Community Board will make<br />

a recommendation to the city<br />

council on what it wishes to see in<br />

the new Hornby Library, Service<br />

Centre and South West Pool.<br />

The board will also look to confirm<br />

the eastern end of Kyle Park<br />

as the location of the new facility<br />

and instruct city council staff to<br />

begin the design concept process.<br />

It follows final approval being<br />

granted for the reclassification<br />

and changes to be made to Kyle<br />

Park’s management plan to allow<br />

for the facility to be built on the<br />

land.<br />

A component schedule discussing<br />

priorities for the facility has<br />

been outlined in a report by city<br />

council staff and will be presented<br />

to the board for approval.<br />

City council staff have already<br />

guaranteed a multi-purpose lane<br />

pool, a learn to swim pool, a toddlers’<br />

wet play area, a customer<br />

services area and the main library<br />

space will be constructed.<br />

Community Board recently recommended<br />

a raft of changes to<br />

speed limits, which will go to the<br />

city council for final approval.<br />

However, city councillor Anne<br />

Galloway said residents should<br />

not feel forgotten as the issue of<br />

the lowering the speed limit on<br />

the road is being dealt with.<br />

Lodestar Ave will instead be<br />

included in a review of the speed<br />

limits around the Wigram Skies<br />

area.<br />

For the past four years, noisy<br />

trucks on Lodestar Ave has<br />

been a long-standing issue for<br />

residents living at the retirement<br />

village.<br />

The matter came to a head<br />

in 2017 when prominent rest<br />

home owner and businessman<br />

John Tooby verbally abused his<br />

tenants when they put up a sign<br />

complaining about noisy trucks.<br />

In spite of pleas from residents,<br />

heavy vehicle restrictions<br />

have not been placed on the<br />

road.<br />

This is after city council staff<br />

discovered through an assessment<br />

a significant decrease of<br />

heavy vehicles between 2017-<br />

2018, Mr Thomas said.<br />

A Lady Wigram resident,<br />

who did not wish to be named,<br />

said while she was disappointed<br />

Lodestar Ave wasn’t included in<br />

the last review, she was pleased it<br />

was still on the table.<br />

Resident Chris Havill said it is<br />

a good thing the speed limit will<br />

be looked at but he thought it<br />

was “strange” it wasn’t included<br />

in the last review.<br />

“The only one everyone has<br />

been talking about and it is the<br />

one that was left off . . . once the<br />

hospital and the dementia unit<br />

are built you don’t want cars<br />

whizzing up and down there at a<br />

fair rate of knots,” he said.<br />

A hospital, dementia unit and<br />

rest home are planned to be<br />

built along the residential street<br />

as part of the village’s ongoing<br />

developments.<br />

Bob Rush, who lives at the<br />

village, said lowering the speed<br />

limit would help, but not solve,<br />

the issues with the road.<br />

“The original problem is<br />

basically the speed of vehicles<br />

coming down here, plus the<br />

trucks using the road as a bypass<br />

– it was never designed to have<br />

trucks down here,” he said.<br />

today. A new bus shelter will also<br />

be installed at the existing stop on<br />

102 Straven Rd. It was approved<br />

by the Fendalton-Waimairi-<br />

Last week, the team faced off<br />

of the premier 2 competition,<br />

and scraped by with a one-goal<br />

win, beating St Nicholas 41-40.<br />

The girls will take on Technical<br />

B in the final tonight at Pioneer<br />

Stadium at 6.30pm, and it is set to<br />

be a tough battle.<br />

Technical B will go into the final<br />

as firm favourites, after playing<br />

the final round of the competition<br />

unbeaten, with a dominant 25-goal<br />

win against the school team the<br />

last time they faced off.<br />

The winner of the final will be<br />

promoted to premier 1 next season,<br />

and CGHS has not had a team play<br />

in the top grade since about 2003.<br />

The team has six year 13 players,<br />

and Mrs Brown said losing their<br />

experience will impact the team<br />

next season, but there are promising<br />

young players in the junior<br />

teams.<br />

The team is set to put on a<br />

strong showing at the South Island<br />

Secondary Schools netball competition<br />

next month, sitting at third<br />

place from last year’s tournament.<br />

The solution was sought after<br />

a petition was signed by more<br />

than 600 people calling for the<br />

intersection to be made safer for<br />

school pupils.<br />

Since May, traffic separators<br />

preventing vehicles from turning<br />

right when travelling in and<br />

out of Larsens Rd onto Halswell Rd<br />

have been in place.<br />

NZTA’s proposed permanent<br />

solution has a number of objectives<br />

including to install an electronic<br />

no-right turn sign which<br />

will only be active during school<br />

patrol times.<br />

A pedestrian refuge island will<br />

be installed and no-stopping<br />

lines will be extended.<br />

A raised painted island at<br />

Larsens Rd entrance will also<br />

be put in place to assist with<br />

safer pedestrian crossing and<br />

guide right-turning traffic onto<br />

Halswell Rd at off-peak times.<br />

In the meantime, the flexible<br />

barriers will remain until the<br />

changes are made.<br />

a good compromise between ensuring<br />

there is access for vehicles<br />

using the road and maintaining<br />

safety for children crossing<br />

Previous feedback NZTA<br />

received from the community<br />

showed the while the barriers<br />

increased safety, it also restricted<br />

access to join onto Halswell Rd,<br />

encouraged poor behaviours and<br />

increased travel times.<br />

“Obviously with the no turning<br />

in school hours, that is really<br />

important from our perspective<br />

because that is the key time for<br />

us and our children crossing the<br />

road,” Mr Cameron said.<br />

Mr Cameron agreed while<br />

the current trial is working well<br />

from a safety perspective, it has<br />

created access issues for the<br />

Quarry plan changes upset opponents<br />

for the controversial project.<br />

Fulton Hogan sent the<br />

Selwyn District Council and<br />

Environment Canterbury a<br />

series of revisions it wants to<br />

make to its original<br />

resource consent<br />

application for<br />

the 170ha Roydon<br />

Quarry.<br />

The changes<br />

include:<br />

•Decreasing the<br />

total active open<br />

area of the quarry<br />

from 40ha to a<br />

maximum of 26ha.<br />

•Originally the<br />

application sought<br />

to provide for up to<br />

1500 heavy vehicle<br />

movements per day<br />

with an average of<br />

1050 movements<br />

per day. But Fulton<br />

Hogan now wishes to amend the<br />

proposal to a daily limit of 800<br />

heavy vehicles.<br />

•Fulton Hogan initially<br />

intended to develop a new<br />

dedicated heavy vehicle access<br />

from Jones Rd and use the<br />

existing access off the road as<br />

a dedicated light vehicle access<br />

to the site. Instead, it wishes<br />

to provide a “shared” heavy<br />

and light vehicle access point<br />

meaning there will only be one<br />

access point.<br />

Now residents who have been<br />

fighting to stop the quarry<br />

from getting the green light are<br />

calling for all submitters to have<br />

the opportunity to respond to<br />

Fulton Hogan’s amendments.<br />

The hearing on the resource<br />

consent application is due to<br />

start on November 18.<br />

An ECan spokeswoman was<br />

unable to comment at this stage<br />

on whether the public could resubmit<br />

as it is still reviewing the<br />

new information received.<br />

Outspoken quarry opponent<br />

Simon Moore said the<br />

application should go back<br />

to “phase one” with this new<br />

information and everyone<br />

should have the chance to<br />

resubmit.<br />

“There should be no question<br />

about it. The application has<br />

changed so dramatically from<br />

what it first looked like when<br />

people submitted on it. If they<br />

don’t allow people to resubmit<br />

the whole hearing is a farce. It<br />

makes no sense, it’s not fair, it’s<br />

an absolute circus,” he said.<br />

The changes to the original<br />

proposal are part of the<br />

additional information on the<br />

resource consent application<br />

Fulton Hogan provided as<br />

requested by ECan and the<br />

district council.<br />

The additional information<br />

sought by two authorities from<br />

Fulton Hogan included the<br />

volume of groundwater which<br />

would be extracted from the<br />

quarry, birdstrike mitigations,<br />

and an update on draft<br />

conditions. Fulton Hogan has<br />

also provided more information<br />

on how its mobile processing<br />

plant will be used.<br />

Busy street to get crossing<br />

A CROSSING will be installed<br />

on a busy Halswell street in a<br />

bid to improve pedestrian safety.<br />

But while city council staff<br />

have confirmed a crossing will<br />

be constructed it will not be controlled<br />

like a zebra crossing.<br />

Its transport operations<br />

manager Steffan Thomas said a<br />

controlled crossing is not suitable<br />

at this location due to the<br />

low number of pedestrians that<br />

cross.<br />

THe Halswell Pharmacy has<br />

been calling for the crossing<br />

since March last year following<br />

a boom in development in the<br />

street over the past two years.<br />

The city council is planning<br />

to install a dropped kerb 4-5m<br />

north of the car park driveway,<br />

signage and a marked crossing<br />

estimating to cost between<br />

$2000-$3000.<br />

It is planned to be installed in<br />

the next financial year.<br />

past 10 years, it is in the last<br />

two years the road has become<br />

“I think it is a bit of a racetrack<br />

between Halswell Junction<br />

Rd and getting into town,” Mrs<br />

Frater said.<br />

Most recent traffic counts<br />

show 2688 vehicles travel on the<br />

road each day.<br />

schools and kindergartens in the<br />

area including Oaklands School,<br />

Boy racer issues in Hornby<br />

SPEEDING CARS are causing<br />

more headaches – this time for<br />

residents living on Neill St in<br />

Hornby.<br />

The boy racer issues were<br />

highlighted in a letter to the<br />

Halswell-Hornby-Riccarton<br />

Community Board.<br />

Residents are concerned<br />

the street is being used as<br />

a “raceway”, with speeding<br />

vehicles at risk of not making the<br />

bend at the Main South Rd end<br />

of the street.<br />

The letter was presented by<br />

Greater Hornby Residents’<br />

Association secretary Lyn<br />

Hucklebridge.<br />

“Residents feel that the police<br />

are not doing enough patrols<br />

around this area when reports<br />

are made,” she said.<br />

Mrs Hucklebridge said while<br />

residents do not want speed<br />

humps installed, they are<br />

“extremely concerned” about the<br />

speed of some vehicles.<br />

A police spokeswoman told<br />

<strong>Western</strong> <strong>News</strong> “officers on the<br />

ground” were not aware of issues<br />

with boy racers on the street.<br />

However, a resident, who did<br />

not wish to be named, said she<br />

has made online submissions to<br />

police and phoned them “about<br />

a dozen times.”<br />

She said she has made<br />

police aware of the issue, but<br />

appreciates they are busy.<br />

Another resident said boy<br />

racers have been using Neill St<br />

for about 20 years.<br />

“The wet weather is an<br />

absolute drawcard for them<br />

because they can get more of a<br />

slide on.”<br />

Said board chairman Mike<br />

Mora: “It is a pretty hard thing<br />

to control. You have to be there<br />

at the time it happens.”<br />

Mrs Hucklebridge raised<br />

several traffic-related issues in<br />

her letter. She said residents are<br />

Countdown Hornby and from<br />

Chappie Pl to Ravensdown.<br />

Mr Mora said the matters have<br />

been passed on to city council<br />

staff, who will report back.<br />

to be used by elderly,<br />

disabled and sporting<br />

communities.<br />

child-minding<br />

services, an outdoor space which<br />

can be lit, study/computer spaces,<br />

automatic doors to make the<br />

facility wheel-chair friendly<br />

are some of the wishes the<br />

community would like to have in<br />

the facility.<br />

If the component schedule<br />

is approved by the board, city<br />

council staff will commence the<br />

concept design.<br />

The facility is expected to open<br />

2022.<br />

once again become a target for<br />

thieves.<br />

In just two weeks, the 23-yearold<br />

right-leaning Independent<br />

Citizens candidate has had<br />

five of her 20 campaign signs<br />

removed from the Riccarton area<br />

ahead of the October local body<br />

elections.<br />

Signs have been stolen from<br />

Peverel St, Lyndon St and<br />

Wharenui Rd.<br />

Miss Chu said it is “really<br />

odd”, as only her signs have been<br />

stolen, even though they were<br />

directly placed next to fellow<br />

Independent Citizens candidate<br />

Helen Broughton’s signs.<br />

“It just seems to be mine<br />

that are coming down. That is<br />

unacceptable. I know five (stolen<br />

signs) sounds minimal but a<br />

quarter is quite a big amount<br />

compared to the number of signs<br />

I have,” Miss Chu said.<br />

She said residents who had<br />

called her to let her know a<br />

sign had been stolen from<br />

outside their property were<br />

felling “unsettled”.<br />

She believes this may be linked<br />

to anxiety caused by the March<br />

15 attacks.<br />

“The fact someone has been<br />

going to their property outside<br />

and taking them down . . . even<br />

I would be scared if I had a<br />

billboard outside and I knew<br />

someone was visiting my house<br />

at nighttime. It is just creepy.”<br />

Miss Chu says generally the<br />

signs disappeared overnight and<br />

she had reported the thefts to<br />

police.<br />

know why they were being taken<br />

and didn’t want to speculate.<br />

It is not the first time Miss Chu<br />

has been targeted.<br />

When she first ran for the<br />

Halswell-Hornby-Riccarton<br />

Community Board in 2016, 80 of<br />

her signs were stolen and two car<br />

magnets were removed.<br />

Miss Chu said she suspected<br />

some of signs were stolen by<br />

Canterbury University students<br />

after she found one at the UCSA<br />

Tea Party in 2016.<br />

However, she said it was<br />

unlikely students were the only<br />

people responsible.<br />

This year, Miss Chu’s<br />

campaign signs cost $33 each.<br />

$200o grants<br />

THE Christchurch Foundation<br />

is calling for applications for the<br />

Women’s Fund Awards.<br />

This year marks the first time<br />

the foundation will be issuing<br />

grants to aid the women and girls<br />

making a difference in the city.<br />

The Women’s Fund was<br />

established last year, on the 125th<br />

anniversary of women winning<br />

the right to vote.<br />

Said Christchurch Foundation<br />

chief executive Amy Carter:<br />

“Our city has a proud tradition<br />

of women facilitating groundbreaking<br />

societal change. In order<br />

to recognise this, and to ensure<br />

that this proud legacy continues,<br />

we formed a fund to support<br />

women and girls in our city who<br />

are change-makers.”<br />

Mrs Carter said women and<br />

girls in Christchurch are a powerful<br />

force. “Currently, women fill a<br />

high percentage of key leadership<br />

roles within Christchurch.”<br />

Three awards of $2000 will be<br />

Hoodies highlight mental health<br />

HOODIES HAVE been made<br />

to help fight the stigma against<br />

discussing mental health.<br />

A “hug in a hoodie” design<br />

has been created by Villa Maria<br />

College students to encourage<br />

young people to speak out about<br />

their mental health and support<br />

others.<br />

The hoodies have been<br />

designed by year 13 students<br />

Anna Fox, Amelia Schiavuzzi,<br />

Grace Cuff, Georgia Proudfoot<br />

and Georgia Singleton as part of<br />

their business studies group.<br />

Of the hoodies sold, 70 per<br />

cent of the profits will go to<br />

the Sir John Kirwan Foundation<br />

– which aims to reduce the<br />

negative impact of unsupported<br />

mental health issues youth face.<br />

The project is part of the<br />

Young Enterprise Scheme programme.<br />

Amelia said the idea was<br />

sparked because mental health<br />

is a major issue in the country,<br />

especially with young people.<br />

“We all know someone who<br />

has been impacted by mental<br />

health and we want to make it<br />

a bigger topic of conversation<br />

as there is still a lot of stigma<br />

around the issue,” she said.<br />

Earlier this year it was reported<br />

New Zealand has the highest<br />

death rate for teenagers in the<br />

Technology is a favourite area for<br />

Music<br />

Music is taught as part of the<br />

performing arts curriculum in all<br />

classrooms however, extra opportunities<br />

Title match decided by penalties<br />

College claimed back-to-back<br />

Canterbury first XI football<br />

titles last week by defeating<br />

Cashmere High School 5-4 in<br />

a dramatic penalty shootout at<br />

English Park.<br />

Coming into the game St<br />

Thomas were heavy favourites<br />

after going undefeated in 11<br />

league games which saw them<br />

score 66 times while conceding<br />

just twice. However, it took<br />

Cashmere just 20 minutes to put<br />

two goals on St Thomas, who<br />

quickly found themselves on the<br />

back foot.<br />

“They were good. They came<br />

out absolutely firing and we just<br />

weren’t playing as we talked<br />

about. We were overplaying at<br />

the back and inviting their high<br />

press,” said St Thomas coach<br />

Jacob Allen.<br />

In the second half St<br />

Thomas got one back through<br />

a Cashmere own goal before<br />

Luke White levelled late in<br />

the game to send the match<br />

to a penalty shootout which<br />

was decided when Aashish<br />

Rai converted St Thomas’ fifth<br />

“There was certainly never a<br />

loss of belief. At half-time the<br />

boys were unreal. They got each<br />

other up and made sure that<br />

they weren’t going to be out<br />

laying down . . . the year 13s<br />

didn’t want to go out like that<br />

in their final match in front of<br />

their fans,” said Allen.<br />

St Thomas will now turn<br />

their attention to the premier<br />

national secondary school<br />

tournament in Napier next<br />

month. After a poor result last<br />

year the team are out to try and<br />

replicate the run in 2017 which<br />

saw them fourth.<br />

“The final is a good bit<br />

of momentum because<br />

tournament footy can be one<br />

of those things where you just<br />

have to grind out a victory. It<br />

doesn’t have to be pretty, it<br />

just has to be won because you<br />

don’t get a second chance,” said<br />

Allen.<br />

“It reassuring to know we can<br />

grind out a hard game and not<br />

just roll teams.”<br />

Rutherford College from<br />

Auckland, St Peter’s School<br />

from Cambridge and Rathkeale<br />

College from Masterton in the<br />

pool at the national tournament<br />

which runs from September 2-6.<br />

Prior to St Thomas’ win,<br />

Burnside High School claimed<br />

the Canterbury premier girl’s<br />

first XI title with a dominant 3-0<br />

win over St Andrew’s College.<br />

Trophy basketball final against<br />

Cashmere High School at Cowles<br />

Stadium tonight.<br />

Middleton Grange beat the twotime<br />

defending champions in pool<br />

play 102-90 to take the Dowson<br />

Cup from them and inflict their<br />

first loss in more than two years,<br />

However, coach Jack Williamson<br />

said they are expecting to<br />

work harder.<br />

“We’re expecting they’ll have<br />

Tom Webley back, who was<br />

injured last time we played them<br />

and that will be another thing we<br />

have to contend with.<br />

“We will look to play a fast style<br />

of game, shoot accurately and<br />

move their big guys around as<br />

much as we can.<br />

“It’s been a while, 2015 I think<br />

since we last won this title.”<br />

“I’m not sure if everyone<br />

would consider us favourites or<br />

not just because of the long period<br />

of success Cashmere has had but<br />

we go into the game confident we<br />

can produce a good result,” he<br />

our city’s attractions<br />

WALKING GUIDES<br />

WANTED<br />

Showing visitors to many of Christchurch’s<br />

beauty spots, natural attractions, places<br />

of historical interest, and the changing<br />

cityscape as the city rebuilds, is the<br />

task undertaken by the team of 20<br />

knowledgeable and friendly guides at<br />

Walk Christchurch.<br />

All the volunteers thoroughly enjoy<br />

revealing our city’s unique features, many<br />

of which visitors may not discover on their<br />

own, and answering questions on the city<br />

and its people.<br />

Walk Christchurch was established in<br />

1982 as the Christchurch Personal Guiding<br />

Service, and has undergone a number of<br />

changes over the years to meet the needs<br />

of increasing numbers of visitors to the city.<br />

The primary walk is the Classic<br />

Christchurch Walk, a five-kilometre walk<br />

around the central city, which takes<br />

about two and a half to three hours. From<br />

October, a shorter Highlights Christchurch<br />

Walk is also being introduced. This will be<br />

2.5 kilometres, lasting about 90 minutes.<br />

More walks are also planned to meet<br />

different requirements.<br />

The walks are ranked in the top 10 activities<br />

for tourists in Christchurch by Trip Advisor,<br />

and positive reviews are regularly posted<br />

on the Trip Advisor website.<br />

Here is one example:<br />

“Highly recommend booking this walking<br />

tour. My guide was incredibly informed<br />

and passionate about Christchurch, and<br />

it was a pleasure to listen to him speak<br />

about the city he loves. The walk never felt<br />

tiresome, and I got to see all the sights of<br />

Christchurch. Highly recommended!”<br />

The volunteer guides themselves get many<br />

benefits from their guiding activities.<br />

For example, Josie has, over the years<br />

of guiding, developed an interest in our<br />

city – its past, present and future as well<br />

as improving her knowledge of the city<br />

architecture and landscape.<br />

Josie considers herself not just a walking<br />

guide, but an ambassador for the city. She<br />

is often one of the few people that visitors<br />

can meet and talk with over the duration<br />

of the walk.<br />

Craig appreciates being part of an<br />

active, sociable group of walking guides.<br />

He has increased his appreciation of<br />

Christchurch and the guided walks have<br />

taken him to places he had never visited<br />

or known about. Stories about those<br />

places have strengthened his connection<br />

to Christchurch and his knowledge about<br />

what is happening in Christchurch.<br />

Tasty Bites<br />

Healthy chicken dish an instant hit<br />

Scotch eggs are done with<br />

a flavoursome chicken<br />

mince wrapped around<br />

a boiled egg and then<br />

cooked in the air fryer.<br />

It’s tasty, portable and a<br />

wonderful breakfast dish<br />

Chicken scotch eggs<br />

Gluten, dairy and sugarfree/no<br />

added fat<br />

Ingredients<br />

1 tsp baking soda<br />

7 eggs<br />

490g raw chicken breast, roughly<br />

chopped<br />

1 green apple, peeled, cored and<br />

diced, optional<br />

2 tsp chopped ginger<br />

2 tsp chopped garlic<br />

Small handful coriander leaves<br />

Small handful parsley leaves<br />

1 Tbsp and seven tsp sticky sauce<br />

(see next recipe)<br />

Himalayan salt and freshly<br />

Ground black pepper<br />

Equipment<br />

Air fryer<br />

Directions<br />

Bring a medium-sized pot of<br />

water to the boil along with the<br />

baking soda and, using a large<br />

spoon, carefully lower the eggs<br />

into the boiling water. For soft<br />

boiled eggs, boil for 4.5min. For<br />

semi-hard, boil for 5.5min and<br />

for hard-boiled, boil for 6.5min.<br />

Remove the pot immediately<br />

from the heat and run the pot<br />

under cold water to stop the eggs<br />

from cooking.<br />

As soon as you can pick the<br />

egg up, carefully roll the egg<br />

on the bench to crack the shell<br />

which will help the egg to cool<br />

down more quickly.<br />

Set the eggs aside to cool while<br />

you prepare the chicken mixture.<br />

Place the chicken breast, apple<br />

(if you are using), ginger, garlic,<br />

fresh herbs, and a tablespoon of<br />

sticky sauce into the bowl of a<br />

blender or food processor.<br />

Season with a little salt and<br />

pepper and blend on high until<br />

very well-combined.<br />

Using a set of scales, evenly<br />

portion the chicken mince into<br />

seven piles.<br />

Very carefully continue to peel<br />

the eggs, making sure not to split<br />

the eggs as you do so. Take your<br />

time.<br />

Take a pile of the mince and<br />

flatten it as much as possible<br />

in the palm of your very clean<br />

hand. Sit the egg on top of the<br />

mince and bring the mince up<br />

to cover the egg as evenly as<br />

possible. This may take a little<br />

practice to get right, so take your<br />

time.<br />

Once all the eggs are covered,<br />

pre-heat your airfryer for two<br />

minutes on 180 deg C. Add the<br />

rest of the sticky sauce to a bowl<br />

and roll the scotch eggs in the<br />

sauce to fully cover the outside of<br />

the eggs.<br />

Place the eggs inside the air<br />

fryer basket and cook for seven<br />

to eight minutes until well<br />

covered and the mince is fully<br />

cooked. Cool the eggs before<br />

storing in the fridge.<br />

You can make these scotch<br />

eggs in advance. They will last<br />

four days in the fridge or you can<br />

vacuum seal them and increase<br />

their fridge shelf life up to two<br />

weeks.<br />

Sticky sauce<br />

Ingredients<br />

1 medium-sized green apple,<br />

peeled, cored and diced<br />

240ml low sodium tamari<br />

120ml apple cider vinegar<br />

120ml water<br />

3 slices ginger<br />

1 lime, zested and juiced<br />

Directions<br />

Place the apple in a small<br />

pot and add enough water so<br />

that it comes halfway up the<br />

apple.<br />

Bring to the boil and cook<br />

for 10min or until the apple<br />

is soft and the water has<br />

evaporated. Blend the apple in<br />

a small food processor until<br />

smooth and place in a mediumsized<br />

pot.<br />

Add the tamari, apple cider<br />

vinegar, water, ginger, lime zest<br />

and lime juice to the apple and<br />

whisk well to combine.<br />

Bring the sauce to the boil and<br />

then reduce to a rapid simmer<br />

and cook for 10-15min or until<br />

the sauce has reduced down<br />

by half and has become a little<br />

thicker and syrupy.<br />

Cool the sauce and store in a<br />

jar in the refrigerator for up to<br />

two months.<br />
