Between lockdowns, I was fortunate enough to go on two week-long holidays with my family to both<br />

masked faces that reminded us of just how lucky we were to have this time out together.<br />

Long stays for work and play<br />

Imagine being able to live and work from a luxurious tropical island resort?<br />

Well, that dream is closer than you think.<br />

After a year that’s halted many<br />

travel plans and increasingly<br />

regulated movement, more of<br />

us have found ourselves all but<br />

climbing the walls.<br />

There’s an antidote to all this cabin fever<br />

though: instead of taking frequent shorter<br />

holidays, the ticket to travel in 2021 is to head<br />

away for a longer duration.<br />

Being a ‘Half Tourist’ is the latest travel trend<br />

to take the world by storm, which has been<br />

made possible by the flexibility of remote<br />

working becoming the norm.<br />

cultures, people, and working environments,<br />

Space, WIFI connectivity and time zones<br />

are elements that need to be considered,<br />

of course, but for some these could actually<br />

be improvements in their new work location.<br />

For others, these may be considered as<br />

compromises, but I believe the benefits far<br />

Maldives, which got snapped up within<br />

Barbados: a much-loved playground<br />

of the rich and famous, winter<br />

bolthole to many a sunseeker,<br />

and famed for stunning beaches,<br />

sparkling seas and luxury resorts.<br />

Barbados is a magnet to those looking for<br />

sun, sea and the potent local rum punch.<br />

Travellers have flocked to her turquoise shores<br />

for decades and the island has become a<br />

paradise for jetsetters, satisfying the highest<br />

standards of luxury whilst simultaneously<br />

retaining a rustic charm.<br />

BARBADOS: A LOVE AFFAIR<br />

My love affair with Barbados began almost<br />

three decades ago and this vibrant little gem<br />

in the Caribbean has punctuated the key<br />

moments of my life. An annual pilgrimage<br />

from the age of 18, it quickly became a second<br />

home, spiritually and practically. Barbados<br />

has given me a husband (fortuitously working<br />

there at the time), a wedding, and two<br />

christenings in what has become our family<br />

church, high in the hills of St. John.<br />

The attraction of Barbados for me lies not in her<br />

glitz and glamour, but more in her simplicity<br />

and charm. Scratch the surface and explore<br />

beyond the five star hotels and you will find<br />

a country rich in history, faith and personality.<br />

Bajans are a proud nation with a strong faith,<br />

a very unique identity, and a history of triumph<br />

and resilience over adversity.<br />

Look beyond the extravagant<br />

beach homes to the colourful<br />

wooden chattel houses, bustling<br />

with smiling faces and smartly<br />

turned out children.<br />

Passed down through generations, chattel<br />

homes are carefully maintained and painted<br />

in a rainbow of colours, and are often found<br />

juxtaposed between the hotels and private<br />

villas of the glittering West Coast.<br />

Tradition and worship is still so key in<br />

communities. Wind your windows down to see<br />

the ladies in their Sunday best, resplendent<br />

in their modest dresses and hats as they sing<br />

loud and soulfully in their local churches.<br />

Divided into parishes, much like British<br />

counties albeit a fraction of their size, each<br />

has a very unique personality. Despite its<br />

modest size, (21 x 14 miles), you would be<br />

forgiven for thinking you were in a different<br />

country entirely when you cross from the<br />

serene turquoise waters of the Caribbean<br />

Sea in the west coast to the rugged East<br />

Coast and the wild beauty of the Atlantic<br />

Ocean.<br />

EAST COAST TRIP<br />

A trip along the East Coast is a must while<br />

you’re on the island - car hire is easy and they<br />

even drive on the left.<br />

The drive from west to east is fascinating.<br />

Don’t miss St. Nicholas Abbey for a tour of a<br />

traditional rum distillery, or buy handmade<br />

souvenirs amid breathtaking views at the top<br />

of Cherry Tree Hill, before journeying down<br />

through local villages, bordered by sugar<br />

cane fields and banana plantations.<br />

Children and adults alike will love the<br />

refurbished Harrison’s Cave, an active cave<br />

network that was excavated in the 1970s. In<br />

your subterranean tram you can journey deep<br />

within and see the amazing stalagmites,<br />

stalactites and white flow stones.<br />

Find locally handmade, beautifully painted<br />

pottery at Earthworks, and escape the<br />

heat of the day at Flower Forest Botanical<br />

Gardens or Hunte’s Gardens. Children will<br />

love observing native green monkeys at the<br />

Barbados Wildlife Reserve.<br />

THE PARTY SIDE<br />

The South Coast, traditionally the ‘party’<br />

end of the island, brings a more bustling<br />

and hedonistic feel, with beach bars and<br />

nightspots that are a little more low key. The<br />

famous Oistins Friday Night Fish Fry has long<br />

been a Barbados institution, popular with<br />

locals and visitors alike.<br />

The huge white beaches and calm waters<br />

provide an array of watersports opportunities.<br />

Keen windsurfers and kite surfers alike flock<br />

to Silver Rock to enjoy the perfect conditions<br />

that the winter season, from December to<br />

April, brings.<br />

LITTLE ENGLAND<br />

The north of Barbados brings more rugged<br />

and breathtaking scenery at North Point,<br />

where you can enjoy a local lunch, perhaps<br />

macaroni pie, a flying fish cutter, or a roti.<br />

Visit the natural sea cavern, Animal Flower<br />

Cave and, if you’re really lucky, in the winter<br />

months you can watch the humpbacks as<br />

they bask in the warm tropical waters.<br />

Roads and signage have improved over the<br />

years but relax and take your time, Barbados<br />

style, and enjoy the views. Be careful to avoid<br />

the mongoose and perhaps patronize one of<br />

the numerous rum shacks and ‘Auntie bars’<br />

along the way!<br />

Whatever your holiday aspirations, Barbados really does<br />

have something for everyone. Barbados is Little England<br />

by name and nature, but comes with rum, even more cricket,<br />

and better manners than England.<br />

Rich in antiquity, diverse in landscapes, and<br />

home to the most gracious of hosts, we visited<br />

Cyprus for the first time. Benefitting from a<br />

sub-tropical climate, Cyprus enjoys a very<br />

long season and an extremely mild winter,<br />

making it the perfect destination for late and<br />

early season sun.<br />

Cyprus is one of the few places in<br />

the world where it is possible to<br />

ski in the morning in the Troodos<br />

Mountains and sunbathe on the<br />

beach in the afternoon.<br />

BEACH LIFE IN LIMASSOL<br />

Our trip began at the fully refurbished<br />

ParkLane, a Luxury Collection Resort & Spa in<br />

Limassol. Reopened in 2019 after a four year<br />

renovation, the modern interiors reflect both<br />

local and international influences, to stunning<br />

effect. Located on a 300 metre stretch of Blue<br />

Flag beach set amid spacious, beautifullymanicured<br />

gardens and featuring extensive<br />

leisure and dining facilities, a purpose-built<br />

kids' club for under twelves, watersports and<br />

even a PADI scuba diving centre, a myriad<br />

of room and private villa options await and<br />

cater to a diverse and discerning audience.<br />

The outstanding Kalloni Spa is nothing<br />

short of a wellness destination, offering an<br />

extensive spa menu, a huge hydrotherapy<br />

pool, and its very own hair salon and barber<br />

shop. There is a state-of-the-art Parkfit health<br />

club, a heated indoor pool, and a range of<br />

classes available, as well as a boutique that<br />

stocks an array of luxury labels.<br />

We sampled every aspect of the faultless<br />

hospitality, from the extensive buffet<br />

breakfasts, to the Vithos butler service<br />

delivering divine cocktail creations and<br />

snacks to our private cabaña, to the local<br />

delicacies in Dafne and international<br />

cuisine in the Grill Restaurant.<br />

We swam, we kayaked, we dived, we SUP’ed<br />

(some better than others!), we slept like<br />

logs in our ‘Heavenly’ beds, we smiled, we<br />

laughed, we walked and we talked and we<br />

reconnected as a family.<br />

ParkLane gave us our joy back<br />

while silently but reassuringly<br />

RENEWED MOOD IN<br />

KALAPANAYIOTIS<br />

Next stop on our trip was a stay in the<br />

agrotourism resort Casale Panayiotis, set in<br />

the beautiful, tranquil Troodos Mountains.<br />

Located within a once-thriving spa village,<br />

Kalapanayiotis was long-famed for the<br />

healing properties of its sulphur springs and<br />

its ancient monastery, now a UNESCO World<br />

Heritage site.<br />

When local man John Papadouris returned<br />

after decades away to find his village<br />

neglected, he was inspired to begin a huge<br />

restoration project, raising funds and investing<br />

his own money to preserve the village’s fragile<br />

mountain culture and way of life.<br />

Now a 41-room resort across seven restored<br />

mountain houses, with two restaurants and<br />

a spa, Casale Panayiotis is a charming yet<br />

luxurious taste of traditional Cypriot mountain<br />

life. With the unmistakable feeling that we<br />

were stepping back in time, this was a really<br />

immersive and memorable experience.<br />

Whether we were on a<br />

beekeeping excursion with<br />

‘Mr Bumbles’, taking a trip to<br />

the hydrotherapy spa, joining<br />

a traditional halloumi-making<br />

workshop, or working up an<br />

appetite on one of the many<br />

nature trails of the village,<br />

we were sustained by the array<br />

of local food in the<br />

Byzantino Restaurant.<br />

There’s plenty to occupy even the most<br />

demanding of travellers here and, with<br />

jaw-dropping vistas, we fell in love with<br />

this place and the warmth of its authentic<br />

hospitality.<br />

The majority of ingredients are grown and<br />

sourced locally in the estate orchards or from<br />

the neighbouring village butcher and baker.<br />

This is a truly extraordinary place where we<br />

got a real sense of the philanthropy of its<br />

founder, John Papadouris and his family.<br />

Kalopanayiotis, once a dying way of life,<br />

has been reborn thanks to the vision and<br />

generosity of their modern day hero.<br />

Little by little, villagers are moving back to<br />

open small businesses and cafés, sharing<br />

their culture, traditions and hospitality of<br />

old Cyprus with the select few who are lucky<br />

enough to stay here.<br />

tangy tamarind water, then a fabulous<br />

substitute is to mix lime juice or white wine<br />

vinegar with an equal amount of light brown sugar.<br />

For the best result and to avoid your noodles from sticking together,<br />

try to make one adult portion at a time.<br />

You can increase the level of spiciness with how much fresh red chilli you use.<br />

If you prefer a milder spice, opt for a pinch of paprika instead.<br />

Pad Thai<br />

A prince among spicy stir-fried rice noodle dishes,<br />

an authentic Pad Thai is utterly irresistible.<br />

This star dish can be found served up at Bangkok’s many<br />

street food stalls - you only need to look for clouds of<br />

billowing steam to find it.<br />

Pad Thai is usually accompanied by prawns, but it can also<br />

be served with chicken, pork, beef, or tofu. Until you’re next<br />

in Thailand’s capital, why not try making it at home?<br />

SERVES 2<br />

PREPARATION TIME 30 MINUTES<br />

Ingredients:<br />

50ml tamarind water<br />

40ml fish sauce (optional)<br />

2 tbsp caster sugar<br />

200g wide flat rice noodles<br />

1-2 tbsp of vegetable oil<br />

16 large prawns, peeled<br />

4 spring onions, sliced<br />

2 garlic cloves, finely sliced<br />

1 red chilli, deseeded and finely sliced<br />

2 medium-sized whole eggs<br />

100g bean sprouts<br />

4 chive stalks, chopped<br />

2 handfuls of peanuts, roasted and chopped<br />

Lime wedges to garnish<br />

Method:<br />

In a large saucepan, combine the tamarind, fish sauce and<br />

sugar, and heat gently until the sugar dissolves. Empty this<br />

sauce into a small bowl and put to one side.<br />

Clean the prawns then season with salt, pepper, and one<br />

tablespoon of the oil. Leave to marinate for 5-10 minutes.<br />

Rinse out your saucepan and half fill it with water. Put it on a<br />

high heat and, once the water is boiling, pour in the noodles<br />

and leave for 15 minutes until tender. Using a sieve, rinse the<br />

noodles under cold water until the water runs clear.<br />

Place a wok or large frying pan over a high heat and add<br />

a small splash of oil. Add the prawns to the pan, then push<br />

them aside and crack in the eggs. Break the yolks and<br />

scramble them as they turn opaque.<br />

Add the noodles, bean sprouts, sauce, and peanuts, and<br />

stir the egg through the mixture. Reduce the heat to avoid<br />

catching the bottom of the wok. Stir-fry until well combined.<br />

In the final few minutes, add the chives.<br />

Serve with lime wedges and a couple of extra chopped<br />

peanuts on top for garnish..<br />

See the most of the beautiful island of Cyprus by<br />

staying in a few places. Cyprus is a great self-drive<br />

destination as they drive on the left, just like us!<br />

Start with a stay in Paphos and explore this area.<br />

Then drive up to the Troodos Mountains, take in<br />

the scenery and the amazing spa at the Casale<br />

Panayiotis, then finish with a few nights in the lively<br />

resort of Limassol, wandering around the marina.<br />

Cyprus has many archaeological sites to visit and<br />

some stunning beaches.<br />

You’ll love the beautiful long sandy beaches and<br />

stunning views of the Indian Ocean. Pop out of<br />

your resort to visit the market for some local<br />

traditional gifts. I would highly recommend a boat<br />

trip with canapés and champagne perfect for a<br />

No trip to the Costa del Sol is complete without a<br />

visit to the amazing city of Malaga. The array of<br />

tapas bars and sherry bodegas is astounding. The<br />

most famous is El Pimpi near the Plaza Merced.<br />

Here you can find photographs of famous visitors to<br />

the bar, including Antonio Banderas and Tony Blair.<br />

MADEIRA<br />

Take a stroll along the promenade at the harbour<br />

in Funchal, stopping now and then to view the<br />

wares of the street sellers or pop into one of the<br />

local cafés for a coffee and a traditional custard<br />

tart. While at the harbour take in the scenery of<br />

Madeira from up high by taking the cable car to<br />

the Botanical Gardens, which is a great experience<br />

and very reasonably priced. For an exhilarating<br />

journey back, take the basket toboggan down<br />

from the village of Monte, it will certainly get your<br />

heart racing.<br />

MALDIVES<br />

The best part about the Maldives is that all islands<br />

are completely secluded, and they all have their<br />

own hidden gems. My favourite island resort in<br />

the Maldives is the LUX* South Ari Atoll. I would<br />

recommend you stay on the all-inclusive package,<br />

to make the most of the multiple restaurants they<br />

have on the island, and to experience the best<br />

cuisines. LUX* has messages in bottles scattered<br />

around the island, and if you find one, you receive<br />

a luxury gift! When visiting the Maldives, why not do<br />

a stopover in Dubai first? It’s a great way to break<br />

up the journey, and you also get to experience a<br />

different culture in the same trip!<br />

ALGARVE<br />

The Algarve is wonderfully varied. There are white<br />

sandy beaches and water parks for families, plenty<br />

of golf courses for golf enthusiasts and historic<br />

towns for culture lovers. My favourite resort is the<br />

stylish resort of Vilamoura, which has one of the<br />

best stretches of beach in the Algarve, as well as<br />

a marina that hosts some stylish boutiques and<br />

restaurants. Portugal is famous for port wine and<br />

a trip to a local vineyard, where you’ll see them<br />

using the traditional methods of crushing grapes<br />

by feet, is a favourite experience of mine. Do try the<br />

local Portuguese stews!<br />
