for us,” says George, “to<br />

keep our footprint to a<br />

minimum. When you run<br />

a restaurant, and now with<br />

the guest accommodation at<br />

Moore House, you become<br />

very aware of how much<br />

waste you create and what<br />

you leave behind within the<br />

environment as waste. We<br />

wanted to ensure that our eco<br />

credentials went further than<br />

how we washed our towels<br />

and sheets, we really wanted<br />

to make sure that most of our<br />

produce, wherever possible,<br />

was locally sourced and any<br />

waste or plastic use was kept<br />

to an absolute minimum.” <br />

Jimmy cycled up the steep Crown Lane without standing up and with a £10 note under his bottom – he<br />

reached the end with the £10 still in place and won the bet. A year after his death, Peter came up with<br />
