. Cut quesadilla into four<br />

wedges, plate it and add whatever garnish you’d like.<br />

The Mary Kay Foundation Honors Domestic<br />

Violence Awareness Month by Issuing<br />

$3 Million in Grants to 150 Domestic Violence<br />

Shelters Across the Country<br />

Engelhard, NC (October 3, 2018) – In support of<br />

Domestic Violence Awareness Month, The Mary Kay<br />

FoundationSM announced today it is awarding $3 million<br />

in grants to 150 domestic violence shelters across the<br />

country. Hyde County Hotline, Inc. has received a<br />

$20,000 unrestricted grant to support local survivors of<br />

domestic violence in Hyde County, North Carolina. This<br />

year’s grant contribution brings the Foundation’s total<br />

investment in its shelter grant program to $50 million.<br />

The Mary Kay Foundation was established in 1996<br />

with the overarching purpose of supporting issues impacting<br />

women. In 2000, The Foundation expanded to<br />

include ending domestic violence as part of its mission.<br />

The Foundation is committed to funding the life-saving<br />

work of women’s shelters and the annual shelter grant<br />

program has helped finance critical needs including<br />

emergency shelter, transitional housing, counseling and<br />

legal aid. All of these resources support women and children<br />

as they seek refuge and relief on their journey to an<br />

abuse-free life. This year, more than 1,200 organizations<br />

applied for the Mary Kay Foundation shelter grants.<br />

“At Mary Kay, we believe in helping women improve their<br />

circumstances and live their best lives. One in four women<br />

will experience domestic violence in her lifetime and<br />

it is our responsibility to support the women’s shelters<br />

that aid these survivors,” said President of The Mary Kay<br />

Foundation Board of Directors Michael Lunceford. “At<br />

the heart of The Foundation’s work is the shelter grant<br />

program which is actively supported by our independent<br />

sales force. We’re proud that our commitment makes<br />

such a powerful impact in local communities and in the<br />

lives of domestic violence survivors across the country.”<br />

According to the National Network to End Domestic Violence,<br />

more than 72,000 adult and child victims receive<br />

domestic violence services across the United States in<br />

just one day. Unfortunately, in the same period of time,<br />

more than 11,000 requests for services are unmet due to<br />

a lack of resources.<br />

The purpose of Hyde County Hotline, Inc. is to work<br />

to eliminate domestic abuse and sexual victimization<br />

and provide safe shelter in Hyde County, North Carolina<br />

through the collaborative efforts of a compassionate<br />

community. We promote dignity, respect and safety at<br />

home resulting in safer communities. In addition to safe<br />

shelter Hyde County Hotline provides crisis intervention,<br />

advocacy, safety planning, court advocacy, financial<br />

planning, assistance in obtaining further education &<br />

referrals to counseling for survivors of domestic violence<br />

and sexual assault.<br />

The need for shelter services in Hyde County is<br />

tremendous! Between <strong>Jan</strong>uary 1, 2018 and November<br />

30, 2018 Hyde County Hotline served 126 victims of<br />

domestic violence in person and received 584 domestic<br />

violence related crisis calls and served 84 victims of sexual<br />

assault in person and received 601 sexual assault<br />

related crisis calls. (Total number of crisis calls received<br />

may reflect multiple calls from one victim.)<br />

Hyde County Hotline is very blessed to have received<br />

this generous grant of $20,000.00 from the Mary Kay<br />

Foundation and we are very grateful. Our agency continues<br />

to provide compassionate services to all victims<br />

of domestic violence and sexual assault in Hyde County.<br />

The challenges we face are unique to the geographical<br />

isolation and distressed economy of our area and grants<br />

such as the one we have received from the Mary Kay<br />

Foundation are critically important to our ability to assist<br />

The truth behind food labels<br />

Behind the label: Decoding certifications in the shopping aisle<br />

(BPT) - When we visit the grocery store, we’ve become<br />

accustomed to a dizzying array of options. There are<br />

labels touting everything from food safety to environmental<br />

and ethical standards. Making the best decision<br />

for your family, your health and the good of the planet is<br />

important, but how can you possibly keep track of what<br />

all these labels really mean?<br />

Voting with your wallet<br />

Today’s wired world allows us to be more conscious of<br />

the impacts of our choices than ever before. Shopping<br />

isn’t just about putting food on the table. It’s a daily opportunity<br />

to support the kind of world we want to live in.<br />

Our actions and what we choose to buy can impact not<br />

only the planet’s future, but our social economy as well.<br />

A 2017 study by Cone Communications reported that<br />

60 percent of Americans believe businesses can be key<br />

drivers for social and environmental change. Whether<br />

it’s phasing out plastic bags and straws or carrying more<br />

ethically traded products, businesses are showing consumers<br />

that they are listening.<br />

Businesses aren’t doing this just because you asked;<br />

they’re doing it because it’s the right thing. Many of them<br />

are putting their values on full display in the form of labels<br />

that make it easier for you to navigate the shopping<br />

aisle.<br />

“As shoppers we are often in a hurry, so much so that<br />

we might not even be aware of how quickly we make<br />

a decision. That’s where clear labeling can help,” said<br />

Rebecca Walker Reczek, professor of marketing at Ohio<br />

State University. “Without it you’d need to research each<br />

product and the time can add up.”<br />

The truth behind the labels<br />

So what gives? Are organic and natural the same thing?<br />

Does a green label mean it’s better for the environment?<br />

What does “fair trade” really mean? These are just some<br />

of the questions many consumers are asking when they<br />

make their way down the grocery aisle.<br />

Most of us are aware of those little labels on our food,<br />

but we often don’t understand what they mean. Like any<br />

choice, the key is education. To shop in accordance with<br />

our values, we must understand what the label stands for<br />

and how it’s been verified. And yes - verification matters.<br />

Marketing savvy and great design can create convincing<br />

packaging and badges that represent a company’s promise,<br />

but often they aren’t based on rigorous standards.<br />

On the other hand, certification labels mean that an<br />

independent organization has audited and checked that a<br />

company is following a standard set of rules - whether it’s<br />

fair trade, responsible fishing, GMO avoidance or better<br />

treatment of workers.<br />

For example, the USDA organic label means that an<br />

independent organization has audited the farmer to make<br />

sure they abide by national organic standards. On the<br />

other hand, the term ‘natural’ has no set definition or<br />

standards. Neither the FDA nor the USDA has set rules<br />

for this term. Pure, natural, green, direct trade - all these<br />

terms conjure an image, but are not audited and don’t<br />

refer to any established standard. Essentially, they are<br />

just words.<br />

A guide to the goods<br />

Everyone has a right to know what is in their food and<br />

where it comes from. Look to these certifications to guide<br />

your next shopping trip:<br />

* Fairtrade - The Fairtrade certification ensures safe and<br />

fair working conditions, prohibits child labor and provides<br />

farmers and workers with a fairer price or better wages.<br />

Fairtrade products originate in developing and least developed<br />

countries where farmers and workers are often<br />

marginalized.<br />

Where found: Coffee, chocolate, bananas, sugar, avocados,<br />

tea and more<br />

* MSC Certified - By choosing seafood with the MSC<br />

blue fish label you are supporting independently certified<br />

sustainable fisheries. Their good management practices<br />

help ensure fish stocks and habitats are healthy and<br />

fishing community livelihoods are secure.<br />

Where found: Wild caught fish and seafood, fish oil supplements,<br />

pet food<br />

* Responsibly Grown, Farmworker Assured - The<br />

EFI-certified label indicates that the workers who harvested<br />

your food are treated with respect, compensated fairly<br />

and engaged to identify problems that impact the safety<br />

of your food.<br />

Where found: Fresh fruits and vegetables<br />

* Non-GMO Project Verified - The Non-GMO Project<br />

Standard is North America’s most rigorous and reliable<br />

standard for GMO avoidance, set apart by its transparency,<br />

trustworthiness, ongoing testing and third-party<br />

status. The best way to avoid consuming GMOs is to<br />

look for the butterfly.<br />
