FERMENT<br />

Wild Yeast Fermentation has been<br />

around as long as the hills in which<br />

they grow, but a resurgence of interest<br />

into this process in winemaking has<br />

become apparent by consumers.<br />

Fermented naturally using the<br />

indigenous yeasts from the vineyard<br />

environment, as well as the winery,<br />

eliminating most of the artificial<br />

processes that can happen in<br />

producing a bottle of wine.<br />

By not inoculating the wine with<br />

cultured yeast to spark fermentation,<br />

the wine can produce a softer, more<br />

complex flavour. It takes a little more<br />

time, but some would say that it is<br />

worth every minute.<br />

flavoured, full of peach, apricot and pear.<br />

Crisp and zesty, aromas of nashi pears and<br />

candied citrus. Rich fruit flavours that are<br />

balanced by a crisp acidity, which gives the<br />

wine a lingering finish.<br />

Juicy cherry aromas with beautifully<br />

balanced soft tannins and plush, textural<br />

palate, with a bold finish.<br />

A vibrant wine with rich red-berry aromas.<br />

A palate bursting with flavours of strawberry,<br />

raspberry, boysenberry and dark cherry, all<br />

complemented by subtle savoury and toasty<br />

notes. Layers of texture and rich flavours<br />

give this wine a voluminous mouth-feel.<br />

A concentrated nose of spice, pepper and<br />

leather is complimented by dark forest fruits<br />

like dark mulberries and blackberries on<br />

the palate, with great length, texture and<br />

integrated tannin.<br />

Dark red cherry and fragrant dusty spice<br />

notes on the nose. Fine and long, with cherry<br />

and blackberry fruits leading to succulent<br />

tannins. Lingering maraschino cherry and<br />

liquorice mesh with subtle cedary oak.<br />
