Cake<br />
½ cup of shortening<br />
1 cup of sugar<br />
1 egg<br />
Aunt Ione’s<br />
Famous Whoopie Pies<br />
1 egg yolk<br />
2 cups flour<br />
2/3 cups baking cocoa<br />
¼ tsp salt<br />
1 tsp baking soda<br />
½ cup hot water<br />
2/3 cup heated buttermilk<br />
Fold sugar into shortening until well mixed. Beat whole egg and egg yolk in separate<br />
bowl. Mix into shortening sugar mixture. In a separate bowl add dry ingredients and<br />
mix together. Add dry ingredients into the shortening, sugar, and egg mixture and stir<br />
together. Add baking soda into hot water. Pour buttermilk into batter mix. Then add<br />
baking soda and hot water and mix. Spoon out batter onto parchment paper. Bake at<br />
350° for 10 minutes. Let cool.<br />
Filling<br />
2 cups powdered sugar<br />
1 egg white<br />
1 tsp vanilla<br />
½ cup softened butter<br />
½ cup shortening<br />
Mix sugar, egg white, and vanilla. Add softened butter. Mix. Add shortening. Mix.<br />
Match whoopie pie tops and bottoms so that both are approximately the same size.<br />
Frost the flat side of one size. Add second side so filling is in between two cakes.<br />
