Italian Lemon Cookies<br />

3/4 cup oil<br />

1 1/2 cups sugar<br />

5 large eggs<br />

3/4 ounce of lemon extract<br />

(maybe more)<br />

5 cups of flour<br />

3 teaspoons baking powder<br />

1 cup of orange juice (no pulp)<br />

Using a stand mixer with the paddle attachment, mix together the oil and sugar, then add eggs and then<br />

the lemon extract and orange juice. Add baking powder and when that is mixed in add flour. The dough will<br />

be very sticky. After it is all mixed, let it stand in the refrigerator for about an hour. This will make handling<br />

the dough much easier. (Usually while one batch is in the fridge now is a good time to make a 2nd batch).<br />

Roll out the dough into balls about the size of golf balls. Bake on non-stick cookie sheets or grease<br />

regular cookie sheets with a non-sticking baking spray like PAM. Bake in a preheated oven at 350* for<br />

about 10-12 mins (baking times will vary based on ovens). The cookies will start to crack open on the tops<br />

when they are done and they will brown on the bottom. They will not brown on the top so be careful not to<br />

overcook them. Place on a wire rack to cool.<br />

Make a frosting of confectionery sugar and lemon extract and just enough milk for the right consistency<br />

for the glaze. Sprinkle with non parels or a half slice of maraschino cherries.<br />

down for a stoplight<br />

4. Don’t stop going up a hill - Get<br />

some inertia going on a flat roadway<br />

before you take on the hill.<br />

5. Stay home! Only go out if necessary.<br />
