Long-serving librarian retires<br />

EVER SINCE she was a child<br />

Chris Archbold has loved<br />

reading books.<br />

“I grew up in quite a poor<br />

family. We always had a book<br />

in our Christmas and our<br />

birthday present,” she said.<br />

Even at primary school, as<br />

soon as she was old enough,<br />

she became her school library’s<br />

student helper at the age of<br />

about eight.<br />

Now after nearly <strong>25</strong> years,<br />

Mrs Archbold will retire from<br />

her role as a librarian at Riccarton<br />

Primary School with her<br />

last day planned for April 9.<br />

“I am not at retirement age,<br />

I just think it is time someone<br />

young came in. I am 64 now.<br />

Our wonderful students as<br />

much as I love them to bits, I<br />

think it is time they have someone<br />

more versed with the technology<br />

side of life,” she said.<br />

Mrs Archbold, who initially<br />

started at the school as a<br />

teacher aid before becoming its<br />

librarian after a year, said she<br />

has loved her time at the school.<br />

vehicles travelling by their homes<br />

have challenged politicians to<br />

come out and get a grasp of their<br />

day-to-day lives.<br />

residents calling for action to be<br />

taken over the endless stream of<br />

heavy vehicles using<br />

their road was<br />

presented to the<br />

Halswell-Hornby-<br />

Riccarton Community<br />

Board on<br />

Tuesday.<br />

‘Sausagegate’ comes to an end<br />

AFTER MORE than 30 years of<br />

serving up biscuits, sandwiches<br />

and savouries – catering at a<br />

community board’s fortnightly<br />

meeting has come to an end.<br />

The Halswell-Hornby-Riccarton<br />

Community Board has<br />

decided to cease catering at<br />

its meeting from next month<br />

onwards.<br />

The ongoing saga labelled “sausagegate”<br />

by Central Riccarton<br />

Residents’ Association secretary<br />

Garth Wilson, has been a source<br />

of contention for more than a<br />

year.<br />

The decision was made after a<br />

notice of motion was put forward<br />

by board member Mark Peters<br />

calling for an open and transparent<br />

discussion on the issue.<br />

“Simply the time of economic<br />

strain we are in at the council,<br />

I think it is wise we that we remove<br />

the spending on catering,”<br />

he said.<br />

The contention over the issue<br />

was sparked in 2018 when it<br />

was revealed the board was the<br />

biggest spender on food catering<br />

– spending more than $10,000<br />

since 2016/17.<br />

It has cut back it’s catering,<br />

reducing its budget from $78<br />

to about $68 a meeting after it<br />

previously sat at $174.<br />

Peters. She said she understood<br />

there were some city councillors<br />

asking the board to cut costs.<br />

“It would be symbolic (cutting<br />

catering) in showing we are willing<br />

to make a start.<br />

“We are adults not children, we<br />

can bring along our own food,”<br />

Ms Mora said.<br />

The decision to remove catering<br />

also did not go down without<br />

a fight from board chairman<br />

Mike Mora.<br />

“I think we have got a responsibility<br />

as hosts to offer manaakitangai,<br />

which is the host’s<br />

responsibility.<br />

“If you want to save money<br />

there are other ways of doing<br />

it rather than cutting out our<br />

8-9am sitting through meetings<br />

“right to the bitter end” and won’t<br />

get home until 7-8pm at night.<br />

“If that is the way we want to<br />

treat our staff that is okay, but I<br />

think I have got a bigger heart<br />

than that,” he said.<br />

City councillor Anne Galloway<br />

agreed it was important<br />

to offer manaakitangai which<br />

is why she suggested the board<br />

sets up a roster and brings food<br />

themselves.<br />

Her idea was supported by<br />

deputy chairman Andrei Moore,<br />

but board member Debbie Mora<br />

Anne Galloway<br />

said it would depend on whether<br />

other members could afford to<br />

bring food along.<br />

Cr Galloway also put forward<br />

a foreshadowed amendment<br />

to Mr Peter’s notice of motion<br />

calling in addition to ceasing<br />

catering for its meetings, the<br />

board requests staff include approximate<br />

costs involved when<br />

extra briefings and reports are<br />

requested.<br />

But her amendment was not<br />

passed.<br />

Mr Peter’s motion to remove<br />

catering was passed with support<br />

from all members of the board<br />

except Mr Mora. Board member<br />

Gamal Fouda was absent.<br />

Mr Mora said he felt sorry for<br />

the staff.<br />

its Senior Group Service project.<br />

The grant was approved from<br />

the Halswell-Hornby-Riccarton<br />

Community Board’s 2019-20<br />

Discretionary Response Fund.<br />

The club is an outreach of the<br />

Abundant Life Church. The<br />

purpose of the group is to<br />

improve the quality of life for<br />

SCHOOLS IN the western<br />

suburbs will take part in Walk or<br />

Wheel to School Day on March 4.<br />

These schools will include St<br />

Bernadette’s, Russley, Riccarton,<br />

Ilam, Wharenui, Waimairi, Best-<br />

Start Buchanans Rd and Halswell<br />

School.<br />

The city council is encouraging<br />

families to leave their cars at<br />

home that day and walk, cycle,<br />

scooter, or skate to school.<br />

Said city council transport operations<br />

manager Steffan Thomas:<br />

“If we can get people using their<br />

cars less and active modes of travel<br />

more, it could make a significant<br />

difference to our carbon footprint.<br />

“It has been proven that active<br />

travel to school can increase<br />

children’s concentration by up to<br />

four hours. Studies also show that<br />

children who travel actively to<br />

school have better spatial awareness<br />

and more road sense than<br />

those who are driven.”<br />

All schools who register for<br />

Walk or Wheel to School Day<br />

before <strong>February</strong> 26 will go into<br />

the draw to win a breakfast for<br />

were struggling to sleep at<br />

night due to the “crash, banging<br />

sound” of vehicles travelling past<br />

his home on Waterloo Rd.<br />

A key safety measure residents<br />

want is a signalled pedestrian<br />

crossing between Waterloo Rd<br />

and Kyle Park and for heavy<br />

vehicle restrictions.<br />

Data collected by residents in<br />

April showed heavy vehicles were<br />

often using Waterloo Rd every<br />

five to 10min.<br />

Alongside the petition, a letter<br />

from the principals of Hornby<br />

High School, Hornby Primary,<br />

Gilberthorpes, St Bernadette’s,<br />

South Hornby, Yaldhurst Model,<br />

Wigram Primary and Templeton<br />

Primary schools.<br />

The letter highlighted issues of<br />

pedestrian and vehicle safety<br />

in the area of Waterloo,<br />

Hei Hei, Gilberthorpes Rds and<br />

Parker St.<br />

The letter said with the development<br />

of the new Hornby Library,<br />

Service Centre and South<br />

West Pool – there is a recipe<br />

for serious injury accidents and<br />

possible death if additional safety<br />

measures are not put in place.<br />

“As community board members<br />

I challenge you to get a light<br />

pedestrian crossing on this road,”<br />

Mr Duff told the board.<br />

He backed Mr Wills, telling<br />

the community board to come<br />

out and have an onsite meeting<br />

before a report came back to<br />

the board on the issue from city<br />

council staff.<br />

IMPROVING transport<br />

infrastructure has been<br />

identified as a top priority in<br />

the western suburbs for the next<br />

three years.<br />

For the first time, the Halswell-<br />

Hornby-Riccarton Community<br />

Board has publicly consulted its<br />

goals for the next three years.<br />

The board is asking for feedback<br />

from the community before<br />

giving its plan the final<br />

green-light.<br />

Three key priorities<br />

have been picked out for<br />

each of the wards the<br />

board covers.<br />

Halswell’s set goals<br />

are pedestrian and road<br />

safety improvements –<br />

particularly in growth<br />

areas including Halswell<br />

Rd and Hendersons and<br />

the Cashmere Rd network.<br />

It also wants to develop recreational<br />

spaces and increase<br />

resourcing for community patrols<br />

and neighbourhood safety<br />

initiatives.<br />

The board’s deputy chairman<br />

Andrei Moore said its priorities<br />

accurately reflect the responses it<br />

got from the public.<br />

In November, Mr Moore<br />

along with city councillor Anne<br />

Galloway and member Debbie<br />

Mora set a poll on the Halswell<br />

Community Group and Wigram<br />

Skies Community Facebook<br />

page calling for feedback on<br />

what their priorities should be.<br />

“We have a clear picture of<br />

what the public picked<br />

and are hoping to get as<br />

much feedback as possible,”<br />

Mr Moore said.<br />

He said he believed<br />

the members who put<br />

together the priorities<br />

for the other wards<br />

are very in touch with<br />

their community and<br />

the feedback will reflect<br />

this.<br />

Hornby’s priorities are to<br />

ensure safe transport connections<br />

in the Kyle Park area as<br />

the new Hornby Library, Service<br />

Centre and South West Pool are<br />

developed.<br />

part of the travel network for the<br />

The revitalisation of Sockburn’s<br />

assets including the demolition<br />

of the Sockburn Service<br />

Centre and the rehabilitation of<br />

Sockburn Park.<br />

Roading and flooding issues<br />

have also been pointed out in<br />

need of being resolved in the<br />

Amyes, Shands Rds and Goulding<br />

Ave areas.<br />

Over in Riccarton, the March<br />

15 attacks have been a significant<br />

part in creating the board’s<br />

priorities.<br />

It wants to install a pedestrian<br />

Dance school’s fight to stay in heart of Ilam<br />

ensure its dance classes are<br />

affordable.<br />

In that entire time, the school<br />

has been teaching at the Waimairi<br />

Road Community Centre<br />

ensuring classes are affordable<br />

so “families with more than one<br />

child can afford to be involved in<br />

dance.”<br />

But a soar in rental costs over<br />

the last couple of years has left<br />

the school struggling to keep<br />

fees low so dance classes can<br />

remain accessible to students and<br />

families.<br />

The school uses two halls at the<br />

centre for its classes.<br />

It is categorised as selfemployed<br />

tutors as opposed to a<br />

group running a not-for-profit<br />

community programme.<br />

This means it has to pay $31.50<br />

per hour to use each hall as<br />

opposed to a not-for-profit community<br />

programme which pays<br />

$15.30 hour.<br />

In 2015 the large hall formerly<br />

cost $15.60 per hour to use while<br />

the smaller hall cost $17.85 to<br />

rent out.<br />

In that time the school has<br />

only raised its class fees by 50<br />

cents. Classes cost between $10-<br />

$15 depending on the ability of<br />

the student.<br />

As a result, the business of the<br />

dance school, which has about<br />

100 pupils, is barely covering the<br />

cost of the hall.<br />

In a bid to keep classes affordable<br />

for families, teachers Jacqui<br />

Tieleman and Donna Head have<br />

asked the Halswell-Hornby-<br />

Riccarton Community Board for<br />

a reclassification of the smaller<br />

hall so it is cheaper to rent out or<br />

for a discount on the hall costs.<br />

Currently, both halls are classified<br />

as Category B facilities -<br />

meaning they have a capacity of<br />

50 to 150 people and impacting<br />

their cost.<br />

Previously the hall was a Category<br />

C facility, meaning it was<br />

smaller and cheaper to use.<br />

Mrs Head she knows of some<br />

community halls who will get<br />

a discount if they use a hall<br />

regularly.<br />

She described the hike in<br />

prices to use the hall as “disheartening.”<br />

Mrs Head said if the dance<br />

school does not get anywhere<br />

following its request to the<br />

community board it will have to<br />

move to a different hall.<br />

She said it is currently looking<br />

at other commercial halls the<br />

school could operate from, but<br />

the Waimairi hall was “perfect”<br />

in terms of location and the type<br />

of floor for the dance school.<br />

of alternative venues for them to<br />

explore including<br />

Canterbury<br />

Villa Maria College.<br />

Another concern raised at the<br />

board meeting was the school<br />

is only allowed to open the top<br />

windows for air ventilation of the<br />

hall – not the doors.<br />

“Some of the times it must get<br />

over 30 deg C with the kids but<br />

we are not allowed to open them.<br />

Mr Filsell said this is because<br />

the doors are fire escape doors<br />

and are only to be used for this<br />

purpose and to prevent noise<br />

complaints from neighbouring<br />

properties.<br />

a very special school this school<br />

no matter the staff, no matter<br />

the principal and no matter the<br />

students. It is just amazing.<br />

Even visitors come to our school<br />

and say there is an amazing feeling<br />

and you just don’t know what<br />

Mrs Archbold said she has<br />

loved helping children find the<br />

right book and seeing children<br />

who don’t like reading find a<br />

book they enjoy.<br />

“The library has just over 4000<br />

books. Every book I love, every<br />

single one of them,” she said.<br />

Some of the biggest changes<br />

she has seen over the last <strong>25</strong> years<br />

in the language becoming less<br />

formalised and the popularity<br />

growth in graphic books.<br />

“Our boys are the ones we find<br />

the hardest to get reading but<br />

graphic novels changed their<br />

life . . . they can’t get enough of<br />

them,” Mrs Archbold said.<br />

She said many amazing stories<br />

such as The Diary Of a Young<br />

Girl by Anne Frank is now condensed<br />

into a graphic novel.<br />

Before becoming a librarian,<br />

Mrs Archbold had a varied career<br />

working in banking and finance.<br />

She then became a stay-at-home<br />

Mum before working part-time<br />

at Nurse Maude supporting the<br />

elderly.<br />

Mrs Archbold, known as<br />

“Chris” to her pupils due to her<br />

last name being too difficult to<br />

pronounce, will now be spending<br />

more of her extra time with her<br />

three grandchildren.<br />

“That was too hard because<br />

you would get attachments<br />

and they would pass on.<br />

I couldn’t cope so I thought<br />

righto these younger ones – here<br />

I am.<br />

“I have got three lovely<br />

grandchildren, I have a marvellous<br />

husband and I have a great<br />

big garden that is suffering.<br />

“I think it is time. It is going to<br />

be a sad day when I leave.<br />

But once you make the decision<br />

you just have to go through with<br />

it,” Mrs Archbold said.<br />

the love of their life at the local<br />

shopping mall.<br />

But that was exactly what<br />

organisers of The Hub Hornby’s<br />

‘Singles Mix and Mingle Night<br />

for Valentine’s Day’ was hoping<br />

for recently.<br />

A mixologist making mocktails<br />

with fresh ingredients,<br />

heart-shaped pizzas from Sals<br />

Authentic New York Pizza and<br />

sweet treats from Divine Cakes<br />

& Deserts was in place to set off<br />

the romantic vibes.<br />

About a decade ago, a similar<br />

singles shopping night was held<br />

at the mall where one couple<br />

met, got married and are still<br />

together years later.<br />

But organisers of the event on<br />

Thursday are still yet to track<br />

down the mystery couple.<br />

In spite of this, The Hub<br />

Hornby centre manager Jason<br />

Marsden said the evening was<br />

“a lot of fun” with about 40 to 50<br />

people turning up aged in their<br />

20s through to their 50s.<br />

“What was surprising was the<br />

younger people there in their<br />

20s.<br />

“That was a revelation, even<br />

though those people have all<br />

these social apps there is still a<br />

desire to meet with people,” Mr<br />

Marsden said.<br />

He said definitely saw one<br />

young couple who spent a lot of<br />

time talking and left together.<br />

“Who knows? But yes, that was<br />

pretty cool,” Mr Marsden said.<br />

Whether it will become an<br />

annual event or if the mall waits<br />

another ten years is something<br />

the centre will discuss further,<br />

Mr Marsden said.<br />

Organiser Lyn Grae said the<br />

night went really well with there<br />

definitely being the exchanging<br />

of numbers and several couples<br />

leaving together.<br />

She said she was surprised<br />

at the number of young people<br />

who wanted to meet the “old<br />

fashioned” way.<br />

“There was one woman who<br />

was so lovely, she had been married<br />

and had a couple of kids.<br />

While she may not have been<br />

ready to date, she wanted to meet<br />

new people . . . she came and<br />

spoke to me and said thank you<br />

so much for doing this.”<br />

Ms Grae said she was so glad<br />

the mall put on the event and it<br />

was a lot of fun.<br />

AT THE beginning of 2019<br />

Charlotte Spurway made a bold<br />

decision to give track cycling a<br />

go.<br />

One year later, the year 13<br />

Rangi Ruru Girls’ School student<br />

has been selected in the<br />

13-strong New Zealand track<br />

cycling team for the world championships<br />

in Egypt in August.<br />

This is the first time the UCI<br />

junior track world championships<br />

will be held in the Middle<br />

East at the newly-constructed<br />

velodrome in Cairo.<br />

The 16-year-old said it all happened<br />

“pretty quickly,” but was<br />

excited for the new challenge<br />

ahead.<br />

“I was so excited when I found<br />

out, especially being able to work<br />

with the team over the year coming.<br />

We all get on really well,”<br />

she said.<br />

“It will definitely be a new experience<br />

for all of us, and probably<br />

the first time we’ll all ride<br />

our bikes in a place like that.”<br />

Charlotte has always had an<br />

avid interest in sports, coming<br />

from a family that loved to<br />

travel, surf and dive.<br />

She moved to Christchurch<br />

nine years ago, originally from<br />

Brisbane.<br />

“I’ve done sport for as long as<br />

I can remember, it’s just been<br />

a part of me. And then when I<br />

came to Rangi in year 9 I started<br />

school cycling,” said Charlotte.<br />

“I starting doing weekly racing<br />

and I just love the sport, there’s a<br />

really cool community in it. And<br />

then in the beginning of last year<br />

I decided to try out track cycling<br />

and since then it’s brought me to<br />

where I am today.”<br />

Charlotte was one of six<br />

Cantabrians to make the team<br />

with Jenna Borthwick (Lincoln<br />

High School), Mikaela Grant<br />

(Villa Maria), Laurence Pithie<br />

(ex-Christchurch Boys’ High<br />

School), Ryan McLeod (CBHS),<br />

and Sebastian Lipp (Catholic<br />

Cathedral College) also selected<br />

based on excellent performances<br />

at Oceania championships in<br />

October and New Zealand<br />

championships last month.<br />

Said Charlotte: “It’s really cool<br />

that six of us are Cantabrians, especially<br />

when we’ve only got an<br />

outdoor, concrete track here in<br />

Christchurch compared to other<br />

places with indoor centres.”<br />

Denton Park Oval is the city’s<br />

only velodrome. In New Zealand<br />

there are two indoor velodromes<br />

located in Invercargill and<br />

Cambridge. Plans of an indoor<br />

centre for Christchurch have<br />

been discussed for years, but to<br />

no avail.<br />

terbury can achieve if we get an<br />

indoor velodrome.”<br />

Charlotte trains 13 hours a<br />

week, while juggling school<br />

work, having a social life and<br />

other responsibilities and<br />

obligations, but she does not let<br />

the pressure get to her.<br />

“I think it’s quite manageable.<br />

We’ve all got time in our day as<br />

long as you’re getting down and<br />

doing it as soon as you can and<br />

staying on task, especially with<br />

the hours you’re given at school.”<br />

The young cyclist hopes to join<br />

the elite programme after high<br />

school and has the potential to<br />

head to worlds again in 2021<br />

while still being an U19 rider.<br />

But in the meantime, more hard<br />

work is in store.<br />

“Remembering your support<br />

network is always really<br />

important. I couldn’t have got<br />

to where I am today without<br />

the support of my family,<br />

friends, the Christchurch school<br />

cycling and Canterbury track<br />

communities,’’ Charlotte said.<br />

Wilder’s Aussie rules code-hopping success<br />

competition at North Harbour<br />

Stadium each weekend for<br />

the next 10 weeks.<br />

BISHOPDALE’S KRIS Wilder<br />

has had a whirlwind code-hop to<br />

Australian Rules.<br />

After being encouraged by a<br />

friend to try the sport last year<br />

to improve his rugby fitness, the<br />

27-year-old played five games<br />

for the University Cougars in<br />

Christchurch and was then<br />

selected in the New Zealand AFL<br />

draft in November.<br />

He has played two games for<br />

the <strong>Western</strong> Crows in the national<br />

competition in Auckland, playing<br />

full-forward and kicking six goals.<br />

The four team competition<br />

sees Wilder travel to North Harbour<br />

Stadium each weekend for<br />

the 10-week competition.<br />

“I played five games for the<br />

Canterbury University Cougars<br />

and obviously did enough to be<br />

on the radar for the draft.<br />

“It cost $600 to enter it but if<br />

you get drafted that covers your<br />

10 weeks of flights to Auckland<br />

and your meals, kit, warm-ups<br />

and ice baths etc.<br />

“It’s quite professional in that<br />

sense, it’s like the Mitre 10 Cup<br />

in rugby, that’s the best way I can<br />

describe it.”<br />

In 2018 the average Australian<br />

AFL player earned A$369,000<br />

(NZ$385,000) but Wilder said<br />

going professional was a longshot,<br />

not only for him but most<br />

of the New Zealand players.<br />

“My goal is to make the New<br />

Zealand Academy team at the<br />

end of the season because there<br />

will be an Aussie team that will<br />

tour here and I’d like to test myself<br />

against them,” he said.<br />

“The difference in standard<br />

here compared to Australia is<br />

huge – Aussie kids smash us and<br />

I don’t think it will be about the<br />

money for me at this point.”<br />

He said he planned to play senior<br />

rugby this season and bring<br />

up 100 games for the Lincoln<br />

premier team.<br />

“This has taken me a lot<br />

further than I thought it would<br />

considering I just wanted to do it<br />

to be a fitter, better rugby player.<br />

“It is a fast game with a<br />

lot of running and a heap of<br />

athleticism and I’m keen to just<br />

see where I end up with it.”<br />

TWO HALSWELL softball<br />

players, pitcher Cherie Inwood<br />

and infielder Alyssa Lory have<br />

been named in the Junior White<br />

Sox team, for the women’s world<br />

cup in Lima, Peru, in August.<br />

The 16-strong team was named<br />

last Wednesday after almost four<br />

months of trials.<br />

The event runs from August 21<br />

to August 30.<br />

Cherie was a key figure for Canterbury<br />

at the under-18 nationals<br />

in January before being one of<br />

the first nine players named in<br />

the national junior squad for the<br />

Oceania qualifiers later the same<br />

month,<br />

Alyssa was named most promising<br />

junior player by Canterbury<br />

Softball at their annual awards last<br />

year and has made good on that<br />

talent.<br />

New Zealand coach Kiri Shaw<br />

said it had not been an easy process<br />

to narrow down the squad.<br />

“We are very excited about this<br />

team after a lengthy but thorough<br />

selection process.<br />

“The opportunity for squad<br />

members to play in a number of<br />

tournaments where they have<br />

been exposed to a higher level of<br />

play and compete against more<br />

experienced women has been an<br />

invaluable exercise,’’ Shaw said.<br />

“Just as important were observations<br />

made at under-18 nationals.<br />

“We have learnt a lot about players<br />

as well as the things we want<br />

to implement in terms of the team<br />

culture we want in place for this<br />

Junior White Sox team.<br />

“This was an extremely tough<br />

team to select. But it was a good<br />

problem to have. Consistency,<br />

versatility, attitude and<br />

improvement were the basis of<br />

our final 16 women roster for the<br />

world cup,” she said.<br />

One-pot wonders to keep the summer vibe going<br />

With the recent resurgence<br />

of warmer temperatures<br />

there’s no need to<br />

prematurely put the<br />

outdoor furniture away just<br />

yet. Keep that summer vibe<br />

going with these crowdpleasing<br />

one-pot wonders<br />

Slow-cooker pulled pork<br />

Serves 6<br />

Ingredients<br />

2 onions, halved and sliced<br />

1 Tbsp smoked paprika<br />

2 tsp ground cumin<br />

1 tsp ground cinnamon<br />

2 tsp garlic salt<br />

2 tsp sea salt flakes<br />

2 Tbsp Dijon mustard<br />

3 Tbsp red wine vinegar<br />

2 Tbsp tomato purée<br />

2 Tbsp soft light brown sugar<br />

1.5kg boneless pork shoulder,<br />

skin and excess fat removed<br />

To serve<br />

Soft white rolls<br />

Coleslaw<br />

Sliced red onions<br />

Sliced gherkins<br />

Directions<br />

Heat the slow cooker to high.<br />

Put the onions in the bottom of<br />

the slow cooker.<br />

Mix together the spices, salts,<br />

mustard, vinegar, tomato purée<br />

and sugar. Rub all over the pork<br />

then sit on top of the onions.<br />

Cook for 8 hours. Remove the<br />

pork and shred into chunks. Mix<br />

in 4-5 Tbsp of cooking liquid<br />

from the slow cooker.<br />

Serve in buns with coleslaw,<br />

sliced red onions and gherkins, if<br />

you like.<br />

Halloumi and vegetable<br />

tray-bake<br />

Ingredients<br />

4 courgettes, cut into small<br />

chunks<br />

1 red onion, cut into slim wedges<br />

3 large garlic cloves, skins left on<br />

3 Tbsp olive oil<br />

300g cherry tomatoes<br />

<strong>25</strong>0g halloumi, sliced<br />

¼ tsp cumin seeds<br />

Dried chilli flakes a few pinches<br />

(optional)<br />

To serve<br />

Hot sauce (optional)<br />

Directions<br />

Heat the oven to 200 deg C/180<br />

(fan-forced). Toss the courgettes,<br />

onion and garlic with the olive<br />

oil and tip into a large, shallow<br />

baking dish. Season well and<br />

roast for 10min.<br />

Stir in the cherry tomatoes<br />

and sit the halloumi slices on<br />

top. Sprinkle over the cumin<br />

seeds and chilli flakes, if using.<br />

Cook for another 15min until the<br />

tomatoes start to burst and release<br />

juice, and the halloumi is turning<br />

golden.<br />

Squeeze the garlic cloves out<br />

of their skins and mash into the<br />

oil and juices in the baking dish,<br />

stirring it in. Spoon everything<br />

onto plates and serve with soft<br />

flatbreads and hummus or hot<br />

sauce, if you like.<br />

provided by Vision College. Elliott’s broad technical knowledge and ability<br />

to adapt quickly to the role is a testament to the quality of tertiary<br />

education provided and we look forward to repeating the process in the<br />
