I have lived in Edinburgh since I was 16 when<br />

we moved up from Solihull in England. I now<br />

live in Colinton with my husband and nearly 3<br />

year old daughter. I have been at Maddie and<br />

Marks for close to 2 years.<br />

Maddie and Marks is an independent children’s<br />

shoe shop established 12 years ago. Our aim is<br />

Tomato and toasted sourdough salad with infused garlic and anchovy olive oil dressing<br />

This will serve 4 as a side dish for any meal.<br />

Ingredients<br />

4 crushed garlic cloves<br />

6 anchovy fillets in oil drained and chopped<br />

110ml olive oil, 100g sourdough crusts on and cut into 2cm chunks<br />

500g ripe tomatoes – red, yellow, green if you can find them cut into 4 cm chunks or cherry<br />

tomatoes halved<br />

1 lemon zested and also squeezed<br />

1tbsp capers roughly chopped<br />

5g chopped parsley, 5g basil leaves chopped and some also used for decorating<br />

1 tsp chilli flakes, Flaked sea salt to taste<br />

Method<br />

Put the 1 st three ingredients into a pan along with ½ tsp salt. Heat the oil and cook gently<br />

without burning the garlic and anchovies for 10 minutes which you want to be soft to mash<br />

them. Don’t let the oil bubble as this means the oil is getting too hot. You will begin to smell<br />

the gorgeous rich aroma of the infused oil. Leave to one side.<br />

Place the bread chunks onto a tray and toast in the oven till well golden and brown. You do<br />

want the bread to be crisp.<br />

Once ready add the bread chunks to the oil and mix together well. Take out the bread and<br />

place into your serving bowl. Leave the excess oil garlic and anchovy for later.<br />

Mix the tomatoes, lemon zest, lemon juice, capers, parsley and mint together and sprinkle<br />

with pepper.<br />

Once you are ready to serve, add the tomato mixture to the bowl of bread. Mix and toss<br />

well together. Drizzle over the rest of the infused oil, add the chilli flakes and you are ready<br />

to serve. I also add a sprinkling of Maldon salt too over the top which can be omitted if<br />

wished. Enjoy the taste of sunshine in a bowl!<br />

Trying new things to rejuvenate yourself<br />

How often do you try something new rather than the same old same old? Cooking can become a<br />

bit like that. Weekly menu’s, with the same shopping lists all makes life lovely and easy as we<br />

don’t need to think too much about what we are doing. But how inspiring is that? I know I can be<br />

like that too with my family meal cooking but actually for us to experience new tastes and to experience<br />

different ways of cooking, we need to put in a bit of effort. I spend loads of time looking<br />

through recipe’s and doing menu’s for my clients all the time, which is great as it pushes me outside<br />

my comfort zone, quite often cooking new dishes for the first time at events which definitely<br />

put’s the pressure on. I don’t do so much of that with my children which I’m realising I need to<br />

focus on.<br />

We’ve just had a holiday weekend with the most glorious sunshine and warmth. We have over the<br />

weekend done things that have been fun, inspiring and really enjoyable. It’s made me realise that<br />

life can be less stressful if we put a bit of fun and play into our lives. Nothing we were doing was<br />

new.. swinging on swings, swimming in the cold sea, jumping on trampolines. Having a picnic in<br />

the sunshine using my Granny’s picnic basket brought a bit of nostalgia to the picnic rug conversation.<br />

Eating outside gives a new energy to meals times. Doing a few new and playful things has<br />

made me feel lighter and happier and rejuvenated in myself. So how about making new dishes and<br />

playing a little with food to stop the same old same old?<br />

One of the new recipes I made was a delicious garlic and basil tomato and bread salad. Simple but<br />

just gorgeous on taste.<br />

Olive oil is infused with garlic and anchovies, herbs are used in good quantity, ripe red and yellow<br />

tomatoes are cut in half to give gorgeous colour with tasty toasted sourdough chunks. This is a<br />

bright, inspiring tasty salad which can be used as a selection of sides with a summer roast, as a<br />

salad to be easily transported for your sunny day picnic or with a savoury tart, cold meats, or hummus<br />

and avocado dips. The list really is endless. My children loved this… as did the whole family<br />

which I was delighted about. This dish will definitely be on my list of salads to eat this summer.<br />

Bit about you… I am 26 years old, half Lebanese<br />

and half Scottish. I studied business management<br />

at Edinburgh Napier university and<br />

started Hummus café in September 2018.<br />

Bit about starting Hummus... Being brought<br />

up on a Lebanese diet, I always knew that we<br />

had wonderful recipes that people would love,<br />

and it was my ambition to share our food with<br />

everybody. Most Lebanese food is vegan and<br />

with the change in the planet’s climate and<br />

people’s thinking it felt like a no brainer to go<br />

for the whole vegan, non-meat menu.<br />
