Rum<br />

Rum is a destilled alcoholic drink made by fermenting then<br />

distilling sugarcane molasses or sugarcane juice. The distillate,<br />

a clear liquid, is usually aged in oak barrels. Most rums are<br />

produced in Caribbean <strong>and</strong> American countries, but also in other<br />

sugar producing countries, such as the Philippines <strong>and</strong> India.<br />

The history of rum dates back to 17th century, when Caribbean<br />

sugar farmers had a serious industrial waste problem. These<br />

planters produced sugar by crushing sugar cane, boiling the<br />

resulting juices, <strong>and</strong> then leaving the boiled syrup to cure in<br />

clay pots. A viscous liquid would seep out of the pots, <strong>and</strong> sugar<br />

would be left behind. That liquid was molasses. Luckily for the<br />

planters, someone eventually figured out a use for this molasses.<br />

By mixing it with the liquid skimmed off of cane juice during<br />

its initial boiling <strong>and</strong> fermenting it, one created a serviceable<br />

starting point for distillation. And although the exact etymology<br />

is still murky, the liquor this process yielded became known as<br />

rum.<br />

Rums are produced in various grades. Light rums are commonly<br />

used in cocktails, whereas ”golden” <strong>and</strong> ”dark” rums were<br />

typically consumed straight or neat, iced (”on the rocks”), or<br />

used for cooking, but are now commonly consumed with mixers.<br />

Premium rums are made to be consumed either straight or iced.<br />
