The unique taste of
naturally cured salami
Originally a butchery, started in 1992,
Blackball Salami still makes all its products
in the factory at Blackball.
Since purchasing the business 12
years ago, Debbi and Phillip Russ have
rebranded it, designed a website and set up
online ordering.
Blackball Salami offers a range of over
40 different products and all products
except for the black and white pudding are
MSG & gluten free. They produce fresh
sausages, speciality goods, bacon and of
course, salami. The salami is made the oldfashioned
way and naturally cured with
a variation of quality New Zealand beef,
pork and venison. The raw materials are
kept exceptionally lean, with the traditional
Italian salami having fat content added.
The finest herbs and spices used in all the
products give them their unique quality,
and only manakau wood smoke is used
during the smoking process. After smoking
the salamis are then hung and cured in the
humidity/temperature-controlled room.
Once they have reached maturity they are
packed to production requirements ready
