This year’s been rough and tough for us all. We know what it means to you, our guests, to get to escape 

back into a world of endless days of sunshine with a touch of luxury. That’s why our theme for Winter 

2020 is Safe Escape.

Between lockdowns, I was fortunate enough to go on two week-long holidays with my family to both 

Greece and Tenerife, and I was pleasantly surprised by just how normal - and safe - travel felt. The hotels 

had all done everything possible to make our stays feel as comfortable as possible - it was only our 

masked faces that reminded us of just how lucky we were to have this time out together. 

With many more travel ideas and inspiration between the pages I’ve already begun planning my own 

Sovereign Luxury Travel adventures for 2021 - with the Maldives and Hotel Fariones in Lanzarote now 

added to my list.

Long stays for work and play 

Imagine being able to live and work from a luxurious tropical island resort? 

Well, that dream is closer than you think. 

After a year that’s halted many 

travel plans and increasingly 

regulated movement, more of 

us have found ourselves all but 

climbing the walls. 

There’s an antidote to all this cabin fever 

though: instead of taking frequent shorter 

holidays, the ticket to travel in 2021 is to head 

away for a longer duration. 

Being a ‘Half Tourist’ is the latest travel trend 

to take the world by storm, which has been 

made possible by the flexibility of remote 

working becoming the norm. 

As Ben Stratton, Regional Destination

explains, “Whether you’re a solo traveller, 

travelling with your loved ones, or even 

travelling with another colleague, there is 

an opportunity to discover new destinations, 

cultures, people, and working environments, 

plus so much more. 

Space, WIFI connectivity and time zones 

are elements that need to be considered, 

of course, but for some these could actually 

be improvements in their new work location. 

For others, these may be considered as 

compromises, but I believe the benefits far 

outweigh these.”

With many destinations dependent on

Barbados: a much-loved playground 

of the rich and famous, winter 

bolthole to many a sunseeker, 

and famed for stunning beaches, 

sparkling seas and luxury resorts. 

Barbados is a magnet to those looking for 

sun, sea and the potent local rum punch. 

Travellers have flocked to her turquoise shores 

for decades and the island has become a 

paradise for jetsetters, satisfying the highest 

standards of luxury whilst simultaneously 

retaining a rustic charm. 

BARBADOS: A LOVE AFFAIR 

My love affair with Barbados began almost 

three decades ago and this vibrant little gem 

in the Caribbean has punctuated the key 

moments of my life. An annual pilgrimage 

from the age of 18, it quickly became a second 

home, spiritually and practically. Barbados 

has given me a husband (fortuitously working 

there at the time), a wedding, and two

EAST COAST TRIP 

A trip along the East Coast is a must while 

you’re on the island - car hire is easy and they 

even drive on the left. 

The drive from west to east is fascinating. 

Don’t miss St. Nicholas Abbey for a tour of a 

traditional rum distillery, or buy handmade 

souvenirs amid breathtaking views at the top 

of Cherry Tree Hill, before journeying down 

through local villages, bordered by sugar 

cane fields and banana plantations. 

Children and adults alike will love the 

refurbished Harrison’s Cave, an active cave 

network that was excavated in the 1970s. In 

your subterranean tram you can journey deep 

within and see the amazing stalagmites, 

stalactites and white flow stones. 

Find locally handmade, beautifully painted 

pottery at Earthworks, and escape the 

heat of the day at Flower Forest Botanical 

Gardens or Hunte’s Gardens. Children will 

love observing native green monkeys at the 

Barbados Wildlife Reserve. 

THE PARTY SIDE 

The South Coast, traditionally the ‘party’ 

end of the island, brings a more bustling 

and hedonistic feel, with beach bars and 

nightspots that are a little more low key. The 

famous Oistins Friday Night Fish Fry has long 

been a Barbados institution, popular with 

locals and visitors alike. 

The huge white beaches and calm waters 

provide an array of watersports opportunities. 

Keen windsurfers and kite surfers alike flock 

to Silver Rock to enjoy the perfect conditions 

that the winter season, from December to 

April, brings. 

LITTLE ENGLAND 

The north of Barbados brings more rugged 

and breathtaking scenery at North Point, 

where you can enjoy a local lunch, perhaps 

macaroni pie, a flying fish cutter, or a roti. 

Visit the natural sea cavern, Animal Flower 

Cave and, if you’re really lucky, in the winter 

months you can watch the humpbacks as 

they bask in the warm tropical waters. 

Roads and signage have improved over the 

years but relax and take your time, Barbados 

style, and enjoy the views. Be careful to avoid 

the mongoose and perhaps patronize one of 

the numerous rum shacks and ‘Auntie bars’

Head into the forested mountains of Khao 

Khanap Nam Mountain and paddle through 

the mangrove forests of Ao Thalane (Thalane

Bang National Park you’ll find a secret 

tree-lined path leading to the large natural

This small island nation in the 

Eastern Mediterranean is a yearround

Ambassador Natalia Wolski travelled to 

Cyprus during this year’s October half term 

and shares her experience with us. 

Rich in antiquity, diverse in landscapes, and 

home to the most gracious of hosts, we visited 

Cyprus for the first time. Benefitting from a 

sub-tropical climate, Cyprus enjoys a very 

long season and an extremely mild winter, 

making it the perfect destination for late and 

early season sun. 

Cyprus is one of the few places in 

the world where it is possible to 

ski in the morning in the Troodos 

Mountains and sunbathe on the 

beach in the afternoon. 

BEACH LIFE IN LIMASSOL 

Our trip began at the fully refurbished 

ParkLane, a Luxury Collection Resort & Spa in 

Limassol. Reopened in 2019 after a four year 

renovation, the modern interiors reflect both 

local and international influences, to stunning 

effect. Located on a 300 metre stretch of Blue 

Flag beach set amid spacious, beautifullymanicured 

gardens and featuring extensive 

leisure and dining facilities, a purpose-built 

kids' club for under twelves, watersports and 

even a PADI scuba diving centre, a myriad 

of room and private villa options await and 

cater to a diverse and discerning audience. 

The outstanding Kalloni Spa is nothing 

short of a wellness destination, offering an 

extensive spa menu, a huge hydrotherapy 

pool, and its very own hair salon and barber 

shop. There is a state-of-the-art Parkfit health 

club, a heated indoor pool, and a range of 

classes available, as well as a boutique that 

stocks an array of luxury labels. 

We sampled every aspect of the faultless 

hospitality, from the extensive buffet 

breakfasts, to the Vithos butler service 

delivering divine cocktail creations and 

snacks to our private cabaña, to the local 

delicacies in Dafne and international 

cuisine in the Grill Restaurant. 

We swam, we kayaked, we dived, we SUP’ed 

(some better than others!), we slept like 

logs in our ‘Heavenly’ beds, we smiled, we 

laughed, we walked and we talked and we 

reconnected as a family. 

ParkLane gave us our joy back 

while silently but reassuringly 

keeping us safe. 


RENEWED MOOD IN 

KALAPANAYIOTIS 

Next stop on our trip was a stay in the 

agrotourism resort Casale Panayiotis, set in 

the beautiful, tranquil Troodos Mountains. 

Located within a once-thriving spa village, 

Kalapanayiotis was long-famed for the 

healing properties of its sulphur springs and 

its ancient monastery, now a UNESCO World 

Heritage site. 

When local man John Papadouris returned 

after decades away to find his village 

neglected, he was inspired to begin a huge 

restoration project, raising funds and investing 

his own money to preserve the village’s fragile 

mountain culture and way of life. 

Now a 41-room resort across seven restored 

mountain houses, with two restaurants and 

a spa, Casale Panayiotis is a charming yet 

luxurious taste of traditional Cypriot mountain 

life. With the unmistakable feeling that we 

were stepping back in time, this was a really 

immersive and memorable experience. 

Whether we were on a 

beekeeping excursion with 

‘Mr Bumbles’, taking a trip to 

the hydrotherapy spa, joining 

a traditional halloumi-making 

workshop, or working up an 

appetite on one of the many 

nature trails of the village, 

we were sustained by the array 

of local food in the 

Byzantino Restaurant. 

There’s plenty to occupy even the most 

demanding of travellers here and, with 

jaw-dropping vistas, we fell in love with 

this place and the warmth of its authentic 

hospitality. 

The majority of ingredients are grown and 

sourced locally in the estate orchards or from 

the neighbouring village butcher and baker. 

This is a truly extraordinary place where we 

got a real sense of the philanthropy of its 

founder, John Papadouris and his family. 

Kalopanayiotis, once a dying way of life, 

has been reborn thanks to the vision and 

generosity of their modern day hero. 

Little by little, villagers are moving back to 

open small businesses and cafés, sharing 

their culture, traditions and hospitality of 

old Cyprus with the select few who are lucky 

enough to stay here.

A TASTE 

of Luxury 

Feast on global flavours with Sovereign

This season, we travel to the steaming 

street stalls of Bangkok. 

If you can’t get your hands on delicious 

tangy tamarind water, then a fabulous 

substitute is to mix lime juice or white wine 

vinegar with an equal amount of light brown sugar. 

For the best result and to avoid your noodles from sticking together, 

try to make one adult portion at a time. 

You can increase the level of spiciness with how much fresh red chilli you use. 

If you prefer a milder spice, opt for a pinch of paprika instead. 


Pad Thai 

A prince among spicy stir-fried rice noodle dishes, 

an authentic Pad Thai is utterly irresistible. 

This star dish can be found served up at Bangkok’s many 

street food stalls - you only need to look for clouds of 

billowing steam to find it. 

Pad Thai is usually accompanied by prawns, but it can also 

be served with chicken, pork, beef, or tofu. Until you’re next 

in Thailand’s capital, why not try making it at home? 

SERVES 2 

PREPARATION TIME 30 MINUTES 

Ingredients: 

50ml tamarind water 

40ml fish sauce (optional) 

2 tbsp caster sugar 

200g wide flat rice noodles 

1-2 tbsp of vegetable oil 

16 large prawns, peeled 

4 spring onions, sliced 

2 garlic cloves, finely sliced 

1 red chilli, deseeded and finely sliced 

2 medium-sized whole eggs 

100g bean sprouts 

4 chive stalks, chopped 

2 handfuls of peanuts, roasted and chopped 

Lime wedges to garnish 

Method: 

In a large saucepan, combine the tamarind, fish sauce and 

sugar, and heat gently until the sugar dissolves. Empty this 

sauce into a small bowl and put to one side. 

Clean the prawns then season with salt, pepper, and one 

tablespoon of the oil. Leave to marinate for 5-10 minutes. 

Rinse out your saucepan and half fill it with water. Put it on a 

high heat and, once the water is boiling, pour in the noodles 

and leave for 15 minutes until tender. Using a sieve, rinse the 

noodles under cold water until the water runs clear. 

Place a wok or large frying pan over a high heat and add 

a small splash of oil. Add the prawns to the pan, then push 

them aside and crack in the eggs. Break the yolks and 

scramble them as they turn opaque. 

Add the noodles, bean sprouts, sauce, and peanuts, and 

stir the egg through the mixture. Reduce the heat to avoid 

catching the bottom of the wok. Stir-fry until well combined. 

In the final few minutes, add the chives. 

Serve with lime wedges and a couple of extra chopped 

peanuts on top for garnish..

No trip to the Costa del Sol is complete without a 

visit to the amazing city of Malaga. The array of 

tapas bars and sherry bodegas is astounding. The 

most famous is El Pimpi near the Plaza Merced.

Take a stroll along the promenade at the harbour 

in Funchal, stopping now and then to view the 

wares of the street sellers or pop into one of the 

local cafés for a coffee and a traditional custard 

tart. While at the harbour take in the scenery of 

Madeira from up high by taking the cable car to 

the Botanical Gardens, which is a great experience 

and very reasonably priced. For an exhilarating 

journey back, take the basket toboggan down 

from the village of Monte, it will certainly get your 

heart racing.

MALDIVES 

The best part about the Maldives is that all islands 

are completely secluded, and they all have their 

own hidden gems. My favourite island resort in 

the Maldives is the LUX* South Ari Atoll. I would 

recommend you stay on the all-inclusive package, 

to make the most of the multiple restaurants they 

have on the island, and to experience the best 

cuisines. LUX* has messages in bottles scattered 

around the island, and if you find one, you receive 

a luxury gift! When visiting the Maldives, why not do 

a stopover in Dubai first? It’s a great way to break 

up the journey, and you also get to experience a 

different culture in the same trip!

ALGARVE 

The Algarve is wonderfully varied. There are white 

sandy beaches and water parks for families, plenty 

of golf courses for golf enthusiasts and historic 

towns for culture lovers. My favourite resort is the 

stylish resort of Vilamoura, which has one of the 

best stretches of beach in the Algarve, as well as 

a marina that hosts some stylish boutiques and 

restaurants. Portugal is famous for port wine and 

a trip to a local vineyard, where you’ll see them 

using the traditional methods of crushing grapes 

by feet, is a favourite experience of mine. Do try the 

local Portuguese stews!
