Originally a butchery, started in 1992,<br />
Blackball Salami still makes all its products<br />
in the factory at Blackball.<br />
Since purchasing the business 12<br />
years ago, Debbi and Phillip Russ have<br />
rebranded it, designed a website and set up<br />
online ordering.<br />
Blackball Salami offers a range of over<br />
40 different products and all products<br />
except for the black and white pudding are<br />
MSG & gluten free. <strong>The</strong>y produce fresh<br />
sausages, speciality goods, bacon and of<br />
course, salami. <strong>The</strong> salami is made the oldfashioned<br />
way and naturally cured with<br />
a variation of quality New Zealand beef,<br />
pork and venison. <strong>The</strong> raw materials are<br />
kept exceptionally lean, with the traditional<br />
Italian salami having fat content added.<br />
<strong>The</strong> finest herbs and spices used in all the<br />
products give them their unique quality,<br />
and only manakau wood smoke is used<br />
during the smoking process. After smoking<br />
the salamis are then hung and cured in the<br />
humidity/temperature-controlled room.<br />
Once they have reached maturity they are<br />
packed to production requirements ready<br />

includes all photo printing from 6x4’s right<br />
through to large canvas prints. <strong>The</strong>re is also<br />
a full framing service. Your passport photo<br />
can even be updated while in town.<br />
Stewart has had four different photo<br />
galleries in town over the last 22 years.<br />
He really appreciates historic buildings<br />
and enjoys restoring them to showcase<br />
his work. <strong>The</strong> current gallery is in an Art<br />
Deco former National Bank. A delightful<br />
courtyard is situated behind the gallery<br />
where two other business are located.<br />

old bank gold smelting house. Opposite<br />
this Courtyard Boutique is located in the<br />

tinyhouse, open plan with a king size bed that can be<br />
separated into two singles (available on request). <strong>The</strong><br />

fridge, TV, sofa and bed. <strong>The</strong> separate bathroom with<br />
