Bit about you… 

I have lived in Edinburgh since I was 16 when 

we moved up from Solihull in England. I now 

live in Colinton with my husband and nearly 3 

year old daughter. I have been at Maddie and 

Marks for close to 2 years.

Maddie and Marks is an independent children’s 

shoe shop established 12 years ago. Our aim is

Tomato and toasted sourdough salad with infused garlic and anchovy olive oil dressing 

This will serve 4 as a side dish for any meal. 

Ingredients 

4 crushed garlic cloves 

6 anchovy fillets in oil drained and chopped 

110ml olive oil, 100g sourdough crusts on and cut into 2cm chunks 

500g ripe tomatoes – red, yellow, green if you can find them cut into 4 cm chunks or cherry 

tomatoes halved 

1 lemon zested and also squeezed 

1tbsp capers roughly chopped 

5g chopped parsley, 5g basil leaves chopped and some also used for decorating 

1 tsp chilli flakes, Flaked sea salt to taste 

Method 

Put the 1 st three ingredients into a pan along with ½ tsp salt. Heat the oil and cook gently 

without burning the garlic and anchovies for 10 minutes which you want to be soft to mash 

them. Don’t let the oil bubble as this means the oil is getting too hot. You will begin to smell 

the gorgeous rich aroma of the infused oil. Leave to one side. 

Place the bread chunks onto a tray and toast in the oven till well golden and brown. You do 

want the bread to be crisp. 

Once ready add the bread chunks to the oil and mix together well. Take out the bread and 

place into your serving bowl. Leave the excess oil garlic and anchovy for later. 

Mix the tomatoes, lemon zest, lemon juice, capers, parsley and mint together and sprinkle 

with pepper. 

Once you are ready to serve, add the tomato mixture to the bowl of bread. Mix and toss 

well together. Drizzle over the rest of the infused oil, add the chilli flakes and you are ready 

to serve. I also add a sprinkling of Maldon salt too over the top which can be omitted if 

wished. Enjoy the taste of sunshine in a bowl!

Trying new things to rejuvenate yourself 

How often do you try something new rather than the same old same old? Cooking can become a 

bit like that. Weekly menu’s, with the same shopping lists all makes life lovely and easy as we 

don’t need to think too much about what we are doing. But how inspiring is that? I know I can be 

like that too with my family meal cooking but actually for us to experience new tastes and to experience 

different ways of cooking, we need to put in a bit of effort. I spend loads of time looking 

through recipe’s and doing menu’s for my clients all the time, which is great as it pushes me outside 

my comfort zone, quite often cooking new dishes for the first time at events which definitely 

put’s the pressure on. I don’t do so much of that with my children which I’m realising I need to 

focus on. 

We’ve just had a holiday weekend with the most glorious sunshine and warmth. We have over the 

weekend done things that have been fun, inspiring and really enjoyable. It’s made me realise that 

life can be less stressful if we put a bit of fun and play into our lives. Nothing we were doing was 

new.. swinging on swings, swimming in the cold sea, jumping on trampolines. Having a picnic in 

the sunshine using my Granny’s picnic basket brought a bit of nostalgia to the picnic rug conversation. 

Eating outside gives a new energy to meals times. Doing a few new and playful things has 

made me feel lighter and happier and rejuvenated in myself. So how about making new dishes and 

playing a little with food to stop the same old same old? 

One of the new recipes I made was a delicious garlic and basil tomato and bread salad. Simple but 

just gorgeous on taste. 

Olive oil is infused with garlic and anchovies, herbs are used in good quantity, ripe red and yellow 

tomatoes are cut in half to give gorgeous colour with tasty toasted sourdough chunks. This is a 

bright, inspiring tasty salad which can be used as a selection of sides with a summer roast, as a 

salad to be easily transported for your sunny day picnic or with a savoury tart, cold meats, or hummus 

and avocado dips. The list really is endless. My children loved this… as did the whole family 

which I was delighted about. This dish will definitely be on my list of salads to eat this summer.

dine and donate appeal has collected 

enough for 66,366 meals for the girls at 

ASRITHA Rainbow Home in Hyderabad, 

India. The Home rescues vulnerable girls 

from the streets. Diners raised the funds 

50p to their bill, raising the 

amount of £11,061.

is a bereavement support 

programme started 

by Barclay Viewforth 

Church for those in the 

community who have suffered loss. The 

next Pathways programme will start on 

Monday 19 August, at Barclay Viewforth 

Church (Pillar Hall). This is best suited to 

those in their first year of loss and are designed 

to build people's confidence and 

for the bereavement journey.

Bit about you… I am 26 years old, half Lebanese 

and half Scottish. I studied business management 

at Edinburgh Napier university and 

started Hummus café in September 2018. 

Bit about starting Hummus... Being brought 

up on a Lebanese diet, I always knew that we 

had wonderful recipes that people would love, 

and it was my ambition to share our food with 

everybody. Most Lebanese food is vegan and 

with the change in the planet’s climate and 

people’s thinking it felt like a no brainer to go 

for the whole vegan, non-meat menu. 

Best tip for starting your own business... 

find a unique idea that you are extremely confident 

and passionate about and do not hesitate 

to put it into action. 

Most popular dish at Hummus? 

Falafel 

Best health tip… cut out as much meat/dairy 

as you can and replace them with a variety of 

vegetables and I guarantee that you will feel 

like a brand new person. 

Spare time... the gym, going out for nice dinners 

and playing football with my team. 

Favourite things to do in Edinburgh… 

Take long walks up the hills in Holyrood Park 

and visit the cameo cinema. 

Favourite place to eat/drink coffee... 

Hummus. Just kidding, my favourite 

place to eat out is Ting Thai caravan and 

coffee at Williams & Johnson café.
