WILD
FERMENT
Wild Yeast Fermentation has been
around as long as the hills in which
they grow, but a resurgence of interest
into this process in winemaking has
become apparent by consumers.
Fermented naturally using the
indigenous yeasts from the vineyard
environment, as well as the winery,
eliminating most of the artificial
processes that can happen in
producing a bottle of wine.
By not inoculating the wine with
cultured yeast to spark fermentation,
the wine can produce a softer, more
complex flavour. It takes a little more
time, but some would say that it is
worth every minute.

The palate is finely textured and richly
flavoured, full of peach, apricot and pear.
Crisp and zesty, aromas of nashi pears and
candied citrus. Rich fruit flavours that are
balanced by a crisp acidity, which gives the
wine a lingering finish.
Juicy cherry aromas with beautifully
balanced soft tannins and plush, textural
palate, with a bold finish.
A vibrant wine with rich red-berry aromas.
A palate bursting with flavours of strawberry,
raspberry, boysenberry and dark cherry, all
complemented by subtle savoury and toasty
notes. Layers of texture and rich flavours
give this wine a voluminous mouth-feel.
A concentrated nose of spice, pepper and
leather is complimented by dark forest fruits
like dark mulberries and blackberries on
the palate, with great length, texture and
integrated tannin.
Dark red cherry and fragrant dusty spice
notes on the nose. Fine and long, with cherry
and blackberry fruits leading to succulent
tannins. Lingering maraschino cherry and
liquorice mesh with subtle cedary oak.
