In an effort to create the perfect kitchen knife series, Boker asked top culinary<br />
experts across Europe to define the everyday requirements and needs of<br />
cooking and kitchen enthusiasts. We applied the directives from their input<br />
to our finely honed sense for knives, and combined it with our 150+ years<br />
of experience as a Solingen Knife Manufactory. The result is the Boker Core<br />
series, which features dynamic lines, excellent handling, secure protective<br />
gripping, and optimum material selection to produce an impressive cutting<br />
capability that has earned a notable status as a consensus recommendation<br />
by Europe’s leading independent cutlery retailers.<br />
The solid blade slug made from a chromium-molybdenum vanadium alloy<br />
(X50CrMoV15), perfectly suited for making premium kitchen knives, is<br />
hand forged with Solingen craftsmanship, structurally optimized and then<br />
hardened to 58 HRC. In order to give the blade a longer service life and<br />
even finer cut, our traditional hand grind is then highly polished. The forged<br />
bolster ensures a secure grip and protects the user from possible injuries in<br />
case of a slip. A special design feature of all knives in this series is the gently<br />
rounded spine. This makes the knife easy and pleasant to handle in any<br />
position and prevents uncomfortable pressure on the hand – even if strong<br />
pressure is applied to the spine, while executing a rock chop, for instance. The<br />
beautifully patterned and perfectly proportioned walnut handles round out<br />

BOKER HERITAGE<br />
The Boker Heritage forged kitchen knife series lives up to its name and takes<br />
on the legacy of traditional Solingen chef's knives. The classic three-rivet<br />
design melds high quality materials with the renowned workmanship that<br />
over several centuries has made Solingen cutlery famous around the world.<br />
For example, the blades of these exceptional knives are made of X50CrMoV15<br />
in full tang construction, offering a well-balanced ratio of edge retention,<br />
rust resistance, and superior re-sharpening capability. Through the elaborate<br />
hand forging, the solid blade blank is additionally optimized structurally,<br />
then hardened to about 58 HRC, and finally provided a fine satin finish. The<br />
ergonomically shaped handles made of German walnut wood are extremely<br />
comfortable in the hand, and especially pleasing to the eye. The forged bolster<br />
offers a safe and secure protective grip, while also ensuring a perfect balance.<br />
BOKER COTTAGE CRAFT<br />
Since the 14th century, the history of Solingen, the city of blades, has been<br />
shaped by the so-called Kotten farm cottage. Its massive grinding stones were<br />
driven by pure water power, and hand sharpening produced world-famous<br />
blades. Boker’s Cottage Craft kitchen knife series features carefully chosen<br />
classic materials, and impressively continues the heritage of this traditional<br />
craftsmanship.<br />
Particularly noteworthy is the use of the non-stainless carbon steel C75,<br />
which forms the typical blue-grey patina after only a short period of use. The<br />
German plum wood used for the handle scales is hard, dense and fine-pored,<br />
while showing a striking color spectrum. Following the centuries-old tradition<br />
of knife manufacturing in Solingen, the handle scales are mounted on the<br />
continuous tang of the blade with solid brass rivets.<br />

BOKER SAGA GRENADILL<br />
Our Boker Saga knife series - handcrafted at our manufactory<br />
in Solingen - raises the bar and brings the topic of ”cutting in<br />
the kitchen“ to a new level. Our decades of experience in the<br />
outdoor knife world coupled with the ingenuity and creativity of<br />
Danish knifemaker Jesper Voxnæs were incorporated into the<br />
concept and design of Saga in an effort to achieve a new level<br />
of performance in terms of ergonomics and cutting technology.<br />
The carefully orchestrated transfer of this joint know-how into<br />
the culinary field is proof that working with Boker Saga will be an<br />
entirely unique experience. The softly swung grips are fabricated<br />
from exclusive certified imported Grenadill wood. With its high<br />
hardness and density, Grenadill wood is a fixture in the European<br />
wooden instrument making field. The successful ergonomics<br />
become immediately apparent when the Boker Saga knife series is<br />
first handled: every curve, every bend in the line nestles itself into<br />
the hand, conveying absolute control and an exceptional cutting<br />
experience.<br />
The swallow-tail-shaped flare of the pommel on the larger<br />
models enhances grip security. Boker Saga owes its high strength<br />
to the full tang design, which extends over the full length of<br />
the knife (in the same manner as on many hunting knives) from<br />
the blade tip to the pommel. The optimized cutting performance<br />
is not only guaranteed by the full flat grind of the blade with<br />
stonewash finish, but also by selecting 440C as the blade steel,<br />
which far surpasses the edge-holding and corrosion-resistance<br />
of conventional kitchen knife steels. This surface finish is<br />
achieved in a specialized grinding process and is characterized<br />
by outstanding gliding properties through the cutting material,<br />
thus enhancing the already superior cutting performance. In<br />
addition, the micro structure of the stonewash finish is extremely<br />
scratch-resistant, since these are typically visually absorbed by<br />
the texture. A special note is achieved by the large hollow rivets,<br />
the unmistakable mark of Jesper Voxnæs.<br />

SHARPENING<br />
Of course, modern technology is catching up<br />
with the subject of sharpening, but many of the<br />
"experts" on this subject are traditionalists. And<br />
that usually means: you use stones.<br />
Such stones can be very different in nature; they<br />
can be natural stones, synthetically produced, or<br />
even hybrids. Stones are generally not used dry.<br />
Depending on the stone, you need water (such as<br />
Japanese water stones, which need to be watered,<br />
or the Belgian Chunks, which only moisturizes<br />
the surface), or oil, as in the centuries-proven<br />
Arkansas stones.<br />
While the oil in the oil stone only has the task<br />
of ensuring the sliding on the stone and wash<br />
away worn steel particles from the stone, the<br />
water forms a grinding sludge, especially in the<br />
Japanese water stones, which is instrumental in<br />
sharpening.<br />
Especially for very fine cutting, the highest qualities<br />
of the Arkansas oil stones have tremendous<br />
potential, but here as well, it's generally a matter<br />
of personal preference.<br />
There are different methods of sharpening with<br />
the bench stone - some prefer a circular motion<br />
or "8" trajectory with the edge (i.e. with the<br />
spine of the blade ahead), sharpening one side<br />
of the blade until a burr emerges and then<br />
changing sides. In particular, in the case of the<br />
fine print, the respective mutual pull against the<br />
cutting edge (i.e. with the cutting edge ahead) is<br />
a popular method. And as so often in life, there<br />
is not one correct method here - trying out and<br />
finding the personally preferred method is the<br />
way to go.<br />
When sharpening, it is essential to maintain the<br />
correct angle. When sharpening on the stone, on<br />
the one hand, it has to be determined correctly and,<br />
on the other hand, to be constantly maintained<br />
during the entire sharpening process, which of<br />
course requires some practice and experience.<br />
If you appreciate the traditional method but are<br />
open to more modern materials, you can of course<br />
also consider ceramic or diamond coated bench<br />
stones. While the handling is identical to water<br />
or oil stones, it can usually be dispensed with oil<br />
or water, and the wide range of grits also offers<br />
all options.<br />
It is important that after creating a burr, depending<br />
on the grinding method, it is removed cleanly.<br />
For this purpose, a leather strop will do, which,<br />
possibly also treated with abrasive paste, represent<br />
the final step and the cutting edge "meets the<br />
finishing touch."<br />
The finely tapered edge that can bend when<br />
coming in contact with a bone or a hard cutting<br />
surface is straightened with a sharpening steel.<br />
The knife is carefully placed on the steel and<br />
pulled across on alternating sides with light<br />
pressure and with the spine first (important!).<br />
This straightens the bent edge and refreshes the<br />
knife's cutting power.<br />
The steel should not be confused with its similar<br />
half-brother, the rod sharpener. Though they<br />
look very similar, the difference is that the rod<br />
sharpener is made with abrasive materials, such<br />
as ceramic, synthetic ruby or diamond-coated<br />
steel. Since these rods are used for sharpening,<br />
they are also handled differently.<br />
Perfect for quick touch-up sharpening, the<br />
sharpener is used by pulling the knife along<br />
the rod, edge first, until the desired level of<br />
sharpness is reached. Unlike the steel, the rod<br />
sharpener does take material off the edge; this<br />
is a true sharpening process. You need to know<br />
that neither of the two tools is suitable for<br />
replacing the function of the other.<br />

SABRAGE<br />
The tradition of opening a Champagne bottle<br />
with a saber was born in the Napoleonic era. The<br />
"sabrage" with the Briquet saber was founded<br />
in 1812 by the general himself after winning a<br />
battle. This unique custom has survived to this<br />
day, and not only in France. It is a special highlight<br />
at any festive occasion. When done correctly,<br />
it generally works without issue. After the wire<br />
basket is removed from the cork, one drives the<br />
blade of the saber along the bottleneck and onto<br />
the thickening of the neck below the bottle head.<br />
The whole bottle head comes off with a bang and<br />
the Champagne flows out. Any resulting glass<br />
fragments fly forward, propelled by the pressure.<br />
